    They have some packages of organic shredded cheeses at my local grocery store. I use them for tacos and quesadillas.



    Having chicken Marbella for dinner with asparagus and organic spinach and spring mix salad. Had Greek yogurt with blueberries for breakfast, but it didn't keep me full like cereal or oatmeal woul have.

    Try Daiya cheese! It's made from nut milk, but tastes and melts like real cheese

    Circles - you migt have done this already, googling organic farms in your area to find out if they make cheese? Asked at the local(?)health food store if they would consider selling it?

    Breakfast: Lingonberry bread, vegan spread, cottage cheese, baby spinach, pickled cucumber, walnuts. Organic coffe, oatley and agave sirup.

    The only way I loose weight is by adding more hours in the excercise department(true, a cancer diagnosis was pretty effective to). Seriously though, it took me a good three months of eating well and excersising every day to see some real result. It just doesn't come easy. But you guys already know this. 

    Have most of you on Tamoxofen gained weight?

    there are many organic cheeses ut there...lI usually go for OrganicValley because the cows are more likely to be grass fed.

    SAB-no problem...I'm not like most and do a good amount of educating others myself.  So many people don't have knowledge about mass market foods.

    Good choice recently were homemade pasta sauce and whole wheat pasta.  Poached eggs over sauteed spinach and whole grain english muffins (went back to the same place for breakfast today with a friend) and tonight will be having spinach enchiladas.

    This week I plan on making eggplant parm, and will go easy on the cheese for me, with more homemade sauce, curry chicken with organic chicken thighs and need to make something with eggs as I have 2 dozen organic omega 3 eggs.  Maybe a veggie quiche or frittata.  I like this recipe and I think that if I make some non nitrate turkey sausages or bacon with it, the kids would eat it.  None for me though.

    Dr. Oz mentioned lima beans good for preventing BC.  I bought organic frozen lima beans and mixed them with some frozen corn.  Can't eat them without butter, tho.  Tasted good sprinkled with salt and pepper.Wink

    Today we were good. We roasted beets, sweet potato, green squash, onion and garlic in the oven, ate it with the steamed beet greens and Greek garlic dip made from walnuts, brown bread, vinegar, olive oil and several cloves garlic.

    Oatmeal with chia powder.InnocentI just bought a slow cooker, never used one since I was first married, never could get going in the morning to set it up.  Now I have time in the AM, so I put a chuck roast in and invited my 91 yr old mom.  Does anyone have any great recipes for the slow cooker?

    BTW, Mom is a cancer survivor.  If anyone ever questioned what survivor meant, she is a survivor!  She was 65 when diagnosed and her 91st b-day is next Sunday.  She is still active, more active than me, still driving and very opinionatedWink

    Stage1 - what an inspiring story. Give our love to your mom from this board.

    (I remember when i was going through treatment, I had a support person I worked with out of our company's home office. She was in her 60's - told me that her mother had had bc as a young mom long ago, ended up just recently passing away shortly after her 101st birthday!  That story encouraged me a lot when I was in the middle of things. I hope your mom's story can be an encouragement as well.)

    I have a crock pot  but don't use it much.  The recipes for beef that I tried said to cube it and sear in frying pan and then put in crock pot with vegetables. It seemed like a lot of work to do in the morning.  But I know there are lots of recipes online - you can go to allrecipes.com and you will find many. Good luck. IF you find something good, I'd love to see it. Was not thrilled with anything I've found yet.

