My garden is going crazy, I have harvest spinach a couple of time, yellow squash, green beans and new potaotes. Had so much squash and green beans I shared with my inlaws and my mother. I am waiting on the tomatoes seems forever for them to turn red but once they do OMG I will have more than I know what to do with.

Marilyn your trip sounds great I am so happy you had such a great time with your family, my sons are a bit away but we do get to see each other once or twice a year! The garden is slow but coming along, we have been enjoying frsh asparagus, lettuce, rhubarb and winter onions. Made a big pot of my spicy baked beans and have been enjoying them. Cellulitis infection is back so not been feeling too good, only working part time while I work thru it and reading. Chest, and arm are very tender this time so too much movement is uncomfortable. We are hoping to go walking int he woods this weekend to look for morel mushrooms, DH found one small one so we are hopfeful.

I need to get back on the weight loss wagon again, not doing to well, I find when I am not feeling well I snack to feel better, it doesn't work but I do it anyway. Oh well with the garden starting hopefully I will eat fresher. Good to check in on everyone again!

I am on board, let's support one another, DH and I discussing diet, we love rhubarb and especially rhubarb custard pie, we are going to make a tangy rhubarb custard, no crust will let you know how it turns out. My biggest issue is stress eating, having to stop it, we have also been woking on trying to get more fresh fruits and veggies into our diet.

Our rhubarb custard turned out well, just use any rhubarb custard pie recipe and add one egg, chop rhubarb put into pie pan, pour custard mix over top and bake until set. Rellay have to be good on my eating, had a car accident earlier this week, bruised form head to toe and have a badly sprained ankle, will take sevearl weeks to heal. Nap time!

I have been having all kinds of fresh veggies from the garden. When they are fresh I just like to steam them with salt pepper and a little EVOO or butter.

Sherry I agree, we have been enjoying fresh asparagus, I like it with salt and pepper, maybe roasted with a bit of EVOO, lettuce is so tender, can't wait for the rest of the garden to get going. Strawberries are beginning to bloom!

It's been so long since I've posted here, I thought I was on the wrong web site! Many changes.
I've been busy. From the time I arrived home from my visit with family in US, I've been packaging, moving and unpacking (still not finished) our vacation apartment that we sold and settled yesterday. It's been intense. But I've been following along our chats.
Carolynn79 so sorry to hear about your car accident. Please take time to heal. Hope all is well soon.
About weight watching ...I'll be happy to join in on the efforts. The picture above is my first ever romane lettuce grown in a container in my garden. I'll find the pictures eventually.

Teka, I've been holding my weight down since my return but only because I am eating half the portions, especially the wine, pasta and bread. This is taking effort on my part I can assure you. I still have many pounds to go. Summer will help that along as the menu shifts to the season.
Sherry hope that you're feeling better. Your garden is certainly meeting your expectations! Brava! I never got my raised bed in...don't know if it will happen. Too many things going on.

I took some time this morning to look around the new web site. It seems well done. I'm glad though to see that our thread survived the changes.
Yesterday, our friends came over for lunch. It was pasta freda, first of the season and yummy. There was some gelato in the freezer that we took to the terrace...a very warm day. We buy the gelato from a particular shop who makes it fresh. I really must try to get the recipes. I'm still behind on the clean up around here and the friends looked past that...that is why they are called friends! I putzed around in the garden and we picked at the strawberry plants while we were sitting outside. The dogs enjoyed a several rounds of fetch the ball.
By dinner time, we were tired. DH anticipated this probability and had shopped for speck, mortadella, salami, and cantelope. Yesterday, another friend dropped off some ricotta...a thank you for the bag of archery uniforms and tee shirts that I no longer use and gave to their daughter. The ricotta found it's way to the table for dessert. Not the lowest item in calories or fat though.
So I reined in the portion.

Those are bread crumbs on the cantelope. I remove the bread center and eat the crust.

Your pictures always make my mouth water, Marilyn. Sherry, Was it you I was discussing my worms with that one time?....they all died. I don't know if they got cold (should not have in the basement) or some of the spray I used to get the fruit flies got to them or what, but the did not survive the winter. I was not meant to be a worm farmer.
Yesterday I spent most of the day making sauerkraut balls for my Dad's upcoming 90th birthday party. They can be made ahead of time and frozen and I need to have as much ready beforehand as possible. We are doing a German party. Sauerkraut balls, those big soft pretzels and Nuremberg (sp) brats as appetizers (they are like finger size). Then I am doing pork tenderloin, red kraut salad, German potato salad, full size brats, kraut to put on the sandwiches if people want it, buns, fried apples and carrot cake. I am not making German Chocolate cake since my father hates coconut and my carrot cake recipe is really good. Suppose Schwartzwalder cake is a possibility also, but I am running out of time to make this stuff. I bought a lot of Riesling when I was in Williamsburg as they were having a big sale and I will also have German beer and soft drinks. For his 80th we did a German party also and then I wore a dirndle, and I really decorated and had a program planned like This is your Life, but I think my costume days are over and am just hoping I can pull the food off.....am finding the Adriamycin makes me tired.
I as happy to find this thread again when I was scrolling....am still not used to and do not like the new format much.
Finished sauerkraut balls....a PIA to make, but very good. -
Marilyn pictures are awesome! I to am trying to watch what I am eating so I don't gain while I am down. We had a very nice Mothers Day meal, baked cod with fresh garden herbs, tyme, parsley, chives, asparagus with rice and spring onions, mixed green salad with pickle dressing (we use the bread and butter pickle juice, olive or walnut oil), and a wonderful rhubarb custard. We then made onion soup for supper, I used the asparagus ends and simmered them with onion skins, left over mushroom stems, herbs, and celery tops, to make my broth, I carmalized vidalia and spring onions, added the vegtable broth, tsp of beef base, a squirt of worchester sauce, served it with a little montery jack cheese and a slice of bread, very good. My DH helped with all! The weather here in Michigan is very nice right now, I can get to the deck and porch so it is nice to get out a little.

