    Eric, LOL.  Salad dressing? Vinegar and oil usually. Although I suppose pulling the stem out of kale count as dressing out the kale...

    Eric:  I always took Airborne when I was trying to avoid other's colds or flu.  I learned about it when I was flying a lot but now use it at home too.  It's easy to take & has lots of extra vitamins/minerals/etc.  Good luck.

    My dinner was similar to Laceys. except I had chicken cacciatore instead of parmesan. It was good, but the spaghitti squash I made was delicious. I Cut it in half and scooped out all the seeds, season with salt and pepper, then put them cut side down on a cookie sheet and roast them at a 400 degree oven for an hour or until tender. When done take two forks and shredd it so it looks like spaghitti. In a pan melt 1 stick of butter in pan until brown looking (brown butter) take a whole package of fresh sage leaves and fry in the butter until crisp ( I used 2 packages of sage for more flavor) remove the sage with slotted spoon, put on a paper towel. frying the sage really makes a difference so don't skip that part. Pour the browned butter over the squash, salt and pepper to taste and lots of  parmesan -reggiano top with crumbled sage. Recipe didn't call for pine nuts, but I toasted some pine nuts and topped it with some of those too. I was never a fan of spaghetti squash but love this recipe.

    Debbie- The spaghetti squash sounds good.  How are you feeling?

    Eric- I hope your daughter and Sharon are feeling better.  I have had success lately fighting germs by taking probiotics, echanacia (sp?), vitamin C, D and B.  I got my voice back after a month once I did all together.  Now DS2 is sick with a cold and I am hoping to not get it by taking them.

    I think I have the winter blahs.  I feel like I cook the same thing all the time.  DH has been working a lot and it has been freezing out.  So I have been stuck in the house a lot.  Cooking, cleaning, laundry etc.  Tonight I am making american chop suey.  I love the version I make.  Instead of tomato sauce I just use two jars of canned tomatoes from my fathers garden so it is kind of light.  Dh is not a fan so I only make it like once a year.

    My MIL seems to be declining, losing weight quickly, loss of appetite and tired.  Where she is not having any treatment except starting the femara, we don't have much info.  She did go for blood work today so once we get the results from that it should give us an idea of where she is at.

    my husband finally said dinner didn't sound good.  I told him what was dinner...his reponse was "augh- ok."

    Laurie- So sorry to hear about your MIL not doing well. That was one of the reasons I had come here last night to see how she was doing. (((hugs))) to your family.  How do you make your americian version of chop suey? I have never made it home made before, Even without your dads good tomatoes I would like to try it.  I am hanging in there, seems like I am doing better on the machines each week I go a little longer, I actually enjoy going there, it gets me out and gets me moving which I know I need.

    Eric-Hope DD and DW are doing better, glad you got the shot and not having any symptoms.

    On the 29th will be 1 year since my sis passed, it feels like yesterday to me, It is also mine and DH anniversary so I feel bad that I won't wont to celebrate it with him this year, just too hard. 

    Seems like the dinner thread has been slow lately. Since DH is not a fan of speghitti squash, I made him a sgeghetti carbonara, He thought ti was delicious. Saute some cut up bacon and onions and garlic,in some EVoo while your speghitti is cooking, in a bowl whisk about  6 eggs, drain pasta (reserving some pasta water) mix the bacon,garlic and onion into the pasta then whisk in your eggs stirring constantly so they won't scramble, keep stiring until incorparated about 3 minutes or so add tons of parmesan cheese S&P to taste. The reserved pasta water is in case your pasta is a little dry you can pour a little water in to moisten it. A quick but easy delicious meal served with garlic toast.

    Debbie, the carbonara sounds delish. Of course I'm a fan of all things pasta. Sorry about your anniversary. Let's hope next year's better.

    Laurie, sad about your mil. Not much to be done there I guess. It must be hard for you.

    It has been quiet here, we seem to be missing several people. I hope it's just because everyone's busy. I do worry when we don't hear from people.

    Well Laurie, good thing DH tacked that "ok" on. ;) You could remind  him that he could have been as lucky as my DH who got to have a combo of two nights of leftovers tonight! LOL! 

    I know what you mean about the winter blahs. I am having my own little case of them. Even with all my exercise efforts I find myself feeling moody....partially because I am not crazy over the heads I do volunteer work for and have to work with them this week....and also because the side effects from my tamoxifen are driving me nuts....the cognitve fog makes every project I do so much more difficult than it needs to be....and disturbingly, my eye allergies have  started up full force. For darn sake, it is January, not June!! Feeling physically and mentally not up to par is really bugging me, tho at least if I decide to take a long cold walk, there will be no pollen problems! Today I went to the Fitness Center to work off some steam, and was horrifed to see that our usually calm gym was wildly busy (January resolutions, I suppose!) ..first time I had to wait a long time (or at all) for a treadmill, but managed to get that done, then enjoyed my stretching class....always feel better after that.

