I had to do something fast with stuff around the house...because I didn't feel like going to the store.
I cooked chicken in the dutch oven with pepper, rosemary, cilantro, and chives for seasoning. I shredded the chicken, and added it, along with tomato sauce and shredded cheese to hot spaghetti.
A salad rounded out the quick meal.
Nothing was left over...so either they were hungry or it tasted OK.

Eric - are you really a man? you do a fantastic job. my husband would be fixing Ramen noodles every nite. I am so glad my kiddies are learning to cook. I will not die a hungry womqn.
Tonite, I have a parish fund raiser to attend.. an auction. They are a lot of fun and you get to walk away with something plus have dinner and drinks. I have a FLAX shift, a woven loose dress of neutral colors and I'll wear a black ruffled shirt underneath (that actually looks great) and will keep me warm. I am always freezing. my question is about shoes.. I suppose I can just take an extra pair with me so I have an option.
I'll wear this shift, this dress over thick grey tights, cowboy boots and on top of all that, a fake fur vest that is very warm and comfy. We bought our dog at the auction 7 years ago. I'm thinking it's time to stock up on dogs.
Any way I bought a gorgeous, gorgeous pair of Anyi Lu flats, brand new, at this really cool thrift store that we have right in teh neighborhood. The re sale clothes that don't sell out it in a season from Nordstrom's Talbots, J Jill, Eddie Bauer, Brook brother's. They sneak used clothing in the middle of these department story clothes. I bought a Talbot's cashmere sweater for $1.99. Anyi Lu shoes I do have an eye for this type of thing and feel really lucky that i can just walk to this store - up the hill and around teh corner. So I am going to take this gorgeous pair of Anyi Lu's in my ancient Louis Vuitton book bag, (which i traded for a painting) in case my feet start hurting in the cowboy boots. The cowboy boots actually look better but I will be doing a lot of looking and walking around, and the boots are a bit high.
I am teaching my daughter to be a real clothes-horse snob. She knows all the better brands and jealously guards her money and only shops on discount days. She whines when i find all the cashmere sweaters. Shoot, she can have them all anyway, one day. she can have them now... i don't really care. -
Apple: Glad you were able to find some good bargains. I don't shop unless I can buy on sale and then use my discount coupons as well! I never shop labels unless the price just happens to be right! Enjoy your finds!
My DD used to raid my closet when she lived at home...always taking something that I wanted to wear that day...now I raid hers...LOL!

I spoke to my son last night. He is in grad school in Minnesota. His best friend from college lived in Brooklyn and was killed in hurricane sandy. She and a friend were walking her dog. A tree was knocked down and both were killed. She was 24 years old. Please keep her family and friends in your prayers. I am just in shock.

This morning I watched Martha Steward make hollandaise sauce, beure blanc, bechamel, and tomato sauce with beautiful fresh tomatoes from her garden. She made all four look very easy to make. She was wearing a big loose shirt and I couldn't tell whether she's a little chubby from eating these wonderful sauces!
I'm about to go walk in the fog. Wondering what color I should wear to be visible to any cars on my street on a Saturday morning.

Kay Such a sad story...so many lives lost that we are not aware of. Prayers for everyone dealing with this tragedy.
We watched the fundraiser concert on TV last night with our friends that have a home in NJ and she has not had Tv for this entire time, and she just broke down and started crying when she saw it all. They also have a home in PA where they stayed during the storm and are now up here staying on their boat for the weekend. They have let a family stay in their NJ home, because that family lost their home totally.
Apple Now that is my kind of store! Love to find the bargains also. I dropped two bags of clothes at the salvation army store yesterday and in the essence of time restrained myself from going in to shop. Love that you have cowboy boots...they are so "in" right now.
So tonight we decided to have an italian fiasco to serve to our friends from NJ so that they can have a hot home-cooked meal before heading back. Everyone will bring a sauce, and then we will do up some pasta and have salad and garlic bread.

Eric - Don't know how much "cheap" motels are these days, Motel 6, etc. Would it be worth it 1-2 nites a week? I pass a place on the way from TX to OK called something like "a bed and a bath". I drive 38 miles into work though some is limited access, some freeway, lots of city streets. The DFW metroplex highway system is under constant renovation or paving. Gas business ruining paving (the water trucks needed for the extraction process). The 820 loop across north FW needed widening 30 years ago and they are just getting it done. The burbs N of FW were starting to boom then. The only freeway N/S thru midtown is a disaster though I will admit I have used it a few times but midday certainly not rush hour.
Reading down the page the chicken dish sounds wonderful. Chicken spaghetti without the cheese/cream cheese. I have leftover spaghetti from last night, plain. I think I'll make Chicken Alfredo though it's somebody's bottled "lite" sauce. I know it has onions (LOVE!) and mushrooms (have but DH doesn't like). Anything else to dress up a bottled sauce? Have Parmesan and I think a bit of hard Spanish cheese.
Apple - There's nothing to beat a great resale shop. Wishing you good shopping at the auction.
Kay - I'm so sorry to hear about your son's friend.

