Welcome- I'm new too. I checked out your recipe - it looks delicious and healthy...I may have to substitute pumpkin for the sweet potatoes however. Haha -

I recently had a re-excision done and before the re-excision, I met with a nutritionist who recommended that I switch my diet to focus more on fruits/vegs and reduce intake of red meat but also increase intake of chicken or fish and reduce intake of processed foods and sugar. This seems so overwhelming to me. I was wondering if there were any recipe books or places to start that you would recommend. I will have to permanently change the way I eat.

Hi hobbe, Try "The Cancer Fighting Kitchen" and "One Bite at a Time". Both cookbooks written by Rebecca Katz and targeted for cancer patients. Good-luck!

Hi ladies. I have been reading on this thread and look forward to trying out some of the recipes you have posted. I love gardening too, so it is nice to read about all of your gardening success. I am living in a place right now that requires me to "container garden", so I am going to put together a small fall/cool weather herb pot. It may be getting cool enough here now to get it started.

hobbesla4, I can recommend a book to help you along the path of transition. It is not a cookbook but a nutrition/life style education book with a selection of recipes in the back. "The Whole-Food Guide for Breast Cancer Survivors" by Edward Bauman, MEd, PhD. & Helayne Waldman, MS,EdD. Any of the cookbooks by Tosca Reno are good, she is guru of "Clean Eating". Well, I ran out of steam and ended up freezing the persimmon pulp. Brought the seeds and skins to our hide-away and will let the critters distribute them throughout our 80 acres.... I'll let you know when I figure out what to do with it. -

We've had most of these cuts and find this healthy alternative enjoyable. We are trying to cut down the cholesterol and this helps. I've become a fan again of oatmeal in the morning...another helper.
I got an upgrade recently that I did not want and did not use miles to obtain. I went from stage 1b to 2a/3 lung cancer. I'd like to find a thread or site for LC as good as this one. If you know of any, PM to me? I love reading this thread. Our comfort food is the best! Nice to see new names and always warming to see familiar names.

Marilyn, sorry to hear about your upgrade. You will be in my heart and prayers as you face this new challenge. I just got back from a wonderful trip to Italy and Norway with 2 days in London at the end to see friends. I thought of Marilyn while I was in Italy eating all of the wonderful food there.

I just got back from Norway where they have waffles with coffee, much the way we would have a donut and coffee. So I have gotten out the waffle iron and I'm trying to re-create my time in Norway. :-) -

Mandy1313, Welcome back. I'm glad that you enjoyed your trip. Waffles with coffee sounds like a good idea. Maybe sandwich the waffles with some dried mangos and add a dollop of cream cheese?
I tried to get ready for next week. I didn't know what to expect of my energy levels or mindset, so I went to the super market yesterday to get some items in the house. I had already wait listed a free range turkey, but I got cold feet waiting for the call. The supermarket had a two for one sale on Honeysomething or others. So I bought them. One is in the frig thawing. Then...yep, I got the call that there was an extra 16-20 lb. free range turkey available. We also went to Medford Food Coop and found several free range. We didn't buy it. I found myself wanting to donate the supermarket turkeys to a food bank. We found lots of other tasty items...like dried mangos...dark chocolate covered ginger...dried peas...beautiful egg plants, the best I've seen anywhere in the valley...and a warm, wool hat with ear flaps and ties, you know the kind?
All week I was getting ready for my first chemo infusion so I kept the meals light...oatmeal with dried fruit for breakfast or poached duck eggs on toast. I made pizza for lunch with the refrig pre rolled dough...not too bad but not great. I found pizza flour at the Food coop and yeast to make my own dough.
Last night we had cheese and veggie stuffed portabella mushrooms with a side of pork cooked on the grill. DH cooks everything on the grill that he can.
This afternoon was the chemo infusion. It wasn't as bad as I imagined...at least not so far. I'm as prepared as I can be for the potential side effects. They also had a problem getting a vein...same problem they had in the hospital. My sister told me to lift weights to build of the veins. I'll get on that. You'd think that keeping a house and garden clean with two dogs and a DH would be enough to build up veins! The nurse said that she didn't realize I was so 'fragile'. Not sure if that was sarcasm cloaked in medical speak. The other option is a port but they usually reserve that for > 7 times. I'm having 4 times.
They gave me a steroid to take the day before and after. It seems to make me talk alot (and write more). It makes me hungry too. We are having 'big salad' as we call it, for dinner. I hope my luck holds out for appetite.
Thanks all for your support in these days. It means on heck of a lot. I'll hope to write our Thanksgiving saga next week if all goes well.

