    The raspberries (mashed up) and blueberries on the shortcakes were good last night.  The raspberries are very soft and some beginning to mold already.  Bummer.  Blueberries good to go.  Should have bought more of them.  Also had blackberries for same price; don't know ounces.  I don't know if it just looked like a good deal but am pretty sure Texas blueberry season is over so that probably was a good deal.

    Anyone got ideas for mangos?  I might just slice and eat them.  Making stir fry tonight called Primavera.  Has very unhealthy smoked sausage in it but at least the peppers/squash/zucchini will make up for it some.

    Bad girl I could not make myself get off to SS/church today.  Told myself once I felt better from rads I would go faithfully.  DH off today (every other weekend) and wanted to spend time with him.  Of course, I'm on here and he's out mowing.

    Smoothie recipes anyone to recommend?  Bought smoothie jar for my Oster and have not used it yet.  Also assortment of frozen berries.  Anyone recommend a protein powder?  I've heard whey powder but again such giant containers.  Cannot seem to find vanilla instant breakfast except in single servings box.  Thought that might add to it taste wise.  Also have frozen yogurts.

    Teka - I would think all commercial buttermilk is cultured as least at the big grocer level.  Maybe not so in the health food industry.  Do have a Sprouts in Ft. Worth.  Might be interesting to check.  Could be wrong.  Do you mean homemade?  I wouldn't know the difference between cultured and not.  I do know this stuff is thick!!

    OH, just went off and googled Bulgarian buttermilk.  Added yogurt cultures.  More tart/thicker.  Most images on google say cultured.  

    Oh, just remembered, too, that Trader Joes is close to opening here.  Within, oh, about 6 mile stretch in Ft. Worth will be Sprouts, Trader Joes and Central Market which is again a Texas co. but what a place.  Whole Foods is clear in Arlington which for me would be about 1.25 or 1.5 hour drive.  Those other 3 are about 5-10 minutes from my office which granted I don't spend much time in since I drive around for a living. Need to start carrying my cooler.  Been driving by a neat produce stand but never remember cooler.  And made my last trip out there on Friday for a 2 month stretch.  About a 15 mile trek out of my usual route.

    Teka - I would suspect it's pastuerization issue.  Know Texas is not a raw milk state; can't sell or give away. Now your own use is different.  Went off to read about uncultured buttermilk.  Chowhound had nice discussion.  Product left over after making butter.  All supermarket buttermilk is cultured today with maybe a few exceptions.  But did have a nice discussion about making your own buttermilk.

    Link down near bottom of page from David Fankhouser for making buttermilk.  Know many goat people who quote using his cheese recipes. No personal experience with his recipes but if you're in the mood to experiment???  Chowhound link is very old (2004) but does discuss finding whole milk in NYC. Bet much easier know with natural foods movement.

    How about raspberry or blueberry vinegrette?  We had fresh cooked Kale, fresh asparagus and red and green lettuce salad, made a orange vinegrette, orange rind, honey, salt, pepper, olive oil, white balsamic vinegar, a splash of sesame oil and a pinch of red pepper flakes, used it on the cooked kale and the salad!  Making strawberry freezer jam today.  We have been enjoying fresh strawberries and yogurt with granalo for breakfast, yum!

    soooo everytime i remove the stamin the whole flower comes off.  I am a failure.. but i think the plants are pollinating themselves.  i see little tomatoes in quite a few places... all because these silly dear came along and ate the whole top 4 feet of the garden last year.  they left the stems.

    they are sweet tho... the deer.  However, i think they were culled or transferred.

    Apple - did you have as big a drought in Kansas as Texas had last year?  Think deer would eat tomato plants as the very last thing.  Being related to the nightshade supposed to be toxic to goats.   Though not so much since a little feller I gave away several years ago promptly ate his new owners tomato plants without suffering any side effects.  But in a drought think they will eat anything.  Last year or two had an armadillo just out back and did not seem phased by us being in backyard just a few feet from him.

    Had to wire up the Brandywine tomato more today.  Read that they get so heavy it breaks the stalk.  But also read susceptible to borers.

    Teka - Googled Upper Jay.  See you are not anywhere NYC.  Must be beautiful up there.  Enjoyed the discussion about buttermilk.  Makes me want to check my freezer since I think I have some in there.  Also found the "how to freeze buttermilk" link.

    Carolyn:  Would you mind posting the strawberry freezer jam recipe you use?  Just the thought makes me hungry.

    Well I have never gotten the zucchini cobbler but i did google it and got several recipes that I will try.  I went to a luncheon the other day and had two dishes that were very good with the recipes so here they are

    Squash salad: Tatuma squash very similar to zucchini the younger the better cut into 1/2 inch chunks do not need to peel.  1 read onion diced, three celery talks sliced, half a bell pepper cut into chunks, a small jar of diced pimientos with juice and some black pepper.  Toss with dressing made of 3/4 cup sugar, 1/2 cup apple cider vinegar, and 1/2 cup canola oil.  Make the night before and marinate in the frig.

    Mango Salsa:  2 cups chopped mango, 1/2 cup chopped red onion, 2 cloves chopped garlic, 1/2 jalapeno pepper- chopped, 3 Tabl lime juice, 1/2 cup sugar.  Combine all ingredients and chill before serving.

