    Round 3 has been ok. Had some taste changes this round, but overall feel "lucky" compared to the SE others have. This mark did show up the other night, not close to an injection site and not really painful. Just keeping my eye on it. I have been doing a little yard work, so wondering if a bug bit me. Hope everyone is well.

    Sensi, Chance looks really happy. Hope that doesn't turn into a nasty bite.

    Busy week. Started house and animals sitting for DS, he and family went to NY for a wedding. Also had my step granddaughter wedding yesterday. Turned out very nice. They are off to HI today.

    GD and Evie were here for the week, they leave today back to CO. But they'll be back in November when my DD, SIL, GS and we go to HI. Won't get to see much of them.

    Still feeling a bit on yucky side. Stopped at the store on the way home from church to pick up some soups. Got into my pjs as soon as I got home and was heating up some soup for lunch

    Smaarty - Your little Evie is too precious and growing so fast. Glad you got to spend some time with her. You look great as well.

    Sensi - Ouch, that looks like it hurts. Do you have a way of asking your doctor about it, or an urgent care close by you can go to?

    Mr. Chance looks like he was having a great time. They certainly motivate us to get up and move, don't they.

    I'm not sure how you've missed it, but I am a Cairn Terrier nut, so that is the breed for me. Waiting for puppies to be born sometime in October. If there is a male, then I am supposed to get him. You have apparently missed the pics Shep has posted in the past for me. She calls it puppy porn, just to get me going.

    Loverly - Good for you on all that you've accomplished in the organizing/down-sizing. My offer to share my Pumpkin Cheesecake Cupcake recipe goes for you as well. It is actually a combo of a couple recipes. They have a caramel/toasted pecan topping on them. With the cupcake size, it is easier to do portion control. Well maybe. ;0)

    Shep - How are you doing. Missing seeing your spunkyness posted here. I texted a friend of mine in California the other day to ask how her dogs were doing and she texted me back with a pic of her daughter and female dog Rosie. Titling it with "here is her sassyness. Both of them"

    Okay here is the "Pumpkin Cheesecake Cupcake" Recipe

    4 (8oz.) pks. of Philly Cream Cheese, room temp.

    1 1/2 cups sugar

    1/3 cup flour

    2 tsp. cinnamon

    1 tsp. nutmeg

    1/4 tsp. ground cloves

    1/4 tsp. all-spice

    6 large eggs

    1 1/2 cups canned pumpkin puree (14 oz. can)

    1 bag of gingersnap cookies


    1. Preheat oven to 325 degrees.

    2. Line cupcake tins with paper liners & put one gingersnap cookie at the bottom of each cup liner.

    3. In a large bowl, beat soften cream cheese until light & fluffy.

    4. Add sugar, flour & spices.

    5. Beat in one egg at a time, making sure each egg is incorporated.

    6. Add pumpkin puree & blend well.

    7. Pour filling into cups to approx. 2/3 way full.

    8. Bake for about 20-25 minutes, until the tops are slightly golden and firm to the touch

    9. Cool on wire racks . . . . . . the middle will sink slightly.

    10. Once cooled to room temp., top with Caramel/Pecan topping.

    Caramel/Pecan topping

    2 tablespoons unsalted real butter

    1/2 cup brown sugar

    4 tablespoons of heavy whipping cream (35% fat)

    1/2 - 3/4 cup of chopped Pecans, toasted . . . . . . . . . . Preheat oven to 350 degrees

    1. To toast pecans, put them on a baking sheet and toast them just until they become aromatic, about 6-7 minutes.
    2. Watch them carefully, as they scorch easily.

    1 tsp vanilla

    Melt butter in saucepan. Stir in brown sugar, until sugar is dissolved and mixture is bubbling.

    Stir in cream until well blended and continue stirring until smooth.

    Stir in vanilla & pecans.

    Let mixture cool for 3-4 minutes, then spoon onto cupcakes.

    Let them continue to cool to room temp, then place in fridge until well chilled. Place a squirt of whipped cream on top before serving.

    Hi Patty, so did they make you a vampire? How many pint of blood did you receive. I agree with Cling regarding taking it easy on the solid food. You really don't want any setback because you have special celebrations ahead. Talked to Ms. Sas last Thursday. She is taking a break from BCO....probably burned out from researching. I could sense that she was down. It would be good if you call her.

    JunieB, I would love the recipe for the pumpkin cheese cake. As far as portion control, it doesn't work with DH. The guy loves sweets. I usually have to keep an eye on him. He will sneak extras upstairs.

    WildT, not your hands! Could it be from the TEs hitting on the nerve? I can see how people get dragged down with chronic pain. Bummer. I really hope that this is the peak period of the SE to the AI and that it will get better . I am ER- so can't imagine what you ladies are going through. So exchange surgery is in December? Your chest must feel like rocks by now. You will feel so much better after the swap. Sx will be here before you know it. Hang in there.

    Loverly. Hip hip hooray. Great news in your scan !!!!!! Thanks for the update on SAS. At least I know she's still with us. I I will def still call her tomorrow. Everyone needs to know when they are missed. She has supported me and called to check in me many times. In fact , I know she has done the same for countless people.

    Susan. What a sweet dh. What kind of soup ? Was he dressed only in an apron ? Just visualizing my dh in the kitchen. Good thing aprons tie in the back not the front. Lol. I bet shep has some sort of pic for that. Lol.

