So...whats for dinner?

Good for you Cathyann, there is something so rewarding about pleasing people with food...
-
Love that recipe Isabelle - thanks for sharing. I have those ingredients... well have crimini mushrooms so will try that tomorrow. Like you I always make variations of recipes.
Tonight I have chicken thighs in a soy/lemon marinade with sweet corn and salad.

I've been away on vacation for a bit over a week and then 2 days after we got back the PGA Golf Tournament that our town hosts kicked in... DH is on one of the committees so was MIA for most of this week... Dinners have been whatever they were serving at the course.....
I am sooooo behind that I will most likely never catch up completely here! But did want to pop in and say I am OK....
Debbie,
With all you are going through, you were so sweet to think of me! Know that your Dad and your whole family are in my thoughts and prayers during this difficult time. Please feel free to come here and vent anytime. You have been through so freaking much lately. If you need to talk we're here to listen!
Chabba,
Very sorry to hear about your brother! I wish that there was something that I could say or do to ease your pain but, words are so woefully inadequate in situations like this... Please know that I am thinking of you and your family!
Michelle,
I need to catch up a bit on what is going on but, sounds like you have chosen a trial that may be a good fit for you and that, while the Xeloda wasn't the magic bullet, it at least stabilized those tumor markers so that's good! Took a look at the Amazon reviews on the book you are reading. Very interesting! That may be my next Kindle purchase!
I always hate mentioning people by name because I feel like I am leaving people out.... I will go back and read what I have missed. I do say a prayer every night for all of my sisters (and brothers) here so if I have not mentioned someone directly you are in my prayers, too! -
Ok I am laughing at the chickens being cooked upside down. Mainly because more often than not I do the same thing! I always get confused when looking at the poor naked bird. Dh always is the one to cut it up etc (still can't handle it after being a veggie for years-years ago.) He always asks if I do it on purpose and I am always embarrassed! But it still tastes good
Today was my last day of waitressing. The customers were so nice, all the regulars left me huge tips and told me they were sad to see me go. It was really busy and a great day all around. The owner, our friend, told me if I ever find myself short on cash give her a call and I can pick up any shift I want any day I want. Super nice! I might just do a few days here and there to make some money for Christmas. Maybe one every few weeks?
So last night we had tacos and tonight we grilled some chicken and did wraps with fresh cucumber and tomato with sauteed veggies on the side. Like everyone else- it is hard to catch up on it all when you miss a few days. But hugs to you all!

When I was in college (a thousand years ago...) my roommate, who was a home economics major no less, was tasked with cooking the turkey while I was at work. We were making a Thanksgiving feast for all our friends on the Sunday before everyone went home for the holiday. When I got home to get ready for the party I discovered that she had not taken the bag of "stuff" out of the turkey before she put it in the oven. We went ahead and ate the turkey anyway since it was fully cooked, but the next day I was so sick! I had to turn in an essay test to my professor's office and had to stop twice on the way to his office to throw up. I was sure that we had poisoned 30 of our friends! I was quite ill all day and had to go to the hospital that night, was admitted and stayed for several days - turned out to be a nasty virus - I was so sick but glad it was not food poisoning!
-
LOL, on all the turkey and chicken stories. I think we all have left the stuff in at least once. And at least cooking it upside down just makes the breasts juicy.
For supper today I had an almost Elvis. Peanut butter on toast with Bacon. (No fluff) just sounded good. It was! LOL. -
That just confirms it, Moonflwr - everything tastes better with bacon!!!
-
(((Chabba))) I hope that your brother is comfortable. Let the nurses do the physical care and your family can spend time caring for each other.
Debbie I am sad to hear the news of your family. Please take care of your sweet self.
I will never catch up
I had lobster and corn at my landlord's
I am orienting another person at work so I will have help Yay!
I met my violin teacher's father , very nice! Now I have a pen pal He went back to Illinois.
