    I forgot it was Derby day and apparently so did my BF because he came home from golf and suggested dinner and a movie.  I'm not saying a word!

    Kaara- haha I wouldnt pass up a dinner and movie either. Shhhh.. dont let him know LOL!

    My pics of horses is. either gemology, bodemeister, or unionrags. Last year my neigbor came over and we made mint juleps and watched it. She moved away but wanted a quite day anyway. Looks like im the only derby fan here lol!

    Dinner was great...a little mediterranean restaurant that serves vegeterian dishes as well as some really good lamb and chicken.  I had the quinoia salad with grilled eggplant and BF had a talapia and beet wrap done gluten free.  We also shared a bowl of cauliflower and garlic soup.  Now that had to be healthy!  Then we went to the movies and got a bag of pop corn for dessert:)  The movie was good "The Lucky One".  A sweet love story like all the ones that Nicholas Sparks writes.

    Cooking for one or two?  Try Seeds of Change.  Great USDA organic products - 90 seconds in the microwave.  I love the Uyuni - Quinoa & Whole Grain Brown Rice w/Garlic.  Just bought Tigris - a Mixture of Seven Whole Grains.  There are several other varieties.  I first found them at Costco, but lately they've been out.

    Minus Two:  Yes...I've tried them and they are great.  I've only seen the quinoa and brown rice at Costco.  They probably have them at Whole Foods...I will look for the Tigris.

    BTW...I was born and raised in Houston...it was like a small town back then.  I lived inside the loop!

    Michelle:  Oh boy!  Does that ever look good!  I haven't had anything like that for breakfast in over six months....just protein shakes or veggie smoothies, and an occasional boiled egg.  Time for a splurge!

    Today my BF's DIL is having a jewelery show with pieces she has imported from her homeland, Columbia.  They are supposed to be beautiful so I expect I will come home a little lighter in the pocketbook..after all...I must buy something to be polite:)

    Tonight we are going to see a play at the little theater "LIttle Shop Of Horrors"...a musical comedy.

    BF realized on the way home from the movie last night that we had missed the Kentucky Derby...aw shucks..that's too bad..hehe!  Naturally he was able to catch the instant replay on late news, so it wasn't a total loss for him.

    Yummmmm, Michelle....memories of the 70's when my friends and I frequently made so many wonderful quiches....obviously never concerned about cholesterol in those days! :) What a beautifully tasty way to start your day!

    Kaara - I have to say, that quiche was delicious.  Nothing fancy except I added way more cheese than the recipe called for...so that's probably why it was so darn good.  Shakes or smoothies don't satisfy me very well, I need to "chew" food, and observe the 20 minute rule.  I can't take 20 minutes to drink a meal, so my brain isn't satisfied.  And even when I have soup for lunch, I need to have a few crackers or salad or something with crunch.

    Enjoy Little Shop of Horrors, loved the movie!!!

    Lacey - what are you using for a computer/browser?  I am using Internet Explorer on a Windows-based system.  I had posted this picture on Facebook so all I did was copy and paste it.  The picture does have to be on the internet somewhere...Facebook, flickr, photobucket, or Picasaweb - something like that.  I just then right click inside the picture and select copy from the drop-down menu.  Then I click in this text box and right click, select paste, and then agree when it asks if I want to allow the external content.  Sometimes it asks you more than once.  And there is no way to do it on an iPad, which drives me nuts.

    Ladies thank you all so much for the words of encouragement with DS#2.  I have calmed down a  bit about it and am comfortable with the fact that it is a phase. 

    Last night the boys slept at my in laws and DH and I went out for Cinco.  We met my SIL and her husband at our favorite Mexican place.  We had a great time and just kept ordering appetizers and sharing them until we were full.  The Margaritas were wonderful and I definitely indulged!!  Woke up a little foggy this morning, lol! 

    I am thinking of taking the boys for their first ice cream of the season if the weather stays nice this afternoon.

    Michelle- Your quiche looks yummy!!  I don't think you can ever add too much cheese!

    Debbie- I am glad you are enjoying your alone time and winning some money while you are at it!

    Kaara Glad you enjoyed your dinner out, have fun at the jewelery show.  I bet it will be lots if fun.  Have fun at the play tonight, you are one busy lady!

    Lacey- I hope you are feeling better, thanks for the links.

