Hi all! Have been busy so have not posted for a while. DD is going to a wedding in New Orleans so have been focused on helping her figure out what to wear to the many wedding events. Had a nice get together with Florida ladies from BCO on Sat. at the Cheesecake Factory - I had two "small plates" Greek salad and artichoke hearts, just the right portion size. We had a great time - there were seven of us. Here is a pic, I am in the dark blue top:

Have not been eating much that is exciting lately, although we did grill steaks and fresh corn. I need to think up some new recipes that stay within the confines of my eating plan - I am starting to get bored! I think tonight will be a shrimp salad with vinaigrette, corn, red peppers, red onion and romaine. I have been walking 4 miles each evening (we start out at about 7:30-8:00, when it is cool enough) with my neighbors so have to have dinner ready when DH comes home so I am ready for the walk.

DH just complained that this "healthy" eating is a lot of work. In other words, you can't just make a sandwich and throw some chips on a plate and call it lunch
Not sure why he was complaining - I did the work...lol. We had chicken salad, cole slaw, cantalope and fresh tomatoes. Too funny! But Mr. Ambitious announced that he wants to bike 20 miles tonight, so I will meet him at a restaurant that's at the half-way point, we'll eat, then he'll ride home unless it's too dark. This should be interesting, not sure how that timing will work out. I'm just happy that he's finally interested in his health.
Gardengumby - the rice salad sounds yummy. I don't eat much rice, it plays he$$ with my blood sugar.
Carrie - your boating adventures sound like fun! Wish I could sleep more, take naps. Even during the worst of chemo, I rarely slept more than 7 hours. And now, even with a prescription sleeping pill, I get 6-7 hours, that's it. One of these days, the fatigue is going to hit me like a ton of bricks and I'll be in for a rude awakening. But in the meantime, I guess I remain the Energizer Bunny!!! -
luvrving - thanks! I have been working hard with aggressive walking and restrictive eating! Do you have blood sugar issues with all rice, or just white rice? I noticed in the yummy (great recipe gardengumby!) recipe above it called for black rice and it made me wonder. Your healthy lunch sounds delish! My DH has been riding his bike after work several days during the week. He usually gets home at about 6:30-7:00, goes out and rides for about an hour on the bike trail by our house. I make some dinner so it is ready when he gets home, then when he arrives I go out and walk with my neighbors from 8:00 or 8:30 until about 9:30 - we do 4 miles minimum. When I get home he is getting into bed! We catch up on the weekends because we don't seem to be seeing each other during the week, lol!

Luvr,white rice gets my sugars high too, brown rice works better, raises them slower. -

White and brown rice seem to have about the same effect on me; I haven't tried black. I use brown when I make stuffed peppers, but it's a really small portion in each pepper so that works ok.

Specialk. I had rice with my dinner, but it was brown and only about a quarter cup, so I had to pass on the cheese cake too. But since it was on sale that day I got it to go! LOL! Luv, I don't know about black rice either.sometimes I make quina (sp?) For the times I really want rice.

Carrie- Sounds like you are having such a great time boating, humping (hump night) and enjoying life this summer! Yumm on the all you can eat crab legs! Any more news on your sister? Hope she is doing well!

Kaara ,catfish grits and okra, reminds me of Georgia, but I hate the way the fish squawk when they come out of the water, so I let my husband deal with them, didn't eat fish at the time, but now I'm catching up. I watch them "noodling" for catfish on TV and see that man that catches things with his bare hands and think, "did I live there?" Really only for a short time, the rest of the time in Atlanta. I go to Whole Paycheck, but at least they're healthy and Peta endorses WF.
I'll be making succatash soon, I think that's what it's called

debbie - thanks! It is actually kind of a long shirt/tunic thing which I wore with slim jeans and sandals. When I look at the picture I am most excited about my hair - it actually looks like normal hair - finally!!! It will still take a while to look like my avatar pic but I am getting there!

Bedo- I have in my head how I use to make it but don't have the recipe right in front of me, fresh or canned (fresh is better) corn, lima beans, (You may have to get frozeen on the lima beans) onions, redpepper, okra (optional) and tomatoes. saute in some evoo or butter. and simmer until done.
I like to peel my tomatoes here is an easy way to do that. mark a x on the botton of the tomatoes, Put a tomato one at a time in hot boiling water for 30 seconds. transfer to an ice bath and let sit about 5 minutes then the skin peels right off.

