I found MN to be a real study in extremes!! The summers were brutally hot and muggy and the winters were just colder than anything I had ever experienced!! Very little in the way of Spring or Fall.....
I know NY gets a bum rap soetimes with all the snow but, I will take it over the bitter cold!! Those upper mid-westerner's are a tough bunch!! -

I love this time of year because of all the fresh veggies at our local roadside stands! I can remember, when my husband and I were first married, there were some nights in the summer where all we had for dinner was corn on the cob!! It was (and still is) one of my favorites!
PS.... I never knew how wonderful a beet could taste until, I had one fresh from my neighbor's garden.... Although I enjoy canned beets too, that was just a whole new level of delicious! -

Sometimes we still only have fresh sweet corn for dinner. We love beet greens with formed little tender sweet beets. Season is so short in the north country.

Debbie - your breakfast sounds yummy! Accidental or not, it deserves bold print! I made a baked apple pancake for DH this morning. It's his absolute favorite breakfast. And then we had company all day. They started arriving at noon and just left a few minutes ago. They were good, though, and cleaned up everything. So all I have to do is push the button on the dishwasher. My oldest grandson is spending the night tomorrow night for the first time, that should be fun. We'll play mini golf and get ice cream.
If my WBC needs me to sit still to recover, then I am failing miserably...lol. I didn't see 'rest' as a recommendation!

Hey ladies..................Back here in Pa. we border with NJ, and they have the best sweet corn around.................they call it Silver Queen White........................it is great............that and their Jersey tomatoes........................
another good thing we do is cut up our tomato's..........but they have to be good jersey's.........add small chopped celery......chopped green peppers, chopped onions, fresh basil, salt, pepper, and just olive oil................that and some crusty bread, and you can make a meal..........yum, and very low cal. too.......................another thing is fried tomatoes.............slice your tomatoes thick, dip in flour............fry.............when done frying all the tomatoes you add milk to the pan, and scrape the remaining goodies off the bottom.................thicken with a little flour, and pour over your fried tomatoes.............another meal............gotta love tomatoes.........

ducky- those tomato recipes sound amazing, I am so ready for fresh tomatoes!
My dad's garden is coming in nicely and we've been eating zucchini, squash and cucumbers quite a bit lately. He also grows white eggplant and one thing we love to have once the eggplants and tomatoes come in is an easy grilling recipe.
Slice an eggplant into rounds, top with a slice of tomato, top with chopped fresh basil and a nice thin slice of provolone (before adding the cheese drizzle a small amount of virgin olive oil over it) Pop it on the grill for about five minutes and it is wonderful!
I am exhausted from our camping trip and feel like I am coming down with something on top of it. This was our longest camping trip so far, 5 days and four nights. With having a 1 1/2 year old and 3 1/2 year old we ran around all day playing, swimming, going to the ocean etc. There was a huge group of us, 10 familes so we would all stay up waaaay too late sitting around the fire and then be up waaaaay to early with the kids. Michelle- we did stay at Bayleys! The place is huge! We all had a great time.
And FOOD! You all wouldn't have believed the food. Where there were so many families we all kind of did pot luck and shared our meals. One night we had all decided we would have a mexican food night and there was so many good things to eat. I need to get a recipe from one friend for these amazing enchiladas she made. Another yummy thing I ate- again I have been promised the recipe- it was hamburger with some seasonings, tomatoes and was laid on top of thick wedges of zucchini and topped with cheese, you ate it all on white rice. I will admit I took a small portion to be polite, it did not look too appetizing to me, and I went back for thirds! The best part it everything was made in campers so you know it's all easy cooking:)
I need to go back and read through the thread- I have missed so much. I need a vacation to recover from my husbands vacation, lol! I hope everyone is doing well and has had a great week this past week.

Well, the oldest grandson was supposed to spend the night but he changed his mind. I have been busy cleaning and organizing today in anticipation of chemo on Wednesday. And I just whipped up some baked macaroni and cheese. I've tried several different versions, including Martha Stewart's crack and cheese
. Tonight's version is compliments of Fannie Farmer, an old recipe with lots of favorable reviews.

I used 1/2 Cabot Razor Sharp Cheddar and 1/2 Gruyere, and I added a sprinkling of nutmeg. Wish I had thought to add some dry mustard, too. Oh well, next time.
I have some bone in, skin on chicken breasts that will hit the grill soon. They've been marinating for a while in Robusto Italian dressing with extra garlic, pepper, parsley, basil and chives.

