    For all those sweet and salty fans, you haven't lived until you've tried chocolate covered potato chips.

    Desserts - now you're speaking my language. I don't cook many meals, but will make desserts for any get together.

    Here's an easy no-bake pie recipe. I made it and took it to Maine. It was the perfect dessert after that super rich lobster casserole.

    Lemon Ice Box Pie

    * 1 (9 inch) prepared graham cracker crust (I used the lower fat version)
    * 2 (8 ounce) packages cream cheese, softened (I used the lower fat version)
    * 1 (14 ounce) can sweetened condensed milk
    * 2 lemons, juiced
    * 1 teaspoon lemon zest

    Directions

    1. In a medium mixing bowl, beat cream cheese until fluffy. Add condensed milk, lemon juice, and lemon rind. Mix until smooth. Pour mixture into crust. Refrigerate at least 2 hours before serving. Garnish with whipped cream and mint leaves if desired.

    Depending on the size of your lemons, this pie can be very lemony. I measured how much lemon juice the two lemons I used produced, but I can't remember whether it was 2/3 cup or 1/2 cup. You may want to hold out some lemon juice, taste the filling, then add more lemon juice to taste. If you use as much lemon juice as I did, you definitely need to top it with whipped cream.  I thought it was a bit too sour, but everyone else loved it just the way it was.

    Chaba:  I by no means stopped eating chocolate & always have candy around.  I just don't bak much either.  Now I love dark chocolate too, which I didn't like as a kid.  I just seem to reach more for salt.  Which thread is the Cheeto place?  Those are addictive.

    Hauntie:  Thanks for the Lemon Ice Box Pie.  It reminded me of a dessert my Mother used to make in the early 50's that I'd forgotten all about.  Who remembers the old refrigerators with a pull down door to the TINY frozen compartment inside the fridge.  And the ice trays that were thin aluminum rectangles?  My Mother's recipe is below but I'm going to try Haunties for a change.

    Lemon Frozen Dessert

    Mix:  3 beaten egg yolks,  1/4 cup lemon juice,  1/2 grated lemon rind,  1/4 tsp salt, 1/2 cup sugar.  Cook until thickened.  Beat 3 egg whites with 1 Tblsp sugar.  Add to lemon mixture.  Whip 1 cup heavy cream & fold in.  Crush vanilla wafers & spread evenly on the bottom of ice cube tray (obsolete I'm sure but maybe similar to the dimensions of a loaf pan?).  Pour lemon mix on top & freeze.

    Speaking of baking - my mother & grandmother baked every day.  My grandpa only liked two kinds of pie - hot & cold.

    Hauntie - oh my, chocolate covered potato chips???  How do they make those and keep the chips crispy?

    I prefer dark chocolate to milk chocolate, always have.  It's weird because my DH says the dark is too sweet and he prefers milk chocolate.  I would say that milk chocolate is too sweet.  We have quite a bit of Lindt and Godiva chocolate hanging around, leftovers from Christmas.  Luckily, I can look at it and not be overly tempted.

    oooohhh Bedo you must be so excited!  Cant wait for the details.

    That lemon pie sounds so good....my DH found a new ice cream...key lime pie..it tastes just like the pie with crust mixed in  yum.

    Our Wegmans grocery store sells the Puttnesca sauce and it is my ultimate favorite...my Dh does not like it because it is on the salty side with the capers and olives, it also has chunks of artichokes in it.

    My Memere introduced me to chocolate and salt when I was little.  She and I sat down with a bag of Wise potato chips and Hershey bars- HEAVEN!

    Kay- LOl at your DH!  Years ago we were supposed to meet friends at a bar for an ap and drinks and we were late to meet them.  We got there and I said sorry we are late- someone- (pointed to DH) had to finish watching Sweet Home Alabama for the hundredth time.  He laughed it off but on the way home he was serious when he said- DO NOT ever tell anybody I watch crap like that, LOL!  To this day when I see him watching a chick flick, for the hundredth time I razz him. 

    Tonight by request is Shepard's pie, I think DH was cold, he called at noon time and asked me to make it.

    Put a baking sheet on the bottom oven rack and preheat to 375 degrees. Peel 4lbs of Yukon gold potatoes and cut into wedges. Toss with 1/2c olive oil, 6 chopped sage leaves, 2 springs sage, 2 tsp kosher salt & 1/2 teaspoon pepper. Spread on the hot baking sheet and roast 30 min. Stir, then add 8 smashed garlic cloves, continue roasting until golden, about 30 min. Increase the temp to 400 and cook until crisp, about 15 min more. Season with salt.

    Pretty bad when that picture makes me hungry & I vowed 2 hours ago to never eat again.  Fried lunch that I only indulge in once a year - fried shrimp, fried onion rings, coleslaw,  5 pieces of bread & butter, Pinot Grigio.  This was a "loosen the top button of your pants" lunch.

    I wrote down the roasted potatoe w garlic wedge recipie. It sounds delicious. I am going to make it tomorrow, and dip them in homeade ranch ,,,,,,,yum. Tonight I made steel cut oats with blueberries, and almond milk. It was a breakfast for dinner type of night.

    I like to roast the little red potatos like that   they are so delicious.

    Last night was a bowl of chicken noodle soup.  I have a cold  argh!  Must have picked up a germ at that party we went to.

    Laurie  must be all husbands like the chick flicks....mine too...when picking out movies he always wants the ones about weddings or bridesmaids, yuck  I like action adventure with a little mystery thrown in.

    Cant wait to hear of Debbie's travels.  She definitely wont be happy when she sees what Portland is doing.

    Carrie- too funny your DH is a chick flick guy too!!  Mine loves all the Bourne movies and adventure etc but I catch him watching other things like Leap Year when he is going to bed, lol!  He would not be happy that I am telling you ladies this!

    I put a corned beef  dinner in the crock pot this morning and it smells so good!  We haven't had it in so long.  DH is going to be excited.  I bought it about 4 days ago and everynight he has come home hoping it is what I made.

    Laurie Its good to get a jump on St. Patty's day!!  Love corned beef, but mostly the cabbage that goes with it.  Just noticed your info...you are one year out on the 10th?  A big milestone right?

    Trying to atone for my fried extravaganza yesterday so today was a one meal only day.  First course was a cup of raw cauliflower & a large cucumber.  Main dish was roasted carrots & turnips & onion quarters w/EVO, garlic & dill.  I'll wait and have dessert before bed - fresh coleslaw.  Really need to get back to exercizing.

    Talked to a neighbor's DH who only watches war & violence flicks but loved ...Dragon Tatoo (the movie of course)

    That is funny Carrie! My DH is a chick flick guy too. Surprise, surprise with Dance Moms and General Hospital. He had Family Man on the DVR. I swear he watched it thousands of times. Days on end, drove me crazy. I am an action adventure person too. Although I have a soft spot for movies about teachers too for some reason. And Ghost and Dirty Dancing. LOL

    Had pizza for lunch and DH is out of town, so had clementines and salad for dinner. DD had a Mac and cheese frozen dinner.
