I made this soup today, it was so yummy- Had a herb cheese foccia bread with it. I put shredded chicken in DH bowl, i was craving veggies. Froze half of it.
SPRING VEGETABLE SOUP- I double this recipe. Add chicken or beef if you want a meatier soup.
Ingredients:
- 1 tablespoon vegetable oil
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 medium potato, peeled and chopped
- 1/2 cup chopped broccoli
- 1/2 cup frozen corn
- 1/2 cup torn spinach
- 1/2 cup chopped fresh mushrooms ( optional)
- 1/2 cup chopped carrots
- 1/4 cup chopped cabbage, (optional)
- 2 (32 fluid ounce) containers chicken broth or vegetable broth
- 6 ounces egg noodles or rice
- 1 cup canned white beans
- 1 small can of whole peeled tomatoes, crushed
- I also add kale and cauliflower
- salt and pepper and chili flakes
Directions
- Heat the oil in a large pot over medium heat, and cook the onion and garlic until tender. Mix in rest of the vegetables, Pour in chicken broth and bring to a boil. Reduce heat to low. Simmer 30 minutes or until potatoes and veggies are tender.
- Stir egg noodles and white beans into the pot, and continue cooking 10 minutes, or until noodles are tender and beans are heated through. season to taste

Lacey: The carrot ginger soup is one of my favorites that I make in my blender.
Debbie: Spring veg soup sounds delicious too! I try to make a couple of pots of soup a week for lunches or a quick dinner.
Up early again...off to an early dentist app't. This getting up early is starting to become a habit, but it's nice and quiet with my coffee and computer. In a week or so, I'll be able to get my coffee and sit on my sunporch to watch the sun come up over the mountains...beautiful!! I feel so blessed to have two such beautiful places to enjoy.

as the oldest daughter it was my job to CUT THE MEAT.. so i don't like big meats now. We lived on 'onsale' turkey that one could purchase for 19cents a pound after thanksgiving and Christmas. Our freezer always seemed to have about 8 turkeys. I used to get so nauseated picking over the bones and the skin. My sister still hates me to this day because i got to slice the turkey.. (my parents rule.. she was too young to hold a knife properly). thank goodness for kids that like to cut meat. I would gladly have let my sister cut the turkey, but my mom was odd about some things.. (we know where my OCD came from) (Annabelle can't cut the turkey until she is 12)

Apple that is so funny about cutting the turkey. To this day my mom still ask me to cut the meat at all our gatherings...now mind you there are abundant men around that could cut, but she always ask me to do it....must be she likes the way I do it.
Deb Good luck with getting that infection cleared up. I think the hosp IV is probably the way to go and get it cleared up fast...and like Laurie says, take a good book and enjoy the downtime. When I was getting chemo I needed a bld transfusion, and I watched movies and napped..it was New Years Eve and when my DH picked me up we went out to dinner with friends...I was all rested and had new blood and ready to go.

Was naueseous last night, not sureif its the new med or because I worked outside in the garden digging and pulling weeds (the ground is like rock) So my dinner was two tums and my DH had a can of chef boy ardee.
Tonight we go by boat to the first of the outdoor concert series....hope I feel up to socializing. this new med may be short lived for me as I dont like how it makes me feel...trying to hang in there though to give it a chnace.

Apple- Funny story on slicing the turkeys, you must of had a big freezer to have 8 in there mine now would hold maybe 2 lol!
Triple AAA says that Lincoln city, Oregon is going to be the busiest place in the Us this week-end Yikes! The traffic will be horendous! We have lots of things planned. Tonight is dinner out with friends from the Bay Area that we havnt seen for awhile, tomorrow DH works but i will be going to the culinary school here to watch all the chefs do a cook off with a friend. Sunday is Dinner at another friends for a Bq and Monday a bunch of us are going to the beach to watch them do the Fleet of Flowers, they release thousands of flowers in the sea in honor of those who passed. So beautiful will have DH take pictures so i can share. There will be crab and lobster feeds all day. Hugs kites flying in the air. Just hope the weather stays decent. Suppose to be thousands here this weekend!

Guess were I am. I have DH's Laptop. IV is hooked up but they have to come in yet to administer the antibiotic. Damn I wish they would hurry up. My temp was 101.3 when they took it at the breast care center but it is down to 99.9 when I arrived at the hospital. I just squawked at the nurse to check when they are going to start the antibiotics.

