Debbie6122 that bar recipe looks great! Do those come out chewy or harder like granola bars? I am gluten free so it's really a nice recipe.

Beacon- they come out chewy, check out her recipe site, she has gluten free stuff on there too, its under kath eats healthy food-
Michelle- Keeping fingers crossed for normal scans tomorrow- lucky you are still having nice weather there, It's rainy and very windy here.
Apple- I have made what you described but without the saurkraut, sounds good though.
I made belgium waffles for breakfast with scrambled eggs and sausage. YUM!!

I'm back! It looks like you ladies have been busy! We had a great camping trip the campground had a Halloween theme with hay rides, haunted walks, trick or treating, pumpkin carving everything. The kids had a blast and so did the adults. All the families shared food and we do pot luck dinners. The pulled pork I made turned out amazing and all 2 pounds was eaten! I also made a lasagna and there were three pieces left which we are having the left overs for dinner tonight. Other people brought turkey meatballs and a great mexican appetizer dip lots of grilled meats and veggies. We ate like champs!
It's always nice to come home and we have just about everything put away and the washing machine is going. It was our last trip of the year so I have sheets, comforters and clothes to wash. But, a great way to end the season.
I hope everyone is doing well, I'll try to get caught up on posts later when the boys go to sleep.

Laurie - I don't know how your weather could have been more perfect! Makes up for the weekend when you tried to go and had to cancel at the last minute due to rain. I don't know that I've enjoyed a Columbus Day Weekend this nice in my entire life!
Apple - no cooked cabbage in my house. DH is not a fan. Falls in the same category as cauliflower.

I had a nice low carb dinner tonight in advance of my scan tomorrow - pan roasted chicken thighs, green beans with bacon and onions (Burger Smokehouse, of course) and cole slaw.

We have a fairly large Polish/Slovac population here and it sounds like you are describing the dish Halupki (many different spellings)... and it has a tomato sauce with it....
If that is it, I have made it only once.... It is a true labor of love and I tend to get my 'fix' at the local ethnic church festivals where someone else makes it but, holy smokes, is it ever tasty!!

I made a veggie stir fry with onions, celery, carrots, cabbage, asparagus, brocolli, zuchinni, peas, olive oil, and a little soy sauce.,, very tastey. All of your dishes sound really yummy. I want to make the oatmeal bars, those really sound good.

Seaside- Hope you feel better soon. sounds like this is just hanging on. I was wondering if anyone is getting the flu shot? Seems like every time i get one i get sick and my arm swells, wasn't there some controversary on flu shots and breast cancer?

Hummus is for dinner! Gallons and gallons of hummus and pita bread. The party that I made it for was cancelled yesterday. So, the party is here! Anyone want some? I added red pepper flakes, in case you can't handle that.
I'm sorry but I have 3-4 more boosts to go and have a hard time reading all the posts.

I like to grate the turnips before I cook. I usually do 1/2 turnips & 1/2 grated carrots. Since they have the same consistancy they cook well together. And I don't bother mashing. I love with butter & salt, or add garlic/onions/whatever.

DH and I each cooked our own main dish tonight, side by side at the stove! I had poached salmon. The poaching liquid was simmered ahead of time and flavored with veggies. He had pan-seared scallops. He watched a cooking show some time ago that explained how to sear scallops and get the great brown color. You pat the scallops dry, heat a skillet and put them in the dry skillet. After they had browned nicely, he added a pat of butter. My poached salmon was tasty. I made a sauce of lite mayo, lemon juice, a little dijon, and dill weed.
We also had steamed yellow squash, diced in large chunks, and a garden salad. I "dressed" my salad with a home-made vinaigrette. Dh used another home-made dressing that is also a vinaigrette but has pepper jelly as an ingredient. I made both these dressings on Sat. when we were having company for dinner.
Michelle, I admire your courage and spirit as you go through treatment. The dinner in Boston sounds wonderful. I've never eaten lobster ravioli.
Seaside, I'm so glad you're enjoying the travelogue. It was a wonderful trip. We're enjoying the pictures on a slideshow on our electronic picture frame.
Today I went to my gynecologist and had a painful pap smear procedure. I think back on the good ole HRT days with longing. No estrogen is not a good thing for a female body.

Not much of a holiday weekend here. Kids bday parties all day Saturday. Errands and laundry yesterday, then in the afternoon I started feeling really sick - gastrointestinal stuff. It must have been something I ate. Still felt kind of punky today, so laid around napping most of the day. 3 days of beautiful weather and not one trip to the beach.
I did start knitting again - a scarf for my great niece. This is the first knitting project I've done in years. It had just become too painful. Thank you Dr. Stein for the great job on the thumb joint reconstruction.