    Also had my yearly PE today and learned that I am 25 lbs lighter than last year at this time. That was exciting......not too exciting is that I have to start seeing an allergist for these damn tamox effect itching allergies. I keep trying to shed docs and keep being unsuccessful. Drat!!

    Tomorrow I need to be ready to do a workshop with first graders at 8:30AM, when it will be (hopefully) a bit over  0 degrees out. I feel out of practice with this getting to school on early cold mornings! Guess I should be thankful I'm not doing it in Wisconsin  or Minneapolis!

    Lacey- 25 pounds lighter?!  That is an amazing accomplishment!   I had just started working on my abs with exercises when I tweaked my back skating with my boys.  At least I have a while to go before bathing suit season. 

    I was lucky with dinner DS1 loved it, DS2 choked it down and DH ate seconds because he was hungry but did not complain.  He knows I love it and it reminds me of child hood.  I only make it maybe once a year.

    Debbie-  I am so glad PY is helping you and you are enjoying it.  The recipe is so simple. 

    1lb hamburger

    1/2 green pepper diced

    1/2 onion diced

    brown all three together till done

    cook 2 cups macaroni and drain, add meat mixture and two cans crushed tomatoes.  Salt and pepper the meat mixture to taste.  Put the heat on low once all combined and let simmer for about a half hour to absorb flavors.  Give it a stir every 5 min or so.

    Yes, the whole thing with my MIL is hard.  I am supporting my SIL who is caring for her via text and phone through out each day.  Dh has a hard time talking about it.  I am hoping the blood work is in tomorrow so we have an idea what is happening.  She still will not acknowledge what is going on- which does not help.

    laurie - your recipe was my MIL's go-to for the kids when she and my FIL were going out for the evening.  They called it "Mulligan Stew" - no idea why, but this same recipe is included in the family recipe book and all the kids loved it.  Sorry about your MIL - I know it is hard.

    Debbie - when I make carbonara I add spicy Italian sausage and mix my eggs with a little heavy cream or half and half - it makes the egg coat the pasta well.  Sorry about the convergence of the anniversary of your sister's passing and your wedding anniversary - this is very familiar to me as my dad passed on my best friend's birthday, and my mom on her own birthday, which is another very good friend's birthday, and Cinco de Mayo - it is an ongoing problem for me.

    lacey - congrats on the 25 lbs - awesome accomplishment!

    Laurie sorry about your MIL. Hope the blood tests tell you something. And that recipe is very similar to my Mom's American chop suey. Except instead of tomato she used tomato soup. But it made a lot and there were 10 people to feed. We were never hungry. 

    Lacey! Congrats on the weight loss! That's fantastic. 

    Debbie the past carbonate sounds wonderful. On the Chew today they did that recipe. I am glad you got to do your exercise. 

    Couldn't stand chili for the third time in a row so froze the rest. Ate pasta with jarred sauce. It was good. 

    Stay warm. It's just -9 here right and supposed to drop further. All the schools closed around. So everyone stay warm. Much love.

    specialk- I have used sausages in this too and have added cream but when I want less calories I use this but good both ways.

    I have a new favorite food, it is seasoned Kale in a can by Allens it is so goood! I put a little butter and parmesan in it so tasty can't get enough of it. dont know if you can get that brand where you live but if you can give it a try.

    So to make it up to DH I am making chicken cor don bleu with sauce, rice and green beans.  DS2 is sick with a cold and fever and has been so quiet all day.  So not like him.  Also he is not eating where he is usually an eating machine.  Hopefully he will feel better in the morning.  We had a quiet day by the fire today watching movies, snuggling and napping.

    Yum Nance and Laurie! Wish I were at either of your dinner tables! 

    DH is at a meeting, so I was going to make myself an omelet, but I took the path of least resistance and had two apples with some cheddar and gouda cheese on these delicious Traders' Rosemary Italian Style Crackers I had leftover from Christmas. It actually hit the spot, and nothing to clean up! :)

    Thinking of Susan these days and hope she is doing well.

    Day from hell yesterday...car wouldn't start...late for an interview within the same org that I am working for...total waste of time, as she basically lied to me about what the hours were (she really wanted someone from 9pm till 5am) who works those kinda crazy hrs? Not this old gal!! An hour drive for me to hear that? She could have called me...did I say we work for the same org? and we have e-mail. Sooo because my DH saved me and picked me up and I used his car, had to pick him up after work....supposedly around 8pm, but had a stubborn client that wouldn't leave the office (high on heroin) and had to call the cops, never left office till 9:30. Poor DH that works out in the cold was tired and frozen and hadn't had any lunch was not happy. Thank goodness I had some chicken fingers all cooked and we did a chicken salad. Whew.... lets see what today will bring.

