So...whats for dinner?

OMG, I just feel so bad for one of the girls that works at the hair salon I go to. She has 2 young kids boy & girl. Her husband had a very bad cold and they call 911 Wednesday because he was having a hard time breathing, got to the hospital and his organs started shutting down and he died. Found out he had pneumonia. They both are probably in the late 30's early 40's. My heart is so heavy for them, God give them strength.
-
Deb- Ohhhh that is so terrible and sad, and so young too! Im very sorry deb! Saying prayers to help them get through this and be comforted.
-
Deb,
That is just NOT how life is supposed to happen.... My prayers to the family as well! Just so difficult to comprehend!! -
Boring friday, dont think we have ever stayed home on a friday before, almost seems unnatural LOL!
-
Deb, So sorry to learn about such a tragedy for that young family. Thoughts for them and for you too since everyone who is connected to this woman is touched by her loss. So sad...
Michelle, I know the pain of watching the decline of a parent. My mother was so proud, and aware enough with her dementia that she spent tons of energy trying to "fake it"....then the symptoms would come eeking through. And yes it was awful for her when out of her familiar environment. Your mom is lucky to have a caring daughter who tries to help her reclaim the activities she loved. But yes, the tolerable activities do get more and more narrow. Does she enjoy going through albums about the "old times". Strength to you as you accompany her on that path.
I bet that fat flush (kind of hate attaching that word to food) soup would be great with the addition of chopped kale. It sounds so tasty!
On to figure out the Super Bowl foods to prep that can be leftovers for the week......maybe veggie lasagna, a shredded chicken chili, some hearty soups?
Go Pats! It was painful to see the anti-Pats sentiment in the Jimmy Fallon massive audience in Indy last night. That's what I get for staying up so late after a crazy work week! Bad habit.... -
Deb - such a tragedy for that young family. My brother died in his early 40's (heart attack) leaving behind two kids and his wife, so I've been through that and it's so very difficult.
Thanks, everyone, for your comments about my mom. I know many of us are dealing with similar issues with aging parents and it's so difficult trying to help them maintain their dignity while tending to their very personal needs.
I'm looking forward to lunch with Joyce and then I'll do a little shopping in Nashua. And I need to hit the grocery store for chicken legs and whatever I am going to drink tomorrow during the Super Bowl festivities. I've been on a Prosecco kick lately. Both my daughter and I really like it, and she made a cocktail with blackberries and Prosecco that was just delightful. We might just need a repeat performance of that one.
-
Deb, that is such a tragedy....should not happen in this day!
Joy I had an aunt that had lupus. A long time ago (before BC) I had not been feeling well , with major arthritic pain and fatique, and I made them test me for lupus, but nothing (thankfully). Hope that is the case with you also. Hope you feel better soon. Lunch with Michelle should help!
Had dinner out with friends last evening, my DH and I shared a chicken wrap with sweet potato fries. they used onions and mushrooms with Jack Daniels barbecue sauce on the wrap...it was delicious.
-
Joyce,
Have they tested you for Lyme Disease? One of my sister's friends was having all kinds of problems and they thought it was Lupus and it turned out to be Lyme Disease... They live in an area of upstate NY that has a big tick problem but, she did not recall being bit by one.
Not sure if this applies to NH or not but, thought I'd throw it out there. -
Thanks girls, I have been thinking of her and wonder how she will cope.
-
Just checking in after a very busy week. I kind of fast forwarded through the last several days of posts.
So sorry about your MIL, Laurie. Hopefully the 3rd opinion is the charm that comes up with a treatment plan your MIL will go for.
Michelle - we've decided not to take my Dad on any more overnights away from home, unless it was the hospital.. Then he ended up spending 3 days in a hotel room, when the heat went off. at home. He did ok, but it's my poor DB#2 who has to deal with him. Unfortunately, he sometimes doesn't know that home is home. I don't know where he thinks he is.Other times he's pretty with it. I think dementia sucks even worse than cancer. I'm heading over to his house, in a while, to spend the night. My other DBs and I take turns staying over on Saturday nights to give DB#2 a break. The house keeper is staying over tomorrow night, so DB can go enjoy the Patriots game at Foxwood.
Haven't done any cooking or baking recently. Too busy and too tired.
My arthoscopic knee surgery is scheduled for the 14th. I hope this solves the problem. I'm pretty much pain free walking around work, but if I try to do stairs or walk any distance, my knee aches for days.
-
Kay- I am so sorry you had such a horrible day, so frustrating.
Deb- That is so sad about your friend. You would never think in this day and age that something like that could happen. You never know....which is scary.
-
Deb I hope that your friend has support. I will be thinking/holding her in the Light. (Quaker)
Michelle, you are a beautiful girl! Like your new pic,
I'm sorry, I haven't read back much, so much time is taken up now with work, I think I'm going crazy!
My daughter's Grandpa is critically ill and she and her Dad and his kids are driving down there (Philadelphia from RI) to be with him. I think that he will pass. I am sad because this is the first loss in her family, and he was a good man She is in her 20's Please pray for strength for the family. Her Dad was a former husband but we still are on good terms.
Just having stuff to eat with friends.
-
Prayers coming from Massachusetts♥
-
Thinking of you and your family, Bedo. And thank you!
