Michelle~The Dinty Moore beef stew was something like your Chicken Pot Pie. DH was squawking about not enough meat, LOL. I'll make my own Beef Stew from now on, it is real fast and tasty in my pressure cooker. I never made a homemade Chicken Pot Pie.

Luv, I make greek yogurt into all kinds of dipping sauces and toppings. You can add almost any herb to it, garlic, spices etc. If you use the 0% fat one, it is really a lot of flavor for very few calories.

I saw the help and then read the book. Both were very good. I tried to read the girl with the dragon tattoo, but couldn't get ino it. I kept losing my place and not knowing who everyone was. Maybe i'll try it again since now I know the story.

I was reading the girl with the dragon tattoo...my daughter bought for me back in July for my birthday...and I finally said the heck with it...went to the movie with her over Christmas break, the book was very difficult to get into. I have the next book also and cant get into that either.
The cornish game hens were good last night My DH and I shared one, will use the other one for soup
tonight maybe meatball subs, I think I have just enough meatballs in the freezer to do this.

Hi Ladies..............thought I would drop buy and say hello.................Just got done putting on a pot of homemade soup,...............I live alone, so ask me why I just did a pot of soup big enough to feed an small army...........guess you never get out of the "big cooking" habit, after having 6 kids.
Las week I was very busy .........my grandson had shoulder surgery, so I sent him homemade Wedding soup, and made him a B lueberry pound cake............made cucuzza (squash) for my grandaughter (his sister). She loves it......its done with garlic, and fresh tomatoes......
Then another grandson had surgery on his foot something called a LisFranc fracture, pins, rods, the whole thing.....................so he loves homemade soup too, so I made him that, and he also loves my homemade "hoagies", so I bought all the fixins and sent him 6.............and a big bag of "string cheese".
Now I have another pot of soup on, and made homemade chicken salad from a Rotissere chicken I bought from BJ's and only ate the wings and legs...........the whole breast was left over..so I did chicken salad with that..............I don't like chicken salad, so someone will get that too.
I love to cook, and bake. I do miss the big family meals, but "life goes on, with or without you"....
The soup smells so good, and I'm thinking of making some cookies later today ...............it is rainy, and miserable here, one of those days when you should stay in bed...............or cook......................so I chose the later.....................hahahaha...............have a great day ladies................hugs.

Manicotti with shrimp reminds me of one of my favorite "inspirations" - crepes stuffed with shrimp newburg and drizzled with some of the newberg sauce. I use the large shrimp cut into bite sized pieces. It has always been a big hit at dinner parties.

Ducky- it sounds like you have been doing a lot of cooking, the soups sound great! I really should make a soup this week.
I loved the Help and trudged my way through all three books of The Girl With the Dragon Tattoo. I felt like I had to finish once I started, but found them quite boring. I think you either love them or hate them. They are hard to get into, I am willing to bet that they will make a movie of all three too. I haven't seen either movie. I always just wait for them to come on HBO or Showtime. Meaning I have to wait awhile!

LuvRving I laughed at your husband's request for brownies. Sometimes we wonder where they are coming from! As far as your chicken pie recipe goes. My Mom used to say to me. "There was a little girl, with a little curl, right in the middle of her forehead. And when she was good, she was very Very good and when she was bad she was horrid " I think she meant me. I'm sure you are very very good and I'm sure your haircut looks good, even if it has a little curl.

I am still looking for a recipe I made a long time ago that was a vegetable pie with a beautiful crust.. It had big chucks of fresh mushrooms, winter squash, I think butternut, carrots, onions, maybe rosemary?? It made me sad that I lost it, and I've been looking for it for years. Any ideas of something similair?
PS, my car died today. The timing belt shot the engine. The car was worth maybe $1200. So I had it towed to my favorite mechanic ever and bought a new (old) Volvo for $4,000. and put it on my overused credit card. Why does nothing bother me anymore? Maybe I've lost my mind.

I've been off line for a few days. Just did a quick run through of the postings.
Congrats Michele - wooo hooo, you're done.
I sympathize with all who posted about relatives with dementia. My mother died from Alzheimer's. It was horrible. They don't call it the long good bye for nothing. My dad also has dementia, not sure what kind, but it seems different than my mom's.
My cousin and I went to visit another cousin in Maine over the long weekend. She lives near Rockland. It was freezing. We spent 3 days there and never went outside. Mostly we ate. I brought homemade clam chowder and a homemade lemon ice box pie.
My cousin picked up some eggplant parm from a good italian take out place AND she brought 3 lbs of lobster tails. She just had a big win at Foxwoods and she likes to "share the wealth." She sauteed butter and onions, then added Ritz cracker crumbs. She layered the crumbs with the lobster tails in a casserole. It was decadent.
The cousin we visited welcomed us from our 3 1/2 hour ride with a big pot of italian wedding soup. She made us breakfast every morning and Sunday night made a crown roast of pork with apple and sausage stuffing.
My cousin's husband did all the dishes and kept the firewood box filled.
It was a weekend of feasting, chatting and sitting by the wood stove.

