So...whats for dinner?

OK ladies, I am freaking out that I have absolutely no memory of the painful procedure that you are all discussing. I do recall being injected with nuclear material that took forever to arrive because the surgeon's office secretary ordered it for the wrong day. That was done in a separate part of the hospital....nuclear medicine, I would imagine....before my surgery. I cannot recall it being horribly painful, but maybe they numbed me up?? Maybe I was more focused on the mess up and the fact that DH was waiting for me forever to go back to the surgical floor with no idea what was going on.
I was also squeezing this surgery in between my crazy work schedule, so maybe I never even paid attention. This is astounding me...and a little scary.
Anyway, Michelle, I'll have to think about the Thai restaurant thing....life has never been the same since Bai Thong left Needham.Good luck with your scan tomorrow!
Debbie, I ordered our new mattress topper from Walmart on- line. It is a 4 inch topper with a cover/pad by Sleep Innovations. I have yet to use it since we decided to air it out first....recalling that our last one gave off a bit of a chemical odor when we put it on the bed right away.
Eric thanks for the marinade recipe..those measurements are exactly the way I do things!
On the way back from blueberry picking today, we were going to get some lamb to grill, but DH saw the lobster sale and we are instead having lobster/ corn on the cob/ caprese salad (again), and some leftover sirloin....a throw together surf and turf! If I get ambitious, I may make a blueberry freeze thing for dessert in the Vitamix.
Have a great evening all..... -
Debbie..... I got so excited when I saw those big fresh tomatoes that I forgot to peel them! I just put your tomatoe pie in the oven. I know it will be good anyway.
I asked them to give me lidocaine injection first, It was really stingy, but I would do it again.
We are having a fiddle/get together potluck on Weds. I'm bring this. Sorry beet haters! I'm taking all day Thursday off, I'm going to the dentist for a filling whooo hoooooo
Gentl & Hyers
Serves: 12 Edit
Ingredients
U.S. Metric Conversion chart - 1 1/4 cup(s) quinoa
- 1 1/8 teaspoon(s) salt, plus more for dressing
- 4 medium beets, trimmed
- 2 tablespoon(s) balsamic vinegar
- 1 tablespoon(s) lemon juice
- Freshly ground pepper, for dressing
- 3 tablespoon(s) extra-virgin olive oil
- 1/2 large seedless cucumber, chopped
- 1 pint(s) yellow cherry tomatoes, halved
- 1 cup(s) green beans, blanched and cut into 1-inch pieces
- 1/2 cup(s) chopped flat-leaf parsley
Directions
- Rinse quinoa thoroughly. Place in a medium saucepan with 2 1/2 cups water
. Add 1/8 teaspoon salt; bring to a boil. Reduce to a simmer and cover. Cook until quinoa is tender, 12-15 minutes. Remove from heat; let stand 10 minutes. Transfer to a bowl. Cover and refrigerate about 2 hours.
- Meanwhile, place beets in a large saucepan; cover with cold water (by about an inch). Add 1 teaspoon salt; bring to a simmer. Cook until beets are tender when pierced with a paring knife, 35-45 minutes. Drain; cover with cold water. Let sit until cool enough to handle. Peel and cut into 1/2-inch cubes.
- In a small bowl, mix vinegar, lemon juice, and salt and pepper to taste. Slowly whisk in oil. In a large bowl, combine quinoa, beets, cucumber, tomatoes, green beans, and parsley. Toss in dressing to serve.
Chabba Tazzy and Debbie I am still thinking of you all the time.
-
I remember clearly getting the dye injection and almost freaking out over what I had heard the pain would be. I think the docs who did it were very successful in making it as pain free as possible. All I felt was the prick of the needle which would numb the area. The hardest part was staying in that position while they took photos.
Went to an art festival in Asheville today and it was a little dispappointing. Lots of nice pieces but very expensive, and I really didn't need anything nor did I have a place to put it if I had. The money I saved I ended up spending on groceries:(
-
PS, Debbie I burned the top And didn't peel the tomatoes and it is Still soooo goood! lol
-
Ah, man! Some idiot just shot up a Sikh Temple in Oak Creek, WI, about 45 minutes from.me. WTH are people doing . Last year, some nut shot up a church in Wauwatosa. If they can't get help, why don't they just off themselves?
