So...whats for dinner?

I took a pic of everything I picked- there are a couple of the white eggplants in there too. I picked so many peppers we will have to have stuffed peppers for dinner soon!
-
Laurie - that is one productive garden, and the pictures are beautiful! I'm guessing you're feeling better!
Tazzy - I know the desire is to get back to normal as soon as possible, but remember not to overdo it. And you shouldn't lift anything over a few pounds. Accept help until the drains are out. Now all that said, I'm pretty sure I went to the casino with drains but didn't pull the handles - just pushed the buttons. And I probably started cooking a little after a few days, just didn't lift any cast iron frying pans or the like! A pot of pasta water is too heavy.I've been a bit of a slug today...feeling a little tired after yesterday's beach excursion, dinner out, and staying up too late to watch the Olympics. We are having steak, corn, and maybe green beans for dinner.Still no final report on the scans. I have been researching clinical trials and found a few that seem relevant. MO appointment is next Wednesday.Lacey - we walked by the Legal Test Kitchen when we went to the Seaport to see the Tall Ships. I need to prompt DH to go there soon - it's a great location. And it's good to hear the food was great. And good to hear good things about Aly Raisman - I just love her floor exercise routine! Yup, she can start counting her money...she'll have lots of endorsement contracts! -
Thanks so much for all the advice ladies. Really means a lot from women who have been through it. I have been very very kind to myself. Even if I wanted to stretch I couldn't - I know as soon as I have got to my limit and I stop, very quickly. DH has been wonderful and only allows me to do what I can when I can... he hovers over me to make sure. I just thought that cutting up a salad would be OK. My drains have switched how much they are putting out... the one nearest my armpit, up until yesterday, always put out more than the other one... now they have switched amounts - did you find that, is that normal? They are definitely putting out less though.
Laurie... that is some garden your Dad has. You have lots of green beans. Recipe here is one I use lots. Sorry, I dont have exact measurements.
Enough green beans for 2 (add more for more people) - halved
handful cherry toms - halved
small onion diced
2 cloves garlic (more if you like more)
salt and pepper to taste
fresh mintcook onion and garlic in tbsp of olive oil until soft. add cherry toms to pan and squish down. Cook for approx 5 mins on med. heat. add beans with about 150ml water. turn down to simmer. When almost cooked add chopped mint to pan. Serve either hot or cold.
Back to topic... someone just sent me this link - looks very yummy.

Michelle. Love you went to the casino shortly after your surgery
As long as we are sensible, life must go on.
-
Michelle- I am still hoping for some good news for you for the scans. Sounds like you had quite the full day yesterday!! Glad you had fun.
Tonight's dinner is a pasta prima vera. Cooking up veggies from the garden and having it with some doctored up pasta sauce and spaghetti. For the sauce I sauteed mushrooms, onion and garlic added jarred sauce some fresh basil and a little sugar. Nothing fancy.
I am feeling better but this whole sinus thing is still plaguing me, go for my follow up at the Dr on Friday. Honestly it is better than it was so I am pretty happy.
Yes, my dads garden is going gang busters. I was disappointed he didn'[t put in any lettuce this year though. Although beggers can't be choosers!!!
-
Laurie - as hot as it's been, the lettuce would probably have bolted before you could use it. Glad you're feeling better!
-
Michelle, fill us in when you hear. Laurie, glad you are doing better. Tazzy, my drains changed according to activity, too much doing led to more fluid, and since the goal is to get rid of the d*mn things, slow down!
-
I picked some tomatoes and basil, I pulled up my yellow peppers that were suppose to be sweet according to the tag but nearly burnt my mouth out when I bit into one. HATE HOT!

What a haul Laurie, Zuccini bread for that big one, looks like that would make about 5 loaves. Freeze those green beans, I remember helping my Mom do that years ago. Saute the summer squash with garlic flavored EVOO and mushrooms, mmmmm
-
Debore, trying to one up me? LOL, next post has to go four times! ......LOL.
-
Laurie- Those veggies look beautiful and yummy! Glad you are feeling better.
