So...whats for dinner?
Comments
-
Michelle- glass of wine is in hand! DS #2 has decided he isn't done yet, both have vomited in their beds twice in the last hour and a half. There can't be much left in them.
Hell does not consist of fire and brim stone but vomit. Bleck!
-
Carberry- I'm so sorry about your friend, god will it ever end- Find a cure now! I use to get headaches on tamoxifin too, i had to quit taking it because of that and severe bone pain, same with all the other hormone pills too.
Bedo- Enjoy your time away, too bad the food sucks, i admire your will power i would of ate all of it, LOL!
Deb- Too funny, yeah, make him crap cakes and bat leaves, that will show him, LOL!
Sflow- Eating healthy can be delicious too, i cant get enough of my cod and veggies some nights thats all i eat.
Kay- I tryed that with my daughter when she was living at home but it was always somthing out of a box, like stroggonoff or somthing terrible so i had to take it away from her.
Hauntie- Maybe you can keep looking until you find one you like, i went through 3 onoc's since i have lived here, not quite 2 years. both first and second ones left to go back to california, i think they didnt like the way things were run, now the one i have now i dont really care for, he dosnt seen up on all the new data, like he dosnt believe in taking a vit D test or tumor markers, he is from the old school, but have no other choices now.
laurie- wow, you sure have had your share of illness to deal with lately, but having small kids that does happen, did when my daughter was little too. Im sure this dosnt apply to you but wanted to mention it anyway. i had a friend who her and her family were always sick, to make a long story short they found out they had black mold in there house and moved, they very rarely got sick after that. Its that time of season so im sure thats what it is but wanted to pass it along just in case...

Yay, i did it, i finally was able to post a picture along with the recipe. Here is a recipe i saw and thought it sounded good, it got 5 stars and great reviews think i will try it this weekend
Rice and Turkey Casserole
Nutty wild rice gives interesting depth to this simple casserole of cooked turkey, summer peppers, and shredded cheese.
RecipeTips (0)Reviews (2)RECIPE TOOLBOXINGREDIENTS
1cup cooked white rice1cup cooked wild rice2cups diced (1/4 to 1/2 inch) cooked turkey breast2cups shredded Monterey Jack or mozzarella cheese (8 oz)1can (12 oz) evaporated milk1/2cup finely chopped red bell pepper1/2cup finely chopped green bell pepper2eggs, slightly beaten1/2teaspoon salt1/4teaspoon pepper1tablespoon chopped fresh parsley, if desiredDIRECTIONS
1 Heat oven to 350°F. Spray 12x8- or 11x7-inch (2-quart) glass baking dish with cooking spray. In baking dish, mix white rice and wild rice; spread evenly over bottom. 2 In large bowl, mix turkey, cheese, milk, bell peppers, eggs, salt and pepper. Spoon over rice. 3 Bake 45 to 55 minutes or until knife inserted in center comes out clean and top is lightly browned. Sprinkle with parsley. Let stand 5 minutes before serving.Look for frozen or canned cooked wild rice at the grocery store.Cubed cooked chicken can be used in place of the turkey. -
Debbie - that looks pretty good. Canned cooked rice...who knew? We had Chinese earlier this week and I ended up freezing all the white rice that they included. I usually toss it, but my grandkids will eat it so I figured it may come in handy.
I have a turkey in the freezer, it's going to have to come out and become dinner pretty soon. It's taking up too much room!
Laurie - I see from Facebook that the puke fest continued on...hope everyone is better this morning and you were able to get some sleep.
-
Yesterday I made the slow-cooked beef minestrone. It is supposed to be a soup but because it has lg chuncks of the beef it is more like a stew. the recipe is from the wegmans magazine and can be found at Wegmans.com It was delicious....calls for garbanzo beens but I dont like them so added green beens. I t made a huge crockpot full, enough for a lg family, all we had was a slice of italian bread with it.
Deb I like the substitute words for dear husband...I knew I liked you!
Laurie I forgot and missed idol this week....it wont happen though when they get down to the nitty gritty. Hope everyone gets better fast.
-
we are having cholesterol tonite.
I am slow cooking a corned beef and will turn it into corned beef hash this evening, by adding diced potatoes and onions. and cooking it all the corned beef fat... omgosh.. delish but super unhealthy.
-
Deb- that turkey dish looks pretty good, I have most of it in the house to make too. I might give it a try!
Apple- My DH would be in heaven at your house, he LOVES corned beef hash. Enjoy!
Carrie- We never got to watch tv last night, but I did record it so maybe I'll get to watch it tonight. You are right though, not too big of a deal to miss it now in the beginning.
