So...whats for dinner?

Debbie, thanks for the update on your Dad...keeping him in my thoughts. Strong guy to go through all that! Very sad story about your friend. Life is precious and so fragile.....
Saw my surgeon for what I though might be my last follow-up today. Instead I learned that she really wants me to have an MRI next month (alternating with my mammos), since she feels I'm not old enough yet to just do the yearly mammo.
I decided to ask her if my plan to treat myself with cranberry/yogurt/water, and bean tea potion is realistic in my effort to avoid the anti-biotic, and she said it could work....not to worry if I felt a lot better. I'm usually not headstrong about doing my own thing but definitely the symptoms have abated, so yay!
Carrie, I totally share your fabric fetish...and also made my kids costumes years ago. Tho I think today I'd be tempted to buy them with the great selections you got at Old Navy, Laurie.
I try not to go into fabric stores since I can rarely come out without more to add to my large fabric collection. This week I cleared out a ton of clothes (hope I didn't already bore you with this) in my effort to create an uncluttered environment for next weekend's houseguests. I ended up donating 7 huge bags of good wearable items, and feel like it was the start of a necessary purge in our house. Unfortunately, my sewing room may just to have it's door closed next weekend since fabric overload prevails! During the clothes clear out, I came across some very very old long skirts I had made (and saved!) and was stunned at how thin I was once upon a time. Yikes! I took a picture of them so I could part with such memorabilia.
Chabba, you did well on the lean budget. I love your creative cooking. Your "customers" are so lucky to benefit from your talent and nurturance!
Carrie, have a great visit with your daughter! -
Awww Shucks
Thanks Lacey! They must have liked it. Almost every plate came back empty, except for those who didn't eat the skins. I though I had made enough chili beans for tomorrow too but enough of them had seconds that all that cook gets is a good soup base. But I made a big batch of bread pudding so he has almost half a pan of that.
-
Lacey- Your not boring at all,. love reading all your stories here. (and everyone else's too) 7 bags of clothes is a lot of clothes. I have trouble parting with my clothes what I don't wear I put in the other rooms closet. Have you ever noticed when you buy some new clothes you wonder what you wore before? LOL! Interesting that your surgeon said you weren't old enough to have just mamo's most Dr don't want to do a MRI. Sounds like you are in good hands that your surgeon wants to be cautious. I have been trying to get a MRI with my dr for a month or so and they keep dragging there feet. them and the insurance. ARGhh!
Chabba- I agree with Lacey you are so creative and have had some great recipes here.

Debbie, my high school drama coach once told me she knew I had a special creative talent my first year of Senior High when I was in her English class. She had never had a student who was such a creative speller. At the time we were commuting together to summer school. It just after my Freshman year and it was a special graduate class taught by a visiting professor from Yale. The head of the Drama Department had given me a waiver to take the class and I was the only under classman in the class.
I gave up theater when I married--for me it was too all consuming and would have interfered too much with home life. Since then my creative instincts have been devoted somewhat to crafts but mostly to cooking and baking--for 46 years. Enough time to learn a little bit. Have been a bit limited by my DH's somewhat limited adventurous instincts when it comes to things culinary.
-
Debbie, I sure hope your dad's chemo and rads makes him better. He has a strong will to live. About freezing the black beans, there was liquid in the crock pot. I measured two cups of beans into each ziploc bag with some of the liquid. There were three bags from a lbs of beans. This is an experiment. I'll let you know how successful it was when I use a bag of the beans. Here's hoping I remember the beans are in the freezer! I often "discover" items in my pantry!
Hello to everyone. Sending responses to your posts. I must get ready to drive to the club for my Friday golf.
-
Morning everyone!
Carole: It sounds like your new diet is working well for you.
Laurie: The kids in their costumes are precious
Debbie: So glad your Dad is done with his treatments
Joyce: Enjoy Florida...we're headed back there soon!
For all who asked..my eye injection went well again...my next one will be back in Florida with my retina specialist there. The latest scan showed that there was much improvement in my macular...blisters and fluid were all gone. I have no idea how many more I will need...my Fl specialist originally said about 8 and the last one was 5. Sooner or later it will spread to the other eye and I'll have to begin shots on that one as well. Just something I have to deal with...certainly better than going blind!
Last night was "date night" we went out to dinner and a play at the local little theater. The play was "Zelda...An American Love Story" about the marriage of F. Scott Fitzgerald and the love of his life, his wife Zelda. It was Broadway at it's best! I couldn't believe the talent of these actors. The venue is small, so it is much more personal. We both enjoyed it! Next week will be Rascal Flats in Greenville.
