So...whats for dinner?

Hope your trip was safe and speedy, Joyce!
Carrie, I don't envy the commuting weeks ahead for your DD.....and will be understanding about those fewer buttons! Gee maybe your DD can wrangle a trip to Hong Kong herself while the city dries out!
Always a dilemma to decide whether to get Halloween candy that you like or do not like in case there are leftovers.....in my case there are few kinds I don't like.
DS2 ( who had his Halloween 32nd birthday yesterday) suggested that we start to give out FULL SIZE candy bars and we will get lots more kids once the word is out.Hmmmmm....Reminds me of the family who gave out candy apples in my childhood neighborhood....that was until the razor blade/apples issues surfaced!
Have a good evening all...... -
Tonight is my small dinner party. A friend is in Boston for a surgery tomorrow along with her partner. Now I could not let them sit in a hotel the night before surgery! So they are coming to dinner.
First course: butternut squash soup with goat cheese and chives
Second course: Julia Child's lamb stew over mashed potatoes, served with roasted vegetables.
Third course: Apple tart on puff pastry with hand whipped cream
We are serving a beautiful Cote du Rhone wine, and sparkling cider. Perhaps my friend will want a mocktail. She can't drink at all the night before surgery of course.
The lamb stew smell has just filled the house. I was already hungry, but that smell is making me ravinous!

Susan - your meal sounds delightful, I'm sure your friends will enjoy every bite!
Joyce - can't wait to see you!
Lacey - I remember candy apples and popcorn balls, so yummy!
-
I've never been to New Jersey, but I think of it as a very small state, a crowded suburb of NYC. It's amazing how many people vacationed on the Jersey shore and have fond memories of their experiences. A friend who has lived in NJ told me recently that DH and I should visit the state, that it has a lot to offer. Well, I guess we'll need to wait quite a while.
Dinner tonight will be catfish filet for me, panfried in a small amt. of EVOO and butter. Scallops for dh with a lemon butter sauce. Sauteed squash and tossed salad. The squash are really cute little veggies. Some of them elongated and others shaped like stars, all two-toned yellow and green. From the CSA.
Lacey, that sandwich concoction you described sounded good to me.
-
Oh yummy, Joyce!
-
Carrie- You must of been very busy during the storm selling all the supplies and probably will be for weeks to come thats great you can help people who need things like that. It does scare me to think some people will use the generators and not have proper ventilation just to stay warm.
Zumba- Congrats on finishing herceptin and port removal!!
Kaara- Lucky you, that you get to go sit in the sun by the pool that sounds so wonderful to me right now! I thought I would dodge eating candy too but during bingo last night they had baskets of candy on each table and not only did I eat too many I brought some home.Uggh!
Joyce- Wow! You can actually post while in the sky?? I did not know that. Have a safe flight!
Anyone have any idea's on cooking a pork steak? It's like a ham steak but its pork, now I know ham and pork are the same but this is pork not ham. I know this sounds confusing but if anyone who speaks my language and knows what Im talking about (lol) have any ideas?
-
Pork steaks are very popular in St. Louis. My BIL who grew up in St. Louis cooks the steaks on the grill. They're usually tender because they have a bit of fat.
Let us know how you cook it and how it turns out.
-
Carole- So if i just grill it on the stove it would be fine too? its thin so maybe about 10 minutes per side?
-
Carol, NJ is a small state, but very populated. It has the least amount of open land than any state in the union. The northern half is pretty much a suburb of NY, and the southern half a suburb of Phila. Several people I work with commute from NJ. And I grew up spending all my summers at the Jersey shore. I just love it down there. It's my favorite place. I am 49 and this is by far the worst the shore has ever been hit by a storm in my memory. But I guarantee you they will be up and ready for vacationers at the beginning of next summer. I'd bet my last dollar on it. Their season is so short, basically July and August. They have to make all their money in two months of the year. It just blows my mind.
Still not making anything for dinner. I am in such a funk. Just had a turkey sandwich again. My DD runs to dance class after school, my DH works late, and I just can't motivate myself to cook something. I have to get out of this funk. -
Kay, I get the funk...and had it myself today (forgiving myself for not cooking dinner for the first time in many weeks!). So when DH came home I suggested we could either have leftover kale soup or order a 5 dollar large cheese pizza from Comella's and I'd doctor it up with onions, peppers and mushrooms. We opted for the second choice and it was fine along with a fresh salad, and a J Lohr Merlot that I picked up at Trader's yesterday.
Have to say tho, Susan, I wish I were dining at your house tonight...right down to the Cote du Rhone! A lovely way to support your friend.....
Carole, NJ is an unusual state...definitely has to offset stereotypes. I grew up there (outside Philly)and defected to MA for grad school. It is called the Garden State for a reason...there is a lot of green there,( and wonderful produce!) but no one sees it when they travel down the NJ Turnpike, which is pretty unattractive.