-
Just checking in to say hi and feeling not too bad. Love pain meds
Expecting a friend over in about 15 minutes... she called this morning and said she would be over to cook us dinner - this is what friends are all about. No idea what we are having.
thinking of you all. Debbie, Chabba especially.
wishing you all a wonderful evening.
Take care, love & hugs xxx

Moonflwr: I heard about that on the news...it's close to where my BF's BIL lives. As long as nut jobs can get their hands on guns so easily I don't see this getting any better. At least we won't have to house and feed this one...thank you Milwaukee's finest! It's really sad that so many innocent people become targets for these deranged people. My heart goes out to the families.
-
i have a new high calorie dip i enjoy.. pomegranite molasses with a little mayo and sour cream.
omgosh.. dip anything plain (like chicken breast into it) and it is fantastic.. shoot.... it's fantastic by itself.
-
Tazzy, what a wonderful friend to come and cook dinner for you and your dh. Glad you're getting along well.
Michelle, I'm so hoping you get good results on your scan.
It was 57 degrees this morning when we got up. I happily donned a sweatshirt and long pants to sit outside with dh and have my coffee. I think the high was in the 70's. We went to a nearby small village called Dorset for an annual event called Taste of Dorset. It was fun and packed with people. This tiny community has 4 restaurants and they all had tables and tents and were selling food. Some musicians here and there playing music and singing.
Dinner tonight was leftovers.
-
Moonflower, I am also horrified at this latest incident. A relevant comment by Andy Borowitz... I may be a dreamer but what if it could be as easy to get mental health help as it is to get, say, a gun... Thoughts for the families involved in that tragedy.
Tazzy, so happy for you to have your friend nurturing you. I was so touched by friends who I hardly saw regularly helping me during those critical times....true blessings. Enjoy! -
Debbie - I used to have a good voice, but my vocal cords are so out of practice! I did some community theater back in the day... Use it or lose it, you know how that goes. But, because I think you'll all get a kick out of it, here's a link to a video my daughter made of my "Cher" moment. The ending is definitely better than the first part, but it was fun and that's all that matters:
http://www.youtube.com/watch?v=scMKOu1a6Dg
My DD and I sang several songs together that I thought sounded pretty good - she's got a good voice.
Our good friends came to the house this afternoon, we hung out in the lake and took a nice boatride. Then we were supposed to go bike riding and eat dinner but t-storms hit, and I had forgotten that I could not do any strenuous exercise today (PET/CT tomorrow) so the biking didn't happen. But we ate at a nice little Italian place near the bike trail. I had grilled swordfish, broccoli and salad (keeping the carbs low) and one taste of my DH's scampi. Next time I'm definitely having the scampi - it was really good.
Eric - playing in the sprinklers, brings back childhood memories!!!
Bedo - the quinoa dish is very pretty!
Thanks, Carole! Trying not to think about it any more than necessary but finding it hard to ignore because of the dietary and activity restrictions. I'll eat something yummy tomorrow after the scans (I have to be there at 11:30). Maybe I'll have ice cream for lunch!

I missed so much while I was away, I can't read it all. I am sorry for all those with worries or problems. So sorry to hear about that shooting. The Eagles coach, Andy Reid, 29 y o son was found dead today. And last week my old friend's son was found dead. He was 24. It was because of drugs. I suspect Andy Reid's son was as well. I can't even imagine the pain. Drugs are such a terrible thing. So much bad news around lately.
Had salmon and mahi mahi burgers on the grill for dinner. They were good! Had corn, a salad and some roasted peppers and broccoli with it. Also made some gazpacho tonight. I love summer cooking! And the Olympics. Is Anyone else watching? I just love Michael Phelps and those young gymnasts, eecially Gabby Douglas.
Getting nipple reconstruction on Tuesday. It has been almost a year with no nipple. I hope it comes out well. Thoughts and prayers for everyone. Hoping for excellent results on your scans Michelle. -
luvrving - good luck on the scan, keeping fingers crossed for you.
tazzy - good to see you posting, glad you have a good dinner-cooking friend!
chabba and debbie - so sorry on your family illness news - so very hard, been there.
lacey - sorry about your allergic reaction, glad things calmed down.
