Kay, it takes me FOREVER to shop now.  I have to stop and read every darn label.  I can't wait until this is all "second nature" and my pantry has transitioned all the way over to good stuff.  My soup came out good, and I allowed myself a slice of sourdough with it as well as a square of dark chocolate.  I feel like a glutton!

Tomorrow I am going to try to make a nice mustard sauce to have on organic chicken, with a giant salad.  Anyone have a good recipe?

Sagina, I have been trying to stick to roughly 120g of carbs a day, in the hope of keeping my blood sugar low and stable. It does mean cutting out juice, sugar, sweets, potatoes, white rice, white bread etc, but I find it pretty doable. Yesterday my zap-doc asked about my appetite, because she thought I had lost weight. When I got home, I weighed myself, and she was right, I had lost 6 pounds.

    SAB,

A mustard sauce is dairy based, and thickened w\flour. If your not apposed to this.................................

make a roux.....1 Tbsp of butter or oliveoil and 1 Tbsp flour wisked at a low heat for 2-3 min.

add 1 cup milk and wisk at med heat til thick. (whatever milk you use)

add salt? pepper, dash nutmeg(opt), onion pdr, garlic pdr, Mustard to taste (your favorite) and wisk over med heat  for 5 minutes.                   OR

Just add a strong mustard to fav dipping sauce. Salad dressing(creamy) yogurt, gravy, etc.

    Hope this works for you............................M

SAB:  same here!  shopping can be a grueling experience now especially on the weekends when it seems the whole world is in the store.  Also, our food bills are so high now (usually over 200 dollars a week for 3 people) but we are hoping it will be well worth it to keep us healthy for the long haul.  I spend the most time in the produce and organic sections of the store, very little time in the regular aisles, and zero time in the meat department :)

Thanks for the weight loss compliments but I will admit the battle never ends and the weight always wants to come back.  A very smart Chinese Doctor I had gave me good points.  He said we Americans have obesity problems because we want it all.  French eat high fat low carb and they are mostly thin.  Chinese eat high carb and low fat, moderate protien and most are thin.  He said the problem is high fat combined with high carb.  It has to be one way or the other for a balanced diet.  Doing Atkins I did enjoy high fat and high protien with very low carbs and I did lose weight.  Now I am much higher in carb so I am watching my fats.  Still learning this new stuff and have neither lost or gained, having gained 4 and lost 4.  lol

My good choices yesterday was flaxseed muffins (oh are they good, both sugar and flour free), meatless chili, stir fry veggie and coconut chicken (leftover) with whole grain brown rice.  Better choices still would be all organic.  The closest organic store here is over an hour away so next week is field trip day.  :)

    good morning girls,

well,  I tried my oatmeal with the choco protien powder today. Like pudding..... not quite but delicious. added cinnamon, a few raspberiris, and a bit of pure maple syrup, and next time i'll make it thinner to absorb the pro.pdr.,

Lunch, my favorite. Ripe avacado on sprouted w.w. toast w crushed fresh garlic, chopped cilantro, lemon juice, salt, Lots of pepper, tumeric, cumin, let & tom. followed by Curcumin. Reserve some of the cilantro to batte the garlic breath.

Dinner, stewed eggplant (skin on) zucchini, onions and tomaoes over whole grain rice. My moms recip.

Yum, sounds like a nice dinner Chef.  Im going to try the mustard sauce with an alternative flour, and figure out what to substitute for the milk...I wonder if an almond milk will have the same properties.  Time to put my mad scientist skills to work!  Muahaha...

    SAB

    - Oatmilk(Oatly) is the biggest subsitute for cows milk over here in Scandinavia and it is fine for cooking.

I have tried cooking with rice milk and it turned out ok even though it is not as thick as milk. Almond milk is pricy and has a very distinct taste(which I love). If you want to have a really interesting sauce try corn flour mixed with spelt flour or buckwheat. Or if you really want to go out there there is hazel nut flour :) And soy flour of course in case you eat soy.

Chef - I'll have some of that dinner to please.

My food choice today was dark whole wheat bread with vegan paste, turnip/potatoe/lime soup and kale/fresh cauli salad with roasted pumkin/sunflower seeds.

My first Radiation went fine :)

    Chef, does sound delicious!

Had my oatmeal with blueberries, peanut butter, chia seeds and soy milk for breakfast.  Lunch was a black bean and jasmine rice whole grain wrap with tomatoes, avocado, and baby spinach.

Dinner will be shrimp and tofu pad thai (I've never made it so hope it turns out!)