-
Seaside Hope you had a great vacation and are well rested...Welcome Home
Moonflwr Sorry, I love bacon, but gag on the peanut butter....I know everyone thinks I am crazy for not liking peanut butter...couldnt even do it as a kid, used to make my mom crazy because when fixing all of us kids lunches for school mine always had to be different..usually bologna with mustard. Dont like any nuts either.
Bedo Welcome back. So glad you are finally getting some help at work
Yes on the chicken being very moist having the breast on the bottom, ha ha. I used the leftovers in a pita for dinner and did scalloped potatos in the little crock (in the microwave) and they were the best ever. I think the stuff inside the chicken would probably add some good flavor if they didnt wrap it in paper or some such stuff.
-
You guessed right about the flavor thing with the chicken giblets, Carrie. I learned from my mother to boil and simmer them in water (out of the paper packet
for making gravy....added to the fat drippings (the real flavor booster!). I used to blend the livers to add tothe gravy, but rarely do that anymore given cholesterol vigilance!
Yesterday we went to the local farm stand to get corn (excellent!) and tomatoes (made gazpacho in vitamix...nice and fast), then couldn't find ground lamb in the local supermarket, so tried bison for our burgers. Doctored the bison burgers up with garlic, minced onion and fresh grnd pepper. They were really good....less fatty than a hamburger. What do others do with bison?
Later today we head back to Boston to meet DS2 for dinner to celebrate DH's birthday.
Then home for a day to tend the lawn, etc., before returning to enjoy more of this beautiful weather. -
The first time I cooked a turkey many, many years ago, I took the packet out of the stomach cavity but didn't know there was something else tucked in a cavity at the neck. Discovered it when I was cooking the turkey carcass soup, which is probably the best meal off a turkey. IMHO roasted turkey is good when it's first sliced up and then we prefer the dark meat. All the left-over turkey has to be prepared some method to impart flavor. As you can tell, I'm not a great fan of roasted turkey except for the initial meal. The small turkeys cooked on a rotisserie are probably the best. Same with chickens.
Cooking the chicken breast down is a good way to cook it.
The taco salad last night hit the spot. The chipped flank steak sauteed with diced hot peppers and sweet pepper and seasoned with lots of cumin made a great substitute for ground beef. Lots of flavor.
My last hair apptment was about the middle of June prior to our departure for the summer. It's always an adventure to have my hair colored and cut by a complete stranger when we're on the road. Wish me luck. I have an apptment at 11 am today.
I don't know what dinner will be tonight. Maybe pork chops with vegetable side dish. Maybe the pole beans I bought at the farmers mkt.
Have a good Wed!
-
Fresh Peach Pies at out Ontario Get Together...I finnally figured out how to post pictures...will probably go crazy now.
-
Salivating!! My favorite.....besides cherry!
-
Carole, you are intrepid! I have been coming to this lakeside town for 26 years and have yet had the courage to enter a local hairdresser shop. Of course no one here cares how long my roots get , and home stylist is only two hours away....a different situation than yours.
Good luck....you may come out with a "new do" that you love for a good price! -
Isabelle- Nice!
Carol- How do you cook your pork chops? I only do mine the one way with gravy in the winter. Would love some tips for a summer chop
-
I'ts almost finished and it's not even 3.!!!
a son will grill the pork chops, I made Waldorf Salad (doesn't that sound good?) and cut vegetables to grill on the grill including sliced sweet potatoes..
healthy and delish.
-
I often sautee pork chops in olive oil with garlic . a few drops of soy sauce. maybe some miso if you have some, blended with water (y'all have to try miso.) it rocks
-
Apple, I love miso, especially on grilled salmon. We get a lot of fresh salmon and grilling it is so good. With just a bit of lemon butter, soy glaze, or miso. Doesn't need anything else.
-
We cook our chops on the barbecue whenever possible and ...for a real treat...cut a fresh peach in half & barbecue it too & sometimes a slice of fresh or even canned pineapple. Both go great with pork chops or chicken. Yummy! In fact that is what we are having tonight.
