You have been invited to a "SWEET"
Bostini Cream Pie
Bostini Cream Pie.
For the custard:
1/2 cup whole milk, at room temperature
1-1/2 tbsp. cornstarch
1 large egg, lightly beaten
4 egg yolks (reserve the egg whites for the cake)
2 cups less 1 tbsp, heavy whipping cream
1 tbsp. vanilla extract
1/4 cup plus 2 tsp. sugarMix together the milk and cornstarch in a bowl. Make sure there are no lumps.
Add the beaten egg and the yolks. Whisk until well mixed.
In a saucepan, heat the cream, vanilla extract and sugar.
As soon as it comes to the boil, remove from the heat.
Carefully add a ladleful of the cream mixture to the egg mixture, whisking while you add it.
It should be a tad thick.
Once mixed, pour the egg mixture into the saucepan with the remainder of the cream and whisk.
Return to the heat.
Cook over medium heat until the mixture thickens so that it coats the back of a spoon
(this means that when you drag your finger across the spoon, it leaves a trail).
Remove the custard from the heat and pour through a fine mesh sieve.
Pour the custard into the molds or custard cups that you're using.
I use 4 6-inch ramekins and 4 2-inch ramekins.
For the chiffon cake:
3/4 cup cake and pastry flour
1/2 cup superfine sugar
3/4 tsp. baking powder
pinch of salt
1/2 cup less 1 tsp. canola oil
2 egg yolks
1/2 cup fresh orange juice
1 tbsp. grated orange zest
1/2 tsp. vanilla extract
4 egg whites (use the reserved egg whites from the custard)
1/2 tsp. cream of tartarPreheat the oven to 325 degrees F.
Grease a half sheet pan (mine is 13 x 9 inches) and line with parchment paper.
Grease the parchment paper and set the pan aside.
In a large bowl, sift together the flour, sugar, baking powder and salt.
Add the oil, egg yolks, orange juice, orange zest and vanilla and stir until smooth.
Beat the egg whites until frothy. Add the cream of tartar and beat until soft peaks form. Gently fold the egg whites into the batter.
Spread the batter in the prepared pan. Bake for 18 minutes. The cake is done when it springs back lightly after being pressed with your finger.
Let cool on a wire rack before unmolding.
Flip the cake onto a large piece of waxed paper and peel off the parchment.
Cut the cake into the appropriate sizes to fit your molds.
For the chocolate glaze:
2 ounces semisweet chocolate, chopped
2 ounces unsalted butterIn a small pan, melt the butter.
Add the chopped chocolate and stir until melted. Use immediately.
To assemble the dessert:
Cut out cake rounds to fit your molds. Place the rounds on the custard in each mold.
Top with chocolate glaze and serve.
* This looks like a ton of work but believe me it is so worth it when you serve these
little jewels of taste bud heaven.
There's something so fun about giving each person their own little desert to drool over.
Once you make these it will seem so easy. I hope you enjoy.

It's 4 O'clock on Sand Dune Street. The rain clouds are looking dark.
Time to rescue the laundry before I have to do it all over again.
-
Sahalie, you are killing me!!!!! Slurp! I have got to try these recipes!

-
I thought you needed a root canal, Celia. It didn't sound good to me. Thank goodness you're on antibiotics. That should hold you over. I've had about 4 root canals. It's no biggie, trust me.