Oh Kay, I'm so sorry to learn about the tragic death your DS's friend. So very sad....Keeping your son, her family and friends in my heart.
Eric hoping that you can find some short cuts to that trip! Your "quick meal" sounded pretty good to me. No wonder it was gone!
Apple, you remind me of my sister who is a great Salvation Army designer shopper. It is a true art!
Last evening we went to a friend's church where they were having their annual bazaar, and dinner with great Middle Eastern food. We walked by a very cool old spring mounted rocking horse which we were tempted to buy for DS when he visits, until we realized that we really do not need anything that takes up that much real estate in our house. I'm sure we can find him something smaller to "ride". There is also probably some reason that such old fashioned toys that all of our kids had are not safe now!!
Celebrating our 39th anniversary today, and heading into a nice restaurant in Harvard Square (where we were married) for a special dinner. The weather is much the same as it was on that "fateful" day, which included an air cargo crash at Logan, making it hard for some guests and the officiant to make fly in. Didn't know if he would be there until I walked down the aisle, and he said, "Glad to see that you also made it" (there was construction going on all over the square, so I was running over dirt piles in my wedding dress). All's well that ends well..... -
Hi all! Long time no see! I went to my vaccine trial but we took my in-laws to Washington D.C. so my FIL could see the WWII Memorial. Had a great time - ate and drank wayyy too much. After coming home had a fun Halloween and made these cookies with DD - they are like peanut butter blossoms. She works one day a week at Clearwater Aquarium - where the dolphin Winter is, the one with no tail from the movie A Dolphin Tale. We made these for her to take since she was there on Halloween, but she was sad because everyone pulled the legs off since they were licorice!

So did I mention that DH and I are going to Las Vegas the Friday after Thanksgiving? We will go on a hot air balloon ride and scatter my mom's ashes on Mt. Charleston overlooking Las Vegas. Mom loved Vegas and it will be a fitting place for her.

I took someone from this board to the Weathervane several years ago. They flew into Manchester and wanted fish by the ocean. Well, this just had to suffice. I believe she loved it.
My husband ate a huge amount of pizza for lunch so HE wants a light supper. I ate less than half the amount he did and I want something a bit more. So I am making an Asian noodle soup with chicken broth, and adding some small pork meatballs. I don't have any water chestnuts for crunch so I might substitute a bit of green onion. Any bets of whether or not he wants some of the meatballs? We try to have homemade soup [brothy kind] at least twice a week. Must be working, lost another 2 lbs since my last treatment day.

I found some Jasmine rice....and I have a bunch of chicken......and some onions...and some cilantro that needs to be used up.
I learned "don't have money or possibly energy to go food shopping" cooking in college and it's been farther developed with Sharon. Now, it's an energy issue instead of a money issue.
Apple, you've had me laughing most of the day. Just so everyone knows, the last time I looked at my birth certificate, it said "male" in one of the boxes.
Try to enjoy the 'Vegas trip, Michelle. Those kind of trips can be bitter sweet. My last trip like that was May 26, 1984 to Rocky Point, Mexico. I'd rather not do another one any time soon.
Kay.... Is your son doing OK? That's got to be quite a shock for him.

I'm curious about those spider cookies. I can see how they are put together except for the eyes. What are the eyes made from?

I got the ideas from a bag of rice, my idea of "fried rice" with chicken and the suggestion on a bottle of rice vinegar about it and oil adding flavor to rice dishes...... The vinegar bottle even had a helpful "use this much vinegar and oil with this much rice" charts. They didn't say what kind of oil to use, so I used olive oil. Sesame or peanut oil might do well, but I didn't have any.
I chopped a large onion as finely as I could and sauteed it in a couple of tablespoons of oil until the onion was soft. To that, I then added 2 cups of chicken broth, 1 cup of water and a 1/2 teaspoon of salt (I made up for the low sodium broth), some sugar (a teaspoon or so) and 2 cups of jasmine rice. I cooked this for 15 minutes.
I had dissolved a teaspoon of salt into1/2 cup of rice vinegar and a couple tablespoons of oil...to this I added the rice/onion mixture, 5 pieces of cooked shredded boneless skinless breasts and some chopped cilantro...and mixed it all together.
Like I hoped, it made a huge bowl worth of food....lunch left overs.... -
We had a half-lovely meal at Rialto in Cambridge. I felt so-so about
the antipasti appetizer since it was full of salty meats next to the lovely fresh fig.(DH's problem for choosing it for me), and the obviously homemade ricotta on the plate was less special than I'd expected. I keep thinking that I want to make my own ricotta (i'll bet you do Susan) but if it tastes like that I will pass on making the effort. My salad was less than exciting with packaged mixed greens as far as I could tell, which I would not have expected. The duck I had looked ominous with its very black crust....worried it would all taste burnt....but underneath was a wonderful slow cooked duck that was tender, tasty and plentiful (for which DH was thrilled, since he had a smaller, tho succulent whole fish selection). Overall, it was a nice experience to celebrate our anniversary. Thanks for your well wishes!
Michelle, I love your plan for your mother's ashes. Sounds like she would be so pleased, and your hot air balloon ride will feel spiritual. Glad you and Joyce got to get together while she is home.

