A girl at work gave me some venison (a loin roast and a few steaks)
I have never cooked venison before, so after much research I cooked the loin. Could have been better, but not too bad. I ate a few pieces and my son ate the rest of the roast. LOL!
I sent the gal a picture and she said none of her roast ever looked that good. It's all about the plating... hee hee

Good morning all,
We've had a few days of warm weather...enough to start the Spring fever list of things to do. So I shopped for bird seed while I was out looking for replacement filters for the refrigerator. I bought some sweetness for the humming bird feeder too although the garden plan has plantings that will attract them naturally. It felt good to fill the clean feeders and watch the guests arrive. The birds quickly learned how to swoop in and out as the dogs made their presence known...I was tossing balls and frisbees. Then I went back to tax prep...yuk.
In the last couple of days I made a few tasty meals. I cooked chicken thighs in a pan on top of the stove with salt and pepper, olive oil, green pepper and garlic clove...let that simmer for a bit until the green pepper was soft. Then I added a can of chopped tomatoes and let that simmer another 45 min or so on low heat. I cooked enough for leftovers...so last night we had the leftovers over brown rice.
A couple of days ago, I made baked tomatoes filled with rice and a yellow pepper stuffed with buffalo meat and rice. I cut the tops of the tomatoes an scooped the insides into a blender...pureed and put that in a bowl with 1/2 cup of uncooked rice, added dried basil (my garden isn't planted yet), some oregano, salt, pepper and two garlic cloves....let that sit for bit while I peeled potatoes and fussed with the stuffed pepepr. I removed the garlic cloves before I returned the tomato mixture back inside the scooped raw tomatoes. Then I placed them in a baking dish and put the cubed potatoes around it. Baked at 350 F. for 45 min. (note: I used brown rice and I like the rice crispy when done). We ate the stuffed pepper for dinner and had the baked tomatoes the next day for lunch.
A few days before that I ate pickled beets followed by a bowl of ice cream...chemo recipe! My DH just shakes his head.
On that note...back to tax prep...I just munch on almonds while I do that work.

Marylin good to hear your appetite is improving. Your stuffed tomatoes sound delish. I am howling over the pickled beets and ice-cream.
I love pickled beets!! Not necessarily with ice-cream. But heck, sounds like something I might do during a hormone storm.
I made a curry cabbage dish. It was much better when I let it set overnight, however, I need to look that recipe up so I can share it here. I am too lazy to go downstairs and grab my cookbook.
I am starting a 'weight race' tomorrow. I really want to shed the weight I have gained in the last year and a half. Weigh in tomorrow. I am not too thrilled. According to my scale...I have a lot of work to do.
Anywho. I juiced today as I had a severe bout of acid reflux yesterday. morning zinger is 1 apple and a knob of ginger (this magic combo has been helping immensely with my acid reflux) My green juice consisted of Romaine lettuce, spinach, lime, celery, cucumber, apple and a pear. It made 2 juices. I had 1 in the morning and just the second for lunch. Juicing is so much nicer to my poor gut.
I just need to combine it with some healthy meals and increase my exercise which I have been so lax about recently
Still cold and snowy in southwestern PA. I am cooking my son chicken drumsticks and rice for tomorrow.
He just got a job at a local bar and restaurant. The place allows them to order from the menu free of charge. I like that part since it will cut down on my own cooking for him. LOL! They started him as a dishwasher and after 2 days are talking about moving him up to a line cook. He is excited as his dream (since he was in grade school) is to be a cook. We'll see how he likes this intro into the business.
I would also like to see him make time to cook some nice meals at home......I am going to talk him into planting a garden with me this year. I have done a lot of limited pot gardening since I had been on my own the last 3 years. Now that he is back...look out.......I have someone to hand a "honey-do" list to

Blundin, this quote stuck out for me and seems to fit a lot of comp/altie health advice:
"There is a food supplement industry that has done a really good job marketing itself, suggesting that if we take these molecules normally found in food we will have better health and, well, a little is good so a whole lot would be better,"
The more I read about these things, the more I become convinced that we need to eat a varied and balanced diet and that good enough really is better than overdoing things.

Momine, ... I noted that sentence too. It seems all that begins with good intentions can be corrupted or abused in the 'right' hands. I thought to GMO products for example, to feed a starving world. I don't want GMO experiments in our food chain. Is there no way to find a balance between public interests and greed? arghhhh.

I have a premature Cinco D Mayo recipe.
In crock pot.....
Chicken breast. (I make 4)
1/2 packet (or to taste) of mild-medium taco seasoning sprinkled on chicken
1/2 to 3/4 jar of salsa ( I used mild)
Cook on desired heat until tender. I started on low then switched to high for the last hour.
I suck at recipes cause I just cook. You will smell it when done. I am weird. LOL!
Shred and serve on tortillas with sour cream. YUM!

I have chicken in the crock pot again. This time i have drumsticks and breasts with onion soup mix sprinkled over top, russian dressing and apricot preserves, I also sprinkle a little garlic powder and add just a little water. strange sounding combo except I saw it made on our local PBS station (they do a ton of cooking shows). sometimes I use pork ribs and add a little brown sugar to the mess.

Here's an easy to make seasonal Hot Fudge Pie. It is perfect for valentine's day...though it is not heart shaped:
1 unbaked pie shell, homemade is so much better
1 cup chocolate chunks
1/2 cup butter
1-1/2 tablespoons cocoa powder
1 cup sugar
1 tablespoon brown sugar, packed
3 large eggs (beaten)
2/3 cup evaporated milk
1 tablespoon Coca-ColaBake
crust 8 minutes at 350 degrees. Melt chunks and butter together in a
large bowl in the microwave; add the remaining ingredients and mix well.
Pour mixture into the prebaked crust and bake 30 minutes in a preheated
350 degree oven. Don't over cook. Serve warm. Top with real whipped
cream or ice cream. -
I posted yesterday and it was completely lost. I made cottage pie (as opposed to shepards pie) It turned out yummy
I also made Rueben soup
I will include the link. All I can say is it is low carb. LOL I used 7oz of corned beef chopped up and bavarian sauerkraut instead of buying caraways seeds as I wouldn't use them for much else and they are expensive.

Today will be a salad day. I mostly try recipes out on my teen son. LOL No feedback on the soup but he really like the cottage pie.
A coworker is going through chemo for non-hodkins lymphoma and a meal train has been started for her. Going to be a long road. She has a young family (3 kids under 10). If you ladies have some good family friendly/crowd pleasing easy to reheat recipes to share-I look forward to it.

*Sweet Chops Recipe*
6 large pork chops
8 tbsp salted butter (2 tbsp to brown chops) (6 tbsp to drippings)
1/2 tsp salt
1/2 tsp sage
6 tart apples, cored and sliced
1/2 cup seedless raisins
1/4 cup firmly packed light brown sugar
2 tbsp all-purpose flour
1 cup hot water
1 tbsp apple cider vinegar
Brown chops in 2 tbsp butter in skillet; sprinkle with salt and sage. Place in baking dish and top with apple slices and raisins; sprinkle with sugar. Add 6 tbsp butter and flour to drippings in skillet; blend. Add water and vinegar; cook until thick. Pour over chops. Bake uncovered in moderate oven (350*) for 1 hour.
