    Apple - it's paper, almost like parchment, with a waxy coating.  Been around in some form since medieval times.  It's better than plastic wrap for the microwave - it doesn't melt.  Not necessarily good for oven-baking, though, as it will smoke.

    MMMM- BLT's and I will need to make gazpacho when the tomatoes come in in my Dads' garden

    Last night was so much fun and relaxing.  Sleeping in this morning was heaven!  Thanks for all the nice words ladies :)

    Tonight is eggplant parm with eggplant from my Dad's garden.  It is so muggy here right now but it needs to get eaten so I am cooking indoors.

    Where in the Price Chopper is Smokehouse Bacon... With the rest of the bacon or is it what the sell in the butcher case? A BLT is sounding mighty good!!

    Have picked a few cherry tomatoes here but, still waiting on the regular tomatoes to ripen! Have a few eggplants growing but, not big enough yet to pick!! First year I have grown them! Can't wait to pick!



    Seems like I am going to have a bumper crop of cukes this year!!! Took a shot at making refrigerator bread and butter pickles this afternoon... Did one jar 'normally' but then the second jar, I put in a dried chile pepper (hoping to produce a sweet/spicy pickle similar to a pickle we had when we lived in MN. They were called Wickles and were delicious)....



    We'll see!



    My husband is playing in a golf tournament today (even though the weather here has been just miserable with rain today) so dinner is going to be.... leftover chicken made into a sandwich... Not exciting but, good none the less!!

    At my DD's request, we had turkey breast and gravy, baked potatoes, corn on the cob and beets tonight.  (The beets were not her request.)  It was delish.  Tonight was her last night home.  She leaves for summer camp in the morning for 3 weeks.  I am going to miss her.  :(  I know she'll have a great time though.

    Seaside - I always found the Burger Smokehouse Bacon in the same case with the rest of the bacon.  I wonder how far east Price Chopper distributes it, as it's a Missouri product.  Here's a link to the website:

    At least you can see what you're looking for.  We like the pepper bacon.

    DH is feeling a little better, so we went out for prime rib.  The restaurant was having an off-night.  I don't usually order baked potato, but I was craving it tonight.  And unfortunately, they brought 3 different ones before there was an edible one.  I swear they were leftovers and hard as bricks.  I wanted a "fluffy" baked potato and even #3 was more mealy than fluffy.  Oh well...you wouldn't think that would be such a tall order!!!

    just wondering what the waxy coating is made.. of many companies use petroleum based paraffin which melts a bit on our food.. that is icking me out.  I'm thinking I'll be using dampened paper towels.... food grade.

    parchment has silicone

    and butcher's paper has plastic...

    I'm thinking I'll use dampened paper towels or glass bowls and lids.

    the Burger's smokehouse was excellent.. omgosh excellent.

    Apple - glad you like the Burger's bacon.  It's become legendary in my family.  I actually ordered a bunch of it for my SIL's birthday and he was ecstatic!!!    The wet paper towel trick will definitely work, too.  I suspect the wax coating on the paper is similar to the stuff they wax some fruits and veggies with - like cukes and apples.  It's probably paraffin.

    Salmon and tomatoes sounds really good right now, My neighbor brought me a bunch of tomatoes yesterday and i made a tomatoe and cucumber sandwich it was pretty tasty!

    Seaside- I make pickles sometimes and have never thought about putting a pepper in there what a great idea!! (whipples) LOL! another new word for me!

    I use wax paper to in the microwave but usually dont have any on hand and put the corn in the husk straight in the microwave and it cooks just fine that way too for anyone who is worried about the wax paper, never thought of what it might contain, will have to check into that.

    Michelle- Glad your DH is feeling better and you got to have a nice dinner out.

    I nuke corn in the husk too. The silk comes off so much easier that way and the corn is great.

    Chabba- And dosnt it come out so sweet that way, some one on here mentioned cooking it that way a couple of months ago and now thats the only way i cook it, its fast and good.

    So cornhusker ladies, how long do you nuke the corn in the husk?  And would I be correct to assume that those husks get pretty darn hot?  Do you soak it in water or is there enough moisture without it?