Michelle- Your taco dinners sounded so good, Nothing better than quacamole. especially that margaritta! Hope everything turns out alright on your test!
Tazzy- Glad your healing from your surgery. It seemed like my drains took forever before I could have them out. Some just take longer than others but hope you are able to get them out soon.
Drove to Portland yesterday to see cardiologist, they put a heart monitor on DH to wear for 30 days and we will drive back there for a stress and another echo cardiogram on the 15th. I think it was just stress related but its good to have it all done. He seems to be feeling better.
Some of my dads test came back, he has a 6cm tumor on the top of his stomach and some tumors on his esophagus. As far as weather there is node involvement they are not sure until they do surgery. The are scheduleing him for a PET right away. Not sure when the rads and chemo will start. He has not eaten any food in weeks now and can't even drink water, but can sip on some ensure. They told him when he is unable to drink the ensure they will put in the feeding tube. We are driving down to see him on Sunday. Thanks for letting me vent!

Here is a recipe for fried green tomatoes stuffed with cream cheese. I made this a long time ago and just saw it in my recipe book. They were really good and with all the tomatoes every one has now thought you might like it. You can eat them alone or with the lemon cayanne mayonaise on the side.
3 each Green Tomatoes, sliced 1/4 inch thick
8 ounces Cream Cheese
1 tsp. Dry Basil
2 tsp. Salt
1 tsp. Pepper
1 C Flour
4 each Eggs, beaten
3 C Japanese bread crumbs (Panko) or seasoned itialian bread crumbs.1 tbsp. Parsley, mincedTo Prepare Green Tomatoes...
Mix cream cheese with basil and half of the salt & pepper. Place 1/2 tablespoon of cream cheese mixture on one slice of tomato. Press another tomato slice on top of cream cheese to make a sandwich. Mix parsley into bread crumbs. Mix remaining salt & pepper into flour. Dredge tomato sandwich into seasoned flour. Shake off excess flour. Dip in eggs. Shake off excess egg. Roll in bread crumb mixture to coat. fry in some peanut oil or veg oil until golden brown. ( I wouldn't use evoo as you need the oil really hot to fry in) about 350% drizzle with the lemon cayenne mayonise if desired.
Whisk together 1 cup mayonnaise, 2 tablespoons lemon juice, 1 teaspoon cayenne pepper, 1/2 teaspoon salt and 1 teaspoon paprika. Refrigerate until ready to use. -
(((Debbie))) - you, Chuck and your dad are in my thoughts. It sounds like a very, very difficult situation for your dad. I hope Chuck's heart checks out OK.
DH is making bacon and scrambled eggs for breakfast this morning...yeah!!!
Deb - nothing like an unpleasant surprise when you bite into something...yikes!
Still no final report on my scans. I may have to make a trip to the hospital and request a hard copy.
-
Debbie Prayers to all of you. I think it is good that they see what is going on with your DH so there are no "surprises" what ever happened with the job change and possible move for you guys?
Laurie that garden is impressive. I still do not see the white eggplant around here, though I did see some striped ones. My eggplants are just starting to get big, a couple more weeks. My tomatos are just starting to come on....feeling like some homemade sauce.
Michelle So frustrating on the wait for the scans
Tazzy I know how hard it is to relax and let others take over, but you need to rest and let your body heal...it is definitely a traumatic surgery for the body. My drains were up and down in volume, no rhyme or reason. Got 2 drains out at one visit then the last two at next visit, seemed like forever.
Today I see my onc for my 3 mo. follow-up. Need to address this rash I have on my cheeks. May be roseacea, but since I never had that before, need to find out hwere it is coming from.
OH almost forgot...funny story...my girlfriend planted what she thought were cucumbers and they came up as cantalopes, but she says when she cuts into them they smell like cucumbers..hmmmm
-
HA, looks like I was having problems too. It kept giving me an error report.
-
Debbie... thoughts with you, DH and your Dad.
Women... we find it so hard to let others take over eh? Today I am resting.
Hope you are all managing to have wonderful days filled with laughter and love.
-
Debbie- My thoughts and prayers are with you. I hope Chucks test turn out well and that your father will be ok. Such a tough thing to go through.
