So...whats for dinner?

Hey Everyone,
Haven't posted much as dinners have been pretty boring. Tasty, but not much to write about. I did bake chicken drumsticks the other night. So ridiculously easy, but really yummy. I baked the whole pkg (16 drumsticks I think) just basted some melted butter and seasonings. Served with corn on the cob and mashed potatoes w/ gravy. it was great because there were leftovers for my son and husbands lunch the next day. They said they were yummy cold out of the fridge. My DD made a boysenberry cobbler this evening and it turned out really yummy. It's out of a Paula Deen cookbook, so it's pretty naughty but, it is so good!
Thinking of Hauntie as you have your upcoming surgery and Michelle on your poor feet. Sending prayers from California for speedy healing.

Carrie,
That salad sounds so good and would most likely command that price at a restaurant.... I, too, prefer the dark meat on a chicken or turkey.... I am definitely in the minority in my house but, that's OK.... More for me! With the crazy hot temps we've had salads and fruit have really been hitting the spot!! Getting the first of the local corn in! It's a pinch early due to the warm winter (early planting) but, I am most definitely NOT complaining!!! -
Seaside- LOL! I was out of peppedews but would of put them on too. LOL@the sign on your car.
Hauntie- I agree with Laurie we will all help with healthy recipes for you. But will understand, just please keep us posted on how you are doing.
Carrie- How sweet of your DH to compliment you like that. Funny on you leaving the zuccks at the neighbors haha!
Tazzy- Same to you! ;-)))
Lexi- Been awhile since you have been here. Your cobbler sounds really yummy!
Michelle- Good Grief! Thats terrible having those kinds of SE from the meds. I am glad you called your onco and know that is whats causing them. Hope they clear up with cutting the meds down. (((hugs)))
Watching Dance moms right now, how can women be so mean and catty? I can't imagine treating other people like that. I have friends that I have known for years and never came close to the way they all talk to each other. But can't stop watching it, it is addicting!

Hi Lynda. Good to meet you.
..sending good and healing thoughts your way.....
Eric -
Michelle - take care of those blisters!!! Grade 3 SE sounds very not good.
For dinner last night we had cold salmon, sauteed beet greens and kale, sauteed zucchini and a glass of Pinot Grigio. Dessert was fresh blueberries, raspberries and boysenberries. Easy dinner as I missed my normal train and got home late (stupid meetings at the end of the day!!!!) Tonight I have to work overtime, so hubby is taking us out for dinner.
-
Michelle: Take care, sending good thoughts and hugs your way. Does this crap ever end??
Hauntie: Also wishing you well and a good recovery
Carrie: chicken dinner with that salad sounds delicious and how easy eh? Hmmm... have given me an idea for tonights dinner.
Laurie: What a great idea - can you imagine the great food we would eat... likely need more than a weekend and I would be happy with just the desserts too.
Debbie... I agree, why cant people just be nice to each other.
Wishing you all a happy day. Sending positive healing thoughts and hugs to those who need them. Happy cooking ladies... and Eric of course. -
Hautie: Good luck on your surgery...sending you prayers and positive healing energy!
Michelle: Glad you called the doc on those blisters..they sound very painful and you definitely wouldn't want them to get infected.
Carrie: I agree with your DH...those salads do cost a lot in a restaurant...we always comment on what it would cost us to eat it out..lol! I buy the huge plastic bins of organic spring greens, and just make do at home most of the time.
Lexi: A good cobbler is my favorite dessert...next to red velvet cake..hehe!
Today I had my leftover chicken with artichokes for lunch and I'm off to Asheville to do a little shopping because it's such a beautiful day. Last night we played nine holes of golf and ate at a thai restaurant. My score wasn't so good, but my putting was pretty awesome for not having played in several weeks due to the travel and rain. My BF continues to "coach"...he can't help himself, but I can usually stop him with a "look" now...lol!
-
Laurie- I missed your post, The green chilis are the ones that come in a can called Ortega Green whole chili's you would find them in the isle where the mexican food is.
Kaara- I myself am going to the mall today too. The clouds are starting to burn off so want to enjoy when I can. I can just see "the look" you give your BF lol!
2 hard boiled eggs for breakfast, nothing exciting!