Marilyn, hope you continue to do well with the chemo and enjoyed Thanksgiving.
My daughters both came over Wednesday night and stayed until Saturday so I was in heaven. We did special cooking for the once in a lifetime merging of Thanksgiving and Hanukkah. Wednesday night we made traditional latkes (potato pancakes) but on Thursday we made pumpkin donuts and a pumpkin challah. Both were absolutely delicious and such fun to make working with my gals.

Marilyn I have not been on here in a long time and missed the whole thing about you having lung cancer. So sorry to hear that and I pray that your chemo goes OK.
We had a great Thanksgiving. My SIL decided that she did not want Turkey this year and wanted to do Prime Rib. So she bought and DH cooked it and it was fabulous Would not mind doing that again next year. -

Sherryc and Teka you have my mouth watering for pork and stuffing.
First to say thank you all for your encouragement and patience. I've been learking but not writing. I needed to get a handle on the side effects, etc. I tended to minimize my expectations. Suffice it to say prunes, celery and leafy veggies are a favorite in these days. Also high protein foods so eggs, meat, nuts...I ate a lot of turkey leftovers :-)
My white count is down this week, so I got two shots and they told me to cancel a dental appointment for cleaning. I'm not going around to stores and that's a bit disappointing. I'll keep my eye on the last infusion date of Jan 24th and look forward to better days. I should add too that this cancer is a primary lung and not mets. My next infusion is on the 13th.
Teka, I promise to take it easy. Most of the house is organized from the move. I'm catching up on writing and I just took the time to learn how to post pics here again. It's much easier than before....soooo here is our Turkey of last week. I put it in the oven at 7:30 am and went about organizing the day. I completely forgot to baste it and I left the lid on the entire time. It still turned out delicious or so my family graciously said. I made cookies that I bought from the school girl selling dough door to door. I also made pies with prefab crust. Fortunately, my cousin's partner made a pumpkin pie with whole wheat crust that was out of this world. So was my cousin's home made cranberry sauce with oranges. I sliced up sweet potatoes and put them in the oven with some brown sugar and butter, covered with foil...easy enough. Since I'm feeling better this week, I might just cook some things up and put them in the freezer for when I don't feel so much like playing in the kitchen. I made pork with saurkraut and apples the other night and froze the intentional excess. I'm fortunate that my DH enjoys to cook...it's just that his recipes are predictably Italian:-) I want to eat the red sauce but my digestive system requests that I go a bit lighter.
It's lightly snowing this morning. I like it. My lap top is station on a desk that sits in front of a window to our back yard. I watch the birds and the neighbor's cat who tries to catch them. I think I hear the birds snicker. I saw a racoon in early morning crossing the yard. The local paper is having a contest for wild bird pictures. I try to dash outside for a clear shot but the birds don't wait to pose. If I take enough shots, there must be one good one in there. There are two big blue birds the size of a crow who arrive and tap the oak branches with their beak I think for insects.
Thanks to everyone for your kindness and I'll try to get more pics up now that I have no excuse...it is so easy.
The snowflakes are much bigger now.

Hello everyone, nice to see the new faces, I was so sad to hear about Michelle. I have been absent as of late but love the book recommendations, We eat well but eat too much we are making changes but slowly, our goal in 2014 is to do better with the fruit and veggies and less meat and we have lots. I have been into salads for lunch and my favorite is mixed or romaine greens, a small chopped pear, apple works too, a few olives, a couple of dried tomatoes ( I dry my own cherry tomatoes and then freeze for winter salads) and a little gorgonzola cheese, any blue or good parmesan works too. I make a homemade dressing, white balsamic vinegar, good grainy mustard, olive oil, a toucjh of honey, salt and pepper. you can also squeeze a little fresh garlic or ginger into it for variety. We have also been into waldorf salad, we use an apple, walnuts, or pecans, celery, raisins or dried cranberry's and then make a dressing of plain yogurt, orange juice or apple cider (we make our own so have lots) and a hint of maple or honey. I made too many cookies so have been busy giving them away but eating way too many. Jan 1 all must leave the premises!!
We are looking forward to enjoying family the next few days, I hope all are surrounded by those you love sometime during the holidays. Doing well but entering my "TEST times, ultrasound, bloodwork next week, MRI last week, 6 mos mammo and bone scan early January. Can't complain all worries this year have been benign and hoping for a much less eventful medical year for all of us in 2014. Will try to get on more often. Merry Christmas and Happy Holidays to all.