Had potabello burgers with onion, roasted peppers, tomato and lettuce. Had broccoli, sweet potato fries and a salad with it. It was good, but now I am thinking about lobster and soup. Hmmmm.. Don't think lobster is in my near future. Maybe some soup. I have only tried making my own soup a handful of times, i need some practice.
This is cracking me up. My DH is watching Dance Moms. He is hooked on that show. LOL -

Laurie, Carberry & Kay: here's another vote - I didn't care for the Dragon Tatoo & am not going to read the other two. Interesting that I've talked to several men who've seen the movie this month & they think it's great - but think it's too graphic for their wives (who already read the book)???
Desserts - Have any of you noticed we rarely talk about or post dessert recipes? Personally I no longer make desserts since I live alone & would have to eat the whole thing. Besides I'd rather eat salt than sweet. But still... we could dream about those useless calories. Thought this was an easy one from one of Gail Frazier's Lumby Lines books (yup it's a cozy).
Peach Mousse Pie
1 - 8" store bought graham cracker pie crust
1 Box sugar-free Peach Jello
1 C hot water
4-5 Ripe peaches
2 - 8 oz containers low-fat peach yogurt
1 8 oz container Cool Whip
In large bowl, dissolve Jello completely using one cup hot water.
Allow to cool (but not set) in fridge or freezer for a few minutes.
Skin & dice 4 or 5 ripe peaches into bite-size pieces.
Stir yogurt & cool whip int the cooled bowl of jello.
Fold in peach pieces.
Pour into pie pan & let set a few hours.
Adaptable always using 1 box Jello, 2 yogurt & 1 cool whip
Key Lime Pie
Use lime Jello & key lime yogurt w/no fruit
Raspberry Pie
Use raspberry jello, raspberry yogurt & few cups fresh raspberries. -
Kay: Dance Moms??? This is one of those times that I feel totally out of the loop since I never watch TV. Sounds wild.

Haha! It's on lifetime and is kind of like toddlers and tiaras if you've ever seen that. It's a reality show about a dance school in Pittsburgh. My DD is 14 and a dancer and also hooked on the show. The teacher and the moms are crazy obsessed.

My mother-in-law bought me the Dragon Tatoo book and, while I did finish it, I had a rough time of it.... There so many characters that I had a tough time keeping everyone straight. I kept reading but, in the end, I was left with a feeling of,,, Eh, so what?! My MIL said that's why you need to read the follow on book.... Not sure I can muscle through another one....

Tonight I made chicken tacos, they came out really good and there were no left overs. I bought I corned beef for dinner I think maybe tomorrow. Haven't had it in forever, hopefully it's a good cut. Never know until it is cooked and you are ready to eat it, at least I never know..
Desserts- that requires baking which I am no good at! Also, I have a slat tooth instead of a sweet tooth which I think goes for alot of us here. Kind of funny we are all mostly salt people?

Kay, OMG Dancing Moms. I pictured poor women like us forced to dance on TV and being eliminated one by one. I could do the twist my sitter taught me,, or "that weird 70's dance" as my daughter calls it. (freestyle) What would you do?
Off to work, boiled egg, smoothie, burrito etc.

Haha! No their daughters do the dancing, not the moms. I do enjoy playing just dance on the wii, but I am not a good dancer. I get laughed at all the time, but it is quite a workout and a lot of fun. Besides my DD being a dancer, she was at the same competition as the the kids in the show twice last year. She goes to a small studio, and we caught glimpses of some of the studio routines on the show, so that made it a lot of fun to watch and try to find girls she knew. My DH is not embarrassed about it Laurie. I have told his coworkers and friends he is obsessed with Dance Moms and everyone gets a big laugh including DH. I guess he is in touch with his feminine side. LOL. Back in the day, he was hooked on General Hospital (in college when he was home in the day).