I had flax muffins for breakfast (homemade, sugar and flour free), a small turkey burger with cheese in a low carb tortilla wrap (not so good for BC, sigh), and dinner was a small fillet of sole with crab stuffing, homemade organic sweet tator fries (my fav) and kale chips.  I'm working on it...

Went out to a high falluting restaurant for dinner last night. It was a priced fix three course dinner. DH and I ordered different things and shared everything, so I really didn't eat as much as it sounds like. Had pickled beets and carrot and goat cheese salad, mushroom ragou, local capon breast, crispy skin striped bass, mashed turnips, some kind of greens, cheese cake with graham cracker crust and orange sherbert topping and white chocolate and pecan bar, and spiced apple cake with cinnamon gelato. Left about a third of the dessert and really don't think the portions were large, so I think it was a good food choice night. And it was truly delicious, enjoyed every bite, so I wasn't just shoveling food in.

Will try to be very sensible today. Off to a good start, high protein, strawberry fat free Greek yogurt for breakfast.

Kay, you made me drool on my keyboard :-)

Well, having the attention span of a squirrel, did not follow through with mustard sauce yet.  Instead stumbled upon recipe for black bean "burgers" and made some with oven "fried" sweet potatoes and a big salad for dinner last night.

Yes for Yams! I have been making quite a lot of soups recently, simple carrot onion winter veg stuff not rocket science and freezing it in portions. I think portion control is an important bit of weight control - even the best food can be too much if we are not moderate, and if i like it and it's in the pan i'm at risk of heading back for more!

So my current situation is that having had a New Year date-check and stock rotation (how i miss being at work - (NOT!) i realise I have a lot of various flours. lurking at the back of the cupboard. Wholemeal, selfraining and plain, pounded yam, Gram flour which I discovered is pulverised chickpea-dahl. OMG what am I ever going to do with all this?! The reason it's lurking at the back is it's not quick and easy to use and I confess I am lazy. I get hungry suddenly, (or finish an engrossing activity and realise i'm starving) I don't plan my eating far ahead and I raid whatever's available. Baaaaaad I know.

Then I remembered that last year Leah posted a recipe for yummy onion and egg things like momma used to make, the name escapes me but a bit like pancakes. Lathkjes. See I can't spell either.

Anway I found this old wartime recipe for Potato Scones: very simple:

    225g mashed potato

    225g flour

    2.5ml baking powder

    pinch of salt

    splash of milk

    15ml dripping

The idea is you mix everything together except the dripping which is only used to grease the pan. I don't do dripping (meat fat - lard - ewwww) so I ignored that and lubricated the pan with low-cal spray. Mix should be like a fairy cake mix consistency as its going to get plopped onto a shallow frying pan about 20ml at a time. Very similar to dropscones/thick pancakes. The pre-war recipe would have used all flour, but much of that was imported to the UK so using potatos took pressure off the shipping.

I replaced the mashed potato with yam. My sister in law told me that, anything you can do with a potato you can use a yam instead often in half the time, and it's a more interesting colour.

She was right. It was really nice once i got the heat pan right!

Anyhow the recipe as above made enough for a squadron, so i froze the rest of the mix in three batches as ready-to-use batter. That's me ready for pancake day! Did this last year with Leah's Lathkje batter and it worked fine. They are really nice with a dip like humous and of course then you have root and seed together, all veggie, so i think it's really quite healthy. Very filling!! I might add some cheese next time. Ooh and I have apple sauce to use up too, that would go well.

    OH ladies,

I've been bad. Had no good food choices and now I'm beating myself up. My friend bought a cake over and I kept it. Yes I ate 1/3 of it. My blood sugar soared.

As the "SOUP NATZI' says "no soup for you!"

I'm having a dinner party tommarow night for the girls

Prime Rib w/aujus  Not for me.

Salmon w a  pistachio crust(never made it so if you have a recipe I'll try it)

    sauteed Broccoli Rabe (yum)

the rest of the menu to follow

I know that one of the girls bakes the most heavenly cupcakes and I will resist.

    hymil,

Maybe I'll try the potato scone. they sound nice with the yam.I need to brush up on the metric conversion.

Reporting in on my science experiment.  I wanted everyone in the house to be able to eat a mustard sauce, so instead of milk or cream I made it with a base of veggie broth and dijon, added agave and a bit of rice wine vinegar, seasoned it with fresh tarragon and thickened it with a bit of whole wheat flour in water. Serving it with salmon/chicken/quorn cutlets (my family is such a pain) with sides of wild rice, roasted asparagus over bed of greens and topped off with a dessert of sauteed spiced apples and pears, sweetened with stevia and topped with slivered almonds.

hymil, do you think you could bake that scone dish?  I have sweet potatoes in my pantry right now...

