    We're having oriental chicken soup with oriental dumplings in it tonite (potstickers, frozen from Costco).

    Old fashion Meatloaf tonight, just popped it into the oven.  one egg, couple of hand fulls of garlic bread crumbs, oregano, thyme, salt and pepper.  After I form the loaf I mix up half cup of ketchup, 2tbl spoons of wocestershire sauce and half cup of water, poke 3 holes about an inch deep on top of the Meatloaf and just pour all over it.  Bake at 350 til done.

    Deb- I am a big fan of meatloaf, enjoy.

    Well, DS #2 was sick again.  Thank God for mothers intuition.  He was sitting on the couch and had a look on his face and I grabbed him and ran for it.  I saved the couch, not the rug.  Thankfully I have a carpet cleaner and just finished washing the area rug in the living room.  Dinner was scrapped- calling in a pizza and going to pick it up.

    Hi Everyone, Im bacK and missed you!! My sucky phone wont let me d/l bco so wasnt able to post here. So many pages to read through tomorrow when im not so tired but wanted to poop in and say hi! I had a fabulous time, did a sail on the ocean on a cateran, drove around the island, took in a great dinner show, ate not so healthy but wonderful food, and of course had tropical drinks, and either layed out on the beach or poolside, got a great tan but wont be able to show it off here because its so darn cold.. My grandduagher was there for a week, which was our graduation gift to her, she didnt want to leave, as did we but it is always so good to be home in your own bed. I know i gained 10 pounds because my returning home pants wouldnt even zip up let alone button. I guess all the walking we did, didnt help one bit!

    Our flight to seattle was very bumpy, did a lot of praying and the guy next to me had the most atrocious bad breath i actually thougth i would pukeMoney mouth, and he wanted to talk the whole way, i had to cover my nose  with my coat, I told him my nose was cold because i didnt want to imbarrase him, but my DH could even smell it from the other side of me. (ick). Then when we boarded to portland sat there on the runway for almost 2 hours because of a computer problem, i already hate flying am one of those white knuckles kind of flyer, one man decided to leave, i wanted to follow but DH wouldnt let me, Then the pilot says well we have one side of the cock pit working we should be fine, Im thinking, are you kidding me right now, let me off this dam plane NOW!!.I prayed the whole way on that one too. LOL! Drove the 2 hours home without any sleep. I will never do the red eye again. 

    Wasnt sure what kind of condition my house was going to be in, seems we missed one hell of a storm here,(yay)  roads going in and out of lincoln city was closed for a couple of days because of trees down, snow, heavy flooding and 95 mph winds. All was fine,,, now tomorrow they are expecting a lot more of the same for the next few days ( oh goody) Feels so cold after being in hot sun for 2 weeks, but not complaing, glad to be back.

    Cant wait to read all about what is going on with everyone, hope you are all doing fine, MICHELLE, Congrats on your finishing your Rads, checked into fb every once in a while to check on you!!

    Laurie - I found this recipe for "Canadian" baked beans...I'm betting this is what we tasted growing up:

    I think the big difference is that maple syrup is used instead of molasses.  I'm going to make this recipe, except exchange half the real syrup for the sugar-free stuff.  Gotta draw the line somewhere  Foot in mouth

    DS #2 is feeling better, thank goodness.  The pizza last night hit the spot to say the least!  Tonight I am doing the burger with zucchini recipe I haven't done since summer when zucchini was plentiful.

    Hi everyone:  I was on this thread several months ago, but got caught up in my dx, surgery and treatment options.  Starting rads soon, but surgery went well so I'm ready to continue with my healthy diet and cooking good whole foods.  I agree that everything is so expensive...I don't know how families with small children manage.  I spend as much for two as I used to spend for my family of six!

    Tonight I'm having friends over and we're having lettuce wraps that I make from turkey hamburger, water chestnuts, green onions, shredded carrots, light soy sauce, rice wine vinegar, and hoisin sauce.  Spoon some in a lettuce leaf and enjoy.  Very easy to make.  We usually run to the chinese take out for a couple of other entrees with brown rice to top it off.

    Thanks for the welcome back Laurie, Michelle and Carrie. Yes it is back to cooking my own meals now, i was really spoiled but tonight im making a lot of vegetables im craving. I ate a lot of fish and rice, great flame broiled hamburgers but really didnt eat vegetables. Tonight is broccoli, zucchini, and squash with pork chops for DH.

    Finally finished all the post, there were lots of great recipes i copy/pasted, One recipe i noticed was chicken piccata i think it is the same one i have cooked and posted here the only difference was i dont use the vinegar, the reason why is it does make it a little sour, someone mentioned that but if you leave the vinegar out it wont be sour at least for me it wasnt. It is one of my favorite dishes also make it with fish.

    The crap cakes and bat leaves cracked me up you all are so funny thats why i love this thread so much its so good to be back with friends.

    Kaara- Your recipe sounds good, i love lettuce wraps had some at pk changs in hawaii there food is so yummy.

    And the stupid award of the week goes to - ME! I have a nice little burn with a blister, thats a little smaller than a dime, on the left side of my chest. I didn't even notice it until this morning in the shower.  How did this happen, you ask? I was carrying a couple of things and one of them was a hot bowl. I held it against my chest, so I could carry more stuff. I knew the bowl was hot, I had a pot holder in my hand. Never even thought about my chest. I didn't feel a thing. I put bacitracin and a bandaid on it. I have an MD appointment tomorrow and I'll make sure she takes a look at it.

