Michelle  Iam in charge of the wings as well for a superbowl party.  I want to do a boneless version that is a little healthier, but not sure how I will do this.  Anyone got any good baked ideas? If the weather is ok I may marinate some chicken fingers and put them on the grill and have the sauce for dipping. I make a sauce of lots of butter with a tad of flour for thickening, franks hot sauce and a splash of zesty italian dsg (adds a little extra zing!)

    Happy cooking everyone

Carrie- you could do chicken tenders and bake them, i put my oven at 500% at the lowest setting in oven, dip them in the franks/butter mixture and bake for 20-25 minutes turning occassionaly, I put them on a rack on top of a sheet pan to keep them from getting soggy. Have you tried Franks sweet chili sauce yet? It is delicious, bake your chicken as usual and then toss with the sauce after taking it out of the oven.

Perdue Chicken Strips for supper and some mixed veggies.

Thinking of you Laurie and your MIL

DH and I are not super sports fans but will be channel surfing back and forth on the game Sunday.

Carberry.. the oriental buffets around here serve boneless chicken thighs on a stick (skewer).. maybe they could be adapted for a chicken wing sauce type presentation..i think that would be awesome.

    Apple what a great idea!!

I am thinking chicken marsala for dinner...

This has been the strangest winter ever.  My son actually asked the other day why we had no snow and if it was time for spring yet.  I told him two more months and then spring would start.  He said but if there is no snow we should just have it be spring so we can go camping.  I have to agree.  There is no good ice for skating, no snow for snowmen or sledding- it's a bust on winter so far and now it's February!!  It BETTER not snow at the end of March!!

Mmmmmm, Laurie,....nChicken Marsala is one of my favorites!

They had boneless chicken breasts on sale for 1.99/lb but you had to buy the big family pack so we've been kind of having 'chicken week' here...lol

Two nights ago it was Salsa Chicken. Tonight we're having Cuban Chicken with Yellow Rice (Arroz Con Pollo).... Tomorrow, I'll use up the last couple of breasts.... Not sure yet what I will make.... Maybe a soup of some sort....

Cheating tonight . . . the boys read the Culver's sign on the way home from school and the flavor of the day is chocolate oreo volcano.   MMMMM . . . can't go wrong with an oreo volcano, can you?  Ok, so I'll have a salad to go with.

Seaside- I am so glad you liked the salsa chicken!  I always biy the family packs on sale and separate the breasts and freeze them.  I put two to a package which is enough for the four of us to have dinner on.  Same with roasts, when they are on sale I find a big one that has a few dollars off because it needs to be frozen or eaten with in three days, I cut it in half freeze half and cook the other half.

Funny thing is Marsala used to be one of DH's favorites, it isn't anymore- no idea why.  It's one of mine though and he had his pot roast last night ;P

yum.. i just made these.. but didn't use corn kernels and added a bit of baking powder.. more cheese too.

om gosh. super yum and super easy.

Cheese corn griddle cakes... tho i'd leave out the corn kernels maybe, and substitute cheddar and a little swiss for the mozarella

    ¾ cup yellow cornmeal
    ¼ teaspoon salt
½ cup fat free mozzarella cheese , shredded
    4 teaspoons butter , melted
    ½ cup low-fat milk
2⁄3; cup fresh corn kernels , fresh or frozen and thawed
    pico de gallo (optional)
    Directions:
1Put the cornmeal and salt in a food processor and process until finely ground. Transfer to a large bowl and stir in the cheese and butter.2Meanwhile, heat the milk in a small saucepan over medium-high heat until almost boiling. Gradually stir enough of the milk into the cornmeal mixture to make a very thick batter. Stir in the corn.3Spray a large nonstick skillet with nonstick cooking spray and set over medium heat. Drop half of the cornmeal mixture, 1 heaping tablespoon at a time, in 6 mounds in the skillet. Flatten slightly and cook until golden brown, about 3 minutes. Spray the griddle cakes with nonstick spray and turn. Cook until golden brown, about 3 minutes, transferring them to a platter when they are done; keep warm. Repeat with the remaining cornmeal mixture to make a total of 12 griddle cakes. Serve with Pico de Gallo, if using.  actually the guacamole was excellent with these.

in retrospect a bit chewy but with the proper side, these could be great.

    ILBoysMom,

Welcome!!  I think you will like it here!

I am not a big pie, cake, cheescake person but... Ice cream and/or cookies are my downfall!  Chocolate Oreo Volcano... Oh My!  Right up my alley....

Japanese takeout for dinner tonight.  We're giving up on Chinese takeout - nothing good in the area, and the Japanese hibachi steak is so good!  And it's less expensive in the long run.  DH and I can order one meal and share, and still have leftovers for lunch.

I got home this afternoon about 3:30.  My mom was in rare form early this morning..."I suppose this means I have to take a f#$%ing shower!"  Yup, that's what she said.  She never talked like that so it was a little bizarre!  She was definitely in a better mood after that shower.  I don't think I'll be able to do this again, though.  She was so lost in the hotel room.  She kept asking when my DH was going to come home from work.  And she didn't sleep very well, which means I didn't sleep well.  Cancer sucks, dementia is worse because there is just nothing you can do.

