So...whats for dinner?

We are at our sixth day of over 90 degrees. It got up to 93 today and was not quite as humid as it has been, so the weathermn was calling it abreak in the heat. I usually don't complain about the heat, but I am wilting. At least we've had no issue with our power, some areas not too far away have Ben without power or water for days. I can't imagine going through that.
Roasted zucchini tonight with a big salad and some leftover pizza. I hated turning the oven on. The fruit has been great lately. Had some great cantelope, watermelon, cherries and blue berries. Tomorrow is DH's birthday, but he has to work.. Don't know what I will make for dinner tomorrow, we're going to wait and go out on the weekend.
Good news Laurie and Debbie! Happy fourth everyone! -
Made Meatloaf for supper, a small one so it didn't heat up the kitchen to much. I still love spaghetti-O's.
Michelle, that dessert looks scrumptious. Everyone's dishes and desserts sound delish.
If it is raining in the morning we will NOT go see the parade in town but will go to some friends house for a cookout.
-
Just a quick note - we are supposed to have a neighborhood breakfast tomorrow but now the forecast is for rain. We've had nothing but gorgeous weather and it was supposed to be nice all week. Is it really gonna rain for the single day holiday? Wouldn't that just be a bummer? Let's hope the tstorms pass us by! We're planning on breakfast sandwiches or eggs benedict. The guys are supposed to cook. Coffee cake, fruit, pan fried potatoes, mimosas and bloody mary's. Mother Nature had better not fail us!
Have a fun and safe holiday, everyone!
-
Deb, you are too funny!
Debbie, Congratulations!! "Back on the road again......". I'm singing it to you.....:)
Kay, hoping for a real weather break for you. I grew up there and never coud stand those muggies. Tho we may have some of the same here by Friday. Keep cool! -
Thanks Moonflwr- I hear it is hot there in fact seems to be everywhere but here.
Tazzy-Happy Canada Day to you! If i could copy/paste a canada day card for you i would ;-))) Your green bean recipe sounds really yummy i wil copy it.
Eric- Oh boy i know how humid ky gets when we went back there last summer to visit our friends we either had to stay in doors or in the poo the whoe time.
Kay- Happy fourth to you too. I hope you all get a break in the heat especiay those with out electricity. That sucks!
Minustwo=I vote prime rib! Beenie weenies its been so long since i heard of those! Do they stil make them? lol!
Deb- funny! Enjoy your cookout!
Michele-Hope the tstorms pass you by and you have a perfect day tomorrow! Have a great time! Oh and i will be by for the mimosa's!
Lacey- Funny! it just fits!
-
In the poo??? Was it deep? As in deep poo? :-)
Eric -
LoL Eric some of my keys are sticking i had a popcorn kernal stuck in there i have to pound on the key. Poo haha!
-
Last night it was spinach ravioli and a tossed salad...didn't really feel much like cooking being there would be so much food today at our 4th of july picnic.
-
Wishing you all a wonderful July 4th - may you find relief from the heat or find the heat if you need to. I hope all your bbq's/picnics are full of food, good company and happy memories.
Eric - we are happy if we can take out toques off by August
-
Debbie In the poo? the whoe time? hmmmmm sounds interesting.
I like the sounds of the green beans also. I can never come up with different things to do with veges.
Was supposed to rain today, but totally missed us, we need rain so badly, the yard is dry and crunchy.
Today is a bbq at a friends house after enjoying the lake and then on to another friends for fireworks. WHEW I am tired too much fun wipes me out.
We never ate the hot sausage and peppers yesterday, so today I will add some spaghetti sauce to them and take to bbq.
Happy 4th everyone!
-
has anyone made mini meatloafs.. they are fun, taste about the same and can be frozen for future emergencies. i just form them into little loaves in they cook in like 20 minutes at 400.
-
No. I have seen them and thought what a great idea. Maybe I will make and put some in the freezer so DH has them there when I have surgery.
DH is at golf again this evening so I have a spinach and provolone pizza in the freezer - that may be dinner.
-
Debbie yay on passing the test!
Michelle- Hope your breakfast turned out ok. It rained here until 9 or so.
Apple- that is a great idea, I need to learn to freeze more meals.
Happy 4th everyone! Sounds like everyone has great plans. Today is actually my DH's birthday. Poor guy has to work but he is hoping to get out in the afternoon. We actually don't have much planned at all. Where it falls on a Wednesday it is kind of business as usual for us. We are hoping to spend the afternoon together in the pool and Dh has requested that we go out to dinner. There is a Japanese steak house he loves where they cook in front of you etc. It is my least favorite place to eat so we never go. So....he gets his birthday wish and we will go there tonight.
I hope everyone has a wonderful day!
