So...whats for dinner?

Michelle - I don't use Facebook either so thanks also for the blog. Apple - thanks for the link about the rice cakes. Debbie - now I'm going to have to make Patty Melts. Deb - did you get sprung? Carole - I'm with you. I just don't fry at home so it's a treat to eat fried shrimp & oysters out.
A friend brought me two zucchini & two yellow squash yesterday. All are bigger than the "personal" watermelons in the store. I steamed one of each with garlic & onions & sprinkled one with a romano cheese blend & one with herbs de provence. Served with 1/2 a leftover chicken breast previously baked in herbs and also fresh green beans topped w/mushrooms sauted in butter. Needless to say I have lots of left overs & I still have one of each left to cook.
Tomorrow I'm going to try Michelle's eye of the round roast that you let sit in the oven for 2-1/2 hours after cooking. And as long as the oven is on in our mid 90 degree temperature, I'll roast some cauliflower & carrots.
Happy Holiday to all.
-
Oops - Laurie - I too send belated B-day wishes & hope you're having fun camping.
-
Debbie, are you the person who is watching The Big C? I just finished watching Season 1 and was not sure if Season 2 is the one currently being aired or if that was last year's and is also on DVD ? Really enjoyed Season 1.
-
Yes, she is "slawson" on bco, but she doesn't post too much. I guess I'm the social butterfly in this case--a very unusual thing. :-)
I learned to cook while in college in the early 80s.