-
oh peaches.. good idea, but mine aren't ripe yet.
-
OMG, Isabelle!! Those are some beautiful pies!! I think I just drooled a bit...lol. I never seem to be able to make a pie that looks attractive. They taste good but, they look a bit more, shall we say, homemade.... Not like those beauties in your photo.....mmmmmmmmm! Great idea on grilling fruit to go with pork chops... I've had pineapple with ham but it never occurred to me to pare pork chops with anything other than apples... not sure why...lol
Apple,
Actually waldorf salad sounds delicious to me. Haven't had it in years.... Will need to remedy that soon.... Do you have a recipe that you follow that you'd be willing to share? -
Seaside- Glad you did pop in to say hi! Sounds like you had a great vacation. good for you!
I had to share the stupid thing I just did, I was in the laundry room spraying my DH good suit shirts with "Shout it out" did 3 of them had to let them sit for 5 minutes so came back and saw them turning white on some areas so i looked and i had used the spray clorex bleach instead! OMG! I had the bleach in there earlier bacause I was spraying the door knobs and walls and left it in there. LOL! I just hope DH understands I am a mess right now and wasn't thinking! ha!
-
Laurie, I cook pork chops the way DH likes them. I season the chops and press them into bread crumbs or panko crumbs mixed with grated Italian cheese, Asiago or Parm-Reg. Then I brown the chops in olive oil in a saute pan. The outside is brown and crisp and the inside is moist. We have tried grilled pork chops but don't like them because they're dry. My technique is very fast. Oh, and the pork chops with the bone are the best.
Tonight's dinner was one of those easy ones that turned out to be really good. Center cut chops cooked as described above. Pole beans (green beans) cooked with bacon and potatoes and chicken broth. Two slices of bacon cut into pieces and sauteed. Add the chicken broth, beans and potatoes, s & p, garlic and onion powder. A salad with heirloom tomatoes (purple), cucumber, romaine lettuce, Greek olives. Dressing a mixture of EVOO, wine vinegar and bottled caesar.
The hair appointment today was fun because I got to talk to a lot of local women. The cut is really short, but the color is ok. I'll be good to go until we get home in early Oct.
Hope everyone had a good day.
-
Carole sounds good, and, tummy!
Debbie, when I read your post I thought it said suits! I was like OMG! When I looked again it said shirts I could breathe again! LOL. So, tell your DH it could be worse. Like you could have flushed a 300$ set of keys as, um, someone I know, did! LOL -
Ah, pork chops. My DH's favorites can be found at Stroud's in Kansas City. What he likes - they are loaded with garlic! So I marinate them in Italian dressing and I add a few teaspoons of chopped garlic, salt and pepper. Then he grills them for just a few minutes so they are not overcooked. Sometimes in the winter I saute them, add some apple brandy and butter for flavoring, and make a waldorf salad. Actually, I make it almost every time we have pork chops. It's very easy - I cut up a Granny Smith apple and some red crispy variety if I have one around, so 2 apples, about 1/2 cup of chopped celery, 1/2 cup of chopped walnuts and 1/2 cup of dried cranberries, cherries, raisins, whatever you have on hand. Sprinkle the apples with a little lemon juice and then bind the salad with some mayonnaise, just enough to sort of hold it together. I use Hellman's Light - no other brand exists in my book!
I got the call from Dana Farber today and I go in on Friday for my pre-trial testing (EKG, CAT, labs, etc). And if I pass everything, I will start the trial on the following Friday. I do need to go count backwards from our trip to Hawaii and make sure I won't need to show up for a visit in mid-trip, that won't work! I think it's just a matter of starting on the right cycle.
DGS is here spending the night and tomorrow we are heading to Odiorne Point State Park and then to Hampton Beach. It will be a big day for us, especially since he's not really feeling up to par. He had a fever yesterday, gone today but now he says he has a sore throat. And a little rash. He was tested for strep and came back negative which is a little interesting considering his little brother tested positive with the exact same symptoms. I don't think I'm prone to it, so I'm not overly concerned. But I won't be sharing any food or drink with him, either!