Kay - funny about your DH watching the dancing show. My DH watches more reality TV than regular shows, although he's very fond of "dead body" shows - my name for all the CSI, NCIS, etc. It's funny that you haven't made many soups. My mom made them often because they were budget-stretchers, so I guess that's where I learned. Just throw that chicken in a pot, cover with water, add some seasonings and then let your imagination take over. You can never go wrong by adding celery, onion and carrots.
Laurie - we had chicken tacos last night, too. Actually, I bought a store-roasted chicken and used the leg and thigh meat. Now I have chicken breast left over for sandwiches and maybe, maybe I'll make some chicken stock or soup today. We are having meatloaf for supper, which is why we had chicken tacos last night. I have always made tacos with ground beef, and DH wanted tacos for supper but he also wanted meatloaf for today. I balked at beef two days in a row. I did get adventurous today and bought a package of ground meat that has beef, veal and pork. We'll see how that goes. I've always used just ground beef.
Hauntie - what a great trip you had! The lobster sounds good, I think I'll be able to enjoy it again now that chemo is becoming a distant memory. I never have luck at Foxwoods, but my mom loves slot machines. I'm thinking about taking her soon. It would be a big deal as I'd have her spend the night so we could leave really early. And I have to stay with her every minute. But I think she'd be thrilled.
Minus Two - I have made the Key Lime version of that pie using no-sugar-added yogurt; it's so good in the summer. The peach flavor sounds delish. Laurie - this pie requires no baking, you might want to give it a try!
I think I'll be passing on the Dragon Tattoo. I like my movies light and airy!

i am making a meatloaf tonite.. not my favorite food by anymeans.. all that squishing and stuff of raw meat. and it's kind of cold in my house.. I am shivering just thinking about it.

I am just the opposite to most here I guess... I have the biggest sweet tooth on the planet but not big on salt.... I don't bake that often but do enjoy a good cookie, a bowl of ice cream or a piece of chocolate... OK... maybe 2 pieces of chocolate! -
Luv I grew up on soups too. The years Dad was sick they were vegetable because there was no money for meat. If there were unexpected guests Mom would just add a little water and another potato.
I've always made my meatloaf with beef and pork and veal if I could get it. Some times I did use just beef with pork sausage for a change.
Seaside, I have always had a sweet tooth. Lately I have found myself eating more salty than before but the sweet still predominates. I have wondered if the change has anything with the tamoxifen?

Just finished dinner, the meatloaf was a big success. I made oven-roasted potatoes and fresh green beans with bacon and shallots to go along with it. DH was a happy camper, he's cleaning up the kitchen at the moment. That makes me a happy camper!

Oh we had soup, but it was mostly Campbell's. My mother did make chicken soup or vegetable soup or beef stew, but not too often. I do love soups when we go out, I have to get comfortable making them.
Glad your meatloaf was a success Michelle! We had salmon, salad, broccoli, rice and some challa bread. It was good. My dd does not like salmon, so got flounder for her. We tried the salmon two different ways, the way we normally have it which is the barefoot contessa's recipe with olive oil, Worcestershire sauce, Dijon mustard and garlic. And a new way with olive oil, salt pepper, rosemary, white wine and capers. I have a huge bottle of capers I bought to make yhe chicken piccata that we have to find uses for. Both were good, but we liked the contessa's recipe better, maybe at least partly because the other was a little overlooked. We'll have it that way again.
I am a salty and sweet fan. My favorite food is chocolate covered pretzels. I love the combination of sweet, salty and crunchy. It doesn't get any better than that IMO. -
Oh Kay if your DD likes Capers I have a recipe for you
PS, for all you salt people, like me:
Puttanesca Sauce for Penne This was said to invigorate streetwalkers of old for the evening. Hey it might invigorate us too.
1C diced onion, 1 TBS minced garlic 1 TBS olive oil, 51/2 to 6 C fresh or undrained canned tomatoes, 1/2 tsp dried oregano, 1/2 tsp red pepper flakes, 1 1/2 TBS capers, rinsed and drained, 10 large clalamata olives, pitted and chopped, 2 TBS minced fresh parsley, 1 lb penne pasta
a few fresh parsley sprigs and grated Parmesan cheese (optional)
Combine 1st 3 ingredients in saucepan, covered and saute and simmer 10 minutes,stirring occasionally till onions are transluscent. While onions cook,chop the tomatoes. ( can do in the can if they are canned). Add the tomatoes to the saucepan. Stir in next 5 ingredients. Simmer uncovered till sauce thickens, about 20 minutes, or a little longer.
Add to penne pasta (cooked about 7 minutes,until al dente and drained) and serve right away with parsley and parmesan if you wish.
Drink the juice from the calamata olives jar. (kidding :O )

Oh Yay Omg oh Yay!
When I worked in Barrow Ak 4-5 years ago in the arctic I was married. (my husband stayed home in Ga) One of my best friends was studying global warming and had spent 2 years on the South Pole and then some time in Barrow, (Northernmost settlement on the continent, polar bears etc)
So I got bold and emailed him at the South Pole and asked if he would be coming by RI on the way home in Feb, their summer.(I'm now divorced) he said funny you asked, I just bought you a "Ski the South Pole" hoodie I just love him to pieces and am so glad that he will visit! Happy Happy Happy!
