Ambrosia is easy and refrigerated:
20 oz can pineapple tidbits, drained
11 oz can/jar of mandarin oranges, drained
1 cup mini marshmellows
1 cup flaked coconut
1 cup maraschino cherries, drained
12 oz of vanilla yogurt (2 small containers)
OPTIONAL: 1/2 cup chopped pecans
Mix all together with a rubber spatula. refrigerate and enjoy.

How about that lemon silk pie recipe that you make with the frozen lemonade and cool whip. I hate cool whip myself, but it is actually really good and easy and takes half the time of choc silk pie and the lemon is very nice for summer.

1 large-size store bought graham cracker pie crust (or you can make your own)
1 (14 ounce) can sweetened condensed milk, chilled
1 (12 ounce) container Cool Whip, thawed
1 (6 fluid ounce) can frozen lemonade concentrate, keep frozen
1 teaspoon candied lemon peel for garnish (optional) ( I would use regular lemon peel and roll in sugar since I don't like that candied stuff)Directions:
In a medium bowl, add chilled sweetened condensed milk and Cool Whip and fold gently. Add frozen lemonade and continue to gently fold. Do not let the mixture become soupy.
Pour mixture into the pie crust and freeze for several hours or overnight.
Garnish with candied lemon peel, if desired.
Makes 8 servings

That lemon pie does sound good! When I was about 12-14, my 4 brothers and many cousins got married and I went to oodles of wedding showers. Pretty much all of them had ambrosia in one form or another and I couldn't stand to look at for years! I think enough time has passed that I might put one together. Our version included cool whip to make it stand up, but I really like the idea of vanilla yogurt instead - way less guilt-infused!

My Gran was the ambosia maker for our family. Since she's passed I have contributed it a couple times to family dinners, etc. I think I might give the vanilla yogurt a whirl also (ooo-maybe FROZEN vanilla yogurt!)

it CAN be served cool; i love love old fashioned tapioca pudding, and love it warm from the pan. just as good almost the next day from the fridge........3jays

Oooh, frozen vanilla yogurt! And 3jays, I also love tapioca. Good suggestions, gals. I may have to do more than one. For ambrosia, I HATE the marachino cherries so will substitute fresh bing cherries. Also HATE marshmallows. Any ideas on what to put in for that?

Barb you could use crumbled meringue in place of the marshmallow.

BarbA - My DD#2 got me hooked on Froaen Yogurt when we went to see her earlier this month. That is the only way I will eat yogurt! I think I may have to go by Sweet CiCis on my way to Sanford and get some. Today is a fun day but I promise I will try really hard not to get too tired and be home in time to take my afternoon nap. Enjoy you cool dessert, which ever one you choose.

Instead of marshmellows, you could add a bit more chopped pecans.

I never put marshmallows in mine, just fruit (I use lots of fruit-pineapple, grapes, oranges, small chunks of apple, kiwi, etc), coconut & cool whip (soon to be replaced with fro-yo)

So since I am off the dairy, I could substitute So Decadent coconut milk ice cream. Oh boy, what a great idea!

Okay, I'm sold on those, too - haven't had an ice cream sandwich in years! It is just so hot I don't think I can take it anymore without some kind of frozen dessert. It has been too hot for too long around here.

i'm sooo going to try to make the tapioca now, ya sold me on it... ambrosia, too, i don't mid the marshmallows... the only thing i like from Whoe foods is their carrot cake! its yummy..sorry Barb, don't like coconut.
i left a health update on the older w. more sense thread... longgg stroy, but my GP APOLOGIZED for being so mean last time, and started me on synthyrod. its hypo, not hyper explains everything. added to it with adrenal exhasrion. no wonder i feel like something the dog left behind.. please pray it kicks in soon, and im not allergic to it!!! 3jays

My mother used to cook tapioca but I have absolutely no luck with it must try again. Barbara love to hear about your dessert.
It is really cold (well for here) even have a thermal on today. Dinner is cooking and waiting for DH to come home but he will be late as he is visiting a friend who is waiting for by quintuple pass surgery. He didn't realise the tightening in his chest was a problem, eventually went to the doc and was put into hospital.

It is so hot here too. When we went to OK to visit my daughter she got me hooked on soft serve frozen yogurt. I have finally found 3 places here in Raleigh that serve it.

Brigadoonbenson - Wish you could send some of that cool weather done here. Owasso, OK (just outside of Tulsa) I lived in Lawton, OK for 23 yrs before moving to Raleigh. I drive though Henderson everytime we head toward Richmond, VA to see friends.

thanks, ALLYSON; i brow beat the onco into writing for the ultrasound today, also. told her GP: her, or the other drs. should've picked it up bf i was so sick...so she wrote for it...wait till you guys hear this: "so, i suppose if its' cancer, I'll have to be the one to tell you"WT****!!!! so, i said to her, you gotta out of it the 1st time, so maybe you will again...i love her, i really do, but thats' just p;ain stupid...and ya know ..."there's no cure for stupid!" she told me it could take up to 3 mos for me to feel better; but , ive had friends that started feeling better in wks...as long as its in the next few mos; i'm good!!!.....3jays