It was a round robin puke fest here last night- insane! Both boys took turns throwing up until about 2 am. My 4 year old was a champ though, he never missed the bucket after the couch incident. The two year old isn't able to do that. I was changing laundry over at 1 am, it was nuts. Reminded me why I don't have 3 kids!!
We are all hunkered down for the day and staying in our pjs. The weather is nasty out there.
Debbie- Thanks for the suggestion about allergies or molds. I think there is just a lot of sickness going around in our area. The stomach bug has been going around and just about everything else. Thats one thing about Facebook, it lets you know who is sick and what they have at times. Our house and the sickness has been about the norm- the only thing we have managed to dodge is strep which has been rampant as well...knock wood...
-
Both strep and the puking fests have made their way through my grandkids, their cousins and all the parents. They've been sick constantly - at least one of them - since Thanksgiving, I think. I don't know how I've managed to avoid it all!
-
Same here everyone is sick, DH said a lot of ppl are calling in sick at work, make him wash his hands the minute he gets home after being in such a busy inviroment, i hate it when someone walks past you in the grocery store and sneezes or coughs and they fail to cover there mouth, argh!!
Soup sounds good in this cold weather i have all the stuff for my "Wedding soup" recipe might try that tonight, i put spinach and kale in mine.
Funny story: I called my Girlfriend in hawaii this morning, Had a conversation with her for about 2 minutes and i said nancy do you have a cold, your voice sounds different, she said, ya know i thought you sounded different too, my name is not nancy and i dont think you are who i thought you were either, she said is this Susan? I said umm i think i have the wrong number but it was nice chatting with you anyway, we both laughed, (in imbarrassment) and hung up! LOL!
-
Debbie- That is awesome!! Especially since the person was probably in Hawaii too
Thanks for the smile!
I have no idea if I am going to make dinner or not....
-
super funny~ !!
-
LOL Debbie!
Just got a call from my daughter. We are babysitting tomorrow night. Grandkid #2 has strep...LOL! I told her we'd still come - he'll be on an antibiotic for about 24 hours. That's probably about as safe as it ever is in that house!!!
-
Welcome home Debbie!! Sorry to hear that plane ride was not too great but glad you had a good time once you were there!
I am still laughing SO hard at your wrong number call!! Too funny! -
Oh Laurie I hope your kids feel better. Puking kids is one of the worst parts of childhood.
Kay, here is a link to an easy crockpot chicken recipe that my neighbor uses and her kids love.
http://www.cdkitchen.com/recipes/recs/282/Busy_Day_Roast_Chicken55582.shtml
Debbie about your phone call, you crack me up. I'm glad that there are at least two other people who have "I love Lucy" moments in the world!
-
Michelle, DH and I both loved the cacciatore recipe tonight...and will another night. Thanks again for the inspiration. It wasn't even too bad starting it at 6PM since it was a Friday meal. Had asked DH to get the chicken pieces ready for me to "transform".
He is paralyzed in the kitchen, so the set table is ready for the cook every night...but I have to say I have never heard a complaint about anything I prepare. It would not go over well. It is not easy for 60 somethings to work daily from 8 - 5:30 providing direct service and come home to prep meals. During and since radiation, I have been trying to cook on the weekend so I have less of a meal "start up" nightly. I'm a bit more skeptical about take-out now that I want to be sure to eat foods that are really healthy. I feel like I can be more in charge of what I'm eating if it comes from my kitchen. That is both comforting and a curse! I'm sure we will be having our favorite take-out when I'm dog tired some nights and the leftovers are gone!
-
Debbie~that is funny about you phone call, LOL
I did not cook tonight, we had Chinese food from the Mango Grill in Ayer.
My brother is going to call my fathers PCP Monday and request BW. All my Dad wants to do is sleep and when they wake him up to eat, he yells at them to leave him along. He is hard to wake up. Last time that happened, he needed a blood transfusion. We'll see what happens next week.
-
Lacey - glad the cacciatore was a hit. My DH claimed kitchen paralysis, too, until I went through chemo and then somehow he managed to cook all kinds of things. Turns out he is quite competent!!!
Deb - hope your dad is OK and they can figure out what's going on very soon.
We went to see Red Tails tonight - very good movie.
And we got some good news - our house in MO is leased again for 18 months. We won't have to worry for a long time. And my DH knows the renter husband - he is a member of the golf club that we belonged to. Such a relief!!!
-
Laurie and michelle- I hope your kids and grandkids get better! Flu season sucks!
Thanks Seaside!! it is good to be back except when i step outside, brrrrr!
Deb- Said a prayer for your dad! Hope he is going to be ok!
Michelle- Great news on your house!
-
Hope all of the kids and grand kids get past these bugs. The stomach cure has been rampant throughout my school since the holidays. Poor kids, they are so easily wiped out...poor parents, wiping up vomit Has to be the worst chore!
