    Kay - enjoy your dinner!

I tried finding one almost ripe avocado to go with our tacos last night and I think I got the only one in the store.  They had them in 3 different locations, and they were all hard as rocks.

The beans smell delicious, but I think they are just a bit too sweet for my taste (I've sampled them a couple of times).  I would reduce the syrup by at least 1/3.

The last time I bought avacados to make quacamole  I couldnt get the darn things scooped out they were so hard.  Could not find one riper in the store.

I just put the fillets in a sautee pan with a couple of pats of butter, (seasoned first with lemon pepper), added the capers and a splash of lemon juice and let simmer...they literally only take minutes to cook.  Had the leftover one for lunch today.

Congrats to all of you that can do the baked beansFrown Cant  even get past the smell of them.  My husband loves them but will never get them served in this house!

Off to hump with friends...new place tonight called Fuzzy Guppies, they are having a half priced wine special....yahoo.   I must be good though, I have a Dr. appt tomorrow and dont want my bld work to show an elevated bld alcohol...LOL

I read a tip on ripening avocados- put them over night in a bad with bananas in a warm place or cover with a towel, most should be ripe by morning.  I tried it once and it worked!

    Have fun Carrie!

Laurie - that trick works for other hard fruits, too, like peaches or pears.  Of course, it means you can't be buying the avocado in the afternoon for dinner that night...lol!

    Enjoy, Carrie!

So, the beans were good but too sweet for my taste.  DH really liked them, so maybe it's just me.  Laurie - if you make them, consider whether or not your boys will like the pepper.  It's a nice contrast to the sweet but may be more than they would like.  Next time I will use just half the syrup.

The galric roasted potatoe wedges, are a big hit in our family and a new favorite. Tonight I was out and about running errands, and was naughty and bought a KFC bowl ( with the breaded chicken pieces, mash potatoes, gravy and corn), and when I came home and went on line to look up the ingredients,,,,,yikes 680 calories for one bowl. that won't happen late at night again. I have been so good all week , oh well.

i buy my avocados from Sam's or Costco (lucky me) a few days before I will use them.. I had Six huge avocados and a couple extra teenage boy guests.  My kids play this high falootin card game called Magic of Gathering.  I like it, because I know where they are, they concentrate, are really in it and it is complicated and sometimes girls can play too.\

So i had this leftover meatloaf that wasn't going anywhere, quite low fat, so i chopped it up, added 1/2 jar green salsa, and a bunch of smoked paprika and cooked it for about an hour.  I didn't have any, but the guys all said it was the best chorizo they ever had.. he ha heh.

i made pico de gallo, and lightly toasted, fried some corn tortillas and warmed up flour tortillas.  The kids (12 - 17) were all singing in fake foreign languages and exchanging jokes.  One of the boys is kind of diet conscious, he likes to talk about cholesterol, and he said his girlfriend was a vegetarian and quite skinny.. So my funny son #2, the genius commedienne.. (like everything that comes out of his mouth is hilarious).. said the answer IS.................... Potatoes!!! - lots of curves, lots of starch, good for you"  I guess you had to be there. - he is only 14 but sounds sometimes like he's been around the world twice.  My 12 yr. old girl was lovin all the manliness.  They even all did the dishes.

My guac. is simple, with onions, cilantro, lime juice and salt.

Apple - you're so lucky that your kids are comfortable hanging out at your house.  Yes, it makes a little extra work and expense - like feeding teenage boys.  But the peace of mind and the interactions are priceless.  Your kids are very cool!  LOL at the potato comment.  Your son may be very wise - there has been talk lately of "resistant" starches, including potatoes.  Supposedly they keep you satisfied longer and the starch goes mostly undigested.  My glucose meter would argue differently, though.

A simple guac recipe sounds yummy and easy!

Tonight I am going to make chicken cacciatore with the big package of chicken thighs I picked up a couple days ago.  This recipe looks good:

    http://www.foodnetwork.com/recipes/giada-de-laurentiis/chicken-cacciatore-recipe/index.html

And it has capers in it - a way to use them up if you have them on hand.

At our house the teen boys, all hang out here as well. Sometimes my son has 4 or 5 friends over at a time, and it is like locust. They eat everything in sight. I am a huge fan of making cheap eats for the hungry heard. a 15 lb bag of red potatoes at grocery outlet was only 5.00, so I do roasted potato wedges for them, My biggest cookie sheet packed, and that seems to fill them up Smile

i do the black bean soup thing for teenagers if i know they are coming.  Most of them have never had it.  i always have a fresh frozen hambone and soak two bags of beans.. add a pound  of dried Mexican (not too hot) peppers, cups and cups of diced green peppers, onions and then sliced kielbasa in it at the end.. a couple cans of tomatoes and tomato paste..  I can feed about 20 - if i make a huge pot.. (good for family get togethers too).. or freezing.

For lunch i had sliced pepper turkey stuffed with greek olives and feta cheese rolled it up like a sandwich it was pretty tasty and filling!

Apple  those boys are at your house for a reason...your probably the best cook of all the moms!  I truly miss having all the kids in the house.  they always loved my homemade chicken wing sauce, so it was always mega lbs of wings when they were all there.