    I can barely get DH to eat corn if I do all the hard work, not sure he'd touch the stuff if I handed him corn in the husk...lol

    So today DH and I went to the grocery store and went to check out, our debit card was declined, he then went to the atm machine, that was declined, so DH went outside to call his bank and they put a stop on everything, due to high amounts of purchases being done in a 2 day period, found out someone had been buying tickets to Air India and spirit airlines for several thousands of dollars and also cell phone purchases, and numerous other things, fortuneatly, we wont be liable for all those charges, but we have to wait a week or more to get a new card. And luckily we had some charge cards to pay for the groceries, but what a bunch of crap. why do people do this kind of stuff? I dont understand it, when DH asks where it originated from and was told they didnt know, be nice to know if places we go to around here did it, so what good will a new card do if they do it again? I would like to find out and hang them by there ding dongs! Ha!

    Michelle- LOL! Yeah my Dh wouldnt like it either if i handed it to him with the husks on LOL!

    You cook about 2 to 3 minutes, i dont wet it or anything, just lay it on the plate in there and once you get it out of the microwave peel off the husks everything comes off pretty easy-

    We had our AMEX credit card number stolen once, nothing like what you're describing, though.  You know, every time you go out to dinner and pay with a card, you lose control and are at the mercy of the server.  That's just one little example. 

    More than anything, it is a pain in the a$$.  Our bank, being such diligent folk...lol...has shut off our card temporarily on more than one occasion when we have started a long road trip - they see gas purchases in unusual states, not our "usual" buying pattern.  The good news is that they always text us and send us an email when it happens, asking us to call them.  But at that moment when you are trying to make a purchase, it's unnerving.

    Oh Debbie! What a flippin' mess!!!!



    I had someone hack my e-mail account a few months back and whoever was doing was able to send e-mails from my account and make it look like they were coming from me.... Sent e-mails to everyone in my contacts list including people I used to work with asking if they wanted to improve their sex life and offering to sell them viagra!!! Totally embarrassing! I tried changing my password but, within a day they had my new passord! I finally closed that account and had to get a new one! What a royal pain!



    I would think that airline tickets would be purchased for a particular date from a particular airport in your name.... Couldn't the credit company have the police there on that date and see who checks in for the flight and arrest them?



    If they do find the SOBs who did this, I will gladly assist you in hanging them by their ding dongs!!

    Our bank did the exact same thing when we were on vacation a few weeks ago.... I went to pay for groceries the first day there and my card was declined... Same reason, they saw unusual charges coming through as we made our way to the beach and the grocery store bill pushed us over some threshold... They locked all of our accounts down until we called....



    I guess we're supposed to notify them if we are leaving town or something? Who would have thought?!



    Thank goodness my sister was with me and could pay!

    Seaside- Although its not funny, i had to laugh at the thought of co workers getting emails to improve  there sex life, how imbarrasing, bet they got a kick out of it!  I agree are we suppose to let the banks know we are leaving town? Guess it wouldnt hurt but feels like a invasion of our lives, and then how do we know when we call the banks they wont send someone out to rob our home while we are gone LOL!

    A few years ago my DH was in the hospital to get 80% of his colon removed, he was in serious condition and when i started getting phone calls from people asking if chuck was in a foreign country and in the hospital, i found out emails were going out of his email acc saying he was in the hospital in another country? And needed 2000. Dollars to get back home, this went out to his coworkers as well as family, That caused a big mess as well. 

    Michelle- Nice your bank lets you know by emails or phone calls, i will have to let my Dh know to set somthing up like that, we take a lot of trips and dont want to have to worry about that again.

    Its 8 pm here and a beautiful night, im going to take a walk and enjoy this beautiful evening!

    I can look back now and smile but, I kept saying to myself WHY would someone do this? There was really no financial gain... Truthfully it was just being mean to someone because you can!



    The thing that does make me giggle a bit when I think back on it was.... My elderly father's e-mail addy was in my contacts list so he got the viagara e-mail, seemingly from me... He called to see if it was really me that sent the e-mail! Really Dad??? Think about it and let me help you.... Hell NO!!

    Seaside- OMG that is so funny, especially your DAD, haha!

    Yes, your right they do it for kicks most of the time, but i think with what happended with our account they bought the tickets to cash them back in for cash, if you buy full insurance on a ticket you get your money back, i hope they try and then get arrested when they do.

    Back from Italian festival and have a lot of reading to do!  Boated to opposite end of lake and met up with friends, stayed at their marina, and funny thing is we never took the walk over to the festival.  First night there, they all cooked for us on the grill....there was sooo much food....had grilled swordfish, bass, and fish-kabobs, steak, and smoked ribs, not to mention all the salads and extras.   These people know how to cook! We were spoiled for the whole weekend.  Rained like crazy the next morning so we sat it out in a diner for brunch, then hit the water when the sun came out, then 3hr boat ride home.