Bedo - you can definitely freeze that hummus - in ziploc containers perhaps or glass jars not filled all the way to the top. mine keeps for ever that way.

Thanks, everyone! I will feel your love when I am having my test, and I'll be hoping that the radioactive glucose finds nothing to light up! It would be such a huge relief after all this time, to know that chemo did its job. I've had plain Greek yogurt with a few fresh raspberries for breakfast (needed to be high protein) and now I'm on a hydration kick so they can find one of my puny veins. I don't think they can use my port, which would be so much easier to access. And I did sleep ok last night - I was out by 10:15 and slept until 6:00.
Lynda - hope you are feeling better this morning.
I'll check back in later this afternoon. DH will take me to lunch after the test, which will probably end around 1:30. I don't think I'll know anything until tomorrow afternoon at the earliest. The RO that ordered the scan is part of the same system so he may get something quickly.

Laurie the camping trip sounds great, I miss camping, we have a 28 foot camper sitting in our backyard that we have only used once a year to go to the buffalo bills football games. We traveled all over with that camper when the kids were little, the best way to travel with children.
Had a great weekend in Akron with my son. We traveled the southern tier way so that we could see the leaves. the Allegheny mountains were fabulous! Prob 85% change. We got to meet my sons girlfriends parents... aaaahhh....these kids are so cute together, we are thinking that this girl is prob "the one" oh my...time will tell. this is his last year!

Last night was swedish meatballs over noodles, fridge was a little empty after going away, so was trying to re-invent hamburg...the only thing in my freezer.

i find quinoa rather tasteless... However, i did have some at a restaurant and it was pretty much awesome. it needs a lot of flavor.

My son has soccer at 5:30 tonight. I HATE Tuesday night soccer and am very happy this is the last Tuesday. I am trying to figure out what dinner will be, I was going to make the salsa chicken but realized I have no black beans. I need to come up with something that is either really quick or can be in the oven for an hour while I am gone. Any ideas?

My scan was uneventful, I have a copy of the films and the report should be ready tomorrow afternoon. At least I don't have to wait too long.
Can't help with the quinoa, either. I've eaten a couple of times at someone's home but I have never tried to prepare it. I thought it was pretty tasty, I'm sure it's like eggplant - takes on the flavor of whatever is around it.

So in my need to turn everything into a party, I brought a Hawaiian CD (mostly because we don't own very many CDs - we usually download music) that they played during the scan. They removed my glasses so I closed my eyes, and the machine started. There were a few puffs of nice warm air, so I pretended I was lying on the beach in Kauai and soaking in the sunshine while listening to the sweet sounds of Iz.

The actual test was just fifteen minutes long (based on size and weight so I had an advantage there...lol) so about 5 songs and it was over. Then DH and I went out for lunch. It was beautiful so we sat outside, and I had fried clams, cole slaw and a "mini" hot fudge sundae with black raspberry ice cream. I have to say, it wasn't very mini and I ate it all!

tonite we are having skewers of pork loin marinated in mojo sauce with different peppers and onions.. about 5 pounds of brussel sprouts, cut in half and sauteed with garlic.. we absolutely love these and will probably eat most of them tonite and mashed potatoes with butter and maybe a bit of sour cream. We are not on diets... but maybe should be.
the sour orange juice (it's a specific fruit) MAKES this marinade. it's hard to find except in mexican or latin american stores... but boy is it good.
Mojo (Cuban Citrus-Garlic Marinade) Recipe
3 large heads garlic, peeled
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 1/2 cups sour orange juice (or 3/4 cup fresh orange juice plus 3/4 cup fresh or bottled lime juice)
1 cup minced onion
2 teaspoons dried oregano leaves
3 tablespoons flat-leaf parsley, minced
1 cup olive oil
Mash the garlic, salt, and pepper into a paste, using a mortar and pestle, or on a flat surface, using the side of a large chef's knife.
Place the garlic paste in a small mixing bowl and add the sour orange juice, minced onion, oregano and parsley. Stir all of the ingredients together thoroughly.
Set this mixture aside and allow the flavors to marry for at least 30 minutes at room temperature. -

I had a very uneventful trip to a cardiologist this afternoon, who I think was scratching his head trying to figure out what the hell I was doing there. I had some wacky lab results last month that caused my PCP some concern re my heart 17 years post adriamycin. The echocardiogram, ekg, chest xray she ordered were all normal. But I guess she just wanted someone whose area of expertise was the heart to take another look. He wasn't even particularly concerned about the lab results that she found so disturbing. I can imagine what this little consult cost my insurance company. It wasn't a total loss. I got expert reassurance that my heart is in great shape and a flu shot as a bonus.
Dinner tonight - left over store bought roast chicken or lean cuisine hmmmm. I wish I had the motivation to cook for myself, but I just can't muster up the energy.
