    I have some friends coming formdinner and decided to make a cold dinner. So there is a potato salad with dill, spring onions and mustard vinaigrette, tomato slad with mint, small meat balls also with mint, a huge broccoli and mushroom quiche, eggplant baked with onion and tomato, tzatziki and red peeper/ walnut dip.

    Yeaaaa, Kaara. So glad the new doc was worth waiting for! And, by the way, can I stop in for dinner tonight!? ;)



    Carrie, I hope your local police aren't doing any door to door fundraisers! ;)



    Here is the much less exciting spice blend I used last night (from Whole Foods):

    San Francisco Bay Blend....for seafood or poultry (I never understand why such spices have to be limited to just a few protein groups). So it includes these organic spices:paprika and mustard, sea salt, organic dehydrated garlic and onion, citrus oils (lemon and orange), and citric acid.

    Kaara- So glad the eye appointment went well!  Sounds like quite the difference!  Your slaw made me remember a thing I saw on tv the other night.  They had a thing for Americas best sandwich and it looked amazing.  Pulled pork topped with a slaw that had poppy seeds, mustard, pineapple all sorts of strange things in it.  It looked amazing!!  Very different but you could see how the flavors would work together.

    I have no idea what dinner will be.  I bought chicken today 1.77 a pound!  So I am thinking some kind of chicken dish.  I usually would have gone grocery shopping today but am holding off until tomorrow so I can be prepared for company.  Did I say we are having a group of friends to the house for the weekend?  We will be 12 adults and 9 kids!!

    Kaara - I love that texas caviar from Costco! That's what I had for lunch today.  :)

    I have no clue what we're having for dinner tonight.  I worked until after 9:00 PM last night (hit a snag with an upgrade) and we ended up having dinner at 10:30.  I was 'zausted, so made scrambled eggs with zucchini, onions, cream cheese and bacon from a local meat market.  And a glass of white wine.  Hopefully tonight will be an earlier dinner - almost undoubtedly it'll be something that includes both zucchini and salmon.  Maybe a crustless quiche.

    Has anyone had any luck making a pie crust out of something that doesn't include wheat?

    Laurie - I'm having a backyard full of people on Sunday, too.  I think it will be a very nice weekend, either day!  We're going to have bbq chicken and sausages, and cold salads.  I am going to make another trifle...banana cream, I think.

    Momine - cold quiche, that's interesting.  I will have to give it a try.  I do love potato salad with dill. 

    Kaara - glad your injection went well, although I must admit that just thinking about it makes me squint.  Did you mention why you get the injections?  I can't imagine a monthly eye stick...eeek!

    Lunch at A&W's today following a round of golf.  I had the Coney dog (chili & melted cheese, no onions) and an icy mug of diet root beer.  It was good-d-d-d.  We're going into town in a little while for a free concert.  Dinner will probably be ice cream.

    Carole:  That sounds like a fun day..you are having a really nice vacation.  So much to do when you are willing to just go with the flow.

    Michelle:  The injections are for wet macular degeneration that I have in my left eye.  This is my fourth injection.  I took a short nap and when I got up my BF almost freaked out because there was a huge blood blister in the side of my eye where I had the injection.  I've never had this before, but when I called the office the tech said that it happens when they hit a blood vessel...oh well.  Hopefully it will go away...it isn't painful at all.  The shot really doesn't hurt that much..it's just the thought of a needle going in your eye that gives you the creeps!

    Michelle- Have fun with your get together!  By then your feet should be feeling much better, I'll keep my fingers crossed for you.  Market Basket has lobsters on sale this week for 3.99 a pound, just an FYI if you like lobster.  We are planning on doing a lobster bake Saturday night along with haddock for the adults who don't like lobster (me) and burgers for kids who don't like it.  Of course steamers, corn, baked potatoes etc.  I have been debating on pickin gup shirts and a tie die kit for the kids to do a project....it would probably just make a huge mess and be a PITA.  Ages are my youngest- 2- to age 11....

    momine your dinner sounds great.  we eat a lot of mediterranean at this time of year.  i have to find the hummus in the freezer to go with the tabouli in the fridge.

    Laurie - tie dye - yes, big mess and lots of work!  My daughter did about 10 of them last Friday and she said it was one big project.  And I'm wondering if I need to wash ours separately from everything else except maybe jeans.  I have visions of blue and pink on everything...lol.  She also bought a face-painting kit and I saw the results today - she's pretty good!  Here's one example:

    Thats it Laurie "steamers"  you are in charge of steamers!!  LOL  How can you not like lobster?  9 kids? YIKES They will probably swim the whole time and be good and tired at the end of the day.  You could probably have a nice game of kickball with that many people.

    Momine That sounds like a yummy feast.

    Michelle- thanks for the heads up, I will skip the tie dyes!

    Carrie- kick ball is a great idea!  Like you siad the kids will swim and eat and be exhausted by night time.  They should all pass out nicely, well, fingers crossed!

    Bedo- good for you!  Hope you enjoyed it!

    We grilled the chicken and topped it with sauteed onions and mushrooms amd some cheese.  Some pasta and zucchini on the side.  I was starving and it did not hit the spot:(  Still hungry as I didn't eat much.  May need a snack before bed tonight....

    my son cooked the chicken my other son cooked yesterday... lol

    and made guacamole.. it was pretty good for someone with no appetite.

    Seems it is a chicken night... that's what I'm doing with these potato & cheese patties and a salad of some description.   Think I'll do buffalo chicken drumsticks.

    Sounds like everyone is having fun in the sun.   Sorry can reply to all - DH just put bbq on and said he's starving :-).