-
I have*tried* several times to freeze meatloaf. What happens is...when it is discovered I'm making meatloaf, the other dinner plans stop and we eat meatloaf... :-)
I have a 28 cubic foot freezer and I'm always looking for ways to fill it up.
Eric -
LOL at the meatloaf stories!
Our breakfast was a success! It stopped raining just in time, we had plenty of dry chairs. The guys cooked and we met some of our neighbors from a couple houses down. We're going to cool off in the lake (it's hot and humid now) then we'll go fetch my mom and take her for ice cream, then we'll come back and head to the other side of the lake for a picnic at our landlord's home.
Pretty nice day, all in all!
Hope everyone is having a fun day!
-
Michelle, sounds like a totally lovely day all around!
Laurie, Your comment about DH's favorite restaurant had a familiar ring to it. We have a place like that right up the street from us, and it is also not my favorite, but defintely DH's (especially because he can also get sushi there). He goes there whenever I happen to be out of town, so I guess he really misses it. So, yes it is really nice to honor your DH's birthday by going there!
I am sorting piles of paper since we are back home and I can't stand the piled up mess. Then we're having lamb burgers (my new obsession) with our next door neighbors.....and guess who is bringing kale salad?!
Enjoy the day! -
Tazzy when is your surgery? And what is a togues. Sometimes I think I would like to take out tongues, but I don't think that is what you mean
Laurie Way to go on the waitressing job! I had 2 but was fired both times, the 1st because I was serving alcohol at 18. The 2d was at 5 points in Denver 11pm -7am.in my 20s. The only people who came in were nuts, and a man who called himself "Greensleaves" kept trying to get me to work for him. He wore a green jumpsuit and gold chains and always came in with women, but I was fired for general incompetance. People don't realize how organized and diplomatic you have to be! What a great idea that was!
Debbie, Yay! on the driving test.
Chemoangle I hope you are having a great day!
Kay, I hope it cools down for you, good for walking anyway
Apple, I would take you up on that except I think you would win. Not because of my lightning fast reflexes, but because of my peice of sh*T car. See you when I get a newer one.
Michelle, you inspired me so I went on a quest. I hope you don't mind!
Hi to everyone else. Here is my latest lazy person stick in the fridge thing
I think I have become obsessed with mason jars.....
fruit on the bottom yogurt parfaits...yields 4 servings
1 pint strawberries 1 17.6-oz. tub nonfat Greek yogurt 1/2 teaspoon lemon zest (about half of a medium lemon 2 tablespoons milk 1 tablespoon sugar 1. rinse, hull, and finely chop the strawberries. toss with the lemon zest and sugar in a bowl and let sit at room temperature for 30 minutes to macerate, or to soften and become slightly syrupy.
2. while the strawberries soften, stir the milk into the tub of greek yogurt to loosen and whip up the yogurt.
3. layer fruit and yogurt into four 8-oz. mason jars or other lidded container of your choice. yogurt parfaits keep in the fridge for about a month.

It's also time for Gazpacho
Here is a recipe similair to the one I had but lost in last year's move. I don't have a food processor, just a blender so am not sure how to do this. Any suggestions?

It's also time for Gazpacho
Here is a recipe similair to the one I had but lost in last year's move. I don't have a food processor, just a blender so am not sure how to do this. Any suggestions?
Ingredients
- 1 hothouse cucumber, halved and seeded, but not peeled
- 2 red bell peppers, cored and seeded
- 4 plum tomatoes
- 1 red onion
- 3 garlic cloves, minced
- 23 ounces tomato juice (3 cups)
- 1/4 cup white wine vinegar
- 1/4 cup good olive oil
- 1/2 tablespoon kosher salt
- 1 teaspoons freshly ground black pepper
Directions
Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!
After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop
-
Toque... the great Canadian fashion statement:
I love that parfait recipe. I am going out to get some larger mason jars... these are a must.
And Laurie I meant to say congrats on the job front.
-
I make my mini meat loaves in a muffin tin sometimes.
Kay- finally got all the kernals out from under my keys this morning so hope i dont have poo floating around here hehe!
Bedo- Those parfaits look yummy! I got fired from a job years ago because they had me working from 7am and i never made it on time. I said, have you met me yet? funny story on greensleves hehe! You could try the gazpacho in your blender or just chop them really fine.
Michelle-Sounds like a very busy day and lots of fun planned.
Nothing planned today we pretty much did our celebrating over the weekend but i will be able to see the fireworks out my window tonight that will be in a barge in the ocean, was suppose to go to a parade this morning but did not wake up.
I always forget what i read on the previous page so will just say have a great fun day everyone!
Oh and love the hat Tazzy!I thought a toque was what you took off a joint hehe!
-
LOL @ Deb tokin right along..... LOL. Love the hat tazzy, but a bit warm to wear it here. Looks like supper will be kabobs. I bought them premade so all I have to do is cook them. I am alone today as DH is at his folks, I didn't feel up to the 6 hour round trip. Well, everyone enjoy today. Much love.
