Chabba- I had no idea that knorrs made a stock base too, i will def check it out and also buy a package of the knorrs hollandaise sauce and see if it tastes the same as what i had this morning. How have you been? I bet busy as usual, are you getting the same rainy windy weather there too?

To make the knorrs taste good, add some fresh lemon juice and a pat of real melted butter. Not as good as the real thing, but not bad at all.

Will try that too Susan. I almost thought i tasted a hint of chx stock in theres too, so might try a little that way as well. I make a good hollandaise sauce from scratch but if knorrs is that good and that easy i will use that all the time.

After that huge meat laden dinner yesterday, we are having a white bean and kale soup tonight with a salad. I've had hot flashes all day that I assume are diet related:(
DD was in so much pain when the dentist finished with her today that she was crying. I felt so bad that there was nothing I could do for her. She called me a little while ago and said she took some pain meds and felt a little better. Her BF will wait on her hand and foot tonight I hope.
This will be a busy week...graduations and parties...doctor and dentist app'ts and then one more eye injection before we head off to NC, plus all the friends who want to get together before we leave. I'm starting to get stressed out over it all. To top it off, I found out the kid's father is going to be at the grad parties...ugh! I was hoping I would never have to encounter him again in my lifetime after the last wedding where he acted like such a jerk. I'll suck it up and play nice, but it won't be easy. I actually like his wife..she is a sweetheart...don't know how she puts up with him!

I love eggs benedict and I love, even more, the tip about the Knorr package stuff. I am going to have to try it, I love hollandaise sauce.
I am back from the ortho...both knees shot up with steroids. My xrays were pretty ugly - moderate heading towards severe osteoarthritis according to the doc. He's talking a knee brace, PT, and Synvisc shots in three months if the pain comes back. Can't wait to see the glucose reading in a little while. I told DH we'll be eating very low carb tonight. I think we're having omelets, and probably soon because I'm starting to get hungry.
Eric - chemo side effects are cumulative, especially the fatigue. Don't be surprised that she wants to sleep/rest/do little or nothing much right through the Taxol treatments. It's best to just go with the flow. I remember one Sunday morning after my second Taxol, I was making breakfast. All of a sudden, I just lost all energy and had to sit down. My hubby took over, and afterwards we went for a nice ride to the ocean. I didn't want to just sit on the couch, but I couldn't do much, either. Rides were great - I could always take a little nap on the way home!

Debbie, one thing about the Knorr sauce, it holds and reheats easier than the scratch. And yes, I think I did add a bit of lemon and butter--not much but some.
The Knorr soup bases are pastes that come in a tub about the size of a Greek yogurt container. We get them from our restaurant supply sources. Haven't looked for them at the grocery store.

Tuesay, the day after the Memorial Day holiday, Sharon and I would be enjoying breakfast at the El Tovar Hotel at the edge of the Grand Canyon. We would be celebrating (and recovering from) another successful straight through rim to rim to rim (walk over and back) hike of the Grand Canyon. I always ordered the eggs benedict.

Eric, your mother did a great job with her son.....it must be gratifying as a 94 year old to see her son nurture the women in his life.
DH is back from his little East coast road trip, so tonight we are back to real meals (actually my spontaneous egg salad roll up with kale was pretty tasty last night....with a side of nuked cauliflower....love those weird meals when I'm just feeding me)... grilled chipotle/lime marinated chicken, kale/cranberry/pear salad, and balsamic/garlic/evoo roasted brussells sprouts, cauliflower, and vidalia onions. Tasty and healthy except for the Baltimore Famous Berger's cookie DH imported from his trip that I just could not resist!

Kaara, I really feel for your DD....hope she is feeling better tonight.....mouth pain is so miserable.
Michelle, glad your knees got their maintenance so you can happily flit about Paris!
I recall my mother having a synvisc shot which was very helpful to her. I'm sure I'll be in line for those in future years. At this point daily Celebrex keeps me walking pretty happily.
Glad that the Celtics got a spurt of energy to win their playoff game tonight. They always keep us on the edge of our seats! I cannot imagine how those guys play through all of their injuries....I would surely not want to live in their bodies once they hit 50+. -
DH cooked braised lamb shanks today. They were delicious with rosemary polenta and a salad of napa cabbage, radishes, cucumber, yellow bell pepper and spring onion with a coleslaw dressing.
The last supper before dental surgery tomorrow! Three implants.
The best eggs benedict I've ever eaten was in Anchorage last summer. Crab cakes benedict. It was sinfully good.

Never had Eggs Benedict, didn't care for Hollandaise sauce, hate clams. Went camping as a kid many times at Greenfield State Park, have not been there in years.
Had some left over Pumpkin spiced chili for supper, DH had Italian calzone.

Michelle- My dad had those cortizone shots in his knees and said they were very helpful. The main thing is you will hopefully be able to get around with no pain and enjoy your trip. You alsways have such great advice for everyone Michelle even when you are going through so much, i agree with Apple, you are Amazing!!
Chabba- Thats what the server said, the reason why they use that instead of the real hollandaise was that it held better. I will try to find the base in the store if not maybe my brother could order it from his food supplier. Thanks!
Kaara-Aw, sorry your daughter was in so much pain. i really, really dislike dentist more than anything. still putting off having my upper teeth pulled and getting dentures. I know what you mean on ex-husband's, I get along with him because of DD but he was very abusive in our marriage thats why i dumped his butt. His wife is not a nice person she treats my DD so mean so i guess they deserve each other lol! I got lucky this time around my DH is the greatest, in the 23 years we have been together he has never even called me the B word, even though i probably deserved it sometimes lol!
Carol- Hope your implants go well with no pain or problems.
Lacey- Your dinner's always sound good and healthy, the cookie sounds even better though. I had a chocolate pie from burger king tonight they are small thankfully but ohh so good.