Seaside- A carribean cruise sounds like fun too! I have been on boats but never a cruise ship before. If i remember right you and i share the same birthday dont we? June 12th.
Kay- I think when you are on vacation everything does taste better, but also have heard the water makes a big difference in the taste of the pizza dough. Strange eh?
Bedo- Enjoy your alone time and your good book. Dont forget the wine though hehe!
Minustwo- Zucchini and yellow squash is my favorite i cant believe they were out of both at our local store a few days ago, who woud of thought that it was picnic kind of food for the holidays! Hmmm!
Lacey- Yes, it is season 2 now for the Big C. I think its about 4 epidisodes into season 2. If you have charter on demand you can catch up, i think you said you didnt have it. they should have those out now on DVD. Laurie is the one who turned me on to it. Im so addictied to it now, it cracks me up.
Eric- Well im sure she is thankful for all the knowledge you are learning here including cooking lol!
-
Move over June 12thers....I'm on that gemini date too. Debbie, It was funny to see you post that....Yikes! I thought.....That's MY birthday! Maybe we should have a little virtual celebration.
Thanks for The Big C info....we have On Demand, but dropped Showtime, so not sure if we can get The Big C through On Demand withoutbthat subscription ( you can tell how experienced I am with the TV). I love that show....the writing and acting is great.....funny and poignant at the same time, and Laura Linney is perfect in her role.
So this afternoon, I dragged out getting to our neighbor's graduation event "knowing" that it was 4-8, so figured we'd be there for plenty of time if we went at 6. Surprise, surprise, we got to the venue, saw very few cars, and our neighbor carrying some food trays to his car. MY BAD!!! This was the 2-6 event, not the 4-8 event that is another day. Fortunately, we just met up with them and some of their good friends and relatives next door and had a nice smaller visit....less food, but that is fine with me. I think I am definitely not attending to detail like I always have in the past. This was not much of a problem, (except for poor DH who had skipped lunch, anticipating a catered feast) but I'd better get back in mental shape!
Kay, hearing you say, " down the shore" brings me back to my childhood, where I spent so much time every summer. I would kill for Philly or NJ shore pizza. My one complaint about this area is that I miss that style of Italian pizza, for which DH and I are always searching.
Eric, a cooking, social butterfly engineer, now that brings a smile to my face.
Deb, hope you are all healed and sleeping comfortably at home with visions of organza mini bags dancing in your head. -
Debbie,
Yep.... June 12th is the day!! Wow, you have a great memory!
Sooo here's the thing.... I have never really felt comfortable with what date to celebrate my cancer-versary... Don't like my diagnosis date as, for me, that date sucked.... Maybe surgery date.... Don't love that either.... Closest I can come to a date that feels right to me to celebrate is the date of final active treatment (Oct 2, the day before our Anniversary) or my Birthday! Couldn't choose one, so we celebrate both!!
Can't wait for the cruise.... We went on one waaaaaaay back in the day when we were dating.... But, while we had really great time, our room was one step above 'having to row the boat'.... Looking forward to better accommodations this time.... Now have to try some different sea-sickness meds.... Dramamine works for me for air travel but, someone reccommended Bonine for a longer acting treatment....
Anyhow...... We will have to be sure to both celebrate on the 12th!!! -
OMG Lacey...... Seems we have ourselves a Birthday Club!!! Who would have thought that 3 different people would all share the same birthday??!!!
-
Good morning from Paris - it's 8:54 a.m. which means most of you all are or should be in dreamland right now, except maybe Debbie and Eric. I am enjoying a cup of coffee before I go rouse the crew for breakfast. We will probably eat leftovers from yesterday - pain au chocolat, baguette, a raisin pasty, yogurt, cheese, juice and a few leftover strawberries. We want to keep it light because lunch will be in Le Jules Verne on the second level of the Eiffel Tower...undoubtedly the most expensive meal we'll have on this trip. But it's the only way to bypass the lines and get my daughter up to the second level, so it's a worthwhile luxury.
I'm not going to try and comment on everyone's posts, but I did a quick read and it sounds like everyone is doing well and enjoying the holiday weekend.
I'll let you know when I have a new blog entry for yesterday's fun. I'm trying to keep up with it so I don't forget a single moment!!!
Au revoir, mes amies!
-
Wow!! The 3 of us on here share the same birthday! That is too funny, and so cool! We definately have to cyber celebrate together. haha!
Lacey- sorry you didnt get to your neighbors grad party, sounds like somthing i would do to, always getting times and dates mixed up. But you could probably blame it on chemo brain, i still do!
Seaside- I dont normally have a good memory but remember the important stuff lol! I think most of the ladies here celebrate there cancerversary's on the last date of tx. I know i do. I was DX at the end of December of 09 but didnt start tx until May of 10 because of wound infection i got during Mx. Funny ( not funny haha) but i had lung cancer in 03 and had part of my left lung removed and never remember the dates on that, although it was a major surgery and hell to go through i will always remember my last date of tx for bc.
Be nice if we could find a way for us all to celebrate together!
-
Michelle- Yes, im up its funny seeing you on here this time of night. LOL! Your breakfast sounds yummy! I cant wait for you to share your day about the Effiel Tower, how exciting for you that is somthing i always dreamed about seeing. I will be checking your blog daily to see if you have any new pictures.

I just made roasted veggies and they were good. The latest roasted veggie mix: quartered onions, lots of whole garlic cloves, chunks of sweet potato, halved or quartered beets, whole baby roma tomatoes (just a handful), salt, pepper, olive oil, roast for 30 minutes or so turning once or twice. Veggies should be cooked through and browned a little here and there.
-
Michelle: You trip sounds so exciting...love it that you're having such a great time!
Seaside: If you want something for seasickness, try the patch that can be prescribed by your doctor. I cut it in quarters and use only a quarter at a time behind your ear, and it works like magic. I can get seasick sitting in dock! It also allows you to enjoy the cruise, have a few drinks, and not get so drowsy.
I'm part of the gemini crowd as well, but my birthday is on the 17th.
Momine..those roasted veggies sound good...I think I'll make them with the pork loin I'm cooking today.
My little DGGD is in the hospital..she had another seizure from high fever...so scary. Doc's say it's normal for some babies and she will outgrow it. I hope soon!
-
Kaara - best wishes to your granddaughter. It does seems little kids do have a lot of seizures. My friend's son had 3 before they got him stable... but he's totally fine now and doesn't take any meds.
Michelle - I'll be travelling along with you in a little pouch in your purse.. invisible but watching the sites and scenes of Paris.. Enjoy.
-
Happy Memorial Day!
-
Hi Debbie
The weather on the coast this weekend is very wet. It's what us coasties are use to , lol, but still enjoying the relaxed time just hanging at home.
We had the most amazing taco salad at our friends house last night. She had ground turkey in it, with the taco seasoning, onions, olives, mushrooms, lettuce, chees, tomatoes, alvacados, kidney beans, cool ranch dorittos, and italian dressing.