Isabella - those pies are just gorgeous! I think our nearby apple orchard has opened up - they also have peaches and make pies...I think I need to make a stop this weekend.
Oh Debbie! You shouted it out, alright!!! Big oops, but I'm sure you'll both laugh it off! Always dangerous to put one cleaning product in another's bottle without good labeling!!! -
Oh no Debbie, I feel the panicked pain you must have had upon discovering those white spots. Could you convince DH to wear tie dye?! And yes, glad it was shirts and not suits!
Michelle, glad you are gettin goin, and hope the trial schedule works out well for your trip.
Thought of you today as we drove from NH to Seaport...WOW was 93 a nightmare! Then we learned about the terrible accident in the northbound lanes which tied up commuters for hours, so many just standing in the road, waiting. Sad...
Tonight we had a lovely dinner at Rosa Mexicana for DH's birthday, although we almost postponed it when we found it so hard to drag ourselves off the beach to pack up and leave NH, given the perfect weather. We do appreciate that DS2 lives near the new Seaport area of Boston since it gives us a great destination for eating out with him. We ate outside where the mild temp felt like being in San Diego.....enjoyed their signature guacamole as well as an appetizer of chicken flautas. I had an entree of marinated shrimp on mexican rice surrounded by a lovely fresh "salsa" ( I know it has a different name which I forget), and typical black beans. It was really delicious. I took a photo of it since the colors and plate arrangement were so beautiful! You may see it some day! On the way home stopped at Swizzle for some frozen yogurt and had a small dish of red velvet....yummmm!
Very full and very tired....nite all..... -
I had a boneless pork loin in the fridge for the last 3 days but been to hot to turn the oven on so after reading Apples suggestion on the soy sauce and garlic I decided to make pchops out of the loin, I first browned them a minute or so then added soy sauce, garlic and ginger (didn't have miso) and cooked them about another few minutes on each side. But I gotta tell you they were fabulous I really liked them alot!
Ut ohh Moon did you do that? Seems I remember something about someone losing keys on here must of been you? ha!
Lacey- Happy birthday to your DH! glad you had a great time.
Michelle- I had both bottles sitting there and was not paying attention I would never put a different solution in a different bottle lol!
Your waldorf salad sounds really yummy and will have to try the apple brandy on chops next time yumm!
I am glad your getting the ball rolling on the trail hope the timing all works out so you can enjoy your fabulous trip to Hawaii. Hope your DGS feels better.
-
Lacey- Your dinner sounds wonderful Happy Birthday to your DH!
Debbie- LOL! The clothes mishap is something I would do ;P
Michelle- Yay on getting going on the trial! Hope your DGS feels better and you have a great day today. Sounds like fun! It also sounds like he has the same thing my boys had. Both tested negative for strep, had sore throats and a fever and they both got rashes at the end just as it was going away. It was weird.
Thanks to everyone for the pork chop ideas! I am going to try to grill them this week I think. Today I have to go grocery shopping and down to my dads garden to pick veggies. Yesterday, DS #1 mastered riding a bike with out training wheels! It was a big day for him:) I am thinking our afternoon is going to be filled with bike riding!
Have a great day everyone!
-
Debbie, Maybe you could make the shirts "disappear". lol
-
Debbie I think a shopping trip is in your future...I remember the day I washed all of my sons white t-shirts that had his college logo on them with a new red shirt (my DH has a habit of throwing his shirts in the washing machine when he comes in from work, because it is downstairs, and he doesnt want to walk upstairs to where the hamper is) Soo my son had some really nice pink shirts. Really sad since I could not replace them, he had to start a new collection when he got back to school.
Dinner out last night with friends, celebrating my girlfriends b-day. Had cajun haddock, cucumber, tomato salad and coleslaw, very light and summery...but then of course had cake!
