    Just found out we lost another BC sister to this effin disease. I met her in Las Vegas at a Greet & Meet in 2008.

    Dreamwriter aka Regina Evans I will miss you.  My sincere sympathy to her family.

    Carol, where are you parked now? We hope to be full time RVers in a few years. And a good farmer's market will be important! I'd like to stay West Coast, maybe Tucson to Washington state, but gulf coast of Texas is supposed to be nice in the winter too.

    Kaara the fish chowder sounds delicious. Too bad you can't steal the recipe for us.

    We seem to be getting one tomato at a time. Not enough for a Caprese salad yet.

    Was going to make our favorite crispy salmon on potato salad tonight (Gordon Ramsey recipe) but I am the only one home this evening. So leftovers tonight, salmon tomorrow.

    This means I get the TV to myself and can gorge on the Olympics. I am the only one that likes to watch. Ryan Lochte is a cutie, isn't he?

    Diana, we're "summertimers" and are spending a couple of months in northern MN near Park Rapids.  The rest of the year we live in our house in south Louisiana.  A lot of people winter in south Texas and in AZ.  We have met quite a few fulltimers and they all love their lifestyle.

    Michelle, six miles on your first bike ride!  That's great.  DH is planning our next bike ride for tomorrow and we're going to push for a few more miles than our last ride, which was 19 1/2 miles.  Our bikes have hybrid tires, not the skinny ones.  DH bought me a new seat that is very comfortable.  My bike is set up for a partially upright posture.  I don't lean over the handlebars.

    I walked 55 min. this morning on a street with big sloping hills.  My legs and lungs got a workout.  For brunch, we had bacon and tomato sandwiches on slices of the delicious multigrain bread we bought at the farmer's mkt.  The sandwich was so tasty.

    Any ideas for carrots as a side dish?  I've only cooked them in stews and soups or grated in coleslaw or carrot & raisin salad.  

    It got warm enough this afternoon that we closed up the camper and turned on the a/c.  It has been off for several days.

    An easy and tasy way to cook carrots is to peel em and cut them into sticks or just halve them lenghtwise, depending on size.



    Heat a large saute pan with some olive oil, throw in carrots and a teaspoon of grated, fresh ginger. Saute until carrots start browning slightly, add some sliced garlic and about 1/4 cup of water and a little salt. Put a lid on and reduce heat a little. When carrots are almost tender, take off lid and let liquid evaporate. Add a handful of chopped cilantro before serving (if you like). You can switch up the spices but use the same approach. Dry cumin and a little chili is good as well, for example.

    Carole - I slice the carrots into "coins", saute them in a bit of oil or butter, cover for a few minutes to let them steam to your desired texture, then sprinkle with salt, pepper and a little nutmeg.  Sometimes I add a bit of sugar-free syrup to glaze them.  My bike also has the hybrid tires.  And I just ordered a better seat from Amazon.  I'm not thrilled with the seat that came with it, comfort rules!  A 55 minute walk is quite ambitious - good for you!!!

    We've had two days in a row of off 'n on rain, clouds and cool temps.  The a/c is off but I'm ready for the sun to make its return.  We are having steak for supper tonight.

    I too am so sad about dreamwriter, I saw this before I went to bed last night and prayed for her and her family and friends.

    Carole- I put my carrots in a pan with butter, honey and brown sugar pinch of cinammon. S&P and cover and simmer for an hour or two. I dont take the lid off to even peek. They are yummy this way.

    Carole, debbie's idea is one of my fav's.  Other ideas I like are glazes added to cooked carrots of; butter, honey and minced mint - butter, brown sugar and chopped pecans - lemon butter or just butter and  savory herbs or spices like parsley, garlic, thyme, taco seasoning or chili powder.  I generally test an idea by blending a tiny bit of the chosen flavoring with a tiny bit of soft butter and putting a hot carrot in to taste the mix.  Chose the flavor of the butter to compliment the rest of the meal. 

    Got the idea for the savory butter glaze from the asparagus with the lobster dinner on a cruise ship.  It had been finished with garlic lemon butter and was wonderful.

    My favorite carrots are the ones cooked with the meat in pot roast. I will eat the potatos and carrots and leave the meat, so I cook a whole bag when I make it. LOL

    Ok, I'm going to throw one out, since this is a BC board. Use ginger and turmeric for your carrot spices. Turmeric is a superfood for us. Unfortunately, it turns everything yellow so use a metal pot if you cook with it! 