    AhHa! Thanks Michelle. The problem is that I do almost exclusively use my ipad at home and rarely even turn my home computer on (which is a laptop set up with a big screen and separate keyboard, which I loved prior to getting the ipad), so that's why trying to post here from my ipad has not been successful. It doesn't work! Wonder why? I will be better about turning on and using my computer so I can try this. Tho Not sure I want to post all my food items on my facebook page, but I suppose I can easily erase them after? Maybe I'll start a Picasa acct. just for this.....and for all the photos I take of friends with promises to send them....and never get to! A too long response to say "Thank you"!

    Michelle- Can you post the recipe for the quiche, it looks amazing! Did you make your own crust? I made a chocolate pie the other night, the pudding itself was delicious but the crust came out tasting like cardboard. I pride myself being a good cook and pastries too, but in all the years i have attempted pie crusts they always come out bad- And i have tried tons! 

    Laurie-  Glad you got out last night, you have had some stressful stuff going on lately, you deserved those margarittas! I know that foggy feeling lol!

    Lacey- Every since I got a new computer last year I havnt been able to post pictures, every once in awhile I do but never know how I did it. Its frustrating though I know!

    Debbie - I never make my own crust unless it's something that can be just pressed into the pie plate.  I gave up on that when Pillsbury came out with really good refrigerated pie crusts, already rolled out and ready to use!  Here's a link to the recipe I used:

    I didn't have enough Swiss cheese so I used some 3 year old cheddar.  And lots of it - maybe two cups in all instead of the one it calls for.  No regrets!!!  And I didn't have 12 slices of bacon available so I used what I had.  That would be almost a pound, and I'll bet that would make it even better.  I also think that ham would work nicely.

    Laurie - glad you got out last night, greaet stress relief!

    Lacey - with the iPad, I noticed that the BCO text box doesn't have any formatting icons, I don't know why unless the Safari browser is a "mini" version.  I use it on Blogger and don't have a problem there, so maybe it's a BCO programming issue.

    Thanks Michelle- That looks so yummy i may make that for dinner tonight for myself. I usually buy pilsbury pie crust too but was out and it was late so i made the crust, never again!

    Will be thinking about you tomorrow for your appt. Hope all goes well.

    debbie, have you tried using lard for the crust?  For the recipe I use the one that came with the food processor for portions for fat, flour and water but add a pinch more salt.  Follow the method from the recipe but stop adding water and processing just as it starts to form a ball.  Then I dump it on my work surface and shape it into a square, pressing down lightly, cut in half and using a pancake turner stack, press down lightly and repeat a couple of times.  Cover and let rest, roll out as usual.  I never press down on the rolling pin but let the weight of the pin do the work.

    I've made several varieties of quiche but the favorites seem to be  steamed broccoli, bacon and cheddar, and sweated onion, bacon and Swiss.

    Michelle - i like the way you cook.

    Lacey  - if you are on Facebook.. you simply make a picture full size, COPY and then PASTE it into the BCO reply box.   

    It's a little more complicated if you use this forum's software.  you have to host the picture elsewhere (like photobucket) and then paste the URL - the address, not the IMG link into the top box.. you then click on the dimension box and they automatically appear.. then just hit INSERT.. voila

    Apple is correct - I copied the quiche picture after I uploaded it onto Facebook.  But that process still doesn't work with an iPad, unfortunately. 

    Debbie - thanks, my PET/CT scan is Friday, so I get to think about it all week!  But I'm busy - babysitting the grandkids until tomorrow night, then getting my hair colored on Wednesday.  So I am ok with the waiting.  At this point, I really don't want to know the results until next Monday.  And if it weren't so far away, I'd wait until I get back from Paris to hear the results.  I'm doing a good job of sticking my head in the sand right now!!!

    Chabba - a long time ago, a friend of mine told me I could make a piecrust using lard, that it was failsafe. Well, I went to her house, we made the dough and then I tried to roll it out, and the trouble began. It wasn't so failsafe after all...lol! So I just don't frustrate myself and mess up my kitchen any more, I just go with Pillsbury!  They've gotten much better over the years - the one today baked up all nice and crispy, even in the middle.   I'd rather spend my energy on the filling!

    Chabba- I havnt used lard in ages but maybe next time i will try it that way. I did use my food processor then transfered it to a bowl, then added the ice water until it formed a ball, scooped it up and flattened it, wrapped it in plastic wrap and chilled for 2 hours. It looked and felt good but sure didnt taste good after i baked it. I scapped off all the chocolate pudding and tossed the crust. Some people just dont have that White thumb. lol! I do have a recipe for a no fail crust that you just press in the plate its a macademia nut crust with a pinapple filling, I had forgotton about it until Michelle mentioned she has one she presses. I will go through my recipes and find it and post it here, It was in the hawaiian newpaper years ago i clipped it and made it several times it was so delicious.

