Glad to hear that you got good results at your appointment! I think all of our docs tend to err on the side of caution when it comes to us.... I've had a few of those appointments too where they start off with, "i'm not sure why they sent you here" and end with " Everything looks good"....
Used to make me mad that they got me all worked up for nothing but, I realize they do have me best interest at heart.... Either that or their DR friend has a boat payment due and they're sending
business his way...lol

Mojo pork is soooo good!! My Mom is from Cuba so I have eaten my share of Mojo! My husband and I love Brussell Sprouts but, our kids.... no way! More for us...... -
Carol- I make quinoa (keen-wah) a lot- similar to my couscous- Just make sure you rinse it real well in cold water at least 3 times, i use red (more flavor) but any is fine you can add or delete any veg you like
Quinoa and beans
- 1 teaspoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, peeled and chopped
- 3/4 cup uncooked quinoa
- 1 1/2 cups vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- salt and pepper to taste
- 1 cup frozen corn kernels
- 2 (15 ounce) cans black beans, rinsed and drained
- 1/2 cup chopped fresh cilantro
Directions:
- Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
- Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
- Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

Joyce- I watched it and thought it jumped around alot, more commercials and ford ads than the actual movie. At the end it didnt really tell what happened to the young 26 yr old but showed her husband and baby, so they left a lot out. But still thought it was good and got teary eyed. The dr. gave great information. What about you, what did you think?
Seaside- Im with you on the boat payment LOL! I think they help each other out.
Fixed DH pasta and marinara sauce. I wanted vegetables- I had sauted spinach, brown rice mixed with black beans, mashed yams, zuccini patties.

I was down a lb on the scales this morning! Weight loss on arimidex is very difficult.
Dinner last nice was chicken salad made with store rotisserie chicken, sliced tomatoes and avocado, and a small serving of bulgar salad made with bulgar, lime juice, olive oil and cilantro, s & p. DH tasted the bulgar salad and said, "I hope this is good for us." He ate a helping, too. It really was very eatable with a nutty taste.
I read about quinoa and it's more like a rice substitute, not a grain but in the vegetable family. Apparently it has become so popular that the poor people in the area where it's grown (Peru?) can hardly afford it.
Today I'm playing golf. Hope everyone has a good Wed.

funny about your hubby and his reaction to the bulgar salad Carole.. ha ha.
i could live on tabouli and the like and always have bulgur in the pantry and on the table often.
It's actually wonderful presoaked and then kneeded.. needed... kneaded into bread.
tonite we are having potatoe soup with ham and bacon in it.. not much and probably an oriental sandwich and maybe some sausages for the hubby and super athletic teenage boys.. man can they eat. I leave a lot of food out after dinner and by 10 it is GONE.

Carole I am so impressed with how healthy you eat. i need to learn some new tricks....hard to teach an old dog ya know. I could prob do it but my DH would move out.
Last night was grilled chicken with rice and butternut squash, and today we will use up the chicken in a ceasar salad.

Dancing, singing, screaming, crying...yup, all that stuff. We have organized a family party - we're all meeting at a Chinese restaurant (because we're bringing my mom and she loves it) then we are going to my son's to pop a couple bottles of champagne. Yes, indeed, there will be a party!
I took a little walk around the neighborhood and snapped a few photos. I like this one - it signifies strength to me, something we all know a little something about!!!

making brandy mushroom chicken and eggplant stackers for dinner-
I peel eggplant salt and let drain for in colander (1/2 hour) slice and bread them, slice zuccini and bread, fry both in some evoo, on the bottom of a oven proof dish put some maranira sauce layer, eggplant, zuccini, sliced tomotoes and sliced onion, top with mozz and parm cheese bake for 20 minutes in 350% oven, i only use the sauce on bottom so its not really a casserole. I came up with this for my dad, and he loved it.

Carberry, your chicken meal sounded pretty healthy.
Tonight I cooked zuchini with ground beef and ground lamb. Chopped onions, garlic, chopped green pepper. Can of rotel tomatoes. Lots of ....brain lapse, I'm trying to think of the seasoning. Ground cumin! I had a double batch of the ground meats so I froze half of it for another meal.
I bought a box of quinoa today and will give it a try.

Made your oatmeal bars yesterday and had one with my coffee this morning.... It was really good! Kind of the consistancy of a chewy muffin and, with no sugar aside from the fruit, really healthy!

My daughter gave me a present tonight. I had sort of forgotten about this. Back in March, just before I found out that BC was back, I had bought a tshirt that said "I fought like a girl and won!" and it had a pair of pink boxing gloves and a pink ribbon. Well, I found out about my recurrence while visiting her, so I left the t-shirt with her and told her I didn't want to see it again until I was cancer-free. I gues I earned it back!
I wonder if I'll sleep better tonight

Kay: I first had this in the early 60's cooked by a lady from England. She always cooked stovetop with water & drained. Now I use micro & lots less water to not leach the nutrients. Or bake with a roast & add water only as needed. I think you could steam too. Jan

Our friends who own a RV bussiness drove up here to visit in a million dollar RV that thing is so beautiful and nicer than my home LOL! Would love to travel around the country in that! Doubt if they would let me borrow it though LOL!

Debbie - I'll bet that RV is spectacular. We often went to the RV show in Kansas City and one of the dealers would bring in a fancy Newell or Monaco with all the bells & whistles. So luxurious for an RV!!! It was always fun to walk through the high end rigs and dream about living in one of those. With diesel at $4 a gallon, DH has now resigned himself to the idea of a much smaller one. But as long as we do it in a couple of years, I really don't care if it's not a big, fancy rig. I'd be happy to just do the trip that Carole and her DH just finished!!!
And today I can now see it happening!

I can't imagine a million dollar RV. Twenty years ago when we first bought our home here at the beach some friends spent a week here in their $300,000 RV. Our 3 b3eroom home cost $72,000.
That thing had more storage than our house and was far mor lux than ay home I ever imagined ever being able to live in!

Michelle- I agree, would be just as happy if not happier in a req RV I dont need all the bells and whistles, just a nice cozy comfy motorhome
Chabba- twenty years ago a 300,000 RV must of been like a million dollar one today.
Tacos for lunch then out to dinner tonight with friends, love when friends and family come to visit, a good excuse to have a margaritta LOL!

Went shopping today. I now have jeans that fit, at least for the moment. I'll probably have to get new ones after DIEP.
We're having tacos for supper. DH is thrilled. I called and asked him if he wanted to have them...lol. It's one of his favorites and I've stayed away from the spice, so he's been deprived. But I think I can handle it now. Needless to say, he is a happy camper.