    Looks like we are having salmon tonight after all, Dh's photo shoot got canceled.

    Carol- One of my favorite veggie medleys is carrots, zucchini and yellow squash with red onion.  I julienne them (sp?) small sticks and cut most of the pulp out of the zucchini etc, some Italian seasoning a little sugar and garlic salt and pepper  cook in virgin oil till tender.  Love it!

    Michelle- congrats on your new bike and that is one heck of a first ride!

    Debbie- OMG on the guys trying to chat you up and make you nervous, I would have beat feet too!

    Kaara  your day sounds great hope you enjoyed your afternoon!

    We just got back from taking the boys on a bike ride.  Dh and I talked before we left about dinner and neither one of us was craving anything.  So we decided we are going to make breakfast for dinner.  I am going to try to get him to make ham and cheese omelette's, he is way better at it than I am.

    So to give you all a chuckle, we live on a dead end street on a golf course- the boys were riding their bikes in the street and some car comes flying down the road. (at least doing 50.)  I FLIPPED!  The boys went right to the side, DH was in the driveway talking to his sister who was visiting and I threw my hands in the air and walked to go in the path of the car screaming for them to slow down!  :O  The guy came to a stop and said "sorry"  I said do you see my kids?  He said yes, I said thats because I stopped you, you could have hit them, seriously buddy??  The guy said sorry again.  We went back to the house and DH looks at me and says "psycho much?"  I honestly didn't even realize how aggressive I was until after, lol.  I don't think who ever it was will do it again.

    Laurie:  The guy deserved it!  Mamma bears always have to protect their cubs...lol!

    So sad to hear about dreamwriter...I don't go on the Stage IV forums any longer, so I missed that.  My prayers to her family..may she rest in peace.

    We just got home from our golf game..it was beautiful out.  We went for a drive earlier to a little town called Black Mountain, found a little french cajun restaurant and had lunch.  I had fried oysters with roumalade over spinach and red onions with chopped egg.  BF had grilled catfish over cheese grits with fried okra.  Very creative.  I'm still full and now he wants to know what's for dinner.  Leftover turkey! 

    Carole:  The carrots are good glazed with a little butter and rum if you have any on hand.

    Whipped up some egg salad for suppa, I like to put a little sweet relish and mustard to give it a little kick.  I love it on a hot dog bun.  

    I heard about dreamwriter on FB.  Breaks my heart.

    A girl I graduated with was on her way home on a plane headed for logan, she fell asleep and never woke up. Her sister waited for her to call to pick her up at the airport, instead she gets a call to come and identify the body. OMG she was only 61. I have lost so many classmates it's not funny.

    Laurie-Physco much, cracked me up. But oh boy I would of done the same thing too!!

    Chabba- I like the idea of trying the different flavors in testers. Never tried it with taco seasoning I will have to taste test them that way next time.

    Deb- That is horrilbe I am so sorry you lost a friend. And the family must be so devasted, Sending out love and prayers. ((((Hugs))))

    Deb, sorry about your friend. But I guess falling asleep isn't horrible, at least not for her, must be bad for her family though. Laurie, mama bear is right. Good for you!

    Making pork chops for dinner with zucchini and yellow squash for me and brussel sprouts for DH since he wont eat the other veggies I am making.

    In Active Topics it shows when another angel got there wings. So you don't have to go to the stage 4 thread to see this. It makes me so sad.I hate this dam disease.

    I am new and I like this thread! Dinner? I am watching my angel-man make puttanesca spaghetti in the kitchen. He insisted, and he gets most of it right, but I will need to go in after the sauce has simmered a little and season up a bit. Ever since I became ill he has insisted on doing a lot of the cooking, which is fine by me. I like watching my man cook, it is sexxxxxaaaaay!

    Most of the week, though, I ask the same question of myself, since one of angel-man's coworkers supplies us with a cooked meal every day of the week! It's so awesome of them! Although everythin has been delicious and healthy, I am never in control of what it's going to be. One week, we had three different kinds of meatloaf threem consecutive nights, but with three different sides! I felt like a judge in a cooking contest!

    Welcome "Eff"!  It is pretty amazing when the hubbies take over the kitchen.  I know mine did a great job last summer and he didn't have instant amnesia as soon as he thought I was better Wink

    That's funny about meatloaf three times in a week!  Do you think angel-man dropped a hint about a favorite meal?  I could see my husband doing exactly that.  It sounds like you have great support, though.  And I'd rather be in the position of judge rather than chef, if I had to choose!  So enjoy the attention and please share your recipe for puttanesca.  This has come up here once before and I keep saying I need to make it.  I've been thinking about spaghetti, so the time is near.

