    Welcome Jancie.. Good to see you here. Enjoy your hike tonight!

    Rabbit -- we do the same.  We have this nifty (Italian) machine -- plop the tomatoes in a funnel which leads to an augur.  Tomato pulp and juice come out through a sieve covering the augur, and the skins and seeds come out the end to go into the compost.  Then we boil the juice and pulp down a bit, and then into the freezer.   We usually manage about 20 litres per season, which is enough to last us through to the next season.

    Just finished dinner and it was yum. I must say I used to eat to live but now I seem to be living to eat. Up to 118. Egads!

    Oh Barbara, 118, you are making me jealous. I have to lose the Femara weight. On it for one more year. I gained10 pounds when I started and it is stuck on me.

    That's cheating Linda Wink  I do the old fashioned dip em in boiling water and peel them.  Usually end up with tomato splatters everywhere ... but I enjoy the whole production.  

    Jancie ... if I did your hike the only place I would be checking in would be the ER ... you go girl!

    Strawberry shortcake.

    Who here belongs to the biscuit school, and who goes for sponge cake? I'm a biscuit girl, born and bred.  I try to be tolerant, but it makes me a little sad when I see people ladling strawberries on some sweet cakey thing and calling it shortcake.  

    Now let's see the sparks fly . . .

    Welcome Jancie!

    I lived in Southern Utah for a number of years and loved it.  I miss the red cliffs and moutains so much. I also spent time up north too in Salt Lake and Park City.  I hope you enjoyed your hike.  I miss hiking in Zion and in the Kolob plateau.  Now I've made myself homesick for Utah.

    My mom is visiting and she took us out for buffet dinner tonight.  I had salad and talapia.

    Okay, so I've been reading these jokes to my dh during commercials in the TV show he's watching.  He is laughing and groaning appropriately; but he just declared, "You have really crude friends."

    Y'all are a success.

    Now I have to dig around and find my favorite recipe for the "cake" in strawberry shortcake.  My mom used to make shortcake from Bisquick.  It was the recipe on the box, and it wasn't sweet at all -- it was floury and lumpy, kind of like biscuits but prepared in an 8 x 8 baking pan. That's all I ever had, and I assumed that's what shortcake was supposed to taste like ... until I moved out on my own.

    My favorite shortcake recipe is from the big Pillsbury cookbook.  It's neither biscuit-like nor spongecake.  Better than either one, IMHO.

    My mom was a biscuit person but we actually prefer sponge cake with strawberries and whipped cream.  Besides, the best biscuits are the fresh-out-of-the-oven kind and sponge takes a lot longer to go stale!  Practicality wins the day!

    Share the recipe with us please otter!  I'm not overly fond of either those sponge cake thingies or the biscuits I've used.  I usually just skip both ... ice cream and strawberries only.

    Libby ... glad to see you. Hope they did not leave you too battered and bruised from yesterday.

    Otter, too funny about the Bisquick.  That's what my Mom used, too, right down to the pan.  I've graduated to individual cream biscuits - sliced while warm, maybe spread with a little butter to mingle with the strawberry juices as they soak in to the biscuity goodness . . . mmmm.  

    WR, are you saying you *do* put ice cream on your strawberry shortcake?  I'm sorry, but that's just wrong.  Tongue out

    I'm on the road, so I don't have access to my recipe file.  (I'm so old-fashioned that I actually keep most of my oft-used recipes on 3 x 5 cards in a nifty oak box.)  I did google "pillsbury" x "recipe" x "strawberry shortcake", and came up with this:

    That recipe sounds really familiar, so I think it's the one I've been using.  It's kind of a quick bread-type recipe -- some sugar, but not too sweet; coarse with slight lumpiness; moist; etc.  Now I wish I had some fresh strawberries.  Oh, I guess I'd also need the other ingredients.  And an oven would help.  This motel room is a "suite" but all I see is a microwave and tiny refrigerator.  Can't do much with that.

    OTOH, in approx. 60 hours I will be making sweet potato casserole for a family reunion.  I'm 100% sure no one else there will have tasted it before.

    DH definitely always wants to throw a scoop of vanilla on the cake! Bad DH!  But I'm with you Rabbit -- I'd rather just have strawberries and ice cream (with a dollop of whipped cream if availableWink).

    thanks for the welcome!  It is 11 pm and I just got home.  I cheated and had a hamburger for dinner at 10:30 pm - we got back at 9:30 pm from the hike.  Of course that will not set well with my diet but hey....rode my horse and then hiked so I am sure I worked off those calories!

    I have a great Neapolitan (from Naples, Italy) recipe for tomatoe pasta sauce that is to die for and it only involves 3 ingredients!  Easy to make when you have company over - 10 minutes prep time and then you just let it simmer for an hour and you are done! 

    Keep the jokes coming - love all of them!

    I am all for strawberrys and fresh whipped cream!

    Wonder who will get banned this weekend.  Good to see that you were able to come back Blue!

    Bren - I have lived in Salt Lake for 10 years now.  I am a military brat so I am used to moving every 3 years - I finally feel like this is the place I want to stay for a very long time.  I think missing the Swiss Alps and being able to see the mountains here every day is what makes it feel like home to me.

    This place was pretty much a secret until the 2002 Olympics and now there are so many people moving here.  I may have to move to Idaho to get back into the country feeling.

    Janice.....I would love to have the recipe for the tomatoe paste sauce, if you don't mind sharing.

    Otter....I think I'll try the recipe for Strawberry Shortcake that you posted this weekend. We have friends coming over for this Saturday and it sounds like it would make a great dessert. Usually I just pick up a pound cake and cool whip and call it good, but your recipe seems so much better.

    Ladies, I agree with Janice.....keep the jokes coming.

    I still remember baking a "Hawaiian Cake" for my 7th grade sleepover and it was my grandmother's recipe.  The girls all asked for the recipe and I would not give it to them!

    It was very special to me...

    This is so simple that it probably appears to be just a regular sauce but believe me the taste is amazing.

    (2) 16 oz can of diced tomatoes - regular - no spices added at all....

    2 sticks of unsalted butter

    1 onion cut in quarters (for flavor only - not for eating).

    Mix it all in a deep pan and let it simmer for 1 hour.  You will know it is ready as the butter and tomatoes will separate with the butter on the top.  You will need to stir once every 15 minutes to make sure it doesn't get too hot - low heat on the stove.

    Cook up a box of Penne Pasta

    When serving you want to layer the individual bowls with shaved parmesan cheese - add the pasta and then the sauce on top of that.  Be generous with the sauce.  Careful putting too much cheese as it could make the dish too salty.  Buy the expensive shaved parmesan cheese - if you can't find it then use a good brand of shredded parmesan cheese - not the stuff you shake out of a can.

    This is a recipe handed down from a wonderful Italian mother - I have made it for company so many times and everyone has just raved about it. Cheap and fast to make!  Oh and this will serve 6 - 8 people.

    Edited because it was late at night and I messed up on the amount of tomatoes for the sauce - you need 1 stick of butter per 1 large can of tomatoes - I personally like to use 1 can of diced tomatoes and 1 can of crushed tomatoes.

    Athena, LMAO. I may be growing a little sense of humor. Smile Linda, my family always had it with homemade angel food cake. I don't like cake much so I just ate the strawberries and whipped cream.
