-
Carrie, I am sorry about your friend
Jo Jo yay for your bone scan! Now the only bone you have to worry about is the hambone for your pea soup!
I am making this for dinner
http://www.avocado.org/recipes/view/31470/mediterranean-pasta-salad-with-california-avocado
I could eat avocados all day long.
-
Tired tonight, dinner is some leftover spaghetti from the fridge, some Gardein Chipotle Lime Crispy Tenders, and a quick salad. Simple and easy, but it hit the spot.
-
-
Steak Tips with Rice Pilaf. Brought my chili into work, it was gone before noon. Everyone liked it, except one guy said it was not hot enough. He likes it when beads of sweat appears on his forehead when he is eating it. LOL MEN.
Michelle~the shower is going to be June 23rd at Parker's Maple Barn, LOL. She thinks she is going for a brunch with some of her friends. SURPRISE!!!!
-
I ordered 1.7oz body lotion from my neighbor, she is a retired Avon rep and she gets 50% off. Now I will look for nylon organza bags to put them in along with a pretty decorated basket from Michael's.
-
Debbie swiss meatballs? Is that like sweedish meatballs? I thought you might like all the typos! Lol!
Deb I hope your daughters party goes well and you all have a blast!
Eric hope your wife is feeling well tonight. You're doing a great job being a loving DH.
Jojo great news on the scans!
finally have the boys in bed, time for American idol. Which makes me think has anyone but me kept up with the big c? -
Debbie, swiss meatballs? are they like Swedish meatballs? That's what I picture over buttered noodles....
Michelle, HAPPY 32nd!! I hope you guys had a great meal at LaMorra....but what a nasty night to drive that far. If you went, hope it was worth it! And DH definitely gets points for that drive! We have a gift certificate to use there so will also be heading over...probably once I'm done with work.
Susan, I love your PET scan regimen ending with the scone and sailboats and sculls on our no longer "dirty water". Very soothing indeed! You are a wise self-nurturer.
Was tired and not feeling great by the time I left work tonight, (17 more days!!) so was hoping for take-out.....but wait, my newly minted sweet "faux chef" had a great meal planned....grilled tamari/sesame salmon fillets, grilled asparagus with lemon, olive oil, and pepper, quinoa, and chunk salad of tomato and cucumber with balsamic vinegar. I could really get used to this! Maybe a nice Father's Day gift would be cooking classes...:)...last year it was a gift certificate to a local brewery where he could make his own beer. His very cute label had our recently gone pooch, Lacey, featured on his Lacey Brew. If I ever get to using my computer, I can post a pic of it. I've turned into such a lazy IPAD lady. -
Laurie, I swear I did not copy and paste your first line!! Great minds......
-
Michelle,
Happy Anniversary!!! Hope your day was great and that dinner was every bit as delicious as their menu sounds! I tend to save quotes that really speak to me in a file and the one that you referenced was originally attributed to Michael J Fox when discussing his diagnosis with Parkinson's....
"Don’t spend a lot of time imagining the worst-case scenario. It rarely goes down as you imagine it will, and if by some fluke it does, you will have lived it twice. When things do go bad, don’t run, don’t hide. It will take time, but you’ll find that even the gravest problems are finite, and your choices are infinite."
For those looking for a Hollandaise Sauce recipe, my DH makes one in the microwave that is quick, delicious and fool-proof.... Will try to find it and post if anyone is interested! -
Laurie and Lacey- I knew when i wrote that it just didnt sound right, LOL! Hmm wonder if there is such a thing, will have to Dr google it.hehe!
Laurie- Yes i watch it, getting a little risque with the brother LOL! but it cracks me up. who do you want to win on idol? Im thinking Jessica but can't make up my mind still.
Lacey- Hope you get some rest and feel better, the cooking school sounds like a great gift. Post the pic when you can would love to see it.
Jo-jo- missed your post some how, but woo-hoo doing the happy dance for you too.
Deb- Have you posted the recipe for your pumkin chili yet? I like spicey but not so much that you cant' taste any of the ingredients.
Seaside- Always loved that quote but did not know it was for Micheal J fox. So awesome! Always up for new recipe's they can always be improved even when you have one you like. I would like it please. How are you doing? Did you get all of your test results back? Not sure but thought you were waiting?
-
Debbie: Will you send the Swiss (swedish) meatball recipe?
Dinner at a lovely, upscale Italian restaurant downtown tonight before a concert. Linguine con vongole - white sauce of course. I've been hungry for clams for a week with all the various recipe postings. My SIL had a special salad with marinated artichoke hearts, cross cut celery, tons of fresh mushrooms & italian dressing. Yum. Also a grilled portobello mushroom with shrimp on top. Lots of soft focaccia filled w/herbs & garlic. We'll definitely be going back there when we have a fall concert in the same area.
Michelle: Looking forward to your dinner review. And the hot stone massage.
Laurie: Good to hear from you - typos or not.
-
Minustwo- I agree, i have also been craving the clams linguini we get fresh clams here thats how i prefer to make them but gave out an easier one a few pages that use canned but much better prefer the fresh clams. ok, here is my recipe for the Swedish meatballs it was delicious tonight. Btw i also use this sauce for beef strogganoff too.
