    It is a balmy -10 with -32 windchill good day to stay inside!!  Told work I would not be in can work form home.  I am making fried chicken today, we marinate the chicken in dill pickle juice for 2-6 hours, drain, apply favorite breading, we use flour, paprika, salt pepper, chilpolte powder and garlic powder, fry in small amount of oil until crisp, place in rack in oven to complete, corn, broccoli, and baked apple slices!  I have goose grease from Christmas so will use, but usually l use peanut or canola oil to fry in.  Hope all have fun tucked inside, when done with work project will continue with my baby afghan so far coming along ok.

    OMG Teka that pic is so funny!

    It really is so cold. I am so glad I am off from work today and holed up in my house.

    Hugs Marilyn. I didn't have chemo, but I was admitted for cellulitis and had very little and then no venous access. My sister insisted on an alternative and the doc agreed to have a PICC line placed. Best thing I had going for me and it wasn't painful at all.

    Mandy, so cool you try different traditional foods.

    I do not know how our annual New Years tradition of crab cake dinners started.  My sister also had a salad, roasted asparagus, and a simple pasta dish. I made a very simple dip, easier than most chicken buffalo dips....

    Soften cream cheese and spread over bottom of a small baking dish.

    In a separate bowl mix 1 large can of chicken (or fresh if you desire) with buffalo hot sauce. I just added it until it was excessively covered (I am so bad at measuring anything)

    I put a little sour cream and mayo together and put that layer on top of the cream cheese then the chicken mixture. I sprinkled some blue cheese on top and bake in the oven at 400 for approximately 10-15 minutes or until bubbly. I put chopped green onions on top as a garnish and served with pretzel chips. 

    I am a hot mess of a cook! But somehow manage. ;)

    Picture is priceless and so on!!  I can't get to my bird feeder the drifts are taller than me so I threw some bread out to them it just sits on the drifts, they still have food so will just throw out on the drift for a bit.

    Happy New Year all.  I got a new cookbook for Christmas and can wait to try some of the recipes.  Every recipes used cream cheese.  I have been reading and combing through it.  All the food on here sounds delis.  New Years day we went to a friends house who had a wonderful dinner for us.  Ham,Pork tenderloin and stuffing, cabbage, black eyed peas, sweat potato souffle, homemade biscuits, roasted potatoes, fresh fruit salad and three different deserts.  I was stuffed to say the least.  She is a wonderful cook.

    I made a great turkey/vegetable soup the other night.  It was very easy and hubby loved it.

    Ground Turkey, large onion chopped, 1 squash-chopped  (yellow or zuchini), mushrooms, 1 red pepper-chopped, 1 can crushed tomatoes, tomato juice cocktail for the stock with some chicken soup base for seasoning. Also salt, pepper and 2 teasp ground cumin.  Saute meat and vegetables, then add everything else, bring to a boil and then turn town and simmer for about 20 minutes. Hearty but so good with all the vegetables.  The name is Fat Flush Soup.  LOL.  The name is why I looked at the recipe but it sounded so good and healthy which it is.  Not sure if it really flushes fat but it is good.  You could add more vegetables if you wanted or even leave out the turkey and add more veges.  I used small portabella (crimini) mushrooms which have so much more flavor than white button mushrooms.

    I put the recipe in my computer recipe software and it came up to 374 calories for 2 cups which is a large portion so I will be making it again.

    Teka, Do you have a pic of the thumbs up downloaded and enter it here?

    This week, I have been juicing and have salad or soup in the evening.

    I have been having major stomach/gut issues since my surgery in 2012 and my weight has increased as well.

    I am trying to eliminate the usual suspects like dairy, refined sugars, wheat etc. Sadly, I eat mostly a clean diet, but know I have more work to do.

    In the meantime, I am making a basic root veggie soup-to be blended when it is done cooking. I will make homemade chicken broth tomorrow, but will probably eliminate all meat after next week. 

    I was given a vegetarian cookbook for the holiday and a light cooking one too. Look for me to be posting healthy dishes ;)

    I made my son sweet sausages and a pasta dish. I really need to cook dishes for him that I can eat. LOL!

    Time to check on the soup!

    carolynn79, enjoying the healthy food exchange with your friends...it just makes eating that much more fun. Can't wait for my appetitie to return. 

    They called me in on Tues for the infusion...got me on the first stick...no coffee in the AM and pumped in the water til I could burst.

    Egg salad sandwiches is all that went down today...with a few almonds...and more water. 

    Post chemo days are the pits. One more to go Jan 30.

    Marilyn, glad that they got you on the first stick.

    I had a reunion with a high school friend--I hadn't seen her for 35 years. And we could pick up like we never left eachother.  She lives on the other coast so I won't get to see her for a while and now I miss her alot!

    Teka, I didn't go to a school reunion.  I met up with a friend I hadn't seen for many years and had a wonderful time--we had our own reunion.   I have never been to an "official" reunion either, but this was special.

    Marilyn,the link is nice thanks, we are definitely dreaming of spring with this winter, snowing again with high winds, brrrrr We go to Kauai in 2 weeks, we can't wait!!  The warm weather and fresh foods will be so welcome and yummy!  We are having a local home grown chicken today, I brined it yesterday, water, salt, pepper corns, summer savory some pure maple and apple pear cider.  Today I drained it, put pepper, summer savory, sweet paprika and drizzled a 1/2 of fresh lime over it  I stuffed it with an apple and the  lime half.  We are also having  baked sweet potatoes and roasted cauliflower, it was frozen but it works ok.  I am making a glaze with apple pear cider with some apple butter and chicken liquid, this will also be good on the sweet potato.  We will have canned plums for dessert.  We are commited this year to using less processed foods and using what we produce, can, freeze.  WE get into ruts where we go out or buy items we don't need.  I canned pears in pineapple juice and we used it in a stir fry instead of pineapple, it was good.  I will make more next year.  Hope all stay warm and enjoy good food.  I hope all not feeling well or undergoing treatments soon feel better.

    You are all welcome to come visit anytime!  The meal was very good, probably the best chicken I ever roasted!