     Teka,  Yes, 3jays and 3jaysmom are one and the same.   I got to meet one of the J's....went to his home for dinner so I could meet the grandchildren and we had planned on eating in that night so I had started on stromboli which we took to his house and ate there. 

     We ate out a LOT....I went to bed in pain totally stuffed and very uncomfortable many nights.   We ate at a Turkish restaurant the she and her husband used to go to a lot and it was really good....on the boardwalk at Hollywood Beach.  Then we ate at their favorite place twice which has an Irish name, but it had a very eclectic menu and I had really good fish both times.  Then last night we went to a Cuban restaruant since I had never eaten it before....I got chicken, she got pork and her husband got the beef so I was able to try it all...very good, but I was so stuffed by the time the flan came, I could only eat one bite of it.  I did not take pics of food the entire time the way I normally do, but I did get a pic of the stromboli and the flan. 

    Apple, loved your posts.   Eureka Springs which is in AK is one of my favorite places.   I had a Tante Erna and she was German...Tante Erna and Uncle Hans.

    I saw fruit and produce when we went to the grocery store that I have never seen before.....amazing how varied our country is.

    Marybe - A very nice trip. Thanks for sharing it with us. Flan is one of my all time favorites. I agree that the diversity of US is what makes it really special and strong. I've come to appreciate that more and more since I've lived here. I'm homesick.

    This is certainly not a gourmet food question, but has anyone ever had a peanut butter and bacon sandwich?  I was fixing one for a quick breakfast one day and my husband goes Peanut butter with bacon?, don't like the sounds of that.   And then when I was in Florida 3jays and her husband thought it sounded pretty gross, but I am telling you it is good.  I am not sure I would want bacon on my icecream sundae the way they are doing it a Burger King now, but it is good with peanut butter on toasted bread.

    Freezer Jam

    4 cups crushed berries (I used strawberries)

    1 1/2 cups sugar

    1 pkg freezer jam pectin (ball brand)

    crush berries, mix sugar and pectin, add to berries, stir well for 3 minutes, ladle jam into containers set on counter for an hours and then freeze for uo to 1 year or store in refrigerator for 30 days (lasts longer)

    Do any of you struggle with Vit D and calcium absorption?  I am having issues will try a prescription Vit D to see, normal D is 45 and mine is 15.  Just wondering if anyone had any advice to boost absorption, I am taking in enough but not absorbing it.   

      I am starting to walk a littel down to one crutch, actually picked fresh peas by myself today!  We will have 1/2 beef, 1/2 turkey burgers and peas for supper tonight.  I just love this time of year fresh veggies and fruits!! 

    Made waffles this morning and substituted some (25%) of the white flour with ground oatmeal and ground flax seed, they were good.  I took fresh strawberries and blueberries, added a little honey, maybe 2 tsp and a tbls of pure maple syrup, let it set and ate it as a waffle topper, very good and was enough for 2 of us.

    I was taking Vit D3 5000 units and mine finally came up so MO swithced me to 2000 IU dailys we will see what my next Vit d level is as he checks it every three monhs.

    Put up salsa today with the rest of my garden tomatoes.  Told DH I have spent the last three Saturdays in my kitchen.  Will be nice to take a break next weekend.

    Carolyn:  I take 4 Citracal w/D (1260 calcium & 1000 Vit D) and an additional 1000 IU Vit D daily. My gyn said the Citracal brand has the greatest absorption.  I've never had my D level tested either.

    Thanks for the freezer jam recipe.  Wonder if that would work with peaches too?  Do you think more or less sugar?

    Marybe - I'll try the peanut butter & bacon too.

    Minus Tow, this recipes works with peaches also, but use a TBLS of fresh lemon juice, I have also made with apricots use the lemon juice.  

    Thanks All I am taking supplemenets but not seem to be working, it is most likely tied to the thyroid cancer.  Hopefully the Prescription D will help.

    I was taking supplements but had the problem of kidney stones. It's a puzzlement. Best way to get vit D is 50% of the body uncovered in the sun. From what I read, the body flips a switch when enough is enough... There must be somewhere on your property to put a sun bed in privacy :-))  My levels were very low the last time I checked...17. I need a sun bed too :-0

    Of course you're right about the sun.  However after 5 basal cell skin cancer surgeries and 20-30 pre-cancerous lesions frozen every 6 months, my dermatologist long ago made sun worshiping forbidden.  I was raised in northern California - slathering on baby oil for a fast tan, but I even filled in my pool a couple of years ago.  I HATE staying out of the sun.

    i am a big waffle fan.  i can make a very healthy batch of waffles and the kids love them.. little do they know they are eating flax, whole wheat, extra eggs and ground almonds.

    i freeze the leftovers and they are always gone by the end of the day.  gently warmed in the microwave.. maybe a little syrup.. i hope i have some right now actually.

    oh dear.. my whole family has been gone these last 3 days.    i miss them but am sure glad they are gone.  i have peanut butter and bacon on my brain.  i really don't wan't to cook bacon.. but, but but..

    o my gosh that sounds so delicious. i have been eating a lot of peanut butter on toast with butter on top.. the most decadent thing ever.  i think I'll settle.