-
Whooooo hoooooooooooo!!!!! Noelle figured out how to give CPR to my laptop.
We have to stay up & watch the play-off game for Zman, so here's what we did today:
The kids place is literally beside the 'beach.' Z-man got the boat out & took us out into Chesapeake Bay:
Here was our destination. Thomas Point Lighthouse, in the middle of the bay:
Wing-Girl. Are you out there? Have you ever seen a lighthouse, in the midst of the water?
Talk about a get-away!!
-
I filled my tote with thoughts to ponder and as I figure each one out I will write the answer and put it in a jar, after a year I will go back and see if I still feel the same about each question. What beautiful pictures and yummy recipes posted today. Just got home from work, very short handed, many working doubles, but it was better. I am sorta getting the hang of it. Its just so much to do and not enough time to do it all. too busy for a break or supper or to pee, now that is busy. Well, I am tired and going to read a bit and go to bed. Hope each has a good night and sleeps well. love and hugs.
-
Now how is it possible that I'm the first one @ the beach this morning?
Waving to the waves.
Hugs and a massage to everyone that needs one. For all you cat lovers:
Out for more fun. The sun is out here on Beach Drive: YIPPEE!!
-
DREAMgirl........ I just saw your announcement on the other thread that Jackie has passed & her servies are unfolding today. Let all of us here, at our virtual beach wrap, you in a collective hug as you sort out the many feelings that come in the midst of losing a friend, losing one of our sisterhood.
I am so glad that you were "there" for her. I know that you did everything in your power to support her, encourage her and hold her up. May we all reach out to one another -- not only when the sun is shining and the beach nonsense beckons, but also in the midst of the harshest of the realities that come with our common denominator.
You have served us as a role model, in the manner that you brought Jackie's needs to the community, kept in contact with her in the midst of what were her final days and offered encouragement throughout. Thank you, dream. Thank you Regina.
Now, let us join hands to help hold you up, as you contemplate this loss. I know that you've shared that your own 'faith' is still in the grappling stage.
My own belief is that she is on a glorious part of her journey now, where she is whole and well and complete. Where she is filled with light and understanding. Where her questions have answers.
May we offer you our collective strength during this time of reflection.
Edited to add a very simple bit-of-a-reminder:
May you have the opportunity to share your feelings in person, in Vegas, with others who will understand your sorrow -- and offer our heart-felt hugs in-the-flesh.
-
-
I am glad that I know this before Vegas because I would have worried about her all through the trip. I tried to be a good friend to her but in some ways I was not. As her breathing became more and more laboured, I began calling less and less. I went from daily to every other day. And then 3 days between calls. I know that I have the same mets as her and I could see my future... and I dont know if I could pull it off to be as courageous, caring and honest as she was. Her husband said she looked forward to my calls and now I feel like I let her down.
Thank you for your support and kind words.
-
Dreamwriter, so very sorry for the loss of your friend, you did not let her down. You left her with happy memories and like faith I believe she is present with the Lord at this time.
This is just another fly by because I over slept, didn't get to bed until after 1am, I have to make several dozens of cookies and cupcakes and have them all at the fairbarn before 4:30 for the children's festival. So gotta get baking soon.
Hope all has a wonderful day at the beach, will check back when I get everything done or get home tonight. Love and hugs to all.
-
dream-girl........... we all have remorse over the 'extra' we might have done -- had we had more time, had we had more courage, had we had the idea just a tad bit sooner and on and on that merry-go-round can travel.
rest assured, from my vantage point you found a healthy balance of supporting your friend and giving yourself the needed space to deal with your own similarities of dx. not an easy tight-rope to walk. you were there for her, while buffering yourself in the process.
well done, good and faithful servant.
i'm glad that you know the truth -- before you travel. use your gathering to shore up any lingering doubts, they will all assure you that you acted as a good friend.
xx00xx00xx00xx00xx
as my other-Regina once told me in person, in her kitchen.... her father always used to counsel her with the sentiment:
"you can't saw sawdust."
i had never heard that expression previously and it's given me a great deal of insight...... what's done is done & if it serves no purpose, then let it be -- if you can learn from it then do so
-
dreamwriter. I send my condolences to you. There are always thoughts and deeds regretted after someone is gone. Thoughts of asking that one question you meant to ask. Telling that someone how you love them so very much one more time. Seeing the sparkle in their beautiful eyes one last time.
I know. Caring for my husband for several years I still have wonders. I know the question I will ask him when we meet in heaven. His eyes were breath taking and his voice like music.
Through it all we must remember the good times and embrace the memories that may bring us to tears sometimes but those same memories are our journal of our mind.
We just lost another young woman to cancer in my town. She fought long and hard.
It seems there are way too many in the obits who pass from cancer these days.
May we all be strong to see another day.
-
Mary Lou. That is one beautiful soul ascending into heaven. Beautiful.
We have one more big wedding near Sand Dune Street today.
Rain fell last night to make everything Sparkle.
Cloudy skies are welcomed. I love the cooler weather and it won't phase the bride and groom.
We could have full out sun by Wedding time.
Gift wrapping needs to be done early in the day.
Spar. I'm so happy to hear how much better work is going. I hope your feet are happy feet!
Celia. How is the mouth? And the head? I sure hope all is painless today. I couldn't believe
how dental problems popped up right in the middle of chemo. My dentist told me that is a
usual occurance while getting chemo treatment.
Interesting "Community Beach" sign.
Footsdeb. I hope all is well with you and that you will have some much needed things done
soon by the good people of your church families.
Janny. More treats coming your way. Are you going riding this weekend?
Lisa. Margaret. Wings. Amy. Shrink. Luvs. And all. Hello. La Orana.
-
Hi everyone..I am a little under the weather today so will stay home and keep my bed warm
Faith...what fun you are having..wish we could all join in...at least we can do it in cyberspace..
Sahalie..that beach looks nice a friendly...enjoy
Dream..sorry about your friend..why not look at how much you did do rather than what you didn't...you were a good friend to her, period...
-
Lisa. I hope you feel better soon.
Be well. We miss you when you are away doing other things.
Here is a "Feel Better" tray for you to have at bedside.
Love. The Beach Crew.