    Yes, Laurie, casual sports or a loosely woven scavenger hunt with older and younger kids paired and the dads in charge of making the list would be about all the activity I would arrange, or else you'll be the camp art director/implementer instead of having some fun with your friends. Your energy for all of your activities is impressive!!



    We had leftover chicken and gazpacho tonight before heading to NH. I made one of my record times coming up to the lake...1hour 48 minutes. I love to try to shave minutes off the two hour trip everytime I make it. It looks like there was a lot of storm/wind activity here while we were gone, and the gal at the ice cream stand said that there was a water spout on the lake this week. I'm sure we'll hear more about that at the beach tomorrow...and about the recent neighborhood break-ins. I had an email earlier this week about two of our neighbors' homes being ransacked....so it was a relief to find our place as we left it, except for branches and MORE pine cones all over the place. Too bad I couldn't send them to you, Laurie. The kids could do pine cone crafts! ;)



    Tonight watched two more episodes of season two of The Big C. Did Laura Linney ever win any awards for this performance? She is amazing...and the writers are too. Does it end after Season three?

    O.K., Ladies....after four months on a basically liquid diet (medically supervised), I just started adding in real food last week.

    In addition to my products (Optifast) I get 4 oz of lean protein, and half a cup of steamed veggies a day. WooHOO! Laughing

    Once I am back on full food, I am SO going to go back and read all these awesome posts!!!! (And oh, won't my DH be happy!!!!)

    Everyone's dinners sound so yummy, Too many post to comment on but LOL Carrie at the marijuana smell.

         I got a call at 8 this morning telling me my husband, Chuck was rushed to the er by ambulance, Michelle, his assisstant called and said he was pretty bad, I felt like I was in a dream while dressing   and having to drive to the hospital, thank god it was only minutes away from me, When I walked in he seemed relaxed but cried as soon as he saw me, he was scared! I guess he was moving tables around for a banquet that was coming in and started having chest pains like something was crushing his chest, with pain in his arm and was sweating profusely, the medics on call took his BP it was dangerously high so they called an ambulance.

    They ran all kinds of test which came out normal (thank God). The ultra sound showed some leakage and just a small amount of plaque, but nothing showed he had had a heart attack.It was definitely a wake up call to change our eating habits. but I am sure a lot of it is due to the stress he has been under at work. They were going to keep him over night but Chuck kind of talked them into releasing him when the Dr came in this evening to see him, we were there for at least 13 hours, such a long day but on the way home I was so thankful that I had him sitting next to me on the drive home, It could of been a lot different scenerio. I told him that before he decided to take another job he has to get healthy first, maybe Mike, (the GM) will go a little easier on him now, We can only hope!!

    Debbie, I know you will take care  of your husband, especially so now, but do remember to do the job right you must also take care of yourself.  It is too easy to neglect ourselves when caring for others.

    Debbie - that's a horrible scare!  But perhaps he needs the job change as you seem to indicate his current position is so stressful.  It's a toss-up, I guess.   I'm glad to hear that he's OK, and I hope he takes a couple days off for some R&R.  You both need it!  And as everyone has indicated, you need to take care of yourself, too.  Many hugs to you and Chuck.

    Blessings - congratulations on "graduating" to solid food.  I'll bet those first bites tasted mighty fine!

    DH cooked Italian sausage, peppers, mushrooms, zucchini, and red onions last night on the grill.  While it was very tasty, it was also a bit too spicy for me...waahhh!!!  I had bought both sweet and hot sausage and I was hoping I could eat the sweet one.  DH said he thought that the sweet one was almost as spicy as the hot... so he'll have to finish the leftovers.  I ended up nuking an ear of farm-fresh corn to top off my meal.

    Debbie:  So sorry to hear this...your DH has certainly had his share of health problems lately.  A good low carb diet and exercise program, plus some yoga or something to reduce his stress sounds like it's in order.  That really was a wake up call.  Hopefully he's going to follow up with a good cardiologist, and some recommendations going forward.

    Blessings...great that you are through the most difficult part of your weight loss..the liquid diet.  I'll bet you are really feeling good about now.

    Michelle:  Glad your blisters are healing..take good care of those feet...they are what keep us moving!

    My left eye is still filled with blood one one side...kind of like a hematoma.  No pain or anything, but I hope it goes away soon...it's unnerving.

    My dinner last night turned out great...grilled eggplant, okra & tomatoes, fresh corn and brown rice with cowboy caviar added in.  I also grilled two skewers of shrimp because my BF was not enthused about an all veggie meal.  He wants his protein!

    Oh Debbie that is so scary.  Hugs your way.  I agree, maybe he needs a change of jobs...no job is worth compromising your health.

    Finally got to the farmers market yesterday and got egplant, green beans, tomatos, cukes.  the organic guy there wanted some major prices for his stuff.  5$ for organic eggs, 1 dozen.  Went to the booth with the amish farmer, says he does not use pesticides, not organic though. Corn was in short supply...will try again next thurs.

    We finally got a little rain last night...very little...but better than nothing.

    Both you and Chuck must have been so scared!! I must admit that your description of the ride home made me puddle up... So sweet and a reminder to me to take the time to be thankful for all I have in my life.....

    Years ago we had an outbreak of whooping cough (yes, whooping cough) and I managed to catch it... Never so sick in my life... From coughing so hard I wound up breaking a blood vessel in my eye... Must have been a big one because my entire white of my eye was scarlet! It does look a bit freaky and can take awhile before it's completely gone but it should show some improvement fairly quickly. Kind of like a bruise.... Hoping it clears up fast!