    Speaking of MDs - Does anyone have any advice on how to go about replacing a PCP that you've had for 20 years? Mine suddenly left and I'm heart broken. She was great. She was the director of the Women's Health Center at the hospital I go to and they've really started messing with the department, so I can't really blame her. I keep looking at the list of doctors hoping her name will suddenly reappear.Tomorrows appointment is for a pre-op physical for arthroscopic surgery on my knee. I just went with whoever had the most convenient time.

    Laurie - I found salt pork today at the end of the meat aisle (Shaw's).  I bought everything and I am going to make these beans tomorrow...which means they need to soak tonight!

    Welcome back Debbie! I missed you too. I made the chicken piccata tonight. DH and I liked it, but my DS and DD did not :(. Oh well maybe next time. We had Brussels sprouts, salad and leftover rice with it.



    Hauntie, that sounds sore. Good luck finding a new PCP. My onc had a baby at the end of November and I am missing her, so I know how you feel. But at least she will be back. And good luck with your knee surgery. When do you get that done?

    Hauntie - hope the burn heals OK.  I've had to find new doctors more times than I can count because we've moved around a bit.  Get some recommendations and have an "introductory" appointment before you have something that requires urgent care.  I think I got lucky this time with my new PCP.  She is part of the Eliot Hospital system, they use e-records and I can see all my information online, I can even request an appointment through the system.  And she has access to my Dana Farber records.  All in all, a very good fit.

    It was Taco Tuesday in our house tonight.  My DH and I were reminiscing about the brand of white corn tortilla shells we could buy in Missouri but are not available here - La Tiara.  They are extremely light and crispy and were our absolute favorites.  I could order them online but they would end up costing about $6 a dozen, which seems high.  I may still do it...

    Kay- thanks, DH dosnt like capers so he dosnt like it, you have to love capers and lemon juice which i do to really like this dish

    Hauntie- Ohhh that sounds terrible hope it heals ok, sorry about your pcp hope you find someone just as good or better

    Joyce- Hope you are having great weather in Florida!

    Michelle- The beans sound good, is the salt pork the same as ham bones?

    Vivi- Your tortillas sounds so good. I love the vegan cheese i buy for my dad when he comes to visit but it seems to have to much sodium in it so i go easy on it when i do use it.

    Debbie- way to make a girl feel better, I had no idea about the pork salt- felt kind of dumb :/

    Hauntie- I hope you have luck with the Dr situation, sorry I don't have advice.  Hope your chest heals  well, stupid numbness- I have issues with it as well, but to date have not burned myself.  Hope you're doing ok.

    I wish I could make some of the stuff you ladies post, it is right up my ally.  Too bad I have to please the crowd.  Michelle- my kiddos would have been thrilled with your taco Tuesday!

    Debbie, salt pork is from the same part of the pig as bacon but has not been smoked, simply cured with salt to preserve it.  Good in beans, lentils etc.  Lots of old world peasant dishes call for a bit of it for seasoning and richness.  Even our little grocery store carries it most of the time.  Just ask your meat man if you don't see it.

    Vivi  welcome!  looking forward to some good ole southern cooking.  What is mexican corn?  do you buy it that way frozen? or mix up your own mix?

    Last night we finished up the last of the tilapia from the freezer, made it on top of the stove with a lemon caper butter sauce....I love capers with lemon....maybe because they add a saltiness.  Had a side of rice pilaf and oriental veges mixed together.  My DH was not impressed.....said he was still hungry. Having a really hard time getting him to lighten up. LOL  this morning he asked me if I wanted to go for a big juicy steak tonight.

    Hauntie   Good luck with your knee surgery.  Good luck with your Dr. finding....word of mouth is usually a good indicator of who is good in the area. I personally like female physicians..I think they have more compassion....just my opinion.

    I bought a giant jar of capers at Costco. Bedo posted a recipe for pasta using it. Don't think I'll be making the chicken piccata much since DD and DS don't care for it. Even though I thought it was really good, and so did DH. How did you do the fish Carrie? I would make flounder that way. How is your mom doing?



    So Dance Moms was on last night. DD watched it, but DH opted for the state of the union. It was a particularly nasty episode with one mom arguing with a mom from another studio. They were talking about it on live with Kelly this morning. Kelly's daughter watched the show and after seeing the moms fight like that, asked if she could take dance lessons. LOL.

    The French Canadian baked beans are in the oven...they cook for 8 hours so they should be ready just in time for dinner tonight.  It was very easy to throw together.  You might be able to cook them in a crockpot but I went for the oven.  I have an MO appointment at 2, should be nothing but routine.  I'll have to check the beans before I leave - you don't want them to dry out at all.

    Today I was need of some comfort, so decided to skip the goody-two-shoes. I made cornbread from coarse polenta, yogurt and eggs. I stuffed it with sauteed onions and spinach. It was good.

    This is restaurant week downtown. Heading down to a snooty restaurant my MIL gave us a gift certificate for a year ago. I haven't been to a snooty restaurant in quite a while. Hope it's good.

    I feel the same way, I make the same old thing all the time. 

    DH requested grilled chicken sandwiches for dinner.  Kind of random, but I am good with that, easy and haven't had one in a long time.  Wish I had an avocado to slice and have on it....oh and some of Michelle's baked beans!