    Michelle- Oh, for some reason I thought it was Monday! Why do things have to take so darn long. 

    I didnt feel like going to the store for the crust for the quiche, so made a hashbrown crust instead, I didnt have swiss so made it with jack and cheddar. not exactly the same quiche but it smells amazing cooking.

    I forgot to say, Welcome Galsal- I love cheesecake factory, wish we had one here.

    Dh called and said he bought an air conditioner in chicago, one you dont have to put in the window, cost around two hundred dollars and said it blows really cold, im so happy since we dont have air conditon her in our house and was dreading another summer in our hot house. Yippe!!

    Hi everyone! I am back at work full time and haven't been on in a while. Work just sucks all my free time away. I don't know what I've missed. Please let me know if anything. I did read about your tests on facebook Michele. I just had a scare with a liver function test, but everything checked out okay. Hope you get great results and can go to Paris and really celebrate them. I will be thinking of you.



    Made a roast beef the way Michelle posted a few weeks ago. Set the temp at 500, immediately turned down to 475 and left it there for 7 minutes per pound, then let it sit in the oven for 2 and a half hours. No peeking! It came out great! I even made corn on the cob and steamed broccoli with it like you have in your picture. And a baguette. My DH has reached his weight goal. He has lost over 40 pounds. We are going to DQ to celebrate. Have a great night everyone.

    Woohoo, Kay!  Glad your liver function is OK, and congrats to your DH.  I wish mine would keep his end of our bargain (from when I started chemo...he's supposed to take better care of himself).  He needs to lose 50 pounds.  He did it once before and looked and felt fabulous.

    I know, for me, the more time that passes the less I want to hear the results.... Where I used to want to know by Friday now I hope they don't call so I can enjoy my weekend before having to deal....



    Hoping that this is all a false positive that the test is so well known for! I can't offer anything other than a virtual hand to hold yours, a shoulder to cry on while you wait, should you need it, and a heart that cares....



    Enjoy your DD's graduation this weekend! Congrat to her!!! Is this the one who earned her CPA?

    Seaside - thanks so much!  I'm doing OK thanks to everyone here and knowing well that it could easily be a false positive.  I absolutely hear you about not knowing...ignorance is bliss, at least for a while.  My DD got her degree in Accounting, no CPA yet although she will start prepping as soon as we return from Paris.  Her company has some nice incentives, including refunding most of the cost, and the state is changing some requirements in the next couple of years.  So she is going to get it done as soon as she can.  It also makes sense so she doesn't forget the stuff she doesn't use every day.

    It's 8:20, the grandkids are all bathed or showered and in bed, the dinner dishes are done, and DH is ready to go home.  I'll be on my own in the morning with the crew, but that won't be too bad.  I handle this gang pretty well, all things considered!  The hardest thing is figuring out their techie tv system - no cable but EyeTV, Netflix and lots of recordings, all driven by a MAC system that tends to flake out from time to time.  I might just turn it off and go upstairs.  The tv in the guestroom is direct connected to basic tv - which will suffice for a couple of days.

    Apple, Merci! With the help from you and Michelle I will master this picture posting business. Have to turn on my laptop! :) Went to try it earlier and just then DS1 called to skype with DGS. So sweet !



    Then on to make dinner in a hurry...DH was out cutting our hedge for hours so very hungry and had a finance meeting at church. No fresh protein available and no energy to head to the store so used Trader's Frozen gorgonzola chicken breast dinner (bad reviews from this couple who hated how incredibly salty it was), couscous with red onion and mushrooms (made that with no salt at all, so a mouthful of that and the chicken "almost" evened things out. :) Also made carrots with tarragon, and (some of you can guess) kale salad, with Greek dressing this time.

    Now the Celts have me captivated... They are having a heyday!



    Galsal, welcome! And I loved the blend of the wraps followed by cheesecake!

    Michelle, had to smile at your description of the TV technology challenge.....most days I can turn our TV on....but as soon as it does not cooperate, I need a course...provided by DH who is better at bothering to commit the alternative formats to memory than I. Now visiting either of our sons' homes provides a real challenge for us both to turn on any media. Hope the basic TV works well!