The NJ shore area is fun, but also built up more now than when I enjoyed it. Long Beach Island was just developing then, and in recent years has been quite built up. I get a kick out of the LBI ovals on people's car bumpers. We used to drive down there on a Friday night and sleep in the dunes...sounds wilder than it was.People love the board walk atmosphere in many of the shore towns as I did growing up, but I have grown more accustomed to the more natural shore line of my adopted state. I recall my first drive to the Cape (think I have told you this before!), when my friends and I kept looking for a boardwalk, never finding it! I hope you are right, Kay, that the shore areas are ready for next summer....the devastation is terrible. We will probably want to visit there with our now NJ grandkids. DBIL paints a grim picture of his town near Asbury Park.
Carole, As to your concept of NJ being a suburb of NYC, my husband (who grew up in North Jersey) recalled the description of NJ as a "beer keg tapped on both ends....NYC in the north and Philly in the south". There are however, nice farmlands in the middle! And I have been surprised to see how pretty the hills of my DS2 and DDIL's New Jersey town are...almost like some New England towns.
-
Debbie, I've never cooked pork steak any way but on the grill, and I've cooked pork steak a lot. It's one of our favorite bbq meats. I'm sure you could broil it indoors as well, I just never have.
As a midwesterner, the first time I went to new Jersey, I was simply amazed at how lovely a state it is. I really had no idea.
Susan, that settles it, I'm definitely coming to your house for dinner :-) -
My pork steak was delicious I grilled it on my cast iron grill pan about 5 minutes per side then put it in a 350 oven for about 10 minutes it was perfect and tender. Also steamed some red potatoes, cabbage and yellow squash together. Yummm!
Kay- Sorry you have been in a funk lately. Sending you big hugs! I Hope you feel better soon.
Joyce- As much as I fly you would think I would know that! ;-))
Nancy- I think bq sauce on those would be delish too!
-
Zumba, congrats on finishing Herceptin.
Susan, dinner sounds delish.
Debbie, glad the pork steak worked out for you. I make them like pork chops too.
Lacey, sometimes you just gotta order out.
Joyce, glad you are on your way home and that you have electric when you get there.
Kay, hang in there love.
Carrie, keeping busy is good. Wish your daughter good luck going in.
KAARA, just FYI, it was a whole 32 degrees here last nite! LOL! Enjoy the sun.
Eric, three piecs was pretty good guessing, unless you gave the last couple of kids big handfuls! LOL
My dinner was leftover chili. Gotta freeze the rest So I don't get sick of it.
The thing I am wondering is, how will recovery from Sandy compare to recovery from Katrina? Did they learn anything helpful? Is the east coast better at organizing? Enquireing minds want to know.
Much love to all. Stay safe, warm and dry. -
Thank you for all the insight into NJ. I think a big difference between the recovery from Sandy and the recovery from Katrina will be the socio-economic status of the people effected. The 9th Ward of New Orleans, which was almost totally wiped out, was populated by people who didn't carry insurance and didn't have a lot of savings in the bank. Whereas Lakeview is a much nicer residential area populated by people of financial means. Lakeview has recovered and the 9th Ward has not. Money may not buy happiness but it certainly makes life easier.
Kay, I hope you cheer up! It's no fun being in a funk.
Debbie, glad the pork steak came out good.
I must hustle and get ready to go and play golf. Early tee time of 8:30. Next month I get the tee times!
-
Kay I really understand the funk. I think I am having a hard transitioning between summer and fall. so much going on too, trying to get plans all straight.
We are doing a girls trip to NYC at the end of Nov./Dec2 I hope they have things kinda straight before we go. got us tickets to see the Rockettes at Radio City Music Hall. Also braodway show "Wicked" We have been talking about this trip as a "Carrie is done with cancer treatment" trip for over a year....so hard to get everyones schedule to align. So excited! also have to go to Ohio in 2 weeks to help my son move into his newly built house, and to make sure he gets his pet turtle that has resided with us for the 4 years he was in college.
Last nights roasted pepper soup was so good. Started out with a can of crushed tomatos, half a brick of cream cheese cut up, and some milk and basil and blended in the blender till smooth, then heat...you can stop there for tomato soup but I like the flavor of the raosted red pepper soup that wegmans sells, so added some of that. Yum
-
Not dinner related, other than there may be more "fend for ourselves" nights..Sharon is starting work on Monday and will be n the classroom by the 14th.
She is feeling good enough that she took the full time position.
Now if I can figure out something regarding my 3 to 4 hours round trip commute time....things will be really good.
Eric -
Moon- I sure hope that this time around they were faster although on the news there is a lot of angry people because they feel like they are not getting the help faster than neededl. Some towns were happy about the swiftness others not so much. In one area they were saying it took the red cross 4 days to get there now that is ridiculous in my opinion.
Carole- Have a good golf day!
