So...whats for dinner?

Too cute Laurie... adorable.
-
Those are some adorable kids in adorable outfits. Such lucky kids to have the camp and the memories.

-
Nancy-Garlic truffle frys sounds good never tasted them before that way.
Carrie-LOL! At the fruity comment.
Kaara- Hope those shots went as smooth as the last one, if I remember right you said the last one wasn't as bad. How many more do you have to go?
Tazzy- When I make turkey dinner we eat it for days it seems like, including sandwiches ect..
Eric- Sounds like you are enjoying yourself. love mexican food!
Laurie- Those outfits are adorable did you make them? No bq ribs on the menu? LOL! Looks and sounds like you had a great time.
Been busy cooking a whole chicken to cut up and freeze for DH lunch everyday been buying the little cans of chicken for his lunch and it is so expensive that way, almost 2$ a can, so decided this would be far cheeper and probably taste better anyway. For dinner making the belguin chicken, smells so good cooking, this time I put about 12 shallots in there and more musrooms.
-
Debbie - I often buy chicken salad from the deli not so healthy prepackaged. Now I try to go by the salad bar on Fridays and get small amt cut up celery, peppers, red onion so I can at least make it "kinda" from scratch even if I do use the cheaper canned chicken. I usually have lunchbox with cool pack. DH packs my lunch for me. Usually yogurt and nuts/granola. I did poach some frozen breasts from Walmart and added to a dried soup mix - Chicken Tortilla. Spicy!! I had to add sour cream to tame it down. I also have a Minestrone same brand. New kind I've not seen before. I'm a sucker for that kind of thing.
-
Laurie, what a fun weekend ....and the boys were so adorable in their costumes! Glad you ended the week really well!
Way off topic.....has anyone ever taken an antibiotic named nitrofurantoin mono mac (generic for macrobid).
I awoke with a beginning UTI (I think the third one in my 67 years, so I wasn't sure what to do), and was prescribed this meds. Researched natural treatments before heading to the doc so I have been drinking a lot of water, serious cranberry juice, and a bean tea I know a friend uses, and I'm not sure that it is getting worse, and maybe even better, so I wonder if it is worth the risk to take this meds. I am so sick of what Tamoxifen does to me that I am gun shy to take yet another med if I can avoid it. Any advice?
Kaara, hope the injection went well. You are a trooper! -
Day 1 on WW went pretty well. I had enough "points" for a vodka martini tonight!
Today was also the first CSA pickup for the fall membership. I loaded up my bag with tiny yellow snap beans, okra, zebra squash, green peppers, Japanese eggplant, green onions, kale, and Thai basil. I cut up the okra right away and cooked it with garlic and canned diced tomatoes. It was delish. Froze a little package of leftovers for adding to gumbo. Tomorrow night's dinner will definitely include a big pan of roasted veggies. Fruit and veggies are "free" foods.
Laurie, the camping trip sounds like loads of fun. Cute costumes. Was the weather cold?
-
Carole,
What a fantastic basket! Now that Fall has arrived, we won't see those kind of vegetables for about 9 months. Maybe longer. Back to buying vegetables that have more frequent flier miles than I do.
*susan*
p.s. the Short Ribs Chili was okay. Served over polenta cakes that I slipped in the freezer in August. The chili needed something to finish like citrus, green onions; something to freshen the flavor. Have thrown 5 meals into the freezer. Hope I can remember to do that when I pull them out the next time.
-
Carol- What is a zebra squash? The weather was cool but not too bad. High mid 50's to low 60's during the day and it did get down to high 30's and low 40's at night. But the heater in the camper kept us more than comfy at night and a fleece jacket during the day served us well.
Debbie- I laugh!!! Me? Make the costumes? No!! I wish I could sew but I can't. They came from Old Navy:)
Lacey- I have also been fortunate not to be plagued with UTI infections. Once in high school I started to get one and called home freaked out. (I went to boarding school.) My mom told me to eat lots of yogurt, drink as much cranberry juice and water as I could. I did it and it cleared up with out meds. It sounds like you are doing the right thing, maybe add yogurt to the mix?
-
Lacey, I am on abx right now, but 8 hate them and am allergic to sooooo many. I try to avoid them if I can. I use AZO urinary pills if I start a uti for pain, they work on pain fast! I also do the yogurt, and cranberry pills, they are easier than drinking so much. But if it doesn't go away even I break down and get abx. So take the abx if you need too.
-
Thank you thank you, Laurie and Moon! I do think my blitz effort of the constant water and crb juice might be helping a lot, and will add yogurt to the mix also......will wait until tomorrow before taking any of the antibiotic. Would love to beat it au natural if at all possible....especially if this is going to be a recurrent condition in my "new normal". Arggggh!
Carole, I envy your CSA membership.....I'll be back to eating those "frequent fliers" described by Susan, soon. Our Farmer's market finishes up this weekend. I'm not sure I would be able to use all the produce from a CSA, but heard of a local one recently. I'll vicariously enjoy yours! -
luvmygoats- I was kind of wishing i had bought it from a deli now after all the time it took to roast it, then cut it all up, weighed it (5oz) each bag it and then freeze it, was so much easier in the can. LOL! but I fiqured since I got about 12 baggies I saved about 13$ with what it would of cost to buy the cans. Im learning!
Lacey- Have not heard of that one before. Sorry you are having a problem with it. Have you tried eating Yogurt? It really does help with a UTI infection. Which reminds me when my daughter had an UTi infection I told her about yougurt and she later told me it was cold. I said, honey you were suppose to eat it not put on you. LOL! We still laugh about that now.
Laurie- LOL! I can't sew worth a darn either.
My Belguin chicken was so good tonight. We will be eating that for the next few days made a big batch.