Zumbagirl....LOVE the locust comment....very accurate comparison.  LOL

Dr. appt went ok.... taking me off the Tamoxifen on a trial to see if that is why I am getting daily headaches.  BP also elevated and that may be causing them. Going back to my primary next week to see if I need to go back on BP meds that I took during chemo.  Ran into a close friend who is experiencing lung cancer that actually was first diagnosed in his neck and throat, he is now a stage iv.  His wife was with him and she is a mess.  We talked for a long time in the office, and he is so upbeat and positive, gonna do a round of Taxotere, they have tried everything else......OH this damn disease!

I am on weight watchers, but I do try to eat healthy--tonight it was baked cod, lima beans, green beans with almonds, a raw veggie plate and vegetable pasta-. My 30 yr old son lives with me--he is real skinny but I don't think eating healthy hurts anyone.

I just have enough time to pop in.  I have been in conference for work since Tues and this hotel food is gross. All fried mushrooms, fried chicken ,beef tips fried onions and Sprite.  I would get reimbursed for it but I am vegetarian and don't eat fried stuff and don't want it, so I went out and bought fruit, yogurt, bread, cheese avocados and put them all in my hotel fridge. (No microwave)  Am meeting someone from BCO tonight. Talk to you all Fri.  Hope you are all having fun!  It's raining!

No teenage boys or girls here, my baby is 36.  She did have a lot of sleep overs when we lived in Townsend.  It has been so long ago I don't remember what I made them to eat.

Sloppy Joes for supper tonight.  DH doesn't know yet and he better like them.

Last week I made Italian sausage cacciatore with rice, DH didn't want any part of it, so I had it for lunch all last week.  He is starting to get on my nerves, I work M-F 8 to 5:30, he goes to his office, he does E-bay stuff and gets there when he wants, he has the nerve to be picky with what I cook.  Last night he didn't want grill cheese sandwich so I told him, "You're on your own."  I visited my Dad and did not get home until after 8.

LOL, Deb!!!  I have a friend and when she got married, she and her DH had a contest to see who could go the longest before giving in on cooking dinner.  She won...and she now only cooks when SHE wants to!  Talk about a battle of wills!  I think it's perfectly OK to tell your "DH" that he's on his own for dinner!

Our chicken cacciatore was good, but a couple of the chicken thighs weren't quite done.  Surprising because I cooked it for probably 45 minutes, which was twice the time called for in the recipe.  Some of the thigh pieces were pretty big so that might explain it.  The only other things I changed in the recipe were to add 10 ounces of fresh mushrooms because I had them on hand and I knew they would go well in the dish, and I didn't add the chicken broth - there was enough liquid without it.  I served it over brown rice.

Deb, I sympathize. It is so frustrating to cook a nice dinner only to have people complain about it. DH is good, but not so much DD and DS. And I totally agree it's okay to tell him he's on his own. Wednesday's are now my DD's day to make dinner. But I haven't really pushed it too much yet. I hope that if she sees the work and care that goes into planning and cooking, she'll be more appreciative of it when I am doing the cooking. DS doesn't complain, but he doesn't eat much when he doesn't like something, so I can always tell.

Dinner was delicious last night! Had pizza tonight. Ugh. I started back to work part time and with driving DD to dance classes and such, there is no time to make dinner. I have to learn to use that crock pot.

LOL, we'll see, first she actually has to cook. I cooked with her one week and DH cooked with her one. I am anxious to see her do it a little more independently. I don't mind if she makes tunafish. It gets me off the hook one day. But DH said he wants her to actually cook something. We'll see how it goes, but out of curiosity, what are the drawbacks?

I actuallly cooked dinner for myself tonight. I had a couple of lamb chops in the freezer that I broiled, a baked white sweet potato and a salad. A simple meal, but homemade.

I had my pre-op physical for my knee surgery. I WANT MY REAL DOCTOR BACK!!!Cry This doctor was ok, she's been there a long time, but I don't think we click. I found out, from the med asst, that my doctor really did not want to leave, but I guess she couldn't stand the changes they were making to a department she was director of for 20 years. She wasn't the only one who left - a NP and 3 other MDs left as well.

The MD took a look at my burn and gave me some burn cream to put on it. The blister is still there. It hasn't reduced in size at all. I'm just putting on the cream and a bandaid a couple of times a day and keeping an eye on it.

Michelle, thanks for posting the site for the chicken cacciatore recipe. Picked up some chicken breasts last night and now that I avoid soy (teriyaki sauces), we'll enjoy a nice Italian meal tomorrow nite. I am too tired tonight to start plowing through all the chicken recipes on the internet, so your post was a gift! Will ask DH whether he prefers brown rice or brown pasta with it. Green leaf lettuce and kale salad will round out the picture. Since I've become a big kale fan, I really enjoy popping some into our regular garden salads.

Apple, you made me nostalgic for the days of having our family room full of 15 year old boys on weekend nights ....so many years ago!

Deb- I am sorry Dh is being a dick head, but I am LMAO!  Seriously, I have not had the best day/night and you just had me laughing out loud, lol will not do!

DS #1 now has the stomach bug and vomited all over the new couch- it has been a long 4 days with this sickness in the house.

Carrie- I am thinking of you, hope you get the BP under control.  I am so sorry for your friend, this cancer crap is just a heartless beast that I hate.

Hauntie- I hope your burn heals well and I am sorry you don't like your new Dr, hang in there and we are here for you.

Kay great idea having your DH cook- though Apple may have a point, I personally haven't crossed that bridge yet.  You'll have to keep us posted!

I can't wait to get home to my little place tomorrow and make soup.  So tired of this hotel. :(