I had double SNB, but the injections were given in pre-op just before the BMX. I had 4 shots at 12,3,6,9 clock-hands around each nipple, but it just felt sting-y and burning for a few seconds. I was generally freaked out because I was heading into the BMX so don't remember it being that bad, and it certainly faded after the injection of Versed into the IV!
Went to a beer festival (I was the designated driver) at the zoo last night. We were not even into the zoo gates yet and got drenched by a downpour - seriously, I didn't even have mascara left on! Then the power went out! So, beer drinking crowds in the zoo in the dark! Crazy, right? It was fun though....
-
Michelle good luck on the scans tomorrow. Specialk, sounds, interesting, but kay, good luck with the reconstruction on Tuesday.
-
It makes me sad/mad when some nut job (or just plain mean person) starts shooting people. So sad.....
I'm simmering cactus pears in water. I think I escaped the little fuzzy thorns that make me feel like I've been sleeping in fiberglass. Cactus jelly will be on the menu
Good to hear from you Tazz. Home is much nicer than a hospital anyday.
Apple, did you make the pommegranate mollasses? If so, how? I have a huge pommegranate bush in the front yard and I love the things...but would like to do more with them than just stain good clothes. :-)
Michelle, good thoughts to you for your scans tomorrow. I love it when I have to work on the sprinklers! Sharon used to sing and play the banjo in a bluegrass band, but all the medical issues have got her sidelined for the moment.
Eric -
Kay - this is the first time I've really watched much of the summer Olympics. Swimming, gymnastics and equestrian are probably my favorites. And I love Phelps and Gabby. Did you catch the interview with Michael tonight that included a retrospective of his career? Increased my admiration for Phelps the man as well as swimmer.
-
What a busy thread! DH wanted to get me out of the house so took me to the casino. Im so hyper from all the iced tea I doubt i will sleep tonight!
Moon- That shooting was so sad and senseless, What is wrong with people??
Bedo- So glad you liked the pie. Sometimes I dont peel the tomatoes either and actually I cook the top of my pie or anything that has cheese in it longer until it gets really, really brown on top. So basically you did good LOL!
Michelle- Use it or lose it- That sounds familar! ha! Just finished watching your video. OMG! I just loved it! You sounded good and looked like you were having a blast. If I was in the room with you I would of been hootin and hollering! You look so cute too! I know a lot of you go to Pickey place, but wish all of us here could go out on the town one night, Oh boy would that ever be scarey! lol! But just think of the fun! Hope everything goes well tomorrow!
Kay- Sorry about your friends son. Yes drugs are so bad seems like a lot of celebrities lately have died from overdose. Good luck Tuesday with your recon.
SpecialK- Beer gardens in the Zoo! Boy times have changed hehe! Sounds like fun though.
( I just figured out how to remember all the post from one page to the next) I copy pasted the previous page on to the last page. Why didn't I think of that before? Ding. Dong, Ding! No I havnt been drinking, only tea!
Eric- I don't know if Apple makes her own but I buy it at the gourmet market. Wish I had a pomegranite bush.
Chabba- I just love Phelps and Gabby those two were the ones I always tuned into watch. Thinking of you. I will find out more about my dad on Tuesday. We are keeping things under wraps until then and then he will tell the rest of the family.
Also, wanted to mention the coconut cream pie was the best I ever made. it was delicious. I usually don't eat it but I had a piece tonight and it was awesome. I will post the recipe tomorrow if any one wants it.
-
Eric - no I've been seriously over-worked at work
but fortunately, I get paid for overtime, so it's not ALL bad.
For dinner yesterday I made gazpacho and sliced cold chicken. Simply too hot to eat hot.
-
gardengumby - while at the zoo for the beerfest they had watermelon gazpacho in little shotglasses - it was really good. Your dinner last night sounds perfect to me!
-
I love gazpacho. I saw a recipe for watermelon gazpacho in Bon Appetit, but haven't tried making it yet. I stuck with the tried and true.... but I cheat and start with tomato juice
then I don't have to grind up as many tomatoes. Also, because I just can't eat wheat anymore, I no longer add croutons - no croutons in ceasar salad either. Even if I order it at a restaurant, I either tell them to leave 'em out or if I forget to tell 'em, I carefully eat around them, leaving this strange looking mound of croutons in the middle of my plate.