    Hear hear!  Yeah for Yams!

I roasted them simply with EVOO, s/p and they were delish.  I have been eating the leftovers right out of the fridge. They are good cold too.

Today I had veggie stir fry with brown rice and a large cup of green tea.  Tonight I will be having leftover chicken and artichokes.  I made this last night for the kids--roasted artichokes with EVOO, s/p and roasted organic chick thighs with a bit of tumeric.  The kids hated it and wouldn't eat any of it.  So I think I will be having this for a few days.

That chicken and artichoke sounds great Corrine, and fairly kid friendly, but you just never know with kids, do you?

Tonight I'm going to try a new recipe for butternut squash soup.  Too much time on my hands!

does anyone have any advice on brands of green tea?

i read in the anti-cancer book that japanese brands are superior to chinese, however with the radiation exposure in japan, i'm hesitant to buy japanese green tea as well.

    any thoughts?

    SAB--

can you post your butternut squash soup recipe?  I just picked up a can of organic butternut squash soup with the intention of making it tomorrow for lunch.  I was just going to follow the recipe on the back of the can.  But would love to see how you were going to do it.  It calls for organic half and half, but I was looking for something a little healthier that adding in all of this half n half.

I have been drinking all sorts and kinds of green tea.  Tazo, Trader Joes brand, Lipton, etc.  I do have some really strong loose leaf Chinese green tea that my sister brought back from China in June.  I don't have any thoughts one way or another on the Japanese import, I just make sure to drink 3 cups daily.

DH has become the Roasted Veggie Master. This - from a solid "meat and potatoes" man - is surprising. He buys up whatever is in season, chops it up, adds a tiny bit of EVOO, some pepper and garlic powder, and roasts them til they caramelize in the oven. WOW! Sure is good!

My new favorite breakfast smoothie: 1/2 cup frozen blueberries, 1/2 cup water (no more soy milk for me), 1 small tub Trader Joe's Organic Greek Style Yogurt (any flavor), 1/2 banana, and 1 scoop Trader Joe's Organic Whey Protein Powder (vanilla). Put everything in a blender and whizz away. Yummy, sweet, and filling!

Corrine, my best intentions went awry today because I convinced myself I needed some new work out pants and spent the day out lollygagging around.  I will definitely report in after the Butternut Squash attempt...I promise no dairy.

Hi everyone, been so busy lately....

Chef, can you give me the brand name of vegan protein powder low in sugar? please....

I tried a fish called drum....didn't like it, seemed oily, or the texture was weird. I think I'll stick with talapia, salmon, and tuna (canned or steak).  I haven't tried swordfish, but at $23 a pound, I don't think I need to!l lol

For lunch I went out with a friend - Veggie burger, whole wheat bun, with Marsala onion sauce....was pretty good.  Had a side salad instead of fries.

I bought a bottle of organic wine - I seem to be having a heat up reaction from lots of stuff including a SIP of wine - and I mean a sip that was being sampled at a grocery store.  Maybe the sulfites?? Anybody have any info?

Corrine- Do you get your Ezekiel bread online? I can't find it locally. I ordered a loaf online to try it and I like it, but it was about $10 a loaf with the shipping. If you get it online, is it cheaper and, if so, could you pass the website along to me. Thank so much.

    Hi girls,

Had a dinner party last night. Lots of fun but the food? It's amazing to see what my diet used to be. I made salmon dish and a prime rib. All the others brought the sides and apps. They attacked the meat with gusto.I refrained. The salmon w pistachio was delish.

The girls brought, various cheeses and cheese spreads as apps.BAD. Olives, GOOD. White mashed potatoes, BAD, grilled cauliflower and some broccoli rabe, DELISH.Spinach casserol with mushrooms ann MORE cheese. This is what my diet used to be like. VERY BAD. OH, and dessert. homemade gourmet cupcake and homemade cookiies.WOW, yes I had a little.

My point is, this is the typical american diet. I am so happy I no longer indulge in this shit. I was'nt even tempted.(except for the sugar) You are doing a real service to your health and weight by making changes to healthy diet. Be proud. I am. Next time we have a dinner party I'll do my friends a favor and decide on the menu and keep it healthy. Well 90% of it.

    sagina,

It is "SUNWARRIOR' raw vegan protein. It does have stevia and is made with bio-fermented raw sproute whole grain brown rice protein and is gluten free. Has a creamy texture and delicious.I think he gets it online...I'll get the site for you when I speak w him.

    ENJOY YOUR GOOD FOOD CHOICES................