    Wow, Deb, so sad...especially when an unexpected loss like this occurs.



    We had an absolutely lovely day! Had arranged for my sister to drive up from South

    Jersey (our original family home) with her dog and our DS1/DDIL's "former" dog who now lives with her (translation: busy surgeons with crawling infant and very dominant giant rescue dog needed to be bailed out by dog-centric relative a year ago). DDIL (nine months preggers) spent the day making wonderful marinated chicken kebabs (canola oil, pepper, shredded red onion, garlic, saffron, lemon juice); grilled veggies; barley lentil salad over greens with goat cheese; roasted brussels sprouts with a honey vinegar glaze. The weather cooperated so we got to spend a lot of time outside...the dogs were very well behaved with the toddler and vice- versa, which was delightful.

    DS made/brought the most delicious chocolate zucchini cake with chocolate ganache icing and an unbelievable blueberry pie for dessert(s). What a feast!

    After dinner we face-timed with DS2 who was in LA for a wedding and today visiting my DB. So here we were having a family reunion of sorts. It was great!



    OK, Laurie, part of my post that I lost last night had to do with DDIL, DGS and I almost being run down by a wild teenage driver backing out of his driveway at breakneck speed and NEVER even looking to see that we were walking across from his driveway on the street (no sidewalks here). When I saw he was accelerating instead of slowing down as he approached us I screamed on the top of my lungs for him to stop, and he didn't, I ran up on a lawn to avoid being hit, and DDIL frantically ran backwards with carriage, missing being hit by inches... and the guy then never stopped and screeched off. We were freaked! Today while walking, DH and I saw the same car there and with the help of the kid's next door neighbor, confronted the guy who had done this letting him know that he almost changed his life forever with that dangerous driving act (We figured he would be less concerned about how our family would have been affected). He acted appropriately contrite whether he was or not, and we felt better that we confronted him. Post incident laugh...he walks away and his shirt says Volunteer Safety Association.......Fire Division. LOL! Maybe he always drives like he is going to a fire!!



    Doing more raw beet smoothies and getting the "red effect". Thanks for mentioning that a few days back, Bedo! ;)

    Welcome Eff I wish I had been able to get someone to deliver food. Only one of my friends sent over any food, and she did it a couple of times. I really appreciated it. My husband picked up the slack, but he really does not cook, so he would make take out runs depending on what I could eat. But he was only home on weekends. I could not stand the smell of cooking, so I.ate frozen dinners or instant stuff the days I couldn't go out to eat.

    Ooohh Lacey, yummy!  Everything sounds so good...except for that beet smoothie...LOL!

    My DH brought home two muffins for me - one blueberry and one cranberry.  Not sure whether I eat one or the other tomorrow morning, or cut them in half and enjoy some of both Cool

    Well, I must confess that I am a Sandra Lee fan ("Semi-Homemade With Sandra Lee"). Huge fan. I believe in logical and harmless shortcuts. But this sauce is EXCELLENT. It's not hers, it's mine, but it goes along with her style of cooking:

    1 lb of extra lean ground beef or turkey

    1/2 onion minced

    2 tsp garlic powder

    1 tsp oregano

    Salt and pepper to taste

    brown meat with ingredients above, drain

    For remaining, you will need:

    Red wine vinegar

    1 can petite diced tomatoes

    1 small can tomato paste

    1 can or jar basic spaghetti sauce

    2 T capers

    1/3 c halved black olives (lots of people want greek or other kinds, I just prefer black ones)

    1/4 c chopped parsley

    1 c chopped fresh spinach

    1 1/2 T dried basil

    1 t sugar

    1/4 t red pepper flakes

    heat 2 T olive oil in saute pan over med heat, then add 1 can petite diced tomatoes, saute for a couple minutes until tomatoes begin to break up a little. Add 1 T red wine vinegar, saute for a minute or two. Add meat, tomato paste, spaghetti sauce, stir. Add remaining ingredients except for spinach and simmer 45 minutes or for as long as you like. Right before serving, gently stir in spinach and serve. Sorry about any typos, my nails are too long right now and I am too lzy to edit!!!! LOL! Enjoy!

    Thanks, that looks really good!  Yep, I'd go with the Kalamata olive for sure.  And I agree, I love the "semi" homemade concept.  Some of the commercial spaghetti sauces are really good!