-
that looks like the perfect breakfast for me RIGHT NOW
-
.. a great idea on the muffin tins for mini meatloaves.. I just passed on buying llarger muffin tins at a garage sale. (do you spray the interiors of the tins Debbie.?
-
Another good idea for muffin tins is to make scalloped or au gratin potatoes. Making them in a casserole dish takes forever, but I think it's about 20 minutes in a muffin tin!
Yesterday's breakfast was great! The weather cooperated and the guys cooked. I had made real hollandaise sauce (for the first time) but they couldn't pull off the poached eggs. So I used a little of the sauce yesterday on my scrambled egg sandwich and then this morning I made a real eggs benedict with a poached egg. First time I've ever attempted it, and the hollandaise sauce tasted better today. I had put dill in it, and it had definitely had a chance to hang out and flavor the sauce.
Deb - we took my mom to Doc Davis's yesterday in Pepperell. Have you ever been there? The Doc Davis special is your favorite flavor of ice cream, mashed strawberries, banana slices, hot fudge, whipped cream, nuts and a cherry. That was lunch! The place has been around since 1939 and they make their own ice cream. It was so yummy!
I was thinking about going to the beach today, but it will be crowded. I might wait until mid-week next week when it's hopefully less crowded. We'll see...I reserve the right to change my mind any time today
Or I could just float in the lake! Tough choices, I know!
I don't make the parfaits, but I eat Greek yogurt with berries most mornings. Mason jars are so useful! Someone gave me one a long time ago that had all the makings for brownies. You just added an egg and some liquid, poured all the rest of the fixings into the bowl and stirred. Nice way to make homemade gifts with whatever your imagination can come up with!
-
If you enjoy gazpacho, you may also enjoy Salmorejo which is a cold, creamy tomato soup made with tomatoes, bread, oil garlic and vinegar and topped with Serrano ham and hard-boiled eggs. It is delicious! Here is a basic recipe:
Ingredients:
2 eggs
2 oz Serrano ham (substitute prosciutto)
1 (8 oz) baguette, stale
1 large clove garlic
2 lbs (1 kg) ripe tomatoes
8 oz (250 ml) extra virgin olive oil
2 oz (60 ml) red wine vinegar
salt to taste
Preparation:Hard boil the eggs. Place in ice cold water to cool. Refrigerate until ready to serve.
Cut off hard crust from baguette, then cut into slices approximately 1/2-inch thick. Pour about a 1/4-inch water into a large glass baking dish. Add bread slices and allow bread to soak for 30 minutes. Squeeze excess water out of slices and place in a blender or food processor.
Peel and mince garlic and place in food processor. Peel tomatoes and remove seeds. Add to the food processor and pour in vinegar. Process.
Slowly pour in oil while processing. Continue to process until smooth. If mixture is too thick, pour in a bit of cold water while processing. Refrigerate until ready to serve.
When ready to serve: Dice Serrano ham. Peel and quarter hard boiled eggs. Pour soup into four bowls. Sprinkle ham over bowls. Add two egg quarters to each bowl.
-
Welcome, Mods! That sounds very yummy and perfect for these warm summer days!
-
that sounds yummy mods.. i've read about gazpachos from Portugal which often do not even contain tomatoes and always have bread.
maybe tomorrow i'll try that.
-
Another idea for muffin tins is individual bread pudding. Just fill the muffin tins with the recipe and put it into a larger pan and put hot water in the outer pan (bain marie) and bake until set.
On gazpacho - I like mine chunky - never puree all the veggies, maybe only half - which you can totally do in the blender. I also like it with spicy V8 instead of tomato juice and some avocado on the top for garnish. Now I am hungry for gazpacho!
For mini meatloaves I believe that there are also mini loaf pans in an all in one pan - I think it has 6 loaf-shaped spots. I usually do meatloaf on a foil lined jelly roll pan so the fat comes away from the meatloaf. Then again, the favorite family meatloaf has bacon all over the top of it, lol! It is spectacularly naughty but man, it is delicious!
I gave teacher gifts one year that were all the dry cookie ingredients layered into a mason jar with the recipe on a tag tied around the jar. It was cute and easy and inexpensive! I have also done hot chocolate mix in a mason jar with a cello bag of mini-marshmallows ties on for my DH's office holiday gift exchange.
-
Apple- Yes i spray my muffing tins with a little pam even though i have non stick i still use a little.
Michelle-Those tins sure come in handy i also make mini lasagnas in them too! MMM on the eggs benedict one of my favorite breakfast i could put hollandaise on just about anything even fried potatoes sounds yummy on a sandwich with scrambled eggs. I bet you have a nice tan going on about now!
Hi Mods good to see you posting here- That soup sounds like a keeper!
