scratch the soup.. we've had way too many noodles lately.. it will be chicken and rice. ( i think it's my favorite dish).

Kay.... Too funny!! Reminds me of a story my Dad tells... When he was in school they were assigned the book 'Gone With The Wind' to read and do a report on. Well, my Dad apparently wasn't much of a reader and having seen the film in the theater put together what he thought was a great report... Worthy of an A, for sure!!
One problem.... In his report he referred over and over again to the character 'Red Butler'... His teacher gave him an F and wrote on his paper.... 'Nice try! But had you read the book you would know that his name was Rhett Butler, not Red!

That sounds good! My husband and I love brussel sprouts although I usually roast them! My kids absolutely HATE them and complain of the smell when I cook them... Oh well... more for me!

I'm tired just reading your itinerary!! I can remember those days when my kids were little. I worked outside the home and most days ya just didn't even know if you were coming or going! Do you have snow up there for skiing? We've got nothing here... But I guess they make snow at the ski places....

Did any one have a relative that would take his teeth out and run around chasing you with them? Every time my uncle would come over or we went over there we would say, "Gunkle, take you teeth out!" We called him Gunkle Russell, not too long ago he asked why we don't call him Gunkle anymore? We just laughed.

Oh my gosh you are all so funny with your bean stories, and deb, the false teeth story was Ha lar ious!!! LOL! I remeber seeing my grandmothers teeth in a glass jar in the bathroom and it scared the crap outta me. LOL!
Michelle- I bet you will have a great time with the grandkids,as Carrie said, They are lucky to have you. Your hair does look great, and it is growing so fast.

Carrie- I hope they get your moms heart beating normal again. My dad was also having the fluttering and he went to a dr a few weeks ago and changed his medicines and he hasnt had a problem with it since, maybe they can look at changing her meds?
We got back late tonight, had a great time with my dad, brother and friends had about 60 people show up, lots of good food. My favorite part was the commercials!

Boneless fried chicken strips tonite, I use EVOO and a lot of herbs and seasoning. Good cold too.
Visited Dad last night, he seems depressed, only answers questions, does not carry on any type of conversation. Also sleeps a lot. Sometimes he refuses to go down to the dining room to eat so they bring his food to him to eat at his kitchen table. I told him he has to get motivated or he will loose the use of his legs, he has a terrible time walking with his walker as it is right now. Have to put him in a wheelchair to go any long distance he gets very winded.

So tonight was Taco Tuesday and my grandkids consumed 30 taco shells...I am not kidding! They were eating really well and then somehow it became a bet as to whether or not they could consume the last 9 shells, with their "prize" being that "I" would empty the dishwasher instead of them...LOL! My DH and I sat at the table in awe as they finished every last one of them! Who would have ever thought that such a simple challenge would inspire them to really eat!!! We just got the last one in bed. And oh, I took them to wrestling - it's very amusing to watch 6 and 8 year olds learn to wrestle. I don't think the 8 year old has the "killer" instinct, but sometimes I thought I was watching that crazy tv wrestling, they were so funny!
Joyce - hope your folks heal quickly and you can get out of here on Saturday!
Carre - hope things are going better for your mom.

Laurie, I cooked your salsa chicken tonight with one major alteration. I substituted pork chops for chicken breasts. The dish was very tasty. You didn't specifiy whether you rinsed the black beans so I did not rinse them. I had bought low salt beans so wasn't concerned about the sodium.
I received my new Kitchen Aid stand mixer today. I ordered it from Amazon. I mixed up a starter (biga in Italian) and plan to make a peasant bread tomorrow. The recipe is in Carol Field's book on Italian baking. It's very interesting and goes into a lot of Italian history.

Tonight was pan-seared Tilapia, Snap Peas and Lentils with Basmati Rice....
I thought it tasted good and both kids ate it so I am declaring it a success! -

Laurie, I keep seeing references to your salsa chicken ,and it sounds wonderful, but haven't seen the actual recipe on recent posts...I'm obviously a latecomer! Do you remember when you posted it? I'll go back and look for it if you have an idea about that. Thanks so much!

Michelle- that is awesome that the grandkids had the taco eating contest! And the vision in my head of 6 and 8 year old kids wrestling is hysterical. I hope you had a great night, and you family is so lucky to have you to help out.