Fall is in full swing here so we're going to try and visit some of the higher elevations this weekend and see the leaves at their peak.
-
Joyce so glad about your good news!
Debbie, I hope that your dad gets some rest and is comfortable this weekend, now that he has had his last treatment.
I found " The Whole Foods Market Cookbook" at the library last night as well as "The weekend baker" You've all inspired me with your baking stories.
Hello to all of you that I've missed, it's been so busy here it's hard to keep up!
-
God help me, I caved and got some sourdough starter from my sister in law. I decided to experiment with some English muffins. My DH has a large family. We are all of the age where we have too much stuff so Christmas presents are usually consumables. I decided that homemade English muffins and jam might make a welcomed present so that's going to be my mission.
Anyway, the starter has had it's first feeding and I'm now officially responsible for another living thing. Probably a bad idea lol! -
auntienance Thanks I heard that about the femara. The tamoxifen gives me some pretty harsh hot flashes as well but no joint pain. Counting down to coming off this stuff.
Lacey Love the story. I too have clothes everywhere. I used to be good about getting rid of them, but now that the kids have moved out, I get to use their closets as well. My daughter followed my passion and works in the fashion industry, works for a design company that deals with buttons and trims for all the major stores clothing lines. the two of us can sit for hours and discuss different buttons.....we now call her the button girl. Pretty boring to everyone else, but if you knew where those buttons came from and what they are made of you would look at your buttons more closely LOL!!
Anyways....Tilapia was delish las night, should have done those cheesey wedges with them, but stuck to the salad. I think my DH is gonna love those potatos. He was searching for tartar sauce for his fish last night and I told him he didnt need it as it was in a butter wine sauce.
Tonight going out for dinner....so hard to watch calories when dining out.
-
my friend just brought me her garden which i almost finished processing..
a hug bag of swiss chard (i cooked it and put it into ziplocs
a big mess of green beans
a huge sack of tomatoes. (i'm pondering how many we can eat fresh in the next several days. What should i do..? i don't really want to make sauce. Can i quarter them and freeze them for sauces later?
-
Carole, we belong to the CSA too. My DH wants to sign up again for the fall. I was much more into it in the beginning and middle of the season. Right now my refridgerator is so full of kale and collard greens and hot peppers, green peppers, a couple of bunches of bok choy, a very large kohlrabi, radishes, beets, a bag of purple and yukon gold potatoes, 4 zucchini, two acorn squash, a few sweet potatoes, a couple of bunches of broccoli and a few different salads. We'll have no problem using the salads and the broccoli. I don't know about the rest. I have been boiling the collard greens for 15 minutes then sauteeing them with a little salt and garlic. They've been good, but we've had a few days every week. It wasn't all from one week, they are backing up on me. And I had to throw some things away that went bad. Any advice on any of it would be appreciated. I can take care of the beets, I think it was Debbie who told me how to roast them. Early in the season, I wasn't back to work full time yet and had more time to experiment. I am swimming in veggies. Any suggestions are welcome. I mostly made gazpacho or roasted the tomatoes I had. I did have a lot, but they're all gone now.
Debbie, so happy your Dad is finished chemo and rads. My thoughts are with him and you. I know how hard it must be. Is Chuck doing well?
Kaara, glad your eye injection is over and went well. I can't keep from blinking just thinking about it.
Lacey, I am always complaining about the clutter in my house. It is mostly the junk mail and junk magazines my DH gets which I complain about. I am not good about decluttering my closet at all. There is no way I would have 7 bags of clothes even if I threw everything away though. I need to get in there and clean it out. I am interested in the comment about the MRI's too. I'm not too keen on getting a breast MRI, but I am a little worried about only getting mammo's once a year. I have (or at least had) dense breasts, and the tumor I had didn't show up, but they did see thickening of the skin which caused them to do an ultrasound. I do think the tamoxifen may have an impact on the dense breasts.
I'll chime in and agree, your boys are adorable Laurie. I so miss those ages. My DD says this will be her last year trick or treating. She's in 9th grade. I thought last year might be, but she wants one last harah I guess.
Went out to dinner last night. It was a three course dinner for $35 and if you bought two of them, you got a free bottle of house wine. My DH and I each got, so we also had a free bottle of wine. It was really good too, it was an Italian red wine. He had roasted calamari (it was much better than I thought), seafood risotto, and tiramasu cake. I had mussels in red sauce, crab and shrimp linquini (whole wheat linquini, and it was absolutely delicious) and chocolate mousse cake that was to die for. It's a good thing we won't be going there too much. Also, it is about a mile from our house, so we walked there and back. Bonus points! LOL
-
Now that it's below 100F degrees most of the time, I've started planting a few cooler weather things in some pots....so I can move the more sensitive stuff inside if there is a chance of it freezing.