I have never eaten at Rialto but have heard that it is a lovely room with somewhat inconsistent food. Sounds like your meal! Yes, I make my own ricotta. Why? Because I can decide at 6 that I want some ricotta, and by 6:30 it is ready and I can just make a little bit. [Assuming I have milk of course.] It is the easiest cheese to make at home. It should have a nice flavor, but it really needs some salt to bring that flavor out.

eric - the eyes are little candy eyes that you can purchase, I got them at Target. However, we ran out and still had a dozen or so cookies without eyes. I ended up using white chocolate chips and making the eyeball with a little dark chocolate and a toothpick that we had been using for the glue to attach the candy eyes and licorice legs. The most labor intensive part was unwrapping all the Reese's cups!

For those who missed an earlier post, we celebrated our 39th anniversary.
I think I will try to make my own ricotta, Susan. The recipes I have make it sound as easy as you describe. I have mixed feelings about Rialto's atmosphere. It is in a very busy hotel, and last night we literally had to push through crowds of people (members of a huge gala being held at the hotel) to enter the restaurant which is a series of small and larger sized rooms divided by glass walls with sheer curtains. The upholstered seating is very comfy.
Carrie, I think you should feel really good about making hollandaise sauce! Not the easiest sauce to get right. Your pasta party sounded great, and I'll bet your NJ friends were so appreciative of your nurturance. -

The only special item you need is some muslin for the draining, though probably two layers of cheesecloth would suffice. I like making my ricotta with either lemon juice or apple cider vinegar. Al Capone, yes really that is his name, taught me a "restaurant" trick which I use when company is coming. AFter the ricotta is drained, add about 2-3 tablespoons of heavy cream and whisk it in. Especially nice if you are using the ricotta for a dessert.
Thirty-nine years is very impressive. Congratulations!

I made some delicious pumpkin pancakes for breakfast with sausage patties and a cheese omlet so good.
1-1/2 cups of milk- 1 cup of pumpkin puree- 1 egg (2 if you like them fluffier) 2 tbl veg oil- 2 tbl of vinegar and tea vanilla- 2 cups of flour- 3 tbl brown sugar- 2 tea baking powder- 1 tea baking soda- 1 tea ground allspice- 1 tbl ground cinammon- 1/2 tea ground ginger- 1/2 tea salt- 1/2 tea ground nutmeg-= In bowl mix milk, pumpkin, egg, vanilla and vinegar combine. In another bowl mix flour, brown sugar, baking soda, baking powder, allspice, cinammon, ginger, nutmeg and salt mix then stir into the pumpkin mixture just until combined- Heat a lightly oiled griddle over med-high heat. Pour 1/4 cup of batter spread out slightly with back of spoon.
I have made these useing the above ingredients and they are delicious, but for simplicity today I used about 2 cups of Krustez pancake mix ( or use any one you like) adding all the same wet ingredients and the spices i used today were pumpkin spice seasoning, cinammon and nutmeg. If you use a pancake mix you can leave out the b soda and b powder. Dh really loved these too.

Lacey happy anniversary! 39 years is a wonderful accomplishment. We are working on 33 but truly, it has seemed like no time at all.
Susan, you are my idol. I would love to make ricotta. So many times a recipe calls for whole milk ricotta and in my little town, it can't be found.
Lots of good cooking going on on this board. I get hungry just reading about it. I'm calling yesterday Adventures in Hand Pies. I found a store that carries tart red cherries (frozen) which for some inexplicable reason is impossible to find in our area. I've been wanting to try cherry hand pies so I used my regular pie crust, one of which I already had frozen. Big disappointment. The filling was wonderful, but the crust is an all butter pastry crust and the result was too greasy. I will have to try a different crust with less fat. I'd say it was a waste of good filling, but I'm sure DH will finish them off anyway lol. It seems to be a weekend for kitchen misadventures, because I put some tomatoes in the oven to roast and forgot about them. Ugh. Crispy critters! Fortunately, I have about two dozen more ripening in the window sills so I'll get another chance. This time I think I'll set the timer.
My DSIL gave me a recipe for a bread using the sour dough starter that you can keep in the refrigerator and use at will within a week. It makes about 3 good sized round loaves. I made cinnamon rolls with it today and I will be making some parker house type rolls to go with the braised short ribs that are cooking away at the moment. I'll use the last of it to make a loaf with caramelized onions, peppers roasted tomatoes and parmesan. My SIL made a similar loaf during our visit and it was wonderful. I'll have to use the roasted tomatoes I froze (see Crispy Critters above.) She gave me a humongous bag of green peppers from their garden though, so I've got the peppers covered. If this bread ends up as tasty as hers, this could become a very bad habit

Ricotta seems to be one of those cooking/science things like peanut brittle. Here is a link to Ina Garten's ricotta recipe. I watched that episode and it looked pretty easy and I would imagine it has to taste fresh, since it is!
