It was HOT here today!  I refused to cooktonight, so we went out to a local hole in the wall restaurant.  We had fresh grilled mountain trout, a big salad from the salad bar and green beans.  Boy am I full!

Cleaned house today..did a ton of laundry and am beginning to pack for the trip to WI.  We're leaving Monday, so I'll be off the site for about 10 days...no access to a computer.  I'll miss everyone!

Nothing for dinner for us tonight. We ate a huge lunch complete with home made pie and we're still full.

We've been driving around in northeast Arizona this weekend. Pinetop, Lakeside, Alpine, Hawley Lake, Hanagan Meadow, Greer and Springerville were some of the names of the places. It's in the low 80F degree range where we are at and 111F in Phoenix.

Hawley Lake and Alpine are often the coldest spot in the lower 48 states, but because they are so high in elevation, "it doesn't count".

DH cooked baby back ribs for dinner tonight. We had fresh corn, potato salad and baked beans as accompaniments. Tomorrow I am trying my hand at beer can turkey. This bird has been squatting in my freezer since Thanksgiving, time to eat the thing. I bought some apple wood chips so I can add a little smoke. And I am going to use some of my daughter's hard apple cider as the beer. It's only 12 pounds so I think this will work. And I bought the fixings for a lemon blueberry trifle. I got the idea from Joyce's strawberry trifle, which is very yummy. Everything can be sugar-free...the angel food cake, instant lemon pudding and cool whip. I hope it turns out yummy!

Michelle:  The dinner sounds wonderful, and so does the dessert.

eric:  At 111 degrees I'd be getting out of town too!  Good that you have a place nearby to go.

We did drive 5-1/2 hours. We're lookimg for early retirement homes. So far the prices are not within range.... there are huge numbers of homes for sale, but very few actual sales.

We're looking at communities right now..some are to our liking, some are not. In November, when no one wants to come up to below freezing weather, we'll start looking at particular homes in the areas we feel "welcome" and maybe.....

I'm hoping to find a place that needs some work.

Actually we did eat dinner...a Jazz apple and a banana for me. Sharon and Chrissy (DD) had a frozen dinner cooked to perfection in the hotel room's microwave oven....

So good to hear from you Kay. I got a kick out of what I suspect is your IPad being devilish with your spelling! Congrats on the port removal, and being able to return to work. How nice to be able to enjoy all of those accomplishments and milestones of DD.

Yes, Debbie, that's the brand name...maybe it's just an East coast company? Not sure.

Have a fun and safe trip Kaara.

    Yea for your air-conditioner, Moonflwr!

We are lucky that even during heatwaves it is usually very sleepable here at the lake...requiring just a fan on some nights.....very different from home where we often need to rely on an air conditioner in the family room and bedroom to survive such heat waves

Tonight we had dinner at our good friends/neighbors. We frequently "pool our food" and eat together after boating or beaching. I was really tired today (damn!) so never made it to the beach but decided to surprise our friends with my version of the lamb burger that I had last weekend that was so tasty, since they love lamb. We were also going to have some other grilled meat, so I decided to go small and made burgers a bit larger than sliders. I mixed the ground lamb (yes, Laurie, it's tres cher!!) with minced garlic, rosemary (this is nuts, but I cut the rosemary "needles" into small pieces so no one chokes...at home I have rosemary powder which I'll use), and ground black pepper. We assembled the burgers with feta slices, lettuce and tomato. I forgot to bring the slices of red onion, but that was great on my lamb burger last week. They were a hit....they are just so more interesting than regular beef burgers....that is,, if you like lamb! :). We also had baked eggplant slices that were dusted with lemon pepper and parmesan, and sweet and sour cuke salad with tarragon.

I am up waaaaay too late...so off to get some shut eye.

In my quest for more calories, I tried to make a peach crumble yesterday with stevia. Yuck! It is inedible. I ate a portion around 5 and this nasty, weird aftertaste of the the stevia stayed with me till I fell asleep.

Everyone's dinner and outings sounds so good and fun. Kaara have a good trip and we will miss you too. Michelle- Didnt know they had lemon instant pudding that sounds yummy will have to look for it.

Lacey- Good catch on Kays post im surprised i didnt catch it. LOL! "Best pissable news" and "sapping peoples head off" LOL had me rolling. Your dinner sounds yummy and here is another thing i did not know they had was rosemary powder no one ever likes the hardness of the stems so usually leave it out but love it i guess i will have to go on a lemon pudding and rosemary powder hunt!Tongue out

My friend ended up being able to sing a pasty cline song tonight and got a standing ovation. The guy who was elvis did not do much for me, he was a little unprofessional the first song his mike wasnt working properly and yelled what the hell kind of mike they give me its not working and threw it in the trash, second song he said its too dam hot in here im sweating and then off the stage leaving everyone else on stage to sing which we didnt mind because Johnny cash's son came out a sang a few songs he was pretty good, then the introduction to elvis's entrance played over and over again until he finally showed up. Started out pretty rocky but all in all it was a good show.