-
gardengumby - Could you post your gazpacho recipe? No matter what we serve for lunch at the Center our guests want their soup. Thursday I'm planning to make a breakfast casserole to use up some of the liquid eggs the Fire Department donated, Left overs from their fund raising breakfast Harley weekend. Gazpacho would be perfect.
-
Michelle...WOW on the song! I could never get up and do that....yikes...they would close down the place after that. Good luck on the scans as well!
Kay: Hope your nipple reconstruction goes well! Yes, these young people killing themselves either by suicide or overdose is tragic. There is something seriously wrong in our society and we must address it soon.
Lacey: You quote about wouldn't it be nice if people could get mental health care as easily as they could get a gun is very appropriate...I couldn't agree more! Our leaders in this country need to get their heads out of the sand (or wherever else they may have them).
-
I'm still smiling at the thought of keeping up with 10 zucchini plants! :-)
Eric -
Chabba, have you checked out the Healthy Soups thread? It's sort of a defunct thread, but there are some interesting soups there. Last winter I posted my gazpacho recipe (which is so much easier now with my million dollar Vit Mix since I don't have to peel the tomatoes at all). I'd like to see Gardengumby's recipe too when she is not too busy at work.
Kay sending positive thoughts to you this week....
....and by now, Michelle, you should be finished with your scan. More positive thoughts with you! -
Sure...
I start with everything cold, including the tomato juice....
1 large can tomato juice
2 english cucumbers
1 yellow and 1 orange pepper (I only get the colored ones because of the color, green is perfectly good)
1 or 2 jalapenos, seeded
1 walla walla (or vidalia) onion
2 or 3 cloves of garlic
a large bunch cilantro
1/4 c EVOO
juice of 1 or 2 lemons
1/8 c balsamic vinegar
salt and pepper
mince one cucumber and both yellow and orange pepper. Place in large bowl
cut everything else into chunks and put in a blender (needs to be done in at least 2 batches). Blend until everything is combined. Pour over the minced vegetables in the bowl. Put in fridge until ready to eat. Stir before serving. Some people like to add croutons when serving, but as I said, I cannot...
Enjoy.
-
Thanks!
-
Oooooh, Garden I like your more contemporary version of gazpacho....mainly b/c I love all of those ingredients! Thanks for posting so quickly.
-
Ok- I am going to miss so much, but I have read everything over the last day and a half....
Tazzy- SO glad you are feeling well with the pain meds and things went' smoother than expected. I remember the dye injection really hurting. I was asleep for everything else after that. I hope you enjoy the dinner your friend makes for you tonight.
Michelle- I hope all went well today with your scans. Hugs to you.
Chabba and Debbie- prayers and positive thoughts still coming your way.
Kay- Good luck with your nipple recon! It is an easy surgery- well mine was. I hope you get great lasting results.
So camping was fun but it is not a place we would go back to. The people who worked there were very unfriendly and it was mostly seasonal sites that they catered to. These people on their golf carts go so fast we didn't feel safe letting the kids ride bikes! Our site had not one tree on it so no shade at all. We were in direct sun from 9am till 5 pm so it was super hot with temps inthe 90's and high humidity. Thankfully we have a/c as my youngest still naps. We still had a great time because we were with good friends. The thunder storms were CRAZY! Also somehow all the women and kids- 3 moms and 6 kids all ended up in my camper for the storm and SOMEHOW the men ended up in one all by themselves and watched a movie hmmmmm.....how did that happen? We made them cook and clean up dinner hee hee!
Last night I came down with the kids virus and was in bed my 7 with a fever but by this morning it seemed the worst of it was over and I made myself go to work. I pushed through the day and nor DH has the boys out for a bike ride so I can have a moment to myself. Tonights dinner is left over chicken from camping on top of a Caesar salad.
I hope everyone is doing well! I will try to catch up more later
-
Hi everyone, just wanted to say hi. I still continue to grow stronger daily - pain meds help, but they really screw with my concentration and ability to retain anything. Who said chemo brain was bad
A friend brought us over lasagne with salad and cheese bread for our dinner yesterday with blueberry crumble and ice cream
Tonight DH is cooking pork ribs on the bbq with a salad. Cant go wrong wtih that can he ??
I am thinking of you all and hope that those going through rough times, you can see a smoother road ahead. Wishing all of you good vibes.
Love & hugs xxx

Thanks, Lacey!! Hope you like the taste, too!!