Apple....
I've never froze tomatoes before...although I don't know why it wouldn't work. My mom always gladly took care of *any* excess tomatoes, so I never had that problem.
Eric -
Apple, you can freeze tomatoes with or without the skin. If you keep the skin, wash them thoroughly then remove the stem and stem scar. Bag and freeze (you can cut them up first). Without the skin, blanch and remove skin and core. Bag and freeze. I always remove skin and core because then they're ready to use.
-
Apple, my mother froze large bags of tomatoes with the skin on. She used ice bags. I don't remember where she got them. When she cooked with the tomatoes, she just threw them into the pot frozen. The skins float off with cooking.
Tonight's dinner is pan-seared catfish filets. DH will also have 3 sea scallops. Side dish is roasted asparagus sprayed with olive oil and sprinkled with grated asiago cheese. I bought an oil sprayer so I can limit the amt of EVOO on this WW diet. Today I made a veggie soup with chicken broth. I'll probably have a bowl of it. DH will probably have a tossed salad.
Kay, I know what you mean about having a refrig. full of veggies!
-
Don't know what to have for suppa tonight, probably just leftovers. Sort of pot luck.
Got a call this morning from the Breast Care Center wanting to change my appointment at a later time for Tuesday. I try to get first thing in the morning or the last appt of the day so I don't have to take too much time off of work. I told them if my MRI is normal just call me on the phone to tell me so I can opt out of the appt. I explained to her that it is a very long drive for me now that I have moved. She understood and said a nurse will call you with the results. A little later on I get a call from the nurse with results of the MRI, there is no cancer but the skin from the cellulitis still show signs of concern so it has to be clinically evaluated, I can't get out of my appt cuz my BS has to clinically evaluate it. She said it is taking too long to heal. May have to do a biopsy. CRAP CRAPPITY CRAP. This has been going on since Memorial Day.
-
Oh Deb, CRAP for sure that you have to through more evaluations. I'm sorry and do hope that it can bet resolved with this last appt.
Yes the dense breast thing presents diagnostic challenges. The other thing my surgeon acknowledged about the MRI choice is the individual hospital politics of using that as a diagnostic tool......that many hospitals do not want to use them due to the expense. I had told her that my MO (who she is actually a collegial friend of hers) decided I could go to one mammo a year w/o the MRI, but surgeon explained that it is because she was trained and at one of the Boston Hospitals (and recently moved to my treating hospital)that doesn't recommend MRIs as a diagnostic tool in general because of the expense. I do know that the surgeon was correct with that info....and she will deal with my MO about the change in plan. She said that she'd like me to have two MRIs over the next two years before setting me free to just have the yearly mammo. Soooo, November 5th I'm off to the noisy machine...which actually does not bother me. Oh, and she said the risk of false positive for me is reduced by the fact that they have a baseline MRI from last September. Hopefully!
Ladies, I'm glad to learn that I am not the only person who has turned into a sort of hoarder, by filling up their kids empty closets once they set off on their own. THAT is why I had so many bags of clothes....also in various sizes. Not sure if I mentioned that I dispensed with my larger sized clothing so there is NOT an option to gain weight. I've lost about 8 lbs over the summer and would like to get down 15 more...it will take some effort. Making the veggie/fruit smoothies each morning has really helped.
Kay your meal out sounded scrumptious. Nothing like Philly Italian food! Did anyone see the guy on The Doctors today who has a cookbook called, Now Eat This, Italian. I think his name was Rocco something. It sounds like good Italian food with one third of the calories. I plan to check it out.
Joyce, glad your FL plans are firming up. Will you stay for the late Fall/winter or go back and forth like I recall you did last year? Have a safe trip. So happy for Michelle in her relaxed state!
I was in sort of a funk today after another bad night's sleep, so begged out of the dinner I was supposed to go to with DH for his business school reunion. Spent the day doing banal household chores, and as I was about to start the dishwasher, discovered a leak under the kitchen sink. What a mess! Timing is everything....DH called a couple of minutes after my discovery and since he has more plumbing expertise than I(and caused the leak in the first place when he changed the water filter;) he made a stop home to fix it.....it seems good now.....and I re-organized the salvageable items (including old doggie care products that we no longer need), so now the leak is dry and the cleaning products are clean and easy to get to. Yet another housecleaning/clearing project done....tho unexpected! You don't suspect that DH set this one up, do you?!I had oatmeal for dinner ....it is sooooo cold here, it just felt right.....even tho I am missing a wonderful meal that I will get to hear about. Tomorrow night I will go to the reunion dinner that is at the House of Blues. Should be interesting....gotta get some warm clothes out.