Cottontail, just had a yummy sandwhich of peanut butter, tahini, and capers on a baguette. Capers were for spaghetti sauce, but I ate them. It was really good. Happy 3 day weekend!

Had the nurse take out the IV, I couldn't stand it any longer very painful, in my hand near the wrist bone. My next tx is not until 2 tomorrow afternoon. I don't mind being poked, I couldn't even wipe myself LOL

When I got home tonight, DH mentioned that he heard on the news thatCeltic/Sixers tickets were abundant......hmmmmm, I thought, instead of driving to NH late tonight after making/having dinner, maybe we should just relax and stay home this weekend and cheer on the hometown boys....afterall it may be the last time we see some of them. It didn't take much convincing....soon we had our tickets and I was happily making pasta and broccoli rabe with mushrooms, walnuts, raisins, and asiago cheese. We also added some balsamic vinegar at the end of cooking. Very tasty! Of course what would pasta be without a side of kale saladand a nice glass or two of pinot grigio!
I am heading out to South Bend for a college reunion on Thursday, so I'm glad to have the time to get prepared instead of travelling.

Can they maybe insert the IV into the vein in the bend of your elbow like where they draw blood typically? I have had them done in my hand and far prefer the one in thr bend of the elbow... They do them that way for my MRI to inject the contrast dye..... Hope your treatmnt tomorrow goes well and you are out of that hospital fast!!! -
Deb, sorry for your troubles. IVs always hurt me too, and the nurses always tell me that it can't possibly hurt. Well, it does $@%#

I getting Vancomycin, it is very strong and kills anytype of bacteria. Right now they are saying is is Celulitis, I want an xray because I am feeling something inside, fluid, abcess or something else. My BS is on duty this weekend so I will talk to her. I trust her opinion. My temp is normal and other vitals are normal. Right now I am waiting for my coffee, scrambled eggs w toast and other stuff.

Deb: Those IV's in the hand can hurt! I was taking weekly IV's (Meyer's cocktail) and when the vein in my arm went bad, they began using my hand. To avoid the pain, they need to slow down the drip...it takes longer but is more comfortable.
Praying this treatment works for you quickly! I would definitely ask the BS to perform the biopsy to make certain of the dx.
Off to grad parties today. Last night was a fun evening...dinner with a girlfriend that I don't see that often. Had a glass of wine that I don't normally have, then was nervous driving home because I heard they were putting up check points to catch drivers who drink and drive:( I was fine, but because I'm so small, I don't metabolize the alcohol as well as others, so it would show up as a larger amount in my system. In hindsight it wasn't worth the risk!

i dreamed about turkey last nite. I remember the mountain of glistening flesh before me... I remember Blondie our dog stealing a whole small turkey off of the table where it was resting and secretly cheering inside.
Actually.. Thanksgiving dinner is so good with all the sides and such.. Turkey nestled in beside the mashed potatoes, gravy, dressing and veggie dishes is perfect,
and I think to myself.. what a wonderful world. My brain is an ipod this morning.

I've been getting a kick out of the turkey posts.....especially Blondie's feat. It reminds me of an evening so many years ago when I had just put dinner on the table in the kitchen, the doorbell rang and it was an insurance guy who needed us to go over some papers.
When we returned to the kitchen we found an empty platter where the roasted chicken had been. Pfeffernuesse, our first miniature schnauzer, looked very sated when we found her....and it had to have been a challenge for her to climb the chairs and table....she was petite. Where there's a will......:) -

My family has never liked turkey. We started buying it at Thanksgiving because it became so cheap and there was so much media pressure and cultural pressure to have turkey at Thanksgiving. We prefer other large meats especially pork roast which we stuff with a mixture of green onions, garlic and cayenne pepper. When we have turkey, the dark meat goes first and the breast sits there until all the dark meat is gone.
Turkey is actually a difficult large meat to cook because it's almost impossible to cook the dark meat and not dry out the breast. I have a small turkey in the freezer that I need to cook before we begin our summer rv travels. I plan to thaw it and cut off the legs. Cook them (braise) using a recipe with apples. Then I'll cook the breast and use it to make turkey salad for sandwiches or whatever. I fall into the buy-the-turkeys-on-sale-at-Thanksgiving trap!
For me the only time roasted turkey is good is the first meal. The leftover meat has so little taste, but I'm from Cajun country and we like spice and flavor.
Speaking of which, we had baked Italian oysters for dinner last night (Oysters Mosca), steamed and buttered small fresh green beans, and slices of home-made bread. Yum, Yum. Not good for the weight loss diet.
That flower festival sounds so beautiful! But I don't like the thought of all those thousands of people. We avoid big crowds. Several summers ago we spent a month wandering down the Oregon coast and loved the little towns and the wonderful state park campgrounds, which were so popular we couldn't get into some of them.