I'm about "exercised" to exhaustion. Can barely lift my vodka martini.
Yesterday dh and I bicycled 25 miles. My legs, butt, lungs, everything gave out on me before I reached the parking lot. I got off the bike and walked a while then pedaled and coasted the rest of the way. Went to bed about 9:30 last night.
Then today we played 18 holes of golf and walked. The course is short but has some elevation changes. It was humid and I perspired more than I could drink to keep hydrated. Afterwards we went to lunch at our favorite cafe in Park Rapids, The Good Time Cafe. I had a wonderful hamburger with lettuce, tomato, mayo, quacomole, blue cheese. I know that's a weird combo but it was so good I was in foodie heaven!
I think more biking is planned for tomorrow but it won't be 25 miles!
Dinner tonight is Hebrew National hot dogs on wheat buns and either chopped salad or cole slaw with cucumber and colored bell peppers.
Carrie, I agree that you have an enviable lake lifestyle. It sounds so cool to go to dinner by boat.

I bought flour tortillas instead of pita by mistake, but i can still bake them maybe at 350 for 20 minutes and get chips?
I think Apple said I could freeze the hummus?

Did my RO appt thing today, she said "you look great!" I think they are trained to say that, i haven't seen her in a year, I bet she doesn't remember me.
I decided that today was "Talk like a Pirate Day" actually the official day is in Sept. I answered all my work texts with pirate talk. I told my boss, " Forgot me RO wants to plunder me bounties, make sure they're still sea worthy, will note in ship's log" They might think that I've lost it. My boss pointed out a mistake I made in coding, I asked her if she'd been "drinking the grog?.." Try it. It makes the day go faster. Don't explain.

Before, they already think I'm nuts so Wat the 'ell! LOL. Every one inspired me to cook. I haven't for a long time. So, pork tenderloin, finished with a dandylion jelly, balsamic reduction. Served with mashed potatos and yams. Alright the potatos are precooked, and the yams came from a can, but I made a whole dinner! . Got some leftovers too. This is one of the five meals I taught all my kids before they went to college. Well, alright, they didn't use dandylion jelly, they used raspberry, and they used Apple cider vinegar, but same idea! LOL, this is the important company is coming but I just got home from work/school dinner. You can do this whole dinner in less than 45 min.

Carole - you are a trooper! That's a lot of exercise and I don't think I ever want to do so much that I can't lift my cocktail!!! My new gel bike seat came in today and DH put it on my bike, so I may go for a little ride tomorrow morning while he's working. What a perfect meal day - hamburgers and hot dogs!
Rick ended up riding just one way so 10 miles and met me at the restaurant. It was a steakhouse but reopened a few months ago as an Italian cafe. We sat outside and the food was good. I had linguine with red clam sauce (a carb fest) and DH had veal parm. And they had one of our favorite wines by the glass so we both had a nice Sterling Cabernet. I'm happy that I could drink it - seems the burning has disappeared for the moment.
Bedo - the link for the shrimp recipe is right above the picture. If you make it before I do, let us know what you think. It looks pretty yummy!
Debbie - I used to help my grandmother can tomatoes and that's exactly how we peeled them. We did it in her basement using an old wood-fired stove. What I remember is that it was hotter than he$$ doing it! That bolding thing drives me nuts, too.

Yes we have a good time in the summer, but the winters are not so pretty. Plus we do work in the day...hate it when work interferes with my social life! Actually our friends have been here on their boat on vacation for almost a month (minus 4 days) and we really need them to go back to work so we can rest.
Bedo you are too funny, be careful and keep an eye out for the men in white coats coming to take you away! LOL
Deb Yumm on the hot fudge sundae. We actually had a big discussion about the last time we all had an ice ceam cone and what was everyones favorite. I have not had an actual cone in years....need to fix that. Vanilla/chocolate twist with chocolate sprinkles.