-
my cuz and i got together and made lots of individual frozen foods..meatballs, gnocchi, spagett pie, chicken and beef fajitas, taco meat, pulled pork. since its individual, we can eat what we want. we r going to do it once a month. have been loving it and feel better that hubby isnt doing everything
-
Today is my day to cook at the Center. Finances are tight so I'm doing a Cheap meal. Someone donated a couple of bags of 12 bean soup mix--using those for chili beans, put them to soak yesterday.
We bought a box , 70 count, of potatoes for $15 so a baked potato bar. They're big Idaho russets. Liquid eggs and some beautiful cinnamon bread have also been donated so dessert will be bread pudding. We also have Chinese Coleslaw from yesterdays IGA "sell by" deli donation.
For most of the people that join us for lunch it will be their main meal of the day. For some of them it will be their only meal.
-
Laurie, the zebra squash are shaped like yellow summer squash but are two-toned in color. Half is yellow and half is green. They're really cute and the division line between the yellow and green is line a line drawn around the squash. Nature is incredible in its variety.
-
OK I have to ask caroleh - what is CSA? I googled it and got Canadian Standards Association or Canadian Space Agency ????
-
CSA Community Supported Agriculture a popular way for consumers to buy local, seasonal food directly from a farmer. Great for organic farmers.
Mary
-
What a wonderful idea... I am not aware of anything like that here. Will go to our local produce store and ask though. Thanks
-
Susan3- Welcome! You joined a great group of ladies/gent here. Glad you have your cousin to help with those kinds of things it makes it so much easier
Chabba- Have you asked any of the local casinos to donate food? I know My DH does all the time. We both go work there on Thanksgiving and Christmas and bring tons of food from the casino there. But for all the other days I will buy foods and take it to them. wish every one did!
Joyce- Have a good trip tomorrow to Florida! I think Michelle is actually leaving from LA to hawaii today? Hope she has a wonderful time.
Yesterday morning got a call that a dear friend passed from a car crash. She lived in Paducah, kY was on her way to work (she worked for my best friend) Someone ran a red light and hit her on the drivers side. She had just turned 50- I just don't understand how people drive so recklessly! So very, very sad!
-
OH Debbie that is horrible...I agree about the reckless driving. People need to put theor phones down and everything else they do while driving and pay attention...nothing is that important!
Laurie Your little ones are sooo cute. I love to sew and would make my kids costumes, but only because it is what I like to do. i just acquired an old stuffed chair that I am going to take apart and recover...just because. I have a passion for fabrics..have to touch everything in the stores, drives my kids nuts.
Lacey hope you are feeling better soon. All good advice about the yogurt and fluids, but remember if you get a fever, or it doesnt go away, you may want to go with the antibiotic.
Got some tilapia filets for dinner tonight, not quite sure what to have with them, maybe just salad.
-
Debbie, so sorry about your friend. It is a sad story indeed.
Tonight's dinner will be oven-cooked pork chops with a panko breading and roasted veggies.
I cooked a lb. of black beans in the slow cooker today. Soaked them in water overnight. SO easy! I'll freeze them in 1 cup portions to use in recipes.
Greetings and best wishes to everybody.
-
Carole- When you freeze the black beans or any beans after you cook them do you put a little water in with them before you freeze them or make sure they are dried first? Probably a dumb question but never froze them before unless it was in a soup base.
-
Burgers on the grills and cheesy potatoe wedges.
-
Joyce- I don't blame you to wait until next week, so much stress going on for you. Hope you get rested up before your trip.
My dad's last chemo was today!! So glad about that. He also had 2 radiations today too. He went in for rads this morning and then chemo then suppose to go back to rads so he wouldn't have to go back again tomorrow for the last rads. He has really been having a really hard time with this. Losing about 6 pounds or more a week, very weak and throwing up a lot. But I just hope he will feel better enough to eat, it is so hard to see him like this. He actually has an appointment set up for late November to see a surgeon but I really don't think the surgeon will do surgery on him because he was told by another that he is not a candidate but wants to do anything he can. Thanks for asking.
-
debbie, thanks for the update on your Dad. I continue to pray for him, you and the family. Hope he is able to eat better. We all need an intake of nutrients in order to heal.
-
Debbie - so sad about your friend. Best wishes for your Dad and you and the family.
Dinner is going to be chicken & garlic tortellini served with shrimp in a garlic white sauce (can you tell we like garlic) with fresh warmed cheese sticks.
-
Debbie, really hope the last of your dad's treatments let him turn the corner and start feeling better soon.
Had my 3 month appointment with the mo today. Other than the side effects from the letrozole, all appears to be well. Good to go for another 4 months and dancing with NED for now!
Tonights dinner was rotisserie lemon chicken, buttered noodles with parsley and the last of the garden green beans. -
kidsandlabs what are cheesy potato wedges? Anything with cheese sounds good to me.
Debbie So glad your Dad is done, now on to the healing and hopefully he will put his weight back on (unless of course he doesnt want to)
Auntienance what is the letrozole that your on? Not familiar with that, hope the side effects are mild and Congrats on dancing with ned!
Daughter coming home tomorrow...let the games begin!!! She has so much energy....wears me out, but love seeing her.
-
Carrie, letrozole is the generic for the AI Femara. Lots of potential side effects but most common are hot flashes and joint pain.
-
Thanks everyone for your well wishes!
tazzy- I am stuffed from dinner but your dinner still had me drooling yummm!!
Nancy- Glad you get to dance with NED! Keep it up! Your dinner sounds good too, maybe I didn't eat enough lol!
Carrie- Have fun with your DD, I bet you wear her out! LOL! You always seem to be having a good time.