    Jazzy ~ You always have the coolest pics - without even having to leave your house! Sorting through a loved one's things after they pass is so difficult. Your friend must have been so grateful to have you with her. Glad the estates sale went well. Soooo envious of your foot massage! Such a nice feeling........

    Susan ~ Yum! Chocolate cake! How do you un-freeze it? I like to munch on raw potatoes too sometimes :)

    Sensi ~ Chance is the happiest looking doggie! I smile every time I look at him with his tennis ball in the water. Did any of the dogs go down the slides? That must have been such a fun day at the water park! Wish they did that here. How is your arm? I had a burn from my last round of rads that looked like that. Hope it's not a reaction from your treatment. Maybe you should let the doctor know? Glad you've been feeling well enough to be out and about!

    JunieB ~ Your trigger thumb is sore again? FFH's doctor had told him 85% of folks need a second injection. Will you go back for another one? Can't wait to get mine done Thursday. I can barely use my right hand. thhhhhhp! Glad your hip is still behaving. Are you walking more or still using your power chair? You and Susan have got me wanting to do some baking. Your cupcakes sound soooo good! I'm saving the pumpkin one you posted. I'd love to know your recipes for peanut-butter frosting and the apple spice with cream cheese frosting.

    My back was feeling better and now it's hurting again. Not sure if it is from healing, fibro, arthritis, overdoing, weather or all of the above. Very aggravating. I've been sleeping a lot; just not at "normal" hours. Oh well......

    shep. Sorry to hear your back is hurting again. Back aches are the worst. Can't really use any part of the body without it affecting your back. Maybe too much rest ???

    Feline. Yes I finally got fed. Thanks. Had beef stew. Only took a couple spoonfuls to fill me up. Gotta remember not to try to stretch belly too far all at once. Actually just finished two Oreos with apple juice at 4 am. Lol. Food doesn't usually appeal to me. Can't say I really crave things. I just force myself to eat to stay alive. If I could live on crunching ice I certainly would. But all I've done the last day or so is think of food. I want to cook like everything when i. get home. Keep changing the menu because I can't make up my mind. Every commercial about food just looks so enticing. Must be what a drug addict feels like. Lol.

    Just popping in for a minute. We took a quick road trip this weekend to see our Missouri friends and I am dead tired. My mouth is in pain and I lost another tooth. Weirdest thing, looks like the base of it rotted and it jus fell off. But MO says I can have my mouth worked on so I guess it's time.

    PCP has given me morphine for breakthrough pain. It helps, a completely different kind of pain reliever than the hydrocodone. Surprisingly mild effect. It does affect my brain function though. I just want to sleep all the time. I'll be sitting here playing solitaire and the iPad falls out of my hands.

    I wish I could tell you I remember all the goings on in your lives but honestly I an barely remember the ones that happen to me. Oh! I know, I was going to give you a laugh.

    Shep - I'll certainly share those recipes with you. In regards to my making cupcakes for the MO's office, it occurred to me over the weekend that there are a lot of people with peanut allergies & I probably shouldn't make the peanut butter frosting. So, instead I'll make the chocolate/mocha/sour cream frosting instead.

    I need to go and make my shopping list for the ingredients I still need to get.

    Now I'm off to make breakfast and have my second cup of coffee.

    I talked to SAS and she is doing well. Just taking a break as someone said previously. I think she was happy to have someone check on her. We all like to know we make a difference and am missed. Encouraging those who are close to her to pm her. Not sure she us checking pm's now but am sure she will be happy to see them whenever she logs back in.

    WildT - I seem to remember that you bake gluten-free, so here is a delicious recipe for some mini muffins.

    Lime & Avocado Streusel Mini Muffins

    Start to finish 30 mins. Makes 24 mini muffins.

    For the muffins

    1/2 of a medium avocado, peeled & pitted . . . . . (about a 1/4 cup fresh)

    2 tablespoons unsalted butter, room temp.

    2/3 cup sugar

    1 tsp. lime zest

    1 tsp. vanilla extract, not imitation

    2 eggs, room temp.

    3/4 cup gluten-free flour or whole wheat pastry flour

    1/2 cup of Almond meal (finely ground almonds)

    1/4 cup coconut flour

    1 1/2 tsp. baking powder

    1/4 tsp. baking soda

    1/4 tsp. salt

    1/4 cup buttermilk

    1/4 cup of fresh squeezed lime juice

    1/4 cup of applesauce

    For the Streusel

    1 tablespoon of unsalted butter

    2 tablespoons packed brown sugar

    2 tablespoons flour (gluten-free or whole wheat pastry)

    1/8 tsp. salt

    Directions

    1. Pre-heat oven to 350 degrees. Line a 24 count mini muffin pan with mini muffin paper liners.

    2. Cream together the avocado, butter & sugar until pale & fluffy, about 2 minutes.

    3. Mix in the zest and vanilla.

    4. Add eggs, one at a time, mixing until incorporated after each.

    Set aside avocado mixture.

    5. In a medium bowl, sift together flour, almond meal, coconut flour, baking powder & baking soda.

    If the almond meal is too coarse to pass through the sifter, whisk it into the flours to ensure even blending.

    6. In a small bowl or measuring cup, stir together buttermilk, lime juice & applesauce.

    7. Add flour mixture and buttermilk half at a time, blending on low until completely incorporated.

    8. Spoon batter into paper muffin liners.

    9. Use fork to mix streusel ingredients.

    10. Spoon a small amount of streusel on top of each muffin, then bake until the muffins are turning golden and spring back when touched lightly, 15 - 18 min.

    Enjoy, once cooled!