My garden is doing really well this year due to a really great growing season but, it's looking more and more each day like I am providing my local wildlife with a salad bar....
We had the green bean plant eating bunny... I planted beans 3 times and all 3 times Mr. Bunny ate the plants.... Even after I sprayed them with a mix of water and Tabasco.... It was if he said, 'Thanks for the dressing' and dug in anyway... Good thing he's cute or I could be talked into Rabbit Stew for dinner....
I finally gave up on the beans but, at least my tomatoes were doing well, right? Well, in the last few days the squirrels are heading in and picking the tomatoes!!!! You have got to be kidding me!
I think we need a fence.... or a dog....lol! -
Our dogs chase the birds away from the tomatos. The only problem is that the dogs are saving the tomatos for themselves...they love them....

We have a farmers market. One table is the jelly one. All kinds of wonderful jelly. I pick the odd ones. I do have a recipe for corn cob jelly though.

Seaside, you just reminded me why I am not distressed about not growing veggies this year (sort of not....). For the past few years my tomatoes have been picked by the squirrels and chipmonks. Now I have no problem with sharing my harvest, but always found it enraging to find perfectly lovely tomatoes on the ground with little chipmonk teeth marks in them! I suspect they do that to candy box chocolates too!! -
During my what would now be called middle school years we had next to no income. Mom found a source fr free or nearly free tomatoes at the end of the season we canned and prepared them in every way possible, including green tomato relish and pie filling. But my favorite was ripe tomato jam. Wonderful on hot from the oven potato buns.

bedo - you can talk like a pirate every day here in Tampa - home of the Gasparilla Pirate invasion - you would blend right in. We see a lot of crazy pirate gear at the Buccaneers games too!

Here is my favorite tomatoe pie recipe, It was Paula deens recipe and have made it several times. Just love it. Been awhile since I have made it but might make it this week-end~
- 4 tomatoes, peeled and sliced
- 10 fresh basil leaves, chopped
- 1/2 cup chopped green onion
- 1 (9-inch) prebaked deep dish pie shell
- 1 cup grated mozzarella
- 1 cup grated cheddar- ( I use more than a cup)
- 1 cup mayonnaise
- Salt and pepper
- (You could add cooked crumbled bacon if you wanted too) which is yummy!
Directions
Preheat oven to 350 degrees F.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
To serve, cut into slices and serve warm.

OMG...I don't come on for one day and this thread has gone crazy! I don't know where to begin.
Special K: Great photos and a lovely lunch. Wish we could do that in E. Florida! It would be so much fun to connect.
Michelle: I hear you on the healthy diet. It is very hard to come up with creative meals that don't involve "white stuff" like bread and pasta. I usually make a salad or some kind of blended soup for lunch and then just stick to protein and veggies for dinner, but it does seem boring sometimes. Last night I made two small chicken breasts in the pan and then put garlic and some garlic chili pepper sauce on them to give them a kick. My BF will not eat hot mexican spice, but he will eat hot asian spice...go figure! I served that with a broccoli salad and that was it. We had grapes for dessert while watching the olympics.
Carole: You should be able to eat almost anything you want with an exercise program like that...including the vodka martinis! Never get so tired you can't lift one of those;) The closest thing I've come to with regard to a martini is a cosmo and I don't think that compares. What a great vacation that combines fun and healthy exercise.
All of the recipes sound delicious! I always wanted to make a tomato pie...now my BF is allergic to tomatoes so I would have to eat it alone. It sounds delicious...maybe I'll do it for company one day. No calories in that....lol!
It rained all day yesterday, so I read my new mystery novel "The Man From Bejing"...it's very good...a national bestseller. Certainly a lot better written than the Fifty Shades trilogy.
YEA for the US Gymnists girls team winning the Gold! They were just AWESOME...all of them. Imagine how proud those parents are!

we like to eat real food. Anymore, Kim (DH) and the kids are often gone so I just put it away.. but it works out great.
i made hummus (well pulled it out of the freezer), tabouli, tsatsiki sauce, pita bread, Greek spiced meatballs. I packed some up for a friend and put it all away. I definitely won't have to cook tonite and had plenty to eat last nite.

Crab legs last night were delish!! mmm but the place was packed solid. I think everone was coming in outta the rain...I think we finally got a good dose of much needed water.
Tonight we are going to see Rick Springfield (Jesse's girl) I am not thrilled but the opening band should be good. My DH says we can rest tomorrow night before the weekend. We are packing the boat and heading to the opposite end of the lake (a 3hr boatride) for an italian festival and will stay for a couple of days. Will get cannolis.
Debbie That pie would make a great appetizer and sounds easy to do.