Michelle, DH has an interesting relationship with the kitchen...gets up and makes delightful breakfasts; is the chief griller after I do all the kitchen prep; and about once a year plans, shops for, and creates a special meal (lobster paella, rack of lamb), but it is such a laborious process since he needs to follow recipes rigidly and doesn't understand recipe language. The final result is always wonderful (except for the Christmas afternoon he left the gas jet open on the stove....last time we had Paella!), but not sure we would ever get to eat if he was the daily chef. I've obviously enabled over the years since I'm a "cook", but I can see how chemo would change that! Fortunately, he's a great clean up guy, so once the food is on the table I know I'm done for the evening! Glad to hear about your rental relief!
Kay, when my boys were teenagers we did try a "take turns" approach to dinner prep for a while, and it was fine until sports schedules interrupted the master plan. But now as adults they are both able and willing to make meals in their homes. So, I'd say let DD try her hand at meal planning/prep once a week! Just watch out for open gas jets!
Deb, how difficult to be going through this time with your dad. Hope you have a good team to sort out what he's experiencing, and what he needs...and hope there is some support for you as you care for him. So hard to watch parents decline. -
More soup Crockpot vegetarian mushroom barley soup
Ingredients
- 1 cup raw pearl barley, rinsed, drained
- 7 cups vegetable stock (boxed is okay, too, just watch the salt)
- 1 tsp salt (watch the salt if your stock has sodium, mine doesn't)
- generous amount of ground pepper
- 3-4 Tbls dry sherry (I used 4)
- 3-4 Tbls soy sauce (I used 4)
- 3 Tbls butter or oil (I used butter)
- 2 cloves garlic, minced (I used Christopher's jarred)
- 1 medium yellow onion, peeled, diced
- 1 pound mushrooms, sliced and diced (I used brown)
Place the first 6 ingredients in the crock pot. Using a large no stick skillet heat the butter or oil over medium high heat. Add onion and garlic and saute until softened. Add mushrooms and saute until moist and they begin to give up their liquid. Pour this mixture and all liquid into the crock. Cover and cook on low for 6-8 hours or high for 4-5 hours. (Drink some sherry. Waste not want not.)
I'm getting my "new" old car today since my 16 year old volvo's timing belt destroyed the engine. Now I will have a spring chicken 13 year old volvo!
Deb, can you ask for a palliative care consult? It seems that so many people our age are going through this. I wish things were better.
I have given up all pretense of being a good housewife (to myself) since I went back to work and now order peapod grocery delivery, have my laundry done at the laundromat (no washer/dryer) and am having a 'green' cleaning service consult on Tues. Hey how much can it cost, it's a one room cabin?
I still make my bucket of soup every weekend for the week.
I hope that everyone is being a sloth this weekend. (Unless you are the organized type in which case I hope you're getting a lot done!)
Lacey that sounds like a plan! I hope you are getting through OK I found that I was really, really fatigued at the end of radiation and that my arms and legs felt like stones when I finally went to bed. I also wasn't exactly up to par mentally. A very wise person who has been through this told me that it would take the amount of time that it took to get to where you are ( the end of treatment) to feel like yourself again. I am back mentally but not 100% physically. I am about 2-3 months out of surgery and radiation. I think that some do it a lot easier, but take it easy on yourself, if you want to sleep for 14 hours, go right ahead. Your recovery comes first.
Sally
PS, the 'kids' stayed here while I was away last week. "Barbie" (my daughter's boyfriend Ken, who I call that and now answers to that) and my daughter didn't change the kitty litter and they peed in the tub!
-
mmm. that barley mushroom soup looks fantastic.
homade pizza tonite.. i made the sauce.. i'll throw together the crust etc. at 5.
-
Bedo, I'm going to scale that recipe up to feed 20 or so when I cook for the Senior Center next Thursday. Sounds so good and hearty with the barley. Thanks.
-
"Slothing" for me So far this weekend, Bedo. That soup looks/sounds great! Definitely worth a trip to the store tomorrow to get some barley. Do you think it would be terribly compromised without the soy sauce? I have become obsessive about avoiding some of the foods listed on the "nix when on Tamoxifen" list. Maybe I'll just try it and see.
I know what you mean about the heavy limbs business. I still feel it when on my stationary bike, and when going up and down stairs at work. Am lucky that my memory has been okay...tho for a few weeks towards the end of rads I could not quickly recall people's names and started to freak out, but a month later that seems a lot better. I'd asked the MO about this and she looked at me like I was crazy and said "how would you expect to remember everything when you are working full time, going through BC treatment and dealing with the holidays"! She was not concerned, and now I'm not.