Oh Michelle! It is so hard when the people we know start to decline... Especially when it is a parent..

We are facing a similar situation with my husband's father... He can remember things from way back in the day with no problem but, things that have happened in the recent past or just even how to get somewhere that he has been a thousand times.... not so good!

He and my MIL visited over Christmas and I could see my FIL was disoriented even being here! So sad! My DH is an only child and his parents live 3 hours from us so... it's a challenge for sure...

Yet another crazy twist to this journey....

Thanks, everyone!  I know where her illness is leading, and these last two days was just a reminder.  Many of us are going through the same things.  It's especially obvious when you take them out of their normal environment.

Here's a link to Deb's recipe for the Fat Flush Soup, it has the 'missing" parts  Wink

Bedo - we don't have a get-together planned right now.  Doesn't mean we couldn't put one together.  Maybe early April when we can be more sure about the weather?

Deb, tip your head!  Your brain is slipping to the side.  It will set it right.  lol!. It takes a while to 'set'. My brain has been doing the same thing so I know.  :)

    That soup does look good!

Can't believe I am back to work 15 hours a week and I seem to have no time for anything any more. Didn't help that I was supposed to have my herceptin infusion today. Got to the hospital at 9:30. First I had to get a blood draw because they test my blood levels to watch heart function. I was waiting and waiting to go back for the tx. A couple of times the nurse came and told me she called the lab but the results weren't ready yet. Then at 2 o'clock, the lab says they never received the blood to test. Grrrr! So they did another blood draw and I have to go back tomorrow for the infusion. But the thing that really makes me mad is they drew the blood from my wrist first. I have a port, but the nurses were busy in the chemo lounge so they wanted to draw the blood so I could get the infusion on time. Then when I had to get it redone, it was either wait for a chemo suite to open or get it from my arm. Grrrr!

Welcome ILboysmom! I think we're friends from some of the herceptin threads. I am always up for ice cream.

Michelle, sorry about your mom. My mother's dementia is really bad now. She barely speaks and is in a wheel chair all the time. It is very sad. Seaside, sorry to hear your FIL is having some problems as well. And Laurie, I am so sorry about your MIL. I hope you'll get some good news on some of the tests when the results come back.

Had cheese burgers and veggie burgers with sweet potato fries and a salad tonight. I have chicken marinating in the fridge for chicken Marbella tomorrow. Hope it comes out well. Split Chicken breasts were on sale for 99 cents a pound. There are 6 huge breasts ain't the fridge. I'll cook them all then freeze the leftovers. May not have it until Sunday since my DD has her first big semi formal dance tomorrow then a dance competition in Lancaster on Saturday. We'll see maybe DH and I will have it after she leaves for the dance. She and some of her friends are going to have pizza here then leave for another friend's house at 6:30.

    Hope everyone is sleeping well.

I went to the store and bought all the stuff for hot fudge sundays, ohhh boy were they good, bought a scratch ticket while i was there and won 30 dollars, woo-hoo Thanks ILBOYSMOM If you hadnt brought up the volcano oreo i wouldnt of thought of the sundays and wouldnt have won the money too LOL!

Kay- Oh, I'm  so sorry you had such a rough day, and a long one too. That is just unacceptable for them to lose your blood draws, and where did it go? Hmm makes you wonder if someone else got your results instead. No reason for such mixups or errors. Sounds like it will be a fun night for DD is she a professional dancer?

Seaside - well, the right side of the image is definitely chopped off but you can figure out most of it.  I just thought it would be easier to give the link so we could see all of it.  Not a big deal Wink

Kay - that is just inexcusable!  I can't believe they let you wait that long and no one was paying attention.  And then to lose your blood... you have to wonder how that happens.

My DH is on his way to Missouri until late Monday night.  JoyceK and I are going to lunch tomorrow.  Otherwise, I've got a nice quiet weekend on the horizon.  Maybe I'll go see The Artist - not sure I can get DH to go see that one.

Apple good idea with the skewers in the chicken.  I decided I would also offer a sweet and tangy sauce and maybe a barbecue as well and we can all dip our own.

Kay congrats on being back to work...were you tired the first couple of days? I dont know how I ever got anything done when I was working, seems to take me all day just to do the simple task around the house.

My DH took extra clothes to work...so I guess we are going out tonight.

That soup looks awesome....ha ha does it really flush the fat?  I am all in!!

My DD is a professional dancer in her own mind. LOL. It's actually a lot like little league. She's on a team and goes to competitions and gets scored by judges and competes against other dance teams.

Got my herceptin infusion today. They had the results from both blood draws, so they eventually found it. Don't know what the problem was, but I was in and out in 30 minutes today.

DD and her friends are upstairs just about ready for this dance. All this fuss for a dance that is from 7:30 to 9:30. LOL. The girls look so grown up and beautiful!

Made the chicken Marbella, will have it when the girls leave. It smells and looks great!

    Kay,

Those first semi-formal/formal dances are so exciting!! Especially for the girls! Gotta look just so right down to your shoes... Even though about 15 minutes into the dance the shoes wind up in a pile along the wall as everyone moves to comfort over fashion!!

Hope she has a great time!