Goodnight to all.... -
Spent two days in the very far North parts of NH which included three meals in restaurants. What is it about mediocre restaurant food that makes you feel so bulky and out-of-sorts? For dinner, I just made a simple potato and leek soup with some garlic croutons.
It was snowing like a blizzard as we pulled out of my Mother's valley. I am NOT ready for this yet!
*susan*
-
Susan, I agree, this cold seems like such an assault....too early....I'm glad I did not see any snow here today. I do recall when, many years ago, DH and I camped out in the White Mountains over that Columbus Day weekend, awakening to three inches of snow....brrrrr. But we were so much younger and heartier then! LOL Today I was wearing four layers of clothes inside my house! I wish Tamoxifen would keep me warm during the day!
-
Lacey,
I was far north of the mountains. Once we got through the notch, I was delighted to see sun once again. And so, I go into Winter Denial again. Hoping that our snow here in the Boston area hold off for at least several more months.
*susan*
-
Susan, Lacy, I feel your pain! Didn't snow by my house, but by.my inlaws. So before my DH left last week he got the snowblower ready to go. I hope I don't have to use it anytime soon!
-
well - they were so easy to skin- i made sauce.. way too many seeds, but i don't think they'll kill us. it's easy to store and pretty darn tasty.. it'll be easy to change the character of the sauces. I use the containers from huge boxed of ice cream. I still have about 10 tomatoes out and we had BLTs last nite. omgosh - i ate 2 sandwiches... - small breads, but still, call me Porky Divine.
-
ok Porky Devine...ha ha...it is good to eat when you feel like it to make up for the days that you dont. I say go for it!
Read everything but dont have time to write, talk later!
-
Apple, ooooohhh, I haven't indulged in a BLT in about two months when I was craving them for some reason. Having two for dinner (with any size bread) sounds great!
I agree with Carrie....go for it and enjoy tasty meals when you can..... -
Make that a triple ditto! Enjoy when you can. Besides if its a great bread, the only things not so good are the Bacon and MAYO, and that's not even so bad! See, for me I would have subbed a piece of cheese for the MAYO, but then I AM from WI! LOL
-
Love a BLT toasted with fresh tomatoes right out of the garden.
-
Moonflower - OMG I would SO be in trouble in Wisconsin. Went to Trader Joes yesterday and was prob. 15 minutes in cheese section which is an OK size but about 1/3 size of Central Market. Bought a Spanish hard cheese and a Gouda. And more almond willmill cookies.
Trader Joes - anyone with something special they buy there? Any recommendations?
Have a banana peppper and mild jalapeno pepper coming back. Lots of tomato blooms but no apparent baby tomatoes. Same thing with bell peppers.
Waiting for bad storms later. Tornado watch up N and just W of us. Feels like it could/should storm.
-
Busy, busy thread!
Crappity, crap is right deb hope everything will be alright!
Moon- We eat a lot of cheese here too, I know WI is famous for there cheese as well as here we have Tillamook cheese which is so good. Right now Im in to there garlic pepper cheese that is delishious!
Wish i had bacon I would make me a BLT right now.
Hope everyone is safe with all those nasty storms going on every where!
Off to make a grilled cheese sandwich!
.
-
Luvmygoats- I forgot to say, We don't have a trader joes near us, wish we did. I have been watching the storms in Texas b/c my GD lives in San Antonio. Don't think they are near her though, but be safe!
-
Debbie - I couldn't do without microwave bacon. Love the real "cook" kind but when I want it I want it now. Wish I could do a taste test to find the best! It is more expensive and not often on sale but only the 2 of us to eat it so price balances wasting it. I love Tillamook cheese too. Stock up when it's on sale.
Looks like most of state will get something. Building out west, south of Midland. Getting rough east of Lubbock. Couple of tornado warnings. Need to batten down the patio soon for flying objects. Thanks for the thoughts. Have a tornado shelter. Need to get DH off the couch to check for spiders. Likes to grow black widows down there.
-
Luv, ah Trader Joe's, one of my most favorite places on earth . . .so many favorite things. Green chili chicken enchiladas, Mandarin orange chicken, curry and tiki masala sauces, triple cream brie, three buck chuck, nuts and dried fruit, Belgian chocolate, panko breaded tilapia filets, frozen baby peas, tiramisu gelato and lots of other things lol!