I'm taking my 94 year old mom to the cemetary in about an hour...to see my dad/her husband.... He's guarding the streets of heaven.
Dad retired a Major, USMC in 1964 after 30 years of service. -
so it's wild raspberry season.. I made my first batch of jam and will probably pick twice as many berries tomorrow and make it again. yum
-
Apple, double yum on the wild rasberries. Strong envy from here that you have access to your own crop. Have a ball making jam!
Happy Memorial Day everyone! -
I've never made rasberry jam. That sounds most excellent! I'm jealous.
Do you have to add pectin to get it to jell?
-
The closest I've ever come to homemade jam is the kind I buy at the fruit stands;) I'll be it's delicious!
eric95us: That's a very nice thing for you and your mom to do on Memorial Day. My BF's mom is 97 and every year when we go to visit her in Wisc. we take her to the cemetery to visit her DH and one of her DD's who passed several years ago. Then we go to lunch...it's a ritual.
-
eric95 - I've used this recipe for 2 years now.. no pectic.. it's pretty delicious.. it dissappears so fast.
-
Apple, that sounds really good. I LOVE raspberries. We had black currants in our garden as well when I was a kid, and they go really well with raspberries. My mother used to make a runny jam mixing them. Very good on yogurt.
-
Apple, do you strain it or just enjoy the seeds?
-
i might strain them next time.. i'll see what people say.. they are pretty crunchy... but don't bother me. they look quite beautiful.
i better go taste some.
-
I'm eating some frozen yogurt right now...the "runny jam" on the yogurt sounds really good...better than the caramel....I think.....
Apple: My fiancee had great success making jelly without having to add pectin. I usually ended up with a pancake syrup.
-
Apple, sorry
to add to the "pile up" on you.
What's the general recipe? I remember being told the ripeness of the fruit was important. Is it?
I saw some rasberries in the store earlier.. I'm going to go back by and get a rose for mom to take to dad...and I could get rasberries. I'm always up for trying new things.
-
Zumbagirl- Luckily its not raining here by us, and suppose to be around 60ish be a great day for fleet of the flowers we are going to in a little while.
Yumm on the jam recipe i have a pressure cooker i bought last year and have only used it twice i have to get it back out and start canning again i want to make the jam without the pectin.
Going to have a busy day today and i cant get moving!
Happy Memorial Day!
-
ok.. it is waaaaasy toooo seeedy so i will strain it tomorrow... definitely. The raspberries might have been the early ones. They were big and juicy, but should be even better tomorrow. I don't remember it as being seedy last year. Maybe i boiled the seeds longer. it also has too much sugar. equal parts make it too sweet. I might try adding 1/2 a lemon. I have some pectic.... here is the recipe i used again.. Last year it was fantastic.

Went to a local farm with some friends and bought "starter" big boy tomatoes, cherry tomatoes, zuccini and fed the goats. The big one kept "head butting" the little one out of the way when we tried to feed them greens, hence, we gave him a new name, Butthead, and tricked him into going to the far side of the fence so the little one could eat.
The organic garden is coming along.
I had a revelation this 3 day weekend. I thought, Waaaaait a minute! I haven't taken any vacation time this year, if I start in a month, I could take almost every Friday off and usually have a 3 day weekend!!! I might tell them in Jan that I'm going part time, as that will be my year mark.
Speaking of berries, whatever happened to Gooseberries? I remember picking them in Michigan when I was about 8 and my Gramma making Gooseberry pie??
I'm glad that things are turning around for a lot of people.