Carrie-Thats cute your DS still has a turtle and you have been taking care of it. ;-)) I hope NYC will be ready for you when you go im sure it will be by then. If you wanted to have a deep rich flavor for your roasted red pepper soup you could char a few red peppers in the oven and peel the outter layer (burnt part) and put it in a processor or blender and in with your soup you make it will be delicious.
Eric- I am glad to hear Sharron is feeling better and able to return to work. Since she is feeling better can you stay on some days near where you work for a few days out of the week? Im sure it would be hard to be away but the travel not to mention the gas has got to take its toll.
I too have been in a funk I agree some of it must be the weather change. But worrying about my DH and my dad does not help. I had a cat scan a week or so ago because I have been having problems breathing even just walking a few feet i have been out of breathe I thought my lung cancer had returned but thank god it had not but did show severe emphysema I told my dr i didn't know emphysema would show up on a cat scan he said if its severe it would. Makes me wonder how having lung surgery and a MX on same side they could see that through all the scar tissue. I was breathing great a year ago can't believe it got this bad in just a year though. I have to work on getting my lungs stronger so I won't have to be on oxygen all the time. But the good news is its Not cancer!!
-
Oh Debbie, many caring thoughts being sent your way. You have so much on your plate with everyone's health issues, and now dealing with emphysema. ((((HUGS))))
-
Debbie that stinks but like you said VERY thankful its not cancer. What is the treatment for emphysema these days? Is he suggesting a pulmonary workup to get you on the right track? I agree that its time you got a break, maybe another trip to hawaii. thanks for the red pepper idea, it would be good.
Did a little retail therapy this morning to help me get out of the funk, but it all balanced out cause I bought a new vacuum cleaner belt so that I can accomplish my wifely chores! Its all about balance!
-
I lived in NJ when my kids were small...my youngest was born there...we left when he was two and just learning to talk. He still has a Jersey accent...go figure! My memories of the Jersey Shore are having a place the size of a postage stamp to sit. To each his own. That said, I am so sorry for all of the devistation that has taken place...having lived through many hurricanes, I know the damage they can do and the chaos they can cause.
We just got back from lunch at a local Ale House....Maine lobster for $10.99...how could I refuse!
It's another beautiful day in S. Florida...I'm going out to sit on the porch and enjoy the beautiful weather!
-
(((Debbie)))
-
Debbie, you have WAY more than your share of stress. I'm so sorry about the emphesema. And lung cancer! Goodness, you've been through a lot. I won't be able to grumble around you!
The golf was really fun. The weather this time of year is ideal for being outside. It was in the 60's this morning and is warming up to 82 this afternoon. DH is out playing golf now. I have the rest of the afternoon to accomplish something. But...will I?
Tonight's dinner will be leftover lima beans and brown rice and a tossed salad. The problem with big pot dishes is that they last so long.
I'm following the hoopla over the New York Marathon. One of dh's cousins (female) will probably be running in it. She has run in the Boston and the New York and lots of other states, too. Her goal was to run a marathon in every state, but she's in her 50's now.
Tomorrow will be a WW challenge for me. We're driving to Ocean Springs, MS, for the Peter Anderson Arts and Crafts Festival and will be going to an open house at the home of a former co-worker of dh's. Lots of food including home-made cakes and such. It's so easy to engage in mindless eating in such situations.
-
Kaara - I've been to the Orlando Ale House and had cheap lobster when on a business trip a few years ago. Is that where it is?
-
Michelle: No...they're all over Florida...the one we go to is in Coral Springs (Ft. Lauderale area) You just can't beat their daily specials...can't eat at home that cheap...at least that's what I tell my BF!
-
Debbie: So happy to hear your breathing problems were not related to lung cancer. My boss had bad emphylsemia (sp?) and I just saw him last year after 10 years of retirement. He looked well and was still doing fine. Still smoking too, which is a no/no! I think you can live a healthy life with that condition if you take really good care of your lungs.
-
Oh Debbie, that is a lot to deal with. (((hugs)))
-
Debbie, ((((hugs))))). You are going thru so much, my thoughts are with you.
Carrie, we will be in NYC at the same time! I am going 12/1 and coming home 12/2. From what I heard, all the trains should be running again in a week and a half.
Going to a mass for my Mom tonight on All Souls' Day, so probably pizza for dinner. I want to go to Susan's house too though.
Eric, that's wonderful news about Sharon. Boy that's a long commute you have. -
The commute stinks..43 miles each way across town during rush hour. The work place is in a college town..and even the dumpy apartments are EXPENSIVE.
-
Tonight's dinner was a duplicate of last night's except I served the stew over polenta now. I will probably pass on the apple tart with whipped cream, but Mr. 02143 wouldn't allow a tart to go unloved. I suspect that it will gone by 9 tonight.
My commute is about 23 steps. Couldn't imagine sitting in a car for that long.
*susan*

My hairdresser had the herceptin tx too, now what is that for? The chemo she had also did something to the blood vessels in her hip, she had a total hip replacement yesterday. She was 42 when she was dx'd.