-
Bedo - strength and love coming from me.....
-
JFK had lupus if it makes you feel any better Joy. A friend of mine was diagnosed when she was teenager and lives a totally normal life with her meds. She doesn't talk about it too much.. I certainly wish you well
-
Joyce and I always have a great time together! I'm looking forward to meeting up with her and her DH in Florida in March.
Laurie - I made beans again, and these are way better than the first batch, not too sweet at all:
http://www.cdkitchen.com/recipes/recs/493/Boston_Baked_Beans15770.shtml
I cut the brown sugar in half and replaced it with Splenda, but left a little bit to get the depth of flavor. And I did use the molasses - you could use sugar-free syrup instead if you wanted to cut down on the sugar. And I found them to be done enough after five hours in the oven. That might be a personal preference...I like my beans a little firmer.
These taste like the ones my grandmother used to make when I was a teenager. I guess it's time to get a real bean pot!
28 chicken legs are now in the oven...half will be "buffalo" style and half will be barbecue. And I made a blackberry basil syrup to add to Prosecco. My DD and I are on a Prosecco kick, rather than beer or other wines. I've been cooking all day...LOL!
-
Beans Beans are good for soup
makes you tummy daloop daloop
they make ya fart
they make ya poop
Beans Beans are good for soup
At least that is the way I remember it, probably not exact, LOLOLOL
-
nope here's the right one:
Beans, beans, they're good for your heart
The more you eat, the more you fart
The more you fart, the happier/better you feel
So let's eat beans with every meal1 -
Oh my God. Deb must be at a Super Bowl party.
-
Deb,
The version I remember was similar...
Beans, beans the magical fruit,
The more you eat, the more you toot,
The more you toot, the better you feel,
So let's eat beans at every meal!!
I'm sure your version was much closer to the original and mine was my Mom's edited version...lol! -
My Uncle Russell introduced that poem when I was a child and of course breakin bum bubbles was real funny as a kid. He used to make us laugh and still does.
-
Our family poem was closer to Seaside's
Beans, beans the magical fruit,
The more you eat, the more you toot,
The more you toot, the better you feel,
Then you're ready for another meal!My grandkids call it "butt snarfing"
-
OMG, ladies you are cracking me up, butt snarfing and bum bubbles?
Yesterday was fun. A couple we are friends with came over with their grandson and the boys had fun playing together. My brother and his girlfriend joined us as well. It was a nice mellow crowd. Our friends brought over lasagna and buffalo wings, I made Swedish meatballs, a Mexican dip and some potato skins. We even let the boys stay up until the game was done...or should I say we tried to. My youngest fell asleep on me 5 minutes before the end of the game. Everyone left as soon as the game was done and we told my older so he could watch a cartoon for 15 minutes in our bed while we cleaned up. I went up stairs after maybe 5 and he was sound asleep in our bed. Despite the late bed time they were up for 6
Quiet day at home today, thinking of making spaghetti and meatballs for dinner.
-
traditional chicken noodle soup with celery, carrots, onions, noodles and a boiled chicken.
yum - my secret ingredient.. 1/2 a lemon or some juice.
-
That sounds good. I put a can of chopped tomatoes or tomato puree in my chicken soup. When we were kids we topped off chicken soup with regular canned tomato sauce.
-
Okay I have a story about that poem as well. My cousin Timmy thought that only our family knew that poem. In second grade he had an assignment to write a poem and thought he was being clever. You guessed it. He wrote beans, beans, the magical fruit, the more you eat, the more you toot, the more you toot the better you feel, so eat your beans with every meal. It warrented a call home from the nun and has become family legend.
The chicken Marbella was great! Having leftovers tonight. -
For dinner tonight:
Roast chicken
baby bokchoy sauteed in a little walnut oil
sauteed peppers and brussel sprouts with organic bacon
brown rice
-
Kay - that is a funny story!
Gardengumy - sounds yummy!
I'm having leftover lasagna. My oldest son invited himself for dinner. My DH is gone and I had no intentions of cooking anything because I'm by myself and we'll be spending the next four days with the grandkids (Taco Tuesday, Wednesday is Prince Spaghetti Day, Thursday the other grandparents are taking two of them, I'll take the 3rd to ski lessons and basketball and feed him a hot dog in between) and Friday we'll be ready for an adult dinner...lol. Their life is so complicated with school schedules and overlapping activities that my daughter created a full-out project plan for us!!!
-
Kay that is too funny!
We are having leftovers from party...my girlfriend is such a cook!!! OMgoodness she made 3 homemade pizzas all different kinds, and sliders, and dips and potatos and a bunch of other stuff Whew makes me tired thinking of all the work involved. I made the chicken fingers on the grill after marinating in italian dsg. Most were gone. There was so much food, it took us forever to clean up and pack all the stuff to send home with people.
We are back to more doctors for my mom this week. she is just not getting better, so now new doc to do a heart ablation, basically go in and cauterize and kill the part of the heart that is fluttering. Doc says she wont get better or feel good until this is done. She is so depressed.
Michelle four day with the grandkids is a big undertaking....put on your sneakers.....you are such a wonderful grandma, they are very lucky children. Have fun.
