So...whats for dinner?

Yay.. fellow beet lovers ! Momine I agree, that grated salad sounds good and will be added to my recipe list.
Yes, Mother Nature is letting us know who is boss eh? Today is beautiful sunny blue skies with a projected temp of up in the high 80's. So looking good for the bbq tonight.. fingers crossed.
Enjoy the play Lacey - sound so beautiful where you are... another place to visit for my 'to go' list.
I am taking strawberry layered cheesecake for dessert and also making some bruschetta on garlic bread rounds.
-
Lacey - I would love to meet up with you, that would be great fun. Just name the Saturday! Enjoy the play tonight!
We are ready for company. For the first time since we moved here last June, my DH has a presentable office and all the things that belong up in the attic are there. And the bedroom is rid of things that should have been stashed somewhere else. The guest room is ready for guests! Woohoo!
And as JoyceK said when I talked to her today, if we could bottle up this weather and keep it, we surely would. It is perfect outside! By the way, she's still losing blood somewhere. So on Wednesday she has to swallow the tiny "camera in a pill" so they can try to find out what's going on. Her energy level is pretty low. She's coming tomorrow to our lake party and she asked what she could bring. I told her to bring hot dog rolls and chips - easy peasy! Now if those hot air balloons would come drifting down the lake around dinner time, it would be perfection!

Here's another vote for beets. And sweet potatoes. Can't imagine not liking sweet potatoes. But then I can't stand raw onions. Don't even like onion rings except for the little shredded ones.
Good purchases this morning at the two separate Farmer's Markets in Park Rapids. Beautiful loaf of wheat bread, rhubarb pie (dh's selection), big jar of home-made sauerkraut, green beans, small red potatoes, small fingerling potatoes, tomatoes, giant cucumber.
Steak for dinner tonight. Green beans and potatoes cooked together. Cucumber and tomato salad with blue cheese chunks.
I don't crave desserts as long as I avoid eating sugary food. I find sugar addictive.
Happy Saturday to all.

Beets. Ate fresh ones from the community garden last year. Very yummy with butter, salt and pepper, sliced.
Next morning woke up and thought I was going to die. Pee red, You know what maroon. I thought "....What-Is- Happening- to- Meeeeeeeeeeeee!" Remembered the beets. Not a good way to start a morning. Just a warning.
Debbie, I have had those moments too. Sometimes they go on for 15 minutes. Usually the other person starts laughing. I remember being in class one day during a veeery boring subject. The teacher asked, "Can anyone tell us who came up with this theory..?" The girl next to me whispered, "the devil.." I thought I would die. I couldn't stop and when I did I started laughing again. I had to put my head under the desk. Tears were rolling out of my eyes. I pretended that I was upset. Actually, "Not at present" is pretty funny! It would have gotten me started!
Back to subject. Yellow squash smashed with salt, pepper and butter is for dinner with farm fresh mozzarella cheese, basil and tomato on sliced fresh bread put under the broiler with olive oil first.
-
Luv - enjoy your company this weekend - wish JoyceK all the best for Wednesday.
Caroleh... I have to agree... sugar is addictive. Your Dinner sounds delicious.
Bedo... and your dinner sounds just as delicious.
-
Oh my, our company just left, the dishwasher is running and I am in my recliner. I'm just a bit tired...lol! But everything turned out perfect and the weather was/is fantabulous! Great times with good friends - priceless!

I have a neat recipe fo Broccoli Slaw Salad.
This is a broccoli salad with Ramen noodles and a seasoned sweet sour dressing.
Ingredients:
• 1 pound broccoli slaw (sold in a bag in the produce department)
• 1 cup sunflower seeds
• 1 cup chopped green onions tops included
• 2 packages beef Ramen noodles
• 1/2 cup sugar
• 1/2 cup vinegar
• 1/2 cup vegetable oil
• cayenne pepper (a few shakes)
• 1 cup raisins
• 1 cup pumpkin seeds
• 1 cup chopped sweet red bell pepper
Preparation:
In a large bowl, combine broccoli slaw, sunflower seeds, pumpkin seeds, raisins and chopped onions. Make dressing from the seasoning packets from the 2 packages beef Ramen noodles and pour dressing over salad; crumble the Ramen noodles and serve on top of each serving -
Michelle glad .it went well. Deb, I love that recipe. It's so good. I went to a wedding today, so I am tired. We had brats and hamburger with all the fixings at the wedding. It was fun, but tiring.
-
Remember how I whined about missing the fireworks? My DH went, I thought it was strange cause he isn't as crazy about them as I am. But he brought home pictures of them for me. That was not quite the same, but it was close, and very sweet. So who is this man and what did he do with my husband?
-
Michelle: So glad your party went well...I love it when things turn out as expected!
Deb: Good broccoli slaw recipe. I have been able to find one completely packaged in the store, including dressing. There is an asian slaw one as well made with cabbage. It's not always available, so good to know there is a recipe I can follow. I am so such a short cut person...my DD still laughs and tells the story about Thanksgiving when I said to her "why would you make the pie from scratch when you can buy it at the store already made".
My BF is watching the last of the British Open today, so guess I will go have my mani/pedi to get ready for my "girlfriends trip" next week. If it doesn't rain again, we might play nine holes late this afternoon. It's been thunderstorming all week and the courses are wet.
Have a great Sunday everyone!