Lucky for you the cats chose the tub!
Breaking out of my weekend recluse state and going out to dinner with friends tonight.
Enjoy the rest of this beautiful weekend! -
OMG, just came back from food shopping at the new Super Stop & Shop right across the street from Market Basket in Chelmsford. They jacked up their prices at least a dollar or more. I'm done with them. Spent $150.00 for just 2 ppl and really didn't get much.
They have a lot of neat foods but pricey.
-
Deb-Isnt that ridulous? Thats what hubby and i pay every week and we dont get nothing hardly. And it is so expensive to buy organic that really jacks up the price.
Bedo- MMM that soup does sound good, its going to be a soup week for me as soon as i finish off the wedding soup which was really good, i will try that one.
-
I'm a vegan, so tonight was cold sesame noodles! steamed broccoli and cauliflower.
I never ever ever thought I'd actually CRAVE vegetables, but I actually do!
This from someone who used to eat "Captain Crunch Peanut Butter Cereal" by the boxfull!
Rats, I just flung a craving on myself.

ITAILIAN WEDDING SOUP;
Ingredients
For the meatballs:
- 3/4 pound ground chicken
- 1/2 pound chicken sausage, casings removed
- 2/3 cup fresh white bread crumbs
- 2 teaspoons minced garlic (2 cloves)
- 3 tablespoons chopped fresh parsley leaves
- 1/4 cup freshly grated Pecorino Romano
- 1/4 cup freshly grated Parmesan, plus extra for serving
- 3 tablespoons milk
- 1 extra-large egg, lightly beaten
- Kosher salt and freshly ground black pepper
For the soup:
- 2 tablespoons good olive oil
- 1 cup minced yellow onion
- 1 cup diced carrots (3 carrots), cut into 1/4 inch pieces
- 3/4 cup diced celery (2 stalks), cut into 1/4 inch pieces
- 10 cups homemade chicken stock
- 1/2 cup dry white wine
- 1 cup small pasta such as tubetini or stars
- 1/4 cup minced fresh dill
- 12 ounces baby spinach, washed and trimmed
Directions
Preheat the oven to 350 degrees F.
For the meatballs, place the ground chicken, sausage, bread crumbs, garlic, parsley, Pecorino, Parmesan, milk, egg, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl and combine gently with a fork. With a teaspoon, drop 1 to 1 1/4-inch meatballs onto a sheet pan lined with parchment paper. (You should have about 40 meatballs. They don't have to be perfectly round.) Bake for 30 minutes, until cooked through and lightly browned. Set aside.
In the meantime, for the soup, heat the olive oil over medium-low heat in a large heavy-bottomed soup pot. Add the onion, carrots, and celery and saute until softened, 5 to 6 minutes, stirring occasionally. Add the chicken stock and wine and bring to a boil. Add the pasta to the simmering broth and cook for 6 to 8 minutes, until the pasta is tender. Add the fresh dill and then the meatballs to the soup and simmer for 1 minute. Taste for salt and pepper. Stir in the fresh spinach and cook for 1 minute, until the spinach is just wilted. Ladle into soup bowls and sprinkle each serving with extra grated Parmesan.
-
Bedo, that soup does look and sound good. Probably only DH and I would eat it, but I will give it a try.
Lacey, thanks for the encouragement with DD. she is pretty busy between school and dance classes, but Wednesday is her free day, so hopefully it will work out.
Michelle, wonderful news on the house! We had an appraiser over today. We're trying to take advantage of the mortgage rate and refinance. I was worried because I was afraid values may have come down, but she said they've been stable. Hope there will be no problems, should know on Monday.
Debbie, you're really getting right back into the swing of things. I always have a hard time right after vacation. Viviraselena, I am impressed you can be a vegan. I actually just bought 5 boxes of peanut butter cap'n crunch cause they were on a special sale and my DS loves them. I confess I do too, but I have been sticking to healthier choices. Trying to do several meatless meals per week. Today we had black bean, tomato, lettuce, jalapeño pepper and cheese on whole wheat soft tortillas. To tell you the truth, they were delicious and super fast and easy. We made them after getting home from seeing war horse and going food shopping at whole foods. I am with you deborey, didn't buy much there and it cost 40 some dollars. But I did see that they are a dollar cheaper for a gallon of organic milk than the supermarket.
Apple, I really want to move into your house. Home made pizza, yum! How is the cathedral coming? Is it finished?
Laurie, hope the boys are better. Deborey, hope your dad is doing better too, you too, Hauntie. And hope your mom is doing well Carrie. Hope everyone enjoys the weekend! -
Italian wedding soup is awesome and doesn't need to be as cumbersome as it seems... you can make a ton of meatballs and freeze them.