Michelle- Home made mac n cheese- yum! I haven't made that in such a long time.
My Dad showed up with some fresh eggplant from the garden so I couldn't resist and we are doing the eggplant and tomato on the grill that I mentioned in my last post. I cut up some fresh green beans, zucchini and squash from the garden added some mushrooms I needed to get rid of with some garlic, butter and Italian seasoning and popped it all on the grill. We'll have that tonight with some corn on the cob and garlic bread, all veggies! Love it!
I have a Dr's appointment early tomorrow- 8- so the kids went for a sleepover at my in laws so they won't have to get up and out early in the a.m. The appointment is just a follow up to my nipple tattoos with the PS, I'll need to decide if I am going to have him work on the color. Not thrilled with the color- we'll see.

Oh how I remember those nights when Gramma took the kids.... Early on it meant a great night out and getting to sleep in!!! As time went by it meant that we got to turn in early AND sleep late!
Now, with our kids being 17 and 22 they typically outlast us on any given night!!

Mac and Cheese is a house favorite here!!! I love it and, more importantly, everyone will eat it!! I have not seen "Bitchin' Kitchen" but it is a show on the Cooking Channel which is a spin-off from Food Network. I will have to see what channel it is on here.
Funny side-story.... DH and I like to cook together when we get a chance on the weekends! Most times we do OK but, ocassionally we disagree on something we are making... Quite some time ago we jokingly said that, if we had a show it would be called the bitchin' kitchen.... Imagine how surprised I was to hear that it is the name of an ACTUAL show!!

Laurie- What a great time you had! And all that fabulous food that sounds yummy! I know what you mean about you need a vacation from your vacation, especailly after camping, sunning and swimming it does tend to wear you out- I hope you feel better!
Ducky- I love tomatoes, my DH dosn't but that dosnt stop me from cooking then at least 3 times a week- I slice my tomatoes about 1/2 inch thick top with garlic, basil, oregono, parmesan cheese and drizzle with a little evoo in a 400% oven for about 15 minutes then i top with some shredded mozzerella and cook until that melts- So good!
Michelle- Hope your counts are good so you can finish your last chemo on wednesday I will be keeping my fingers crossed and saying a prayer for you.
your mac and cheese recipe looked easy, i love that good old home cooked food. You will get a kick out of her on bitchen kitchen, she a little out there but fun to watch and she makes great recipes.
I made a good chx dish tonight, What i did was put 1/2 cup of evoo in a sauce pan warm it up then add about 4 tablespoons of minced garlic (lots) let it simmer for 1 minute ( do not let it brown) take off heat, add 2 tablespoons of lemon zest, 2 tablespoons of lemon juice, 1/3 cup of white wine, 1 teasp of salt- 1 teasp of dried oregono, 1 1/2 teas of fresh thyme, put in a baking dish and put chicken breast on top, add s&p a little evoo and bake for 40 minutes in a 400% oven- if using skinless, boneless chx cook for less time, the sauce it great too you can put over noodles or rice ( i usually double the recipe) BTW this is a good sauce for steamer clams and scampi.

Debbie - the chx sounds yummy, I'll have to try that. My DH loves tomatoes more than I do. He'll eat them in the dead of winter when they don't even look like tomatoes. I like fresh, ripe ones so this time of year they are so much better. I hate it when I get an anemic looking tomato wedge in a salad. I do like the grape tomatoes, though. I think they are much sweeter than most other options in the off-season.

WOW love all the great dinner ideas, I do not make a good home made mac n cheese to save my life! kids always liked it but DH did not...always a critic Ha. I will try the fannie farmer recipe and see how that goes...although I usually only make it in the winter. the tomatoes and corn are now coming in fast...we did BLT's and corn on the cob last eveing...so easy when it is sooo hot outside.
Laurie your vacation sounds awesome..camping with the kids were some of our best vacations and memories...they sure do grow up fast!
I really need to clean my grill so I can put all the veggies on and they wont stick....worst, dirtiest job ever.

I don't know if I should post this here or not, but I am so sad about it. My bil (my twin sister's husband) died on Saturday after fighting melanoma since Jan. 2010. He was such an inspiration to me when I was DX. He never complained about any SE's or anything. He knew his chances were not good and he wanted to try anything that might be effective. He really wanted to be around for my sister and their two kids (17 and 15). I am so sad. He fought so hard and so bravely and I just can't believe he's gone. I can't believe my niece and nephew won't have their father there for their h.s. graduations and weddings and other things. Just so incredibly sad.

Kay - I am so sorry to hear of the loss of your dear BIL. How tragic for that family! I understand that loss - my brother died many years ago of a fatal heart attack when my niece and nephew were teenagers. It's so unthinkable for the families when a parent dies at such a young age.
Carberry - I have a couple of grill toppers that I use for cooking things like veggies, shrimp or really messy things. They are not very expensive and they go in the dishwasher. Here's a link to
I have both of these - probably got them at WalMart or Lowe's. They are both great for corraling smaller foods so they don't fall through the grill onto the burner.