((((Carrie))))) you get a hug too...I hope this works for your mom and she starts to do better. It seems like it has been quite a rough road for her. I truly hope this works.
Carol-I am so glad youliked the recipe! I never thought to do it with pork? Did you cook it for the same amount of time etc?

Lacey- The salsa chicken is really easy- the ladies here have made variations of it with success, mango salsa, done in the crock pot and now Carol with pork!
here is the recipe-
2-3 chicken breasts
1 container of salsa
1 can of black beans
put the chicken in a pyrex dish, pour salsa over it, drain and pour the black beans over that cover and cook at 350 for about an hour and a half (works like a fast slow cooker)
make some brown rice
top chicken dish with shredded cheddar cheese and let melt, serve over brown rice with some sour cream.
Tonight we had grilled chicken sandwiches with lettuce and tomato. I was feeling a little green today but am doing better now. I was bringing the boys to my in laws so I could go get some hours in book keeping and my youngest declared he was sick. So I dropped the 4 year old off and came back home with the two year old. Turns out he had been constipated and soon felt much better, but we had the best day!! I have never been alone with him for a whole day before and we had a great time together, we watched a movie and played with his farm and had lunch together picnic style and took a nap together. My older son had fin being the only one with my in laws and it was a win win. Only tomorrow I have to take them both with me to get some work done.....3rd time in 5 weeks!! More than I have had to do in 4 years! Ohwell-I think today was worth it! I am now actually looking forward to DS#1 going to preschool next year and having alone time with DS#2. Can't believe he is 2 and I have never been alone with him for a day?

I rarely make dinner so I am jumping in because I have made plans for dinner three nights in a row this week. okay superbowl sunday was pizza but still, it had cheese sticks and salad.
Monday was Lasagne soup boring ~ but salad and bread too.
Tuesday will be a whole turkey, stuffing, cauliflower, and sweetpotato casserole. Will be sharing with another family.
Then I'm putting away my chef hat and waiting for my hubby to take back over. Back to chemo so hope I can eat what he makes... Kelly

Kelly Welcome, I am so envious of anyone who has a husand that can cook! In my next life I will be getting myself a wife.
Thanks everyone on the thoughts and prayers for my mom. The docs said it was going to be bumpy for awhile...she is just very impatient and wants to better....we all understand that right?
Last night I used the leftover chicken fingers and made a stirfry with asian veges (frozen) lo mein noodles and an asian sweet sauce....all one pan and quick. Good way to use up leftovers, can use steak strips also and any veges you have on hand, peppers, red onion, mushrooms.
Laurie When my daughter entered pre-school, I loved the time alone with my son. My daughter was always very energetic and attention seeking, taking up alot of my time, so it was great when my son and I got some "quiet" time. Funny story...when I went back to work after having her, I put her in a day care program..they actually called me at work to come get her because she would not sleep and cried constantly disrupting all the other kids. LOL I went on the night shift and kept her home with me.

Carrie- that is funny! My boys couldn't be more different, my older son is always looking to cause some trouble, he never stops talking and has ants in his pants 24/7. My younger son climbs everything but in general is easier to please and much more easy going. He aims to please wher as my older son just wants to see what he can get away with. The next 20 + years should be interesting!
I joke that the women in plural marriages might have the right idea. You have female companionship, help with kids, cooking, errands, cleaning etc. And on the nights that you "aren't in the mood" he can leave you the heck alone;P There are some days where I would love to just spend the day cleaning- have someone else watch the boys, or just be with the boys and not have to worry about the grocery shopping and cooking. You know what I mean? Though I am not sure if I would really want to share my DH....but the rest sounds good:) Maybe I just want a sister?