Michelle- I love your spunk!
Carrie-Good luck with your appointment today. I hope she has an easy answer for you to solve the rash problem. I googled your friends cucumber plant but didn't see an answer?
We went grocery shopping this morning. Last week DH had come with us and we spent twice as much as we usually do. So I tried really hard to keep costs back this week to even out my budget. I spent half of what I normally do!! I was very pleased with myself! Of course not having to buy much for fresh veggies was a big help. Tonight I think I am doing haddock for dinner.
-
Michelle- All this bacon talk is making me wish I had some. Todays breakfast was pancakes that I mixed oatmeal (I know you don't care for oatmeal) hehe! raspberries and put almond butter on them, they were pretty darn good.
Carrie- DH decided that until his health gets better he shouldn't pursue another job, I agree! No one wants to hire anyone with health issues so until we know whats going on with him its kind of on the back burner. Also want to stay as close to my dad as possible (about 4 1/2 hrs away) What a funny story on the cucumber maybe they mated and came out with that lol!
Laurie-I am not the coupon type of person but I have seen where women spend hundreds of dollars in the store and with coupons pay like only 3o bucks or so. Might be worth checking into. We go shopping every week and always spend a couple hundred dollars and come home with almost nothing. it is so ridiculous what the prices are these days!
-
Debbie- I have tried to do coupons and have never found success. I don't buy anything they make a coupon for? Fruits, veggies, meats. I can never find any for milk, juice etc. This week I just made a real effort to plan my meals and use what we have in the freezer with the exception of the seafood I bought. I have a neighbor who has a coupon binder and actually brings the whole ting with her everywhere she goes and shops everywhere from the dollar store for dish soap and CVS for diapers on sale. She saves a ton of money. I just can't see spending the time hauling the kids all over town to 8 different stores to save 20 dollars. Not to mention the time it takes to go through the weekly ads etc. I do try to go to Walmart to buy my crackers/canned stuff etc and I go to a discount bread store for my breads. The cost of bread is just insane. In the grocery store they want 3 bucks for a loaf. I went to the bread store today and bought 2 loaves of whole wheat bread, a loaf of pumpernickle, 2 packs of english muffins, 2 things of bagels and a package of cookies for the boys- oh and some lemonade! I spent 12 dollars
Plus they have a stamp card and once you spend 50 dollars there you 10 dollars free!
-
Your dad's garden is beautiful, Laurie. I'll bet he loves supplying you with wonderful veggies. I know my dad took pleasure in supplying his kids and his neighbors. He was a great gardener, too.
Today feels like fall in Louisiana. When we got back from playing golf about 1 pm, the temperature was still in the 60's.
Michelle, I'm still hoping for some positive feedback from the scan.
Tazzy, I did whatever I felt like doing when I was recuperating from my bmx. Nobody mentioned that activity might cause drainage. After about a week, I began to walk out on the street. At first only a block. I had one drain on either side and I think they were removed after 9 or 10 days. The removal didn't hurt.
Dinner tonight will be barbecued pork sandwiches and slaw with cabbage and colored bell pepper strips. I left a pork roast cooking in the slow cooker this morning when we left to go to the golf course. The camper had the wonderful aroma of cooking pork when we returned.
-
I am chuckling at your posts and how expensive you say your food is there... come shopping in Canada
Carole, my Nurse navigator just called and gave the same advice as you mentioned in your post. Do what you feel you can, use your common sense and listen to you body. If you overdo it your body will tell you - it will hurt as its pissed at you. And you know I think that is the best advice for me... use my common sense.
I have just made that quinoa fruit salad I shared with you yesterday and I can say it was delicious, well worth it. I think I may put more mint in next time.
-
Well, I got the results of the scan and it's not pretty, or it's pretty shi$$y, depending on how you look at it. Lots of progression, especially with nodes on my left (BC) side and my left lung. It looks like a clinical trial is the best option at the moment. And that makes sense because there are often limitations on how many chemos you can have previously done to be considered for a trial. I'll see her on Wednesday and she should have a plan by then.