    Hi everyone, been out of town, eating crappy, not all crap, just crappy.  Went to Outback Steakhouse for my DD 21 st (dinner with the parents first then out with friends over night!). I had the talapia with crab meat on top with mixed veggies - was pretty good, but drizzled with a lemon butter sauce.

    today we ended up at a Golden Corral - made a huge salad then hit all the veggies - turnip greens, peas, carrots, mushrooms. Desert was for the DH he had right out of the oven bread pudding...thank goodness I don't really like sweets. I'm not a sweet eater - just an overeater!!!

    stage 1:  A good way to prepare lima beans is to cook them with some garlic in a pot for a while.  My French mother-in-law makes them this way when she prepares lamb, and I have a whole new outlook on lima beans now!  My mom told me about Dr. Oz recommending them.  I've had good and bad to report:  prepared some great tilapia and avocado quesadilas Saturday, messy but good.  Plus a nice big romaine salad.  Had a donut and 2 pieces of pizza at my son's Pinewood Derby for cub scouts yesterday.  Oh well!  Today will be a better day...

    Stage 1 -inspiring story of your mother! I will try oatmeal with chia seeds tomorrow. It is so darn cold I  need warm food and that sounded both healthy and filling.

    Dinner today: A couple of small tasty boiled "almond" potatoes(first time since...eh....christmas maybe). Very nice, need the vitamin C to. Sallad with carrots, fresh broccoli, pumpkin seeds, coctail tomatoes and marinated tofu in red beet/5 spice sauce.

    I am using the chia powder, mixes better in oats, really good.  I have found I like the steel cut oats better, although they take longer to make on the stove.  No problem, tho, worth the 10 minute wait for cooking.

    I've been using chia seed in my almond milk cereal.  I like that it absorbs the liquid a bit, has no flavor but adds texture.  When I bought it at Whole Foods they told me it didn't have to be ground like flax seed.  Has anyone heard differently?

    Lunch today was garlic spinach, Brussel sprouts, tuna, and celery sticks.

    Dinner tonight will be mussels cooked in organic white wine, over whole grain angel hair pasta.  I have talapia and crab meat to try to recreate the outback dinner, minus the butter! Thought I might use the white wine.

    Went to Applebee's last night and had grilled apricot chicken breast with broccoli and asparagus. Delicious and filling and only 380 calories. Wish they used organic chicken, but at least they aren't allowed to use hormones like in beef.



    Chicken Marbella made by me tonight with prunes, apricots and spinach and spring mix salad.

    Tonight I am making a "baked potato bar" with veggie chili, portabellos, brocolli, asparagus, chives and an herb salad.  Those of us who are not eating white potatoes (me!) will enjoy a sweet potato instead.

    Lunch was 1/2 organic chicken breast with salad.  Snack was 1/4 cup not sweet granola over sliced banana and green tea.

    You guys are being terribly virtuous ;) meanwhile, I gave myself a treat for breakfast. I was craving poppy/lemon muffins, when I realized that if I made it pancakes instead, I would cut a lot of fat and sugar, compared to muffins. So, I made pancakes, with poppyseed, grated lemon peel, ww flour, a bit of oat bran and 0-fat yogurt (instead of milk). It was really good and satisfied the craving.

    Was at the cancer center today and had chicken vegetable soup and a multi grain roll at their organic restaurant for lunch. It was really good. Having some fat free peach Greek yogurt right now for a snack.

    Had shrimp curry, veggie stir fry and green tea for lunch. Pineapple for dessert.  BUT its my birthday.  I am debating what to do for dinner.  Husband and son both have the stomach flu --so clearly going out tonight for a family dinner is out.  I am thinking that I will have a veggie sandwich for dinner leave the treat yourself dinner for this weekend when everyone is feeling better. Which includes dessert.

    Good birthday news is that I got my nipple tatts today!  Reconstruction is done!  Yippeee!

    Happy Birthday Corinne! Congratulations on you tatts! I have to wait until May. I am really anxious to get it done as well. Sorry the stomach bug is putting a cramp on your celebration.



    Had leftover chicken marbella for dinner with brusselsprouts, asparagus and a spinach/spring mix salad. It was good, but I can't take any more of it, I put the last two breasts in the freezer. Will have something other than chicken tomorrow.

    Kohlrabi, sauteed in olive oil and sprinkled with salt! Also, baked (organic) sweet potatoes fries with skins on (tossed lightly in olive oil and lightly salted). 

    Both good!