The next few years will definitely be an adventure with 2 boy that close in age!! Our next door neighbor has 2 little ones just a bit ahead of yours (5 and 4). They are just 18 months apart in age! I'm exhausted just watching them!
The oldest one just started Kindergarten and looks sooooo tiny getting on that giant bus!! Seems like just yesterday, my 2 were that little..... sigh! -

Spaghetti and Meatballs tonight.... Meatballs are cooking and smell great!! -
We had spaghetti and meatballs tonight, too. Well, actually macaroni as picked by the youngest. Two of them eat pasta with olive oil and parmesan, the third eats the sauce, none of them eat the meatballs...lol. Tonight was not an eating extravaganza like last night. They are all occupied with popcorn at the moment - it's becoming an expectation when I am watching them. And since it's my favorite snack, it works! Tomorrow will be nutsy, with gymnastics, ski lessons and basketball practice. The other set of grandparents are picking up the two youngest ones after gymnastics so I can focus on the skiing and basketball. And somewhere I need to get him some time to do homework and feed him dinner. ]

Oh goodness Michelle! You have a full schedule for sure.... No wonder our bodies were designed to have children when we are young! I know, speaking only for myself... I do not have what it would take to do what is required daily when you have little ones! But the Grandkids.... best of all worlds!! You can enjoy them while you have them and then... it's time for them to go home! Perfect!

The lasagne soup had italian sausage, peppers, onions, mushrooms, rotini noodles, tomato, spinich, all mixed together. It was from supper solutions, a place where I order meals and just cook them at home. Without it we would not have as many dinners together. Good variety too.
Last night I made thanksgiving dinner again. Turkey, mashed pot, sweet pot casserole, gravy, rolls, stuffing and cranberry sauce. Whew. I am not cooking tonight and I am going out to lunch so I will have my leftovers for later. The rest of the gang is on their own!

For the first time that I can remember I have nothing planned for dinner. I really don't feel like cooking for some reason and I never went grocery shopping this week. It was a strange week with my youngest not feeling well on Tuesday and then had to take the boys with me to book keeping on Wednesday and today when I suggested we go to the grocery store they didn't;t want to go, to be honest neither did I- so we didn't. I don't have much in the freezer for meat, I need to stock up. So maybe a can of soup and grilled cheese? We'll see what ideas DH has when he gets home. I have left over sauce form spaghetti the other night- left over pork chops and gravy from last night. Everyone will survive. I bet DH will be shocked though

Whew! What a day from he$$!!! It got off to a bad start when I went out to start the van and the battery was dead...my bad...after ten years of automatic headlights, I forgot to turn off the lights last night when we got home from the bowling alley. DH jumped the van and all was good until... Speaking of bowling alley, when I took the kids to McDonald's today, I had no wallet in my purse. Not a good thing, although I had a credit card from my mom's account, which saved the day. Apparently I left my wallet at the bowling alley yesterday evening as we were leaving. I remember looking for the keys (another thing I don't have to do with my car - they just need to be within 3 feet of the ignition so the only time I use them is at the grocery store for the discount card) and setting my wallet on a bench while I was digging around. My DH went and picked up the wallet and brought to the gymnastics place the tennis shoes that the grandson forgot to wear so he could do basketball after skiiing. Then Grandson remembered that he was supposed to have a bag with basketball stuff that hadn't made it with us. So DH met us at the ski area restaurant and brought the bb stuff and had a Bloody Mary. Then grandson asks if he can skip basketball practice cuz "he's tired"...LOL!!! Sure thing! I've had enough for one day!!! We're home and not going anywhere for the rest of the night! I had a bowl of clam chowder at the ski place, any other "intake" this evening will involve alcohol

Took mom for pre op appt today, the sun was shining and it was a beautiful day to travel, all of her medical docs are an hour away, as well as the hsopital. She did great walking through the building, and we all (my dad too) went to Olive Garden afterwards for lunch. this was the most activity she has seen in a long time, I bet she sleeps good tonight. Surgery is set for next Thursday.
My DH will have to fend for himself tonight, since I had such a great lunch.

Wow everyone has been busy! Carrie, I am sorry your mom has to have another surgery. I hope everything goes well and she is good as new after. I will keep you both in mt thoughts. Michelle, what a day you had! The kids' activities are enough without the extra excitement. Hope you're enjoying your alcohol.
Laurie, I didn't feel like or have any time to cook today either. Had tuna fish, although I did cook some asparagus and broccoli with it.
For those asking about the chicken Marbella, it is from the silver palet cookbook. The thing I like about it is that you can cook it ahead of time and then eat it later just at room temperature. I have a hard time getting everything to be done at the same time. I will post the recipe tomorrow. I can't copy and paste on the iPad.