Carole, I love braised lamb shanks. In NY there was a Greek diner that was famous for this dish. Here in Greece I never have it, because they slaughter the lamb so small that the shanks are itty-bitty.

Speaking of ex-husbands and marriage, today is our 32nd anniversary! I have to say love has been much better the second time around! When I got home yesterday, my hubby had roses, chocolate covered strawberries and apple slices, a card, and a little adapter so I can transfer pictures from my camera through my iPad to the Apple cloud. LOL, yes, I am OK with "tekkie" gifts, just don't get me a kitchen appliance!
I was worried about my blood sugar being high after the cortisone shots, but it has stayed in a good range. So I'll be eating those strawberries and apple slices for breakfast, along with some Greek yogurt for good measure. It was so nice to sleep last night without knee pain waking me up! Woohoo!
Later today I'm getting a hot stone massage, mani and pedi. My kids got me a gift certificate to a local spa so I could get pampered before our trip. Then DH and I will go out for a nice dinner. Maybe I can convince him to take me to La Morra. He's not saying no to me very often these days
but he really does love Italian food, so this shouldn't take too much arm-twisting.

ok guys.. no offense, but Knorr's hollandaise is the absolutely worst product ever. One can easily make Hollandaise for two
just put two egg yolk and a one juice of a lemon in a heavy saucepan and whisk melted butter into it slowly, never letting the pan get hot.. just remove it from the heat.. add salt and voila. it the egg yokes are hot you can add cold butter.. it is so good .. It it separates, just add a few drops of lemon juice or vinegar and rewhisk... the egg yolks are emulsigying a butter and lemon blend. it would be better to just use butter and lemon juice rather than messing with a sauce mix. People think hollandaise is so much harder to make than it is.. you just don't want the egg yolk to cook.

Had my bone scan today and I'm doing the happy dance all clear ,isn't it funny how we give way to fear sometimes only to find out that we have waisted soo much energy on worrying

Michelle, it's amazing that you eat out so much and don't have a weight problem. Do you eat a very small portion?
My weight was up 2 1/2 lbs this morning and last night's dinner wasn't salty.

Michelle Happy Anniversary You hit the jackpot the second time around.
Last night was the funeral for our dear friend. They did a reception afterwards at a local hotel, and I had helped the wife and friends to decide the menu, just finger foods, appetizers. Was so disappointed in what they put out for the price, they had substituted the chicken cordon blue with little egg roll thingies without asking or telling us....cost was like 700$ for 1 hr.! We complained and they took 100$ off the bill. Lesson learned, will not use them again.
I have used the Knorrs also. very good. I have a recipe for a crab dip (hot) that uses knorrs vegetable soup mix in it thats yummy.

Lacey I agree, I would eat that way all the time if it was just me, I like to pick and just eat a little bit of everything that sounds good in the moment.

Oh, apple is totally correct about the Knorrs for my taste. Look at the ingredient list to start with. But if someone has enjoyed it, no harm in helping them make it a bit better.
I make a bernaise sauce the night before I have a PET scan. The list of forbidden foods is long, so in exchange for the anxiety that is a PET scan, I make a bacon wrapped tenderloin steak with bernaise sauce for dinner the night before. As I leave for the hospital I throw a frozen cheddar cheese & scallion scone [FLOUR cookbook recipe] so the minute the scan is over, I can run to get a cup of coffee and eat my scone along the banks of the Charles River.
Sitting there, overlooking the river with sailboats and sculls, always restores my spirits.

Carole - yes, I don't usually eat more than half of my meal and the rest becomes lunch. And until recently, I ate about 60-100 carbs a day, so that kept my weight stable. I purposely gained about eight pounds because I was going to have my DIEP surgery and I had gone down to 122 by the time I finished rads...I wanted to make sure there was something to work with. I'll probably try to get rid of a couple pounds after we get back from Paris, although I've read that Xeloda may be an appetite-killer (Apple might know), in which case it may just happen automatically. And we'll eat more at home once we can start grilling and I can eat more watermelon...lol!
Susan - I don't remember, do you go to Dana Farber for treatment?
And woohoo, we ARE going to La Morra for dinner!

The graduation went off without a hitch this early AM...over 650 graduates from Jupiter High School in Florida! It was very well coordinated and we were out in an hour and a half...time to go have breakfast with DGD, DS#2 and family. We repeat the same thing at the same location when DGS graduates on Thursday. I came home and took a two hour nap! I think it was carb overload from breakfast.

Apple- You are so right it is better and really not that hard to make. great tip on adding drops of lemon juice or vinegar if it seperates. But remember, you are the real chef we are just cooks. lol! Hope you are feeling ok and getting your appetite back. ((((hugs)))

The boys are finally feeling better. Last night we made party melts with ground turkey which was so yummy. Kids ate fruit and toast with peanut butter. So tonight is the chicken with avocado salsa, despite the pouring rain.
I need to get my food planned for camping this weekend. Thanks Michelle for the camp site tips, I'm going to check them out.