Kay - yes, forgot to mention your return...nice to hear from you!  Congrats on the port removal - is that the FINAL procedure for you?  Or are you still working through the DIEP process?

Momine - I'm with you on Stevia - I don't like it in my coffee at all.  I find it works OK in things like lemonade - acidy things that can overpower the aftertaste.  I can't imagine baking with it.  I like Splenda for that purpose.

Debbie - I wasn't sure I'd find sugar-free lemon pudding.  I knew there was the regular stuff, but I really wanted the SF variety and sure enough it was right there with the vanilla and chocolate.  I need to keep that in mind.  My DH loves lemon meringue pie and I could make a sugar-free version using the lemon pudding and Splenda to sweeten the meringue.  They had banana, too!  Banana cream pie!  That would be more carby because of the bananas, but still better than the full-sugar version.

Michelle, thanks, so it isn't just me. What is splenda? I am bummed though, because it otherwise worked beautifully. The topping was just oatmeal, slivered almonds, cinnamon and enough oil to "moisten" with stevia added. Had it been brown sugar instead, it would have been delicious.

momine:  One thing I learned when I switched to stevia...you can't use as much of it to sweeten because it has a very sweet taste to it.  I used an entire pack in my iced tea and it was difficult to drink...too sweet.  I think you can use about half as much for the same result.  Most restaurants don't carry it, so I always have some in my purse these days.

Lacey:  Those lamb burgers sound so good!  If I can find gluten free buns (I think our local Earth Fare has them) I am going to make those burgers for us when we get back.  No telling what we'll be eating on our trip.  Family in WI is not diet conscious at all...probably polish sausage and all the trimmings for 4th.  A good excuse to cheat...hehe!  I certainly don't want to hurt their feelings;)

My BF's mother who is 97 is going to yell at me and say that I'm not feeding her son enough because we've both lost weight following this diet.  He will just laugh at her and tell her not to worry, that he feels better this way.  She's pretty grumpy these days...but she looks great for her age.  I say nothing...just go with the flow on these visits.  Usually we try to slip in another vacation during these visits, but this time I have to get back to go to the eye doctor for my injection...ugh...new doctor, so don't know what to expect.

Off to finish laundry, ironing and packing...happy Sunday!

Kaara, I used quite little, but the taste was really nasty. It is OK, I can just continue skipping the sweets, but I do miss it sometimes.

Momine - Splenda is sucralose, somehow made from sugar but no calories.

    http://en.wikipedia.org/wiki/Splenda

I use it in my coffee and Greek yogurt, and you can bake with it.  It measures out just like regular sugar.  You've probably seen it in restaurants - it's always the yellow package of sweetener.

Kaara - I guess at 97, your BF's mother will say exactly what's on her mind!!!

Momine:  Me too!  I don't "crave" them anymore, but I still miss them if you know what I mean.  I try not to cheat that often, because it starts up the cravings again.  After I had that red velvet cake, I thought about it for a week after:(

Thanks Michelle. No, I have never come across it. I have seen the name here and there, but didn't know what it was really. I will look for it. Does it affect your blood glucose?

kaara, I know what you mean. For me it is more that I can see that I need to get some more calories in myself for a while, so peach crumble seemed tempting.

    MOMINE

(SORRY MY KEYBOARD IS BROKEN AND I CAN ONLY USE CAPS) YOU CAN EASILY GROW STEVIAIF YOU CAN FIND A PLANT OR SEEDS.  IT DOESN'T WINTER OVER... THE LEAVE CAN BE EASILY DRIED AND THEN SPRINKLED ON STUFF.. IT'S PRETTY INTERESTING.

Momine - no, it's a 0 calorie sweetener and it doesn't raise glucose levels.

I have noticed that different brands of Stevia give off different tastes. The one I've settled on that I think has no bad aftertaste is the small Trader Joe's bottle, $9.99..... only that one! I have never tried to bake with it.....but for instance I used it in my sweet/sour cuke salad last nite and everyone chowed it down with nary a raised eyebrow. Will have to try to bake with Splenda and see how it goes....I could be a convert. :)

Beautiful morning here....up since 5 which doesn't make much sense since I went to sleep extremely late....maybe I'll try a nap later today. A few hours ago I caught sight of "our" grey fox again, bringing more prey to his/her den under our shed......asked him/her from the window what the meal was that was hanging out of it's mouth (not grapes:) and it promptly ran back to the woods. I'm glad we don't have any little ones running around our property this summer...DIL is expecting baby #2 in August so they won't be trekking up here. We'll be heading down there (NJ) probably sometime after our Cape visit next week. Sure wish we could convince DS1 and DIL to return to MA so we could be more involved with adorable DGS and his soon to be born baby sister.