Spent most of the morning cleaning and getting ready for our house guests this weekend and we spent the afternoon outside in the pool/backyard. I told both boys this morning we were going to clean and I would pay them to help. They did a great job helping to pick up and they used the vacuum to no end...I paid them each a quarter, lol! They were very happy.
Tonight's dinner is Debbie's Belgian chicken stew, heat be damned I have a craving
I have the a/c's going so it is nice and cool in here. Can't wait for the humidity to leave tomorrow so we can open the windows again.
-
Laurie... too sweet with your boys - bet that quarter is burning a hole in their pocket
adorable!
Debbie: your 2 boiled eggs would've gone with my 2 toast for breakfast.
Not decided on dinner yet. DH golfing - yay.... so will be something quick and simple. Thermometer says 43 degrees here (109 F).... tis a warm one. Likely a salad... even though I have the AC going do not fancy cooking.
-
I have been waiting for the Roto Rooter guy for over an hour. I am getting impatient.
-
Oh dear, Deb. I really feel for you. I sooo hate those kinds of plumbing problems....gets my OCD tendencies out of control! I hope /she gets there really soon and takes care of the clog pronto and with no mess.
Tazzy....109!!??!!?? Yikes!
We just had a string of really bad storms come through here which also fortunately brought a bit of cooler air.
With the storms raging (a lot of lightening) I could not see DH grilling the chicken breasts planned for tonight so even with the heat, I turned on the oven and roasted them with "San Francisco blend" rubbed in. Also had caprese salad and leftover wild rice. -
I hate waiting in for service people to get there - even if I wasn't going out, still drives me nuts.
yep... our summer in the Okanagan has arrived - we bitched long and hard in June cos it was wet and cold.
Lacey... what is San Francisco blend?
-
My daughter called and needs help with cooking chicken and is worried! I never taught her how to do this.
She is worried and says that she put it in the pan and browned it and then put it in the oven for 20 minutes with ba ba cun ush ? and white beans. After that when she cut into the chicken breast it was white but "chewy" She is worried that it was not cooked and will get sick. I told her that if it was white and chewy it was probably over cooked and not to worry about it. Any thoughts? I am a bad Mom and she was vegetarian until about 1 1/2 years ago since 16 and I was vegetarian until 1 1/2 years ago when I started eating fish so I never taught her, as I ate separate meals and and am not good with this.
I think she is just making me worried for no reason
Thanks!
-
If its white its probably cooked, uncooked chicken is usually pink. And browing it and 20 minutes in the oven should have been enough. Of course, she'll know by tomorrow if it wasn't.
-
YAY, I have a clean drain, he pulled out a lot of sludge and little fibers of tree roots. $377.00.
I had a cupin for $40.00 so $337.00. I get a stomach ache with something goes wrong with the plumbing, I think of the worst senario.
Had a hot dog and chips for suppa, DH finished up his cheese steak sub from last night. Still have leftover pizza too.
I love it when my DD calls for advice on cooking things.
I remember her coming over one Easter Sunday with colored eggs. She forgot to boil them LOLOL. What a mess.
-
Bedo - I agree with Moonflwr, the chicken was definitely done! My kids weren't big into cooking when they were younger but have definitely improved over the years. LOL at the "ba ba cun ush"!!!
My feet are a little better. So I was on the way to the hospital to see this little guy:
Braden James is the newborn son of my "almost" daughter-in-law's daughter. That make Braden my "almost" great-grandson! He was born at 8:21 this morning and he is just precious.
Anyways, as I gingerly crossed the street from the hospital parking garage, the blister on my right foot broke open, relieving the pressure and it immediately felt better. So tonight I "helped" the left foot by draining that blister and then bandaging it with along with some antibiotic cream. I'm hoping I'll feel a whole lot better tomorrow morning.
Kaara - chicken with artichokes...I need to make that. I used to order a dish called chicken carciofi at a little Italian cafe in Independence, MO. It was sauteed in olive oil, and besides artichokes, it had a few mushrooms, kalamata olives, capers and sun-dried tomatoes. I have often added a can of cannellini beans rather than serving it with pasta. It makes it more of a ragout.
Lacey - we didn't even get a drop of rain from those storms. But it did clear the air and it's a pleasant evening. I think I'll open the windows when we go to bed.
-
Michelle, Braden is adorable! So glad you felt the immediate foot relief.....hope they heal
quickly now. -
Michelle: Braden is beautiful... you must be so proud. Reiterating what Lacey said, hope you get some relief from the blisters.