    I am thinking those same cooked chicken fingers cut up with peppers, onions, tomatoes and some orzo all in one skillet and will be all ready....just in case!! ha ha

    Oh Carrie, condolences on having such a crap day! Not sure if I feel worse for you or your DH. Bad stuff all around...glad you had dinner available...and I like the sound of tonight's melange. :) How annoying when people in positions of authority are basically inconsiderate and use lying as a strategy to fill a job. The only people I know who take those shift hours are new college grads who are needing a tide over until a saner  job materializes....hope something seriously better comes up for you. Meanwhile, keep warm....can't imagine how cold it must be in upstate NY.

    We are back to trying to deal with the overstuffed freezer....I thawed two beef burgers and a lamb burger for tonight, loaded them up with tomato, lettuce, red onion and condiments and then made a side of "power veggies" (baby kale, baby chard and baby spinach) from Trader's, which I sautéed with chopped onion, garlic, fresh mushrooms, and a splash of balsamic vinegar.

    Made oxtail soup today. Tasted good on a cold night wIth some rosemary garlic bread.

    Tomorrow dh and I are going to some wetlands on the Mississippi to watch eagles and a large  flock (hundreds) of trumpeter swans.

    Well the blue cheese potato soup was a bust. The potatoes just barely cooked in the time it said so we had potatoes with blue cheese. DH said they were good but not soup. Not sure it would have worked because the only other liquid it wanted me to add was water and chunky mash the potatoes.

    I think frozen pizza tonight. Just cannot make myself cook anything. Can't tell if I'm trying to come down with a cold. Hinting we may have some snow next week, maybe just a bit or maybe a bit more.

    I wish I'd baked some plain chicken. Just what I'm craving but will do with pizza if I can find it buried in the freezer. Brrr.

    Carrie - sorry about the evening from you-know-where. Job interviews to nowhere, dead cars and looney patients. I was basically lucky when I was doing hospice - not too many car problems. Hope tonight is a better evening.

    Thanks everyone, last night much better.  Hubby and I decided we needed a night out after work, so he picked me up from work (car still wouldn't start) and we went to the local pub for a steak dinner, beer, and Syracuse basketball. The seasonal restaurant located at the marina that we keep our boat at happened to have been having their Christmas party here at the pub.  Got to see everyone that we only see during the summer. Fun night and no cooking.

    We are trying our best to just find fun things to do on weekends to help us get through this long, cold winter. I NEED some sunshine!

    Tonight we will do leftovers, to try and clean out the fridge as well.

    Anyone got fun superbowl plans? Or fun superbowl recipes?

    supper was a chicken breast cooked in a pan with some lemon infused grapeseed oil. I had some corn and made a sauce for the chicken with a bit of Hoisin sauce AND Some Orange juice with the orange segments and a tiny bit of Tiger sauce.  It turned out really good. Much love.

    No - I'll probably watch the Superbowl but DH won't. But I will have to take a break for Downton Abbey at 8 pm. Had one of DB's Christmas deep dish Chicago pizzas last night. DH gets the last piece tonight. I just had toast and hot chocolate. Still fighting tummy not feeling well in evenings. Didn't help that we were under grass fire warnings all day. I think we will get a little - emphasis little - rain next week with maybe bit of freezing rain/sleet on Sunday. We surely need the rain. My rosemary bush was dry, dry and I never water it, even in the summer. Dumped 2 watering cans full on it. Same thing with Texas sage, looks terrible but stems are green inside. Does not bode well for the hay crop.

    Monica - so funny about the chicken. We were clucking for about a week with so much chicken. I must have moved 3 packages aside to get to the pizza so I guess we need to get back to it. I bought a can of Pride of Szeged Chicken Rub. I use their sweet paprika and this caught my eye - garlic, basil, paprika, oregano, salt and "spices". Don't think you can get any more "spice" than garlic, basil, paprika and oregano. Maybe old fashioned pepper. Saw some recommendations on BBQ sites for it. Mine will most certainly be in the oven.

    Luvmygoats, I hope you get the rain you need. We just got 2 more inches of snow today but the temp is up to 30 so 6 of one half dozen of the other! LOL.  It IS winter in WI..I USE My Cast Iron Fry Pan A lot. Or my foreman grill too. When it's just me I find it hard to turn on the oven for just one chicken breast. Even 2 pieces seems a bit wasteful..

    Monica, love tiger sauce!

    Tonight is whatever the store has to offer me for inspiration. More snow and ice on the way so I'll probably be baking again. Dh has requested the PITA cinnamon bread, so that will take up a whole day. Whole chickens are on sale Saturday here too, so I'll try to get out to stock up.
