- Orange cream cheese icing:
1 package (8 oz. size) cream cheese, softened
1 tablespoon butter, softened
1/2 teaspoon grated orange peel
1 teaspoon orange juice concentrate, undiluted
1 1/2 cup sifted confectioner's sugar
Milk, if needed - Beat cream cheese, butter, orange peel, and orange juice until creamy. Beat in confectioner's sugar until blended and smooth.
- Cake
Dry ingredients:
- 2 cups of walnuts, chopped
- 2 and 1/4 cups flour
- 1 1/2 cups sugar
- Zest of 1 orange
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground ginger
- 1/2 teaspoon of ground mixed spice
- 1/4 teaspoon of salt
- 1 cup of seedless raisins, or craisins - soaked in hot water and drained
- You may add pineapple too!
Wet ingredients:
1 cup of corn or sunflower oil
- 3 medium shredded carrots
- 1/2 cup of orange juice
- 4 large eggs
- 2 teaspoons of pure vanilla extract
Directions
- Dry ingredients: Put the walnuts in a big mixing bowl with 1/4 cup of flour and stir to coat them. Add sugar, orange zest, the rest of the flour, baking powder, baking soda, cinnamon, ginger, mixed spice and salt. Add the drained craisins or raisins. Mix well.
- Wet ingredients: In another bowl, mix the carrots, oil, orange juice, eggs and vanilla extract until they just come together.
- Make a well in the dry ingredients and add the wet ingredients. Mix well but don't overmix the batter. .
- Pour the batter into greased/floured baking tin and level the top. Bake in 350 pre-heated oven place in the middle of the oven for about 40-45 minutes, or until a skewer comes out clean and the cake shrinks from the side of the tin.
- Take the cake out of the oven and leave it in the tin to cool completely.
- Remove from the tin, using a knife to free it up if you need to. Frost with orange cream cheese icing and top w/ walnuts/or curls of carrots.
Enjoy!!!
Very rich...you can make two round cakes and frost ...layering or even bread loaf pan and share w/ a friend!

Good Evening my Beach Friends! Interesting Monday Indeedy!
My Monday was filled with Angst & Finally Good News! As Many of you already know I am not a BC surviver! I came to this site the begining of May Looking for answers to ?'s of breast issues like many women do. My yearly mammo in March showed 2 spots of suspicious Micro Cals that needed further mammo views. That is when I started the waiting game so many of here are so farmiliar with. The Short Story is I needed to have them Biopsied (Stereo needle core)! My BS was unable to see the one spot clear enough to biopsy. So we chose to do the waiting game & I was to come back for a repeat mammo to check that area again. So after a summer filled with more breast issues in the same breast, thickening, lumpy areas & more mammos, a sonogram, exams ect.....Today was the day for the repeat mammo which turned into a sonogram (just to make sure). I got the All Clear, everything looks good. The spot of micro cals they were watching has no changes other than fading away some & the biopsy area looks good. Now how I came to the Beach is the Beauty of this Site & it's wonderful feeling of acceptance! As many of you know I Love Humor so I first started reading "The Story" to keep the Monkeys & Squirrels Chatter at bay! There is were I met Spar, LUV & Harley! I call them my "Laugh Sista's"! One day Dear Spar asked me to come to the Beach for a Swim & the rest is History! Besides having worrisome breast issues I also support my SIL who was DX with DCIS 1 1/2 years ago, her mom my MIL was BC survivor 2 x's many years ago & 7 women I personally know in my Community the past 3 months. I have 1 more diagnostic mammo to get through in 6 months before I get the final all clear for reagular mammos again. But as you all know I will NEVER be the same after this,always will I have that White Elephant Hanging over my Shoulder every time I go for another Mammo. I will continue to come & see my Wonderful Beachy sisters I have come to love so Much! You have come to mean so much too Me!

Celia, hope your headache is better, that picture you posted is driving me crazy, it makes me so dizzy and I will look at it again trying to figure out how is keeps moving around. One of lifes mysteries. You know how I am about wanting to know when, why , how, where.
Finally got the car cleaned out, mom and my daughter are riding with us to the funeral tomorrow. Which I know will be so sad. then I train the rest of the week on my new job that I am really nervous about because the place is so big and no one spoke to me at all today when I was in for my schedule. then saturday is taking the grandson swimming at 1 to 3 then we have to work at a childrens festival from 5 to 7 and still have the wed night after work 5 to 7 soup kitchen. So I am starting to meet myself coming and going.
I hope and pray that all of you are healthy, wealthy, and wise - OK forget the wealthy, ain't gonna happen. Anyway I love you all dearly from A to Z lots of hugs, sunsets, and calming beaches.

Good morning beachie bunnies. Our day started early today. What our neighbors undoubtedly think is mayhem, is a closely crocheted plan. And pre-dawn it has begun to unfurl.
So I'm up to watch the beach sunrise over central Ohio -- one of the lesser known beaches:
Spar. I'm thinking of you and your entire extended family today. Thinking of a car trip with three generations of women together -- that in itself is reason to rejoice. I know I always question why it is, that it's funerals that get my clan together, with the greatest degree of regularity??
We are working hard as an extended family to prioritize picnics and cook-outs and a week at the beach together, as reasons to rearrange our calendars, as we would a funeral.
My recent funeral for a beloved uncle was indeed a gathering of the tribe to celebrate his kindness and benevolence to all. It was so moving to hear the tributes from so many, about the small acts of generosity that he had contributed throughout a long life. It truly made an impact that we are attempting to live up to -- with our nieces and nephews.
Now I'm rambling. Spar, I just want you to know that I'm starting the day thinking of you.
Here's an angel who is helping you mourn the passing -- the difficulty in realizing anew, that life here on this planet is limited and how much you will miss your uncle's laughter.
I do think that heaven cries with us in our times of loss.
May your tears today be ones that offer reflection into the life that was lived, the love that was shared and the celebration of all that was possible -- as a result of your uncle's walking here among us.