-
Tazzy, I picked up San Francisco Blend at Whole Foods (aka W"hole" in your pocket!) recently. If you want I can check to see all the spice ingredients in it.
They recommend it for chicken and fish. DH really loves it...I'm only fine with it. -
Laurie- That's great you got your little guy's to pitch in and help. Sounds like you have a great weekend planned. Your so lucky to have a pool. I love the Ocean but not as easy as walking out your back door and jumping in a nice refreshing pool. Glad you have liked that dish, likewise, I love your chx salsa!
Tazzy- I will raise you one piece of toast for 1 egg lol!
Deb- Yippe on the plumber finally getting there. That must of been a pain in the arse not having your disposal working. LOL@ DD bringing eggs for easter uncooked.
Michelle- He is such a cutie! Congrats on your AMDGS. (almost dear grand son) ha! Glad you got some relief after the blister popped.
-
I forgot to mention that since DH plays golf on Wednesdays I decided to go to the new deli I found a couple of weeks ago. they have the best sandwifches and soups salads all made fresh including the bread. They have a little gift shop area and a lounge area where you can drink wine or beer but in one cornor they had tasting with little spoons to try their evoo's and balsamic vinegars OMG! They had a chocolate balsamic vinegar that was to die for and a fig infused balsamic equally as good. And loved there lemon infused BV. Each one was 20 apiece so will buy one at a time just to spendy all at once and have to figure out what i will do with them once I buy them but, boy were they all good.
-
Lacey - would really appreciate it if you could check the spice ingredients... nearest Whole Foods to me is Vancouver which is 4 and half hours away
Only liked the sound of it as San Fran was one of my fav places to visit.
-
I love SF bread too everytime I go to the airport there I get a couple of loafs. Yummy!
-
I never had kids to teach cooking to but when Dh & I were first married my Brother left home and came to live near us in Seattle. For the first few months he would call almost every night while I was fixing supper, tell me what kind of meat he had and either ask how to cook it or what to do with it. Sometimes he had an idea of what he wanted to fix, sometimes not. Or sometimes he might know a couple of things he could do with it but wanted something different. It got to be a fun routine but how I wish we had had cordless phones back then.
-
i find it difficult to believe that we shipped our bread into our restaurant from San Francisco.. oh.. it was absolutely delish.. that is the bread i need to replicate. chewy, but not too crusty.
I had the brilliant idea to split open a couple chickens and have son#2 grill them with bricks. total failure. i actually put them back on the grill for 20 minutes after dinner. but basically good and i have dinner ready to go for tonite with some to be made quacamole, tortillas and salsa.
-
Michelle, he is so cute! He looks like he's saying " Everything's OK" with his right hand and "I am strong" with his left. Even his little belly button cord and clamp are cute. boy is he young! Congratulations!
-
Michelle Congratulations! He is so precious. Glad your feet are feeling better...now that the blisters are popped, do a nice foot soak in warm water and then prop your feet up and keep them open to the air for awhile, they should dry up fairly quickly.
No dinner last night, went to see "the Little River Band" Had a blast.
tonight chicken cacciatore over egg noodles. Gonna use zucchini instead of green peppers (they now give me heartburn)
No rain here either, our yard is brown, but the weeds keep growing. I mowed some yesterday, just to get the tall ones.
My daughter bought some interesting spices while at the wine festival, but of course could not take them home on her plane, so she left them here till she comes home with a vehicle. they are packed with her 3 cases of wine she purchased. Everytime I walk in the dining rm where they are packed, I swear it smells like marijuana in there!
-
Carrie- LOL!!!!!
-
I just returned from having my eye injection from the new specialist in NC. It went far better than the ones I've had in Florida and this doctor is sooo nice! He gave me an injection of lidocaine prior to injecting the drug and I haven't had nearly as much burning after. It was almost a non event! Now it's behind me for another month...whew!
I baked mahi mahi for dinner last night with asian slaw and sweet potato fries. Today I will make my okra and tomatoes for sure, along with some grilled eggplant and a side of brown rice mixed with back eyed peas, black beans, corn, and red peppers. It's called cowboy caviar and I buy it at Costco. It can be used as a dip or mixed with other things for added flavor...delicious!
Michelle: Your great grandbaby is just precious. He reminds me of my DGD when she was born with so much hair!
