Boy am I hungry for waffels now! Apple, your recipe sounds so good, both tasty and healthy! I always enjoy that combination.
Carolynn79 -- This vit D absorption issue isn't an easy one. I've had a problem getting my vit D up for several reasons...thyroid is probably one of them as I'm hypothyroid. I just had a biopsy, I think the 3rd or 4th since I was diagnosed many years ago now. Fortunately, still B9 but the nodules are growing and there are feeders...so they keep tabs. They decreased my meds so I'm adjusting...achy joints now.
I began taking Vit D when the ladies on the boards brought it to our attention. I found a suppliment that uses calcium citrate and calcium amino acid chelate that are absorbed in the intestines rather than the stomach. Calcium blocks the medicine I take for thyroid so I need to be careful to take the supplement later in the day rather than when I take my thyroid med. And, like Teka, I had problem with kidney stones so I decreased the supplement, thus my levels are down. My aches and pains are back too. Vit D needs calcium and magnesium to be absorbed.
As for my suggestion to take it from the sun, I read that the maximum needed is 15 min. at 50% skin exposure. I appreciate that we need to concern for skin cancers. I can't speak to that issue other than to say everything in moderation is a good general rule.

Minus Tow, I hear you I can only be out for 10-15 minutes at a time, my Endo says 2-3 times a day for 10-15 minutes may give me a boost, any more and I fry

Buongiorno!Saturday, a few friends came over for lunch...our first of the season. We were fortunate to have the breeze. The weather has been too hot to enjoy the terrace, even in the shade, ever since.You might notice that we removed the vines this year. They grew out of control and through the reeds of the roof. So I hung pansies this year. I made an appertivo station of pistachios in cups around the red lettuce plant that I've let grow to seed. Pretty isn't it? We've eaten the rest of the lettuce plants. I planted more romaine, but the geico are dinning on them so I'm down to only two plants.The main course was grilled salmon stakes marinated in pinapple and worchester sauce and mazzancolle (similar to big shrimp). DH doesn't like salmon so I grilled tuna steak covered in chopped pistachios. We had a side of asparagus, steamed the night before, then sauteed in EVO and white wine the day of. A salad of endive and fresh pinapple in EVO and balsamico closed the meal. The bottled water and white wine were kept fresh in the bucket of cold water nearby.

I think next year that the garden will be smaller. Between the garden and the dogs, we can't leave during the summer! So much for our get-away to Umbria! We'll need to find something for day trips for the summer and take a longer trip in the Fall. -

I think i am going to make a dry waffle mix that my kids can easily use.. just add an egg and some milk or water.

Apple...thanks, and glad that you enjoy the posts. I enjoy writing them. But when you describe me "cosmopolitan"...it just didn't feel that fit. When I think of 'cosmopolitan' I think of NYC, martinis, cosmo magazine. I've never drank a martini. I liked old fashions on occasion...especially in New Orleans. When I was young, I liked margheritas and Jimmy Buffet. Wiskey and me never did get along so well. But I still like Buffett on occasion. At the moment we are listening to "Through New Eyes" John Flukes on piano. You have the gift of music on the piano. You are so fortunate.

Apple...you are a joy. OK if you say so. But I still don't think of a big, rubber, garden bucket filled with water and freezer packs as cosmo. And our life is very simple. But I'm glad that you all are in it.

Looks like I will be seeing a few tomatos this year, have been growing tomato plants for the first time in my livingroom window. The strawberry plants look promising in the garden, filled with flowers. I planted them last year and me and my family cut that one strawberry to 4 equally sized pieces...it tasted great by the way
I will have to find a way to enjoy the strawberries to the fullest this year. Ideas are very much apreciated from you girls.

so i made cheese waffles with flax, almond meal, a whole wheat flour, a regular flour. cheddar and parmesan.
they were superb. i can see them as the perfect grab and go breakfast. i mean they were really good. i should open a franchise.

i mix frozen berries with jellos.. super simple and they taste delish.. 5 packages of jello, (artificially sweetened and sugar sweetened .... and about 3 pounds of berries.. they come in a huge package from Sam's.
it's the best.

a dessert.. i do add about 6 cups water. I am making it soon. .. in fact tomorrow, and will make note of measurements. i just fill up the bowl. people absolutely love it.. it's so good. i really like mixing the sugar and the sugar free jello.. - it has a unique sweetness when mixed with the berries... a little whipped cream. Seriously, i have never gotten so many compliments on a single dish and have made it for about 10 years. you can have it ready in about 30 minutes because the berries are frozen and they instantly gel the jello.
My gluten free sis and her family are coming into town and I'm fixing a big dinner. That will be the dessert. I was going to make gluten free cream puffs.. but, but, that seems too hard. Where is my other sister when i need her to keep track of my brain? and the dates? why haven't i decided upon a main dish?

so i was going to try and cook a few zuccini flowers for dinner last nite, but my daughter started crying at the thought of the flowers cooking in the pan.

Apple--really, she was upset because of flowers cooking in the pan? Eliminate animal and plant, what is left? Air? The jello sounds great with the berries. I haven't had jello in years! Not on the shelves here either.
We just finished a birthday lunch for the daughter of DH. In spite of the 96 F. it was still a very nice day on the terrace with a slight breeze. No pics...I was moving much to slow for that. DH made pasta freda, his usual masterpiece. I stirred two zucchini, small bag of frozen peas, some shredded carrotts, chopped mushrooms and a cup of chopped tomatoes sprinkled lightly with some oregano in a pan with olive oil and white wine and sauteed for a bit. Put that in a light crust, covered with slices of mozzarella and baked for 20 min. That followed the pasta freda. Then we ate some mixed fruit salad and a lime creme pie. Karkada tea all around for those who didn't want wine. We also went through five bottles of water. It was a nice time. They helped me clean up.
Thursday we had our last writer's group meeting for the season at a member's home. It was pot luck lunch and we all brought a dish...a nice variety. We even had Turkish coffee. I haven't had that since I was in LA. I always learn something new here. We were talking about the Etruscan civilization here and I learned that the town where we were, Palestrina, predates Etruscan civilizations that predate Romans. The people there were the indigenous people. With so many conquerors stopping by, the Italia lineage is from as far away as Asia. Imagine! I also left my camera at her house. Ooops.

Thanks for the update, Marilyn. What is in the pasta freda? The Greeks call it kerkede, with an accent on the last syllable. It is very refreshing in summer, but my husband can't stand it. He spent some time in the Sudan and never had anything else to drink there. Hasn't touched it since.

i love my daughter.. i think she is emotional because she is a preteen... she has always been sensitive. i think she imagines the pain of the leaves wilting.... i don't know.

i think tonite i am having one of my emergency type meals..
pasta, cubed feta, fresh herbs and canned tomatoes.. of course much better with fresh garden ones but they are still green.

Momine -- butterfly good quality, drained not rinsed; cherry tomatoes, diced kalamata olives, thin slices of garlic glove, ground pepper, and smallish cubes/ or if you prefer, triangles, of mazzarella all drizzled with EVO in a bowl. Drain the pasta al dente and add to the bowl, toss with the ingredients. Best served at room temperature. So if you make ahead and refrigerate it, take it out for a time to lose the cold.
I can imagine that your DH has had his fill of kerdede (a rose by any other name). I appreciate its' ancient roots. I enjoy this tea every summer with fresh mint and oranges w/o sugar.

Momine...prego. I forgot to mention that the pasta is poured over the ingredients while hot so as to melt the mozzarella and dispurse the flavors. I also forgot to mention to add slivers of fresh basil leaves and a sprinkle of oregano.