Marybe yes we had discussed the worms. To bad yours did not make it. When I was adding on to our raised garden beds and preparing the soil I found lots of worms in one of my beds so I placed them in my other beds since they will multiple. I had to harvest all my spinach as the slugs found them and loved them so I decided to plant another bed a green beans. As I was messing with the dirt I found lots of worms in there. I think the worms like my soil which is a very good sign.

Anyway, summer starts slowly up here so my veggies are still in my livingroom windows. We actually have snow at the moment, I am a bit fed up with that. I want sun and green grass and some heat!

Just wanted to share with you a recipie I tried yesterday eve, which I enjoyed a lot. Good for us all who are thinking of slimming down :-)
If any of you have a recipe of delicious salad you would like to share, I would apreciate it.
Lentil bolognese:
1. 2 tblsp coconut oil
2. 1 big onion, chopped
3. 3 garlic cloves, crushed
4. 2 bay leaves
5. 2 tsp oregano
6. 2 tsp dried basilicum
7. 1 tsp sea salt
8. 1/2 tsp white pepper, grounded
9. 1 sweet potato or 3 carrots, chopped to dices
10. 100 g brown lentils
11. 1 can stewed tomatos
12. 1 can coconut milk
13. 3 tblsp tomato purre
14. 2 tsp organic vegetable stock
15. whole grain spagetti
Ingredients 1-8 are heated in a casserol on low heat for 5-10 min.
Add ingredient 9 and brown for 1-2 min.
Add ingredients 10-14 and cook for 30 min.
Cook the spagetti while at it.
Vola!

Idun, you stirred my thoughts about salads. I have a friend coming for lunch tomorrow. I have red lettuce ready in the garden and thought I'd make something from that. I came buy an idea that I want to try...lettuce wraps instead of bread. Bread adds weight to my scales. So I'm going to buy some mazzencola, asparegres, and make some wraps. I'll let you know how the experiment goes.
In the meantime, here are pics today of my garden. Teka mentioned that her tomatoes aren't growing yet. I thought I could show you mine. I'm especially happy to see little plants growing from the seeds of last year. I simply put the tomatoes in the earth that didn't come to ripen. Maybe I should move them so they can grow better.

We have been enjoying lots of fresh lettuce, hopefully will get pictures this weekend, we like a dressing of toasted walnut oil (or olive oil), balsamic vinegar, touch of honey and parmesan cheese. Tried a new recipe today I liked ir DH was ok
Black bean enchiladas
corn tortillas, vidalia and fresh spring onions, cooked black beans, spinach, and colby jack cheese (use your favorite). Dip tortilla shells in sauce, fill with above mixture and roll up, place in pan.
I use 1 TBLS bacon grease, 1 TBLS flour, make a rue, add 1 cup water, 1 cup chicken broth, 1/2 cup favorite salsa, 2 TBLS favorite chilli powder, (I use New Mexico Medium), salt to taste. Pour sauce over rolled tortillas top with cheese and bake for 20 minutes at 325.

This was my salad last night...fresh picked. I dressed it with the usual EVO and red wine vinegar. It was yummy.
The meat was veal.

A friend came to visit and have lunch with us yesterday. Over the course of the meal, we talked about many things including Idun's interest in salads and our various creations. We concluded that the best salad creation are based on local farms and in-season. My trip to NE and West coast US at the end of March beginning of April reflected some limited choices for salads because the local farms hadn't produced yet. Most veggies were imported from green houses or distant places like Canada, So. America, Mexico. California had more to offer because of climate.
Idun, I imagine you and Teka share similar wait times for fresh veggies unless grown in greenhouses. I wish I could have shared our table with you yesterday.
Here's what I made...an experiment of lettuce wraps. The lettuce didn't wrap so well so I left them open on the plate. I probably need a different type of lettuce the next time...but this was pretty!

I picked up my friend at the train station and walked to the produce shop nearby where I bought the asparegas and pinapple for dessert. DH was at the fish shop buying the mezzancole and they were beauties! When we got home, I started steaming. I clipped the bottoms of the asparegas to puree so not to waste the more fiberous part of the plant--I added the puree back to the pan together with the chopped mezzancole and asparegas tips. I didn't add any other flavor to the pan except the EVO and splash of white wine.
We were going to eat on the terrace but the breeze was a little much. I clipped the lettuce from the pots while we were out there.
Now a confession--she brought with her, hand made chocolates from Rome and we ate a few with our espresso. Mia culpa!