Meatballs: mix together, 3lbs of ground beef.- 1 white onion, (diced)- 2 eggs (lightly beaten) - 1 cup of seasoned bread crumbs- 1/2 cup of fresh flat leaf parsley. (chopped)- garlic powder- salt and pepper to taste. Form into about 3/4 to 1 inch balls and over med-high heat brown on all sides, remove and put on plate.
For gravey- In same pan with drippings, put about 4 tbsp of flour, whisk until combined and cook about 4 minutes or until golden brown. Slowly whisk in 2-10.5 oz cans of beef consomme (or beef broth) and 1 tbsp of worcestershire sauce, add 2 cups of milk, salt and pepper and a pinch of nutmeg (optional) stiring constantly to prevent lumps, cook about 6 minutes or until gravy starts to thicken. add a couple tbsp of sour cream- lower heat to medium add meatballs back into sauce(including juices from plate) and cook (uncovered) for 10-15 minutes until meatballs are cooked through. Put over buttered noodles or rice and top with more fresh parsley.
Tip- Beef consomme has a stronger flavor but still good with beef stock or broth if you cant find it.

Michelle happy anniversary
Seasidememo I love your post it's so true

Tonight we had 3 inch thick black angus steak on the Barbie ,cooked medium reare ,wedges cooked in the deep fryer, fryed eggs ,and mushrooms .it was sooo good but ,I'm not feeling to well at the moment ,must start my diet tomorrow ,I feel so much better when I cutout carbs but I'm a big sucker for fresh bread, specially home made bread and pasta I've never made my ownbut would love to get a pasta machine
Keep on laughing its good medicine
Jojo -
Lacey OHHH to have someone to cook for you....what a nice surprise. 17 days till your done working? woohoo!
Debbie those meatballs sound good, havent made those in awhile, You have a better gravy mixture than what I make so I am writing it down.
Seaside yes to the hollandaise recipe.
Last night was a pork loin on the grill, pasta and broccoli casserole and corn. This new med I am on is killing my appetite, which is good but wont be good for my DH as I have no desire to cook anything. Maybe I can drop these extra 15 pounds I have on.
-
Last evening was chicken sauteed with mushrooms and some of the gravy I had left from the pork done in the crockpot. It had garlic, onions, carrots, celery and some spices. I blended it in the vita mix and it made the most delicious gravy...didn't even need a thickener. I served that with green peas, cauliflower, and a green salad.
We may not get to go to DGS's graduation because my DIL's relatives are all flying in from Equador at the last minute to go (no advance warning so not enough tickets). They hardly ever see him, so I certainly don't mind giving up our seats so that they can go. We'll see him at the grad party on Saturday.
-
This is the recipe we use for Hollandaise Sauce... DH makes it right in one of those big 4 cup Pyrex measuring cups... The important part is the cooking for short intervals and stirring until it's thick. You don't want to take it too far and cook the egg yolks...
http://www.food.com/recipe/easy-hollandaise-sauce-121586
And for those like me who are poaching challenged (I had tried everything... put vinegar in the water... don't put vinegar, swirl the water then put the egg in, etc.... lol) and then I found these...
http://www.amazon.com/Fusionbrands-3-Inch-Silicone-Poach-Poaching/dp/B000P6FD3I/ref=sr_1_1?ie=UTF8&qid=1337780196&sr=8-1
Once you get the timing down, Perfect poached eggs everytime!!
For those who like the taste of eggs benedict but not the runny yolk, we sometimes make this Eggs Benedict Casserole when we have a crowd and want something a little different than the usual Jimmy Dean Sausage or the french toast one...
http://www.food.com/recipe/eggs-benedict-casserole-121583 -
Deborye,
Have you tried Michael's or AC Moore for the organza bags? Michael's shows them on their web site so they may have them at your local store, too. If not, maybe Amazon? They have everything... lol!
Hope your daughter enjoys her shower!! -
Carrie- Sorry your meds are leaving you with no appetite and no energy. Maybe make a casserole of some sort that you can reheat and not have to cook for a couple of days. Some people dont care for leftovers by DH does not mind infact they always get better the next days. Hope you feel better.
Kaara- Thats sweet of you to give up your tickets. What ever happened to just being able to go with out having tickets? I remember anyone could go and you didnt have to rsvp either.
-
I love eggs Benedict. DH used to make the sauce from scratch for us, before kids.
Busy day today ran errands and went to the park to meet friends. My sil called at lunch time and asked I'd the boys could have a sleep over. Well yes!! When DS #2 wakes up from nap ill drop them off and head to the grocery store to get loaded up for camping ill start my preping tonight for the weekend. I haven't even thought about what's for dinner.
I need to get my act together and go get a new modem and go buy a stove. Sounds like the surge protector company will only give us 500 dollars if we don't file a claim with our insurance company. Which we won't / can't do. For one its not worth it, two after what they covered last year with the lightning strike I'm pretty sure they would drop us. But 500 is better than nothing so I'm grateful.