Kay I am so sorry about you BIL passing. I can't imagine how hard it is for your family. It is so sad when we lose someone we love. I lost my mom when I was in my late 20's to BC, I am thankful I was at least a little older when she passed. Those poor kids
My friend e mailed me the recipe and it seems to simple to have been as good as it was. She used no measurements etc.
Cut zucchini into spears (like pickles) lay on the bottom of pan. Fry hamburger in a skillet with garlic salt and put on top of the zucchini. Pour a jar of tomato sauce over it, cover and bake. At the end top with cheddar cheese and melt. Serve over white rice.

Popping in again to say "hello" to everyone!
Ducky, I wanted to chime in about Jersey corn and tomatoes...I am a Jersey Girl (a REAL Jersey Girl...not anything resembling that awful Snookie character and her idiot friends LOL) and white corn and tomatoes are the absolute best here. You can do so much with the tomatoes, but I find simple is best, so you really taste how great the tomato is. Sliced with a little EVOO, sea salt, and oregano is yummy, or caprese salad (fresh moz, fresh basil, EVOO, salt). Many times I have made a meal out of just corn and tomatoes.
Last night I went out with a bunch of friends to a tapas-type restaurant and we shared several brushettas, and apps. We had BLT bruschetta (applewood bacon, arugla, tomatoes and asiago cheese), a Mexicana bruschetta (black beans, cheddar and pepper jack cheeese, tomatoes, corn cilantro, jalapenos) and a wild mushroom bruschetta (mushrooms and brie)- all delicious. That is my favorite way to eat...just tasting a variety of things.

Sherrill..............I remember as a kid (many years ago)...................slicing jersey tomatoes, and putting them on saltines with a little salt and mayo.......................also lunch for us were tomato sandwiches...................and I also remember eating tomatoes one after the other with just salt..............better then eating an apple...........................I still eat them like that today, only back when I was younger, with young kids, I remember tomatoes being 5lb for $1.00.............today they are $2.00 a lb. if your lucky enough to get them that cheap..................oh those jersey tomatoes.................

Tomorrow is DH birthday, we are going to a surprise party for him tonight, then tomorrow all his golf buddies are having a party for him after they golf so will be going out tomorrow too, im not as young as i used to be and cant party like i used too, so will have to drink iced tea tonight (not long island) ha! The place we are going tonight is the place that has the good mac and lobster, cant wait to eat that, i wish i was never introduced to it, it is sinful but cant help myself LOL!

When I was a kid, my Dad and brothers used to eat tomatoes like an apple with a little salt and I thought it was disgusting! I really didn't like tomatoes until i was maybe in college. I also remember my Mom slicing them up and spreading mayo on them as a summer side dish

I was so sorry to hear about your brother-in-law. Your post brought tears to my eyes when you spoke of the children he left behind. My cousin was diagnosed with Non-Hodgkins Lymphoma when his son was a little over a year old and he always said, he just wanted to live long enough for his son to remember him! He passed 2 months after his son's 10th birthday. No matter what the age, it is never easy to lose a parent! I will keep you all in my prayers!

Thanks everyone for the well wishes. I feel great and it would be almost unthinkable that I don't get that last AC tomorrow, and then be done with that nasty stuff. I was telling hubby that although I've had it relatively easy compared to some, this last week I have felt great and been able to eat almost anything (except for the spicy hot stuff).
The grandkids were here this afternoon, then we went out for Mexican food. It was fun - the restaurant had a Mariachi band and balloons for the kiddies. This place was miles better than the last Mexican place we tried. I was actually able to eat the tacos (I was hoping they would be mild and I was right). Then we went to ChuckE.Cheese and let the kids loose - there was one grownup per kid so it worked out great. We were originally going to have tacos Tuesday at home, then there was a change of plans. So I made spaghetti sauce from the ground beef that was ready to be cooked. Three containers in the freezer, one to use in the next couple of days, DH is all set to take care of me!
And we got our inflatable boat today. DD and I got it inflated and in the water. It has a wooden platform and a small electric motor - that's a project for DH to tackle in the next few days. I'm excited - we'll be able to run around the lake. It's 11 feet long, actually bigger than I imagined, so I'm looking forward to it. Need to get some life jackets.
Seaside - I'm glad you asked Laurie to clarify the tomato sauce; I wondered about that, too.
Debbie - have fun tonight and enjoy that lobster mac & cheese!
We have to be at the infusion center at 8:30 tomorrow morning, a little early. But then I should be finished by 1:30 so that will be nice. I'll post an update as soon as I can, maybe before we leave for home.