Sharon was coming back from up north yesterday and stopped at a rest area to use the restroom.
"Sir. Sir! SIR!!!! The men's room is over there. SIR!!!! YOU CAN'T GO IN THERE!!!"
Chrissy says she (Sharon) "unloaded" on this self appointed guardian of the gates and is in awe of mom's skill with certain aspects of the English language. Did I ever mention that before Sharon was a nuclear engineer..that she was a Navy officer and a merchant sailor?
Chrissy said that even after Sharon had said "a few things" to the man, that he still insisted that she use the men's room.
I wish I had been there, but I suppose it was best that I wasn't.
Eric -
that's a lot to know about Sharon.
-
Wow, Eric! Too many crazy people in the world. Tho it sounds like she came out fine, I'm sorry Chrissy had to witness such persistent ignorance.
So glad your dinner went well, Michelle, but sorry to learn that Joyce is still struggling with that scary symptom. She'll have so many positive vibes coming from our thread as she goes through her next diagnostic procedure this week. Best to her!
I'm thinking that maybe Saturday the 12th of August is looking good right now for a trip to Ledgewater,.barring any major storms that would impede the view, if not the Prime Rib! How about with your schedule? My only other caveat is DIL is due to deliver the first family princess in late August, so I'll keep a watch on that.
We are actually heading to NJ to visit DGS, DS1 and DDIL late this week. I'll have a chance to "assess" if she thinks she is more apt to go the distance this time around...was two and a half weeks early with DGS. Personally, August in NJ... I'd hope for an early delivery if the baby is a good size!
Last night at Mousetrap, I fell asleep for almost the entire first act.....and was in the second row! Awkward!! I must learn to take naps so I can manage this fatigue business better.
Before the show we stopped at Tamarack (Laurie you must go there) so DH could get the lobster roll he was craving. I had a BLT....lately I love those if the bacon is nice and crisp. Even with bacon I thought it would be healthier than all the other fried fish offerings. -
Update on my gastric sleeve surgery. I got home from the hospital yesterday afternoon. I ended up staying an extra day due to post op headaches. My surgery went fine and I'm tolerating the liquid/soft protein diet well. I think I could tolerate more sustantial protein, but I can't do that until 2 weeks post op. I'm surprised that I'm feeling hungry. I didn't expect that this soon post op. I'm having more post op pain than I expected. The incision where the drain was reminds me that I had abdominal surgery, even though it was done laparoscopically. Probably won't be looking too closely at this topic for a while. Reading about all the food is kind of tough. I'll keep up with most of you on the other threads I read or on facebook.