Michelle Paris is so close!! I'm excited for you!! -
Seaside- Never made it with whipping cream but will try it. and the casserole sounds yummy too. I don't have a problems with poaching eggs the trick is to dont let the water go over simmer and swirl barely with slotting spoon lol! The neat gadgets they come up with these days, love em!
-
I am baking a ham.. they were 6 dollars off, and found some fantastic artichokes for only 2 dollars.. they are ready to go, and will make cornbread which i will eat with butter and syrup. it's nice to eat again.
-
Hi everyone! First, thanks to all for the anniversary wishes! The day didn't go exactly as planned, but it was nice nonetheless. I went for my massage and mani/pedi but somehow they didn't have me listed for a hot stone massage. So the stones weren't ready. Instead I got a deep tissue massage, and when I say deep, I mean deep. OMG, she hurt me...LOL! But I had so many knots I wonder how I was walking around. They're gone now, I assure you! And I was supposed to be out of there by 5, but it was 6 before I got home. In the meantime DH tried to get reservations at La Morra and couldn't. It was either 5:45 or 8:30. Neither of those times would work, especially mid-week. So we ended up at a place in Nashua called Unum. It was very good, I had grilled tuna that was crusted with crushed black sesame seeds. The dish had grilled artichokes, grape tomatoes, and some crispy rice. DH had a filet and he was happy. So we still have to get to La Morra.
I just got home from today's running around that included going from here to my daughter's, then we picked up her wheelchair, then back to her place, then to my mom's, then out to Acton to meet my other daughter for lunch, then to DGD's pre-school for their end of year performance, then back to my mom's, then back home. Yeah, probably 175 miles...lol!!! I'll be glad when I get on that airplane Friday evening!!!
Everyone's food sounds yummy, especially since DH has decided we are having pizza...again, unless I can talk him out of it. We emptied the fridge this morning (it's trash day) so the only short-life perishables are some berries and a yogurt.
And Seaside - thanks for the whole Michael J. Fox quote, it's so true!
-
Michelle...wow you're leaving Friday...bet you are excited!
Laurie...your camping trip sounds like fun. We used to do that with the kids when they were young!
Looks like we're going to the graduation after all. DGS was able to find a couple more tickets from someone else who wasn't going, so we're back on the list. Another early morning for us, so early bedtime tonight.
I'm having baked salmon, spinach sauteed with garlic and quinoa for dinner tonight.
-
Michelle You need to slow down..you are making me tired and dizzy! LOL I hope Paris is ready for you.
Laurie Have a great camping trip. We used to camp when the kids were growing up and I remember how much work it was getting ready to go and then unpacking when you get home. We have some really great memories though of those days, when the kids were uncomplicated. We still have the camper, but it is only used to tailgate at Buffalo Bills games now.
Apple so glad you have your appetite back and enjoying food again. Love having leftover ham, there is so much you can do with it.
Seaside thanks for the recipes, that casserole sounds good. Would be good to take to a brunch.
-
I will try Michaels, we have one right down the street.
Well, listen to this, woke up this morning with a very sore dark pink swollen left breast. Scared the living daylights out of me. It's the same breast I had surgery and rads 5 years ago. Thought I had IBC. Called my BS and the nurse said come in as soon as you can. I made it from Westford to Woburn in just a little over a half hour.
The nurse took my temp, 99.7 check out my tata, said it is an infection. WTH is with that, how did I get an infection? They said I was the second case today and only IV anti biotic will work so they were going to admit me for 48 hours. After a few other doctors looked at me and me not happy going into the hospital just for IV's they said we will try an oral anti biotic. I have to go back Friday afternoon and if there is no change I will be spending part of Memorial Day weekend in the hospital. I can't believe how hot and sore and swollen my breast is. They may take a biopsy Friday just to make sure. Keep your fingers crossed that the oral anti biotic works.
-
Oh Deb, I am so sorry to learn of your "condition" and do hope that the oral antibiotics clear up the infection. I sometimes feels like we are never out of the woods with this damn BC....even with you being so far along in treatment. I have been having a lot of stabbing pain in lumpectomied breast, and wonder how long that will be with me. A little overexhuberant 7 year old came running up to me at school and threw his arms around me and knocked his head against that side. Thought I'd pass out! By the way, I'm pretty sure that I got my little organza favor bags at either Michael's or Joanne's
-
Deb: That sounds awful...I'm sure you were scared to death with that being one of the symptoms of IBC. Good you went right in to get a dx.
Apple: Good that you're enjoying food again!
-
Michelle- Sounds like a perfect day and night even though it changed. Those deep tissue mass do hurt but hoped it helped. I'm so excited for you to be leaving Friday and cant wait to hear all the fun you are having, hope you will post pictures and keep us updated.
Everyones dinner sounds so good. ham, salmon. pizza yummm! Its making me hungry, think im going to the golf course for dinner while hubby golfs and play some keno and have a hot cocoa. Its cold and rainy here.
Deb- Saw your post on FB, Hope they get this figured out and its nothing more than an infection. (((hugs))))