Hmmmmm....I wonder what might come out of my mouth if I were to make it to 97!?

Of course, as I am busy buying my Trader Joe's stevia, you would be growing yours, Apple! SWEET! ;)

Deborrye... please don't flush your meds down the toilet.   I know we should not believe everything we read, but I have heard/read that when we flush pharmaceuticals down the loo, it ends up in our drinking water, the fish we eat, the veggies.  Everything we touch is tainted by it.    No matter how many times they filter it - traces of it are there.   I have even heard that the reason so many younger' ladies are getting bc is because of the birth control pill - they take it, pee and down the loo it goes.  If
someone can dispel that I would be happy to not believe it anymore.... For some reason there is something in the back of my mind... !

Anyway off my soapbox and back to food Smile

Deborrye... hope you can get comfort from seeing your plants bloom every year.

Debbie... I like the idea of chemo brain being a lifelong excuse.

Everyone's dinners sounds absolutely delicious.   I have just put some Italian sausage, broccoli,
egg muffins in the oven for breakfast.

Sounds as though everyone is having a wonderful weekend - we are celebrating Canada Day this weekend so have DH home for 3 days which is why I have got so behind on this posts.

So since I was up early I decided to make a nice breakfast for DH who was already working hard at work re-preserving the deck. Had pancakes along with super fresh sunny side up eggs. They really do taste better! Then took a short walk since I have some energy today. Now off to the beach....maybe a little nap there? :)

Tazzy, I do believe the concern about the water system is quite valid and never flush any meds down the toilet. I think I may have once upon a time...but have been preciously warned about the potential consequences of that...so will not be doing it anymore. I wonder what happens to all the unused bottles of meds that the pharmacies receive on their collection days?

I haven't cooked pancakes for breakfast for ages... tomorrow I think.

Yes, I wonder what they do with all the medicines they receive back which are unused?   Better not flush 'em down the loo Smile

Hi all! Stevia doesn't work for me, it just doesn't even taste sweet. I can't taste it. Splenda works fine. Weird how we are all different. If you use splenda to make the flourless peanut butter cookies, it is almost good for you. Everyone enjoy the weekend, much love.

Michelle- I have been thinking about that lemon pudding today since you mentioned it and hopefully i can find some at my local store. I just started getting use to the after taste of the sweetners like the jello ones i will eat once in awhile when dh and i are dieting i need to start making desserts this way again and get away from sugar completely. How are you doing these days on your chemo? I hope its been "gentle" on you.

Kaara- Wow 97 years old and still looks good, i can only hope! It seems my age is showing these last few months i look in the mirror and say, who is this person? Have a great time!

Tazzy- I have also heard about not flushing pills down the Loo. But it makes you wonder if its not safe being flushed down is everything else that gets flushed safe?Surprised

Lacey- I make pancakes ususally on Sunday and Mondays for Dh day off the rest of the week is 2 hard boiled eggs for both of us but have to have a cheat day snuck in once in awhile. Have a nice walk and enjoy the beach since dh is golfing right now i think thats exactly what i should be doing you just got me motivated.

Deb- Your chx parm sounds good.

While i was reading all the posts on desserts with stevia and splended i was watching pioneer women and she had some yummy dessert recipes for camping out thought i would share not sugar free (sorry) she took some bananas and slit them down one side  where it curved, and a through a little of the banana layered with carmal bits, choc chips and min marshmellows layed them on foil and put crushed graham crackers over them folded up- layed on camp fire to warm everything up. then with another dessert she took some graham crackers she put chocolate covered mints on top some roasted marshemellows heated those in some foil another was peanut butter spread on the crackers with choc chips and marshmellows.  I thought since it was summer and people are camping now it was some neat idea basicially smores but some varieties.

Off to take my walk on the beach too.

We celebrated our anniversay this weekend, went to El Gaucho for dinner Friday which cost a bloody fortune - but the dinner was really delicious- had chateaubriand (for two), with asparagas, baked potato, caesar salad and key lime pie for dessert (which we shared....).  On Saturday we went wine tasting, bought a couple bottles of wine, went out for lunch at our fave hamburger place, stopped for ice cream at Molly Moon's (I had a scoop of 1/2 Lavendar and a 1/2 of Earl Grey - DH didn't partake) - then for dinner I made rack of lamb, black rice and caesar salad with a bottle of Dusted Valley Petite Sirah with a couple pieces of chocolate for dessert.  For a late night snack we ate the remainders of our Friday night meal....

Today I made a pot of chili.  Laughing