Tonight is likely to be stuffed peppers.
I hit the send button too soon.
Hi Hauntie. Glad that you're out of the hospital and home.
Eric -
Hauntie: Glad you made it through the surgery ok and are on the mend. Think of how great you will look and feel in a few months!
-
Hauntie, glad you are out of the hospital and adjusting. Eric, hat was awful about Sharon. Dumb people are always out there. BTW, my husband is a nuclear engineer as well. We lived in Newport News and worked at the shipyard for a few years. Much love
-
Oh geez, Eric....
Apparently, rudeness and ignorance knows no bounds!!! Glad Sharon gave it to him.... So sorry that your daughter had to see how incredibly rude people can be....
Hauntie,
Glad that you are home and on the mend!! Sorry that you are having pain. Hoping that it is short-lived..... -
Hauntie, glad your surgery is behind you, and you are at last home. You could probably use some good distractions during this period....got any engrossing books to read or movies to watch?
-
Tazzy ( and all fellow beet lovers),
Add me to the list!!! Love then and for the first time 3 years running, I successfully grew them in my garden..... Everytime that I tried before, they grew a long, thin tap root but never developed a beet... Just lots of greens which, while really good, are not a beet.... Turns out my soil was difficient in nitrogen... Who knew? -
Eric, what a dummy! Geeze.
Hauntie, glad you're doing well.
Today went kayaking in the bay and the weather was so beautiful. we went way out and sat on rocks with our feet in the water. My friend used to be my co-worker, but quit and left me with all the work, but I still like her a lot. Next week maybe the cliff walk in Newport or swimming.
I'm waiting for Peapod to deliver. I was on a mission this weekend. Everything must be clean, so I'm having groceries delivered. I'm making refridgerator pickles and salmon chowder. (Guess I can't say I'm vegetarian anymore!) Dr. wants more protein. I will still be careful to make sure the animals are treated kindly, as best I can. Not too sure about that evaporated milk. Another idiot doctor told me that I would live 3-5 years 16 years ago for another condition that I've had since about 16. What an idiot. I feel fine. So I'm starting on a health kick. Will kayak more and when it gets cooler, I will get back to my personal trainor!
Salmon Corn Chowder
Sides: Serve with a colorful leafy green salad with cut-up vegetables such as carrots and peppers and a light dressing. Bread: A warm crusty loaf of whole grain bread is a perfect accompaniment. Dessert: Finish the meal with a couple of low fat cookies such as ginger snaps or fruit-filled sandwich cookie. Wine: Pair this hearty chowder with a white wine such as a Chardonnay.Ingredients:(check the box next to the ingredients you would like to add to your list):• 1lb Fresh salmon fillet • 1 15-oz can creamed corn • 1 15-oz can whole kernal corn no salt added (or 1 ½ cups frozen corn) • 2 cups evaporated skim milk • 2 Tbsp minced onion • Add All Ingredients
Steps:
Remove skin from salmon with a sharp knife. Coat skillet with oil or non-stick cooking spray, and heat over medium-high heat. Place salmon in skillet. Cook salmon, flipping occasionally to an internal temperature of 145 degrees (about 10-15 minutes). While salmon is cooking, place the remainder of ingredients into a medium sized saucepan and heat on medium-high. Once fish is cooked, remove and flake. Add fish to chowder and serve.Seems simple enough. Attn Carrie!
-
ok Hauntie.. i will have to find you on other threads.. what others?
-
What the heck am I supposed to do with these 24 Quahogs my neighbors dug up today and just gave me? Can I stick them in the salmon chower I was going to make? But how??? They're in shells and the shells are closed
-
i almost made salmon patties tonite.. with a high quality canned salmon they can be very good, ....
but i freaked out about the kids helping out and always having to cook, so my son grilled some chicken breasts and i made some excellent rattatouille... with some rice on the side. (always good with butter and milk and sugar in the morning). (I am not on a diet).
-
Bedo... how about a paella ?
Ham & cheese salad for me... hubby on his weekly pilgrimage to the golf course
Hope you are all doing OK and had a wonderful weekend.
-
Lacey - August 12 sounds great! Unless that new baby makes an early arrival!
Hauntie - so glad you're out of the hospital and feeling pretty good. So, how about you give us an idea of what you are allowed to eat, and we can help you come up with some creative ideas? Just a thought...
Bedo - those quahogs will make clam cakes or clam chowder. You can do it!!!
http://chowhound.chow.com/topics/542715
Eric - I'm glad that Sharon held her own against the idiot who was trying to send her to the men's room. Jeesh, you'd think he'd give her a little credit!
I am currently soaking my feet in front of the tv. I got a little lake sand under the skin of one of my blisters - not nice at all! So my feet are in cool water with some antibiotic soap. I think I need one of those home foot spa things! We did have a fabulous time today. DH did a great job with chicken and sausage, everyone brought something, Joyce and her DH came, and my chocolate banana cream trifle was a hit. And my son the poker player is back from Vegas and spending a few days with us. Phew! I'm going to take it easy tomorrow, I promise!
-
Michelle, you should try soaking your feet in salt water. After the first sting, it doesn't hurt. It is a natural antibiotic, it always helps me if I scratch skeeter bites, etc. They heal better and quickly. And with my diabetes its important to heal quickly. Use as hot of water as you can stand. Am glad you had a good weekend visit.
-
Oops! That Saturday is actually the 11th, which would be great, Michelle. Please take good care of those sanded blisters!!!
Yes, Bedo, if you aren't into assembling and frying clam cakes, chowder is what people make from quohogs. Didn't you make a nice chowder recently?
Your quohog "gift" reminds me of a time many years ago when a friend and I dug up tons of them and brought them back to the friend with whom we were staying for the weekend. She had no idea what to do with them and we thought we could treat/cook them like steamers. Not exactly!! They were like thick rubber bands....gross....we had to drag the pot back to a marsh and leave them for any wildlife takers. -
Moonflwr - I have diabetes, too, so these blisters are a bit of a concern as my WBC is a bit low because of the Xeloda. And also because of the Xeloda, hot water is a problem - the idea is to keep the feet cool, which is why I was in the lake yesterday. I should have put on a waterproof bandage before immersion, although they seem to be more "resistant" than waterproof. That's why I was soaking in coolish water with antibiotic soap. I was actually able to aim a bit of antibiotic cream inside the one that got the sand deposit.
Lacey - the 11th is just fine. I'll PM you my phone number so we can discuss the details. I'm looking forward to seeing you and meeting your DH!
I actually slept until 8:15 this morning, late for me. And my butt will spend a lot of time in a chair today. I'm a little tired after all the weekend entertaining. There's enough food in my fridge to sustain us for at least a couple days. -
Looking forward to my girlfriends get together starting tomorrow. It will be a nice break for me...I've been friends with these women for over 30 years and we still get together several times a year to enjoy each other's company. I still have my big red eye from my injection. I googled it and learned that it may take several weeks to go away...in the meantime it's causing me no discomfort...just ugly!
We watched the final episode of The Bachelorette last night where Emily made her decision to pick Jeff over Ari. This was probably the most genuinely sincere episode I've ever watched, and it was great to see a woman make an intelligent decision regarding her future when faced with two completely opposite types of men, both of whom whe was attracted to. She let the race car driver go and picked the more stable man who was on her wave length with regard to family and faith. A good choice I think for both Emily and her daughter. My BF and I both cried...we're such romantics!
Have a great Monday everyone!