Sharon will sometimes get the steroid munchies and when I'm not around will get something to eat and leave the fixings on the counter to put away later.

Deb- Hope you have seen your bs by now and she has some answers for you. I agree too that you should have a biopsy done just to be sure. When will you be released?
Apple- You crack me up with the turkey stories! I need to go buy some pepper turkey again so i can have my sandwich with avacados and pepper jack cheese on wheat berry bread. So good.
Im on my cell right now, taking a break from the culinary cook off while friend is over having a smoke. The food is fabulous. cost was $50 but you get to taste a lot of good foods. Crab cakes, lobster thermador. shrimp. salmon, oyster. clam chowder, uggh my tummy hurts and we are not even done, they are doing fabulous desserts in a bit. Even have a pizza station but will wait til my stomach ache goes away lol! They are serving wine but decided not to have any today.
Everyone sounds like they are having a great time!

My bs is on duty this weekend at the hospital so she comes in aroun 10:30. tata seems to be getting better, temp, bp and oxygen is normal. I am NOT going to ask for percocet for any type of pain, made me so sick!!! Did not eat lunch and just picked at my supper.
I ordered carrot cake and only could take a few bites out of it, ate the celery and carrot sticks small amount of the grilled chicken DH drank the ginerale cuz I already had some for my upset stomach.
Lunch was a Turkey Dinner, but had to send it back.

Apple you crack me up. I used to have The World's Worst Dog, 80 pounds and 1/2 great dane 1/2 "hound". I would see him resting his elbows on the counter top after I left for work, checking out the sink drainer for food. He used to "paw" the refrigerator and howl to look inside the Big White Box. Constantly stole food. I was a bad dog trainer.

2 funny things off topic, one about dogs. I was in the parking lot yesterday and not in a good mood. A bulldog started barking at me from inside his car. I was annoyed I said, "Sit Down!!" and pointed to his butt. He did and looked meek. I added , "And knock it off!" After coming out of the Drug store he started again until he recognized me and I pointed to his butt so he sat down and was quiet. I wish that my Bad Dog would have done that.
I just put a window air conditioner outside that was too big from my last place. This cabin has 17" wide windows. Labeled "works, doesn't fit, free" Was gone in 3 minutes! I was shocked. It's 88 here in RI and muggy.

Deborye, sorry your meals were so unappetizing. I had an unappetizing lunch. I took a block of WW cream cheese and mixed it with a can of chicken. Added some capers for flavor. Spread the mixture on a couple of slices of homemade artisan bread. Very bland. That canned chicken has no taste. I have another can which I'll donate to the food bank along with a bunch of cans of salmon we bought in Alaska.
We're having oysters again tonight, lightly breaded and fried. I had planned to cook the rest of the oysters tomorrow at my mother's house for our lunch (hers and mine) after church, but my oldest brother and his wife are bringing lunch. It will be some kind of takeout they buy along the way.
A side dish for the oysters will be a slaw made from the green cabbage in my refrigerator.
Hope Laurie and her family are having a great time camping. Hope Michelle is enjoying her European getaway. Hope everybody else is enjoying whatever they're doing this weekend.
Off subject--I put our air card through a wash today--DH had left it in a pocket of his shorts and I don't check pockets. That has been the rule from day one of our marriage. THE AIR CARD WORKS!!!! Can you believe it?

Finally back home had a fun time there watching all these experts make great food. Makes me want to go to culinary school. I dont think i can eat for a week!

Roasting salmon... a little olive oil, salt and pepper on the salmon.
Brown rice and asparagus (however it might be spelled)
And plain yogurt with some lemon juice and a bit of dill for a dipping sauce.
