    Teka, what we do a lot is to have a sturdy salad instead of a starch. In winter that is typically a grated salad of cabbage and/or root veggies. We dress it simply with lemon and olive oil and sometimes add chopped nuts. Hazelnuts go particularly well with root veggies. You can use carrots, parsnips, beets, celery root etc. It is cheap and easy (if you have a grater attachment on your food processor, but even by hand it is not too bad) and these kinds of grated salads will keep a day or two in the fridge.

    Good day to you all! 

    I made some pea soup recently. Dried beans soaked overnight. Cooked with vegetable stock, carrots, onion, sage and thyme. I ate most of it but froze some for another day. The other day, our neighbor dropped off some pasta soup, a loaf of bread and some butter. We are fortunate to know so many very nice people...including all of you. A day doesn't go by that I don't think of you all.

    Last night I made spaghetti and clams to keep life simple. The clams were farm raised...imagine!  I cleaned them in salt water for a bit. Then I prepared the pan with olive oil, white wine, parsley and garlic cloves...turned up the heat. When the liquid began to bubble, I put the clams in and covered the pan to continue to boil. Then I cooked the pasta. Eleven minutes later, all was ready. It was just the right amount of food for the evening. 

    Tonight I'm cooking a pork roast with potatoes...mostly for DH. I got a shot for white cells yesterday and my apetite disappeared. Tried to make cookies but I can't find the energy. Mostly I eat boiled egg sandwich on whole wheat. 

    DH slipped on ice a week ago...fractured the ankle+surgery with fixations+readmission over the weekend+home again...to a wheel chair for eight weeks. I'm learning about home health and home helpers. 

    This will be a memorable first Christmas in our house. I am looking forward to Spring and living each moment with care.

    hugs to all and yummy posts.

    One of the volunteers at work gave me 2 cookbooks. 1 light cooking and 1 vegetarian. I have found a few recipes I want to try.

    An interesting combo was eggplant and apples. Will let you know how that combo pans out. Another is a chicken cabbage wrap. 

    Working extra as much as possible, but looking forward to some downtime soon

    Made a pineapple/cream cheese (small amount of powdered sugar) dip for a football tailgate party tomorrow. Will serve with vanilla wafers.

    May make a chicken buffalo dip too

    depends on time from wake up to out the door. HAha

    Not the healthiest but will be on the lookout for veggies ;)

    New Year with my family is always crab cakes., I do not know when we started that tradition, but is now infamous and long standing.....

    Teka, I'm still salivating over "Mainly Lobster Seafood" Restaurant. Oh, and we hired home helpers for after my chemo on Friday. I can't manage both the DH and me at the same time. When I get past the last infusion (Jan 24) about two weeks after that I begin to feel my old self...I'll let the home helpers go. But until then....

    Sandpiper1, Crab cakes for New Year's sounds like a good idea. I like Maryland crab cakes and tried to make them here. I think the crabs in the Pacific Northwest have a different flavor. I'll try again to make them when I get my taste buds back.  I think for New Year we'll have pork and sauerkraut....easy to make.

    Bring on 2014!

    We had mushroom lasagne for New Year's dinner and it was very nice, if I do say so myself.

    Happy New Year to All, may we all enjoy a Happy, Healthy, Prosperus 2014.  I am going to be a first time grandma in May, very excited, it is going to be a girl! Trying to crochet again hoping to make an afghan!  We enjoyed pork and sauerkraut today!  I seasoned the pork put on a rack and placed in the oven for a bit to let some of the fat drain away, sauted onion, added sauerkraut, some apple cider, a little fat free cream (I know oxymoron!)  and paprika, remove pork layered pork, sauerkraut mix, in a casserole dish , put in oven, had butternut squash and roasted frozen cauliflower with olive oil and seasoning.  Very good we enjoyed.  We are working on better eating habits and I leave a stressful job that I drive 105 miles round trip the end of January so hoping to take better care of myself.  Take care everyone.

    Happy New Year All!! 

    I slept through most of the afternoon and didn't get my saurkraut on in time. So I baked a small hen. I made oranges and black olive salad drizzled with some olive oil...had a craving. 

    No frost today. I'll drive to the supermarket to stock up before next week.

    For new years, I cooked traditional for the South of the US, black eye peas and rice for a prosperous and lucky new year.  I also had greens (also traditional) and baked salmon filet.  Though I am not from the South, I enjoy sharing other people's traditions.

    Teka, that treasure hunt was fun! The recipe sounds good and I'll try it. Usually I make the traditional Delaware County oyster stew.

    Can of small stewing oysters in their juice then into a pan with butter on medium heat. Sprinkle with paprika and a dash of salt and pepper. Cook until they curl. Add a can of evaporated milk and a cup of regular milk. Simmer, never boil. Serve with OTC crackers that seem no longer to exist. I've searched everywhere. Miss them.

    This week I made my dad's chili. Ground meat, onion, peppers, fresh tomatoes, curry powder, dash of oregano and let it simmer for an hour or more. I used buffalo meat. It was very good.

    My infusion did not go so well. Five sticks later and they gave up. I need to return next week :-(

    So sorry to hear you are not a good stickee Marilgyn, my thoughts are with you!  We have had buffalo once it is good, we raise our own beef, grass fed as much as possible, no hormones or antibiotics, we don't feed corn but supplement with oats, wheat and hay.  WE are also blessed with good friends who exchange things with us for home grown chickens, duck and goose.  This year we got 8 chickens, one goose and one duck.  We had the goose for Christmas it was very good, we have had a couple of chickens very good, nothing like the flavor of home grown chickens and beef!  We had beef short ribs, sweet potato's, green beans and sauerkraut corn salad it was good.  My DH does not like shrimp and scallops but I do and swapped some from my sister for beef, yumm.   I made a fettucini type pasta dish with shrimp this weekend also it was very good.  It is still snowing so am inside just bumming this weekend, I am trying to crochet a baby afghan, think I have my pattern down for the granny style square good weekend to work on it!!  I will be home tomorrow no going into work we have 12 + on the ground total with another 5-6" forecsted.  Hope all stay safe during this bad weather and those who are in the sunshine enjoy!!!!

    I woke up this morning and it was a virtual ice sheet in front of my house. I decided to stay in.

    Marilyn, ask for the best most experiences nurse for your iv.  I had one nurse who was definitely better than the others at finding my veins and one who was the worst--in fact, I actually refused to let her try on the 7th time........got someone who knew what they were doing.  Take care.