    I love making eggplant parm. its one of my families favorites.  i have been trying different options to frying it to try and cut down  the calories.  I like to drizzle it with some olive oil and grill it till softened then layer with sauce and moz cheese and sometimes some portabella muchrooms.  Its definitely not a crispy eggplant that I love but is very good with the smokey flavor of the grill

    About the bacon....I get some from the amish store that is amish made and the best bacon ever.  Once you have had a really great bacon, there is no going backLaughing

    about husking fresh corn (and I like it cooked in the husks)...

    simply split the top of the corn and vigorously pull down exposing 1/3 of the corn .. break off the bottom and pull up and the rest of the husk will easily come off.  the threads will come off easily with a certain twisting action that is hard to describe.. i leave the pesky clingy threads on and they come off if boiled.

    Carberry - the Italian festival sounds so good.  I think there is one in Boston's North End the last weekend in August.  I really want to go and it's the weekend before chemo, so I should be up for it. 

    Grilled swordfish...might make for a good dinner tonight!

    Apple - thanks for the tip.  I'm guessing that husk is pretty hot if you micro the corn still fully dressed!  I need to find some corn today.  DH couldn't care less, but I love it.

    Carberry,  I found this alternative to frying the eggplant on line:

    Slice the eggplant into 1/4 inch thick slices. Lightly salt the slices and put in a colander to release excess moisture for about 1/2 hour. Lay on paper towels to soak up any extra moisture.

    Preheat oven to 450°. Brush eggplant lightly with olive oil on both sides and place on cookie sheets. Bake for 20-25 minutes, turning half way through until eggplant is golden brown.

    Debbie, sorry about the mess!  That is horrible that people will do that.  We've had the credit card put on hold as well and it's embarassing when you're trying to purchase something.  In our case, it's always been just some unusual purchasing for us, never had anyone steal our cards.  Hope you get your new cards quickly.

    Had leftover eggplant parm yesterday with a spinach salad.  It was good.  I LOVE dinners that you get 2 meals out of.  Some leftovers, the family balks at, but anything with tomatoe sauce usually goes over very well.

    i saw this interesting recipe (in Gourmet mag) for french fries from eggplant..

    you cut the eggplant into fry shapes (rectangle sticks)  soak them in cold water so they do not absorb oil, then coat them with rice flour and deep fry.  .,. or sautee in 1/2 inch oil.

    I haven't tried them.

    Interesting.  I got two more eggplants today from the CSA.  I think I'll try that out.  Thanks for the recipe, Apple.

    Had steak, corn on the cob, and gaspacho for dinner tonight.  Think we'll have fish tomorrow.  Might try to make some stewed tomatoes for the fish.  I got a lot of tomatoes from the CSA too.  Anyone know how to make stewed tomatoes?

    Carberry- Sounds like you had a lot of fun on your trip- The food sounded great. I wish we had different ethnic stores here but we dont thats got to be one of the bonus of living in a city like NY!

    Kay-Great tip on the eggplant!

    I'm making cod for dinner with sauted veggies, asperagus, artichokes, some peppadews and when its all cooked i throw in some baby spinach towards the end and sprinkle some parmesan cheese on- YUM!!

    Debbie - I am feeling OK, just a little tired even though I haven't done much of anything.  I managed to get to the grocery store today and that was enough activity...lol.  I'm planning to drive to the beach tomorrow to meet my daughter and grandkids.  The drive won't be a problem, the big challenge will be the walk from the parking lot to the water.  Then I can relax and enjoy!

    Kay - my grandmother used to make canned tomatoes, which is just about the same as stewed tomatoes.  I remember she had a pot of boiling water and dipped the tomatoes in it for a minute or two, then plopped them into ice water.  That made the skin separate from the flesh and they were easier to peel.   Once you've done that part, you can cut them into chunks and season them any way you wish and cook them to your desired consistency.  Or you could check out this recipe:

    So I bought some halibut for dinner tonight, plus some boneless chicken and some Italian sausage.  DH decided he wanted to cook the sausage, so we had that with grilled mushrooms, peppers, onion and zucchini, plus corn on the cob. The corn was just ok. I need to go find a good farmstand near the house. I've checked out two places with "produce stands" and both have disappointed me.  I'm fussy about my corn!  And now I need to freeze either the chicken or the halibut.
