    Michelle- Sorry you werent able to finish your last chemo, I too had low counts and had to put off chemo a couple of times, and your right they will give you the nueprin (sp) shot i had to do that 6 days in a row, i was suppose to do 7 but told them i couldnt do it because the pain got so bad. Hope your counts are back up. Did you have a feeling they were low? I ask because everytime mine were that low i knew it, my body felt so run down and just not right, I would tell hubby, i know my counts are bad i can feel it.

    Carberry- Do you mind sharing your zuccini squares? That sounds good. Ok now what is the "hump" must be a east coast thing, because the "hump" on the west coast means a little different at least i think if its the same thats one hecka of a party LOL!  The floating buffett sounds fun too.

    Havnt been feeling to great the last couple of days, nothing worse than having a bad cold in the summer time. Been doing a lot of sleeping and blowing my nose, and coughing. I have got to get better for tomorrows night out.

    Eating left overs from yesterdays pot roast in a crock pot that had pea, carrots, and green beans. Then made twice baked potatoes- You can put it on the grill so you dont have to turn on the oven, or microwave them. I scoop out all the potatoe in a bowl and add, butter, milk, sour cream, parmesan cheese and cheddar cheese, put it bak in the skin, at this point you ccan wrap it in foil and put it on a grill or in the oven. Everything tasted good even with a cold.

    Seaside- I forgot to mention your pizza sounds great, never had it with peanut sauce but will diff try it sometime, thats somthing my hubby will love, he loves anything with a satay sauce, then to put it on dought, yum!!

    WOW, Seaside. I am totally into this pizza idea. I can even make it vegetarian. I use Quorn products, has anyone else ever heard of them/used them? If yes, what's your fav Quorn recipe?

     One of mine is Greek Beans. If you'd rather eat it with actual ground meat, just substitute that for the Quorn grounds.

    Debbie - I was feeling pretty good, other than just a bit of fatigue. My red count is low despite my diligence in eating high protein, high iron foods.  Actually it was low when they tested me before the first treatment, so it may be normal for me.   I learned yesterday that there are some food pairings that help with absorption, so I'll be focusing on adding some vitamin c foods to my plate.  As for the low whites, I did have one clue.  I scraped the back of my heel on the weekend, so I put on a dab of antibiotic cream and a bandaid. Now normally it would be healed in a day or two but on Wednesday it was still red and tender.  So I was a little suspicious.  But otherwise I felt fine.  I had been extremely busy for the last week with all the lake company and got through that without any real sense of overwhelming fatigue. 

    Yesterday I picked up my mom and took her to the beach.  We had lobster and clams, then sat on the beach for an hour, then we got ice cream.  It was a spectacular 75 degree day with a slight ocean breeze and perfectly blue skies.  She loved it!

    Not much going on today.  I need to get a baby gift for my best friend's daughter who delivered a healthy baby girl on Tuesday after a very difficult pregnancy.  We are all relieved and I am looking forward to seeing the baby...apparently Kim plans on attending the shower with baby Madison.  I have known Kim since she was a month old (she's almost 40) and I plan on being an honorary auntie!  Everyone says her husband and mine look like brothers, so it's perfectly justified  Laughing

    Here's one I threw together the other day. Turned out real good, considering I had no idea what I was doing but I wanted something different:

    Boneless chicken pieces (or use a couple of chicken breasts diced,  red and green peppers, onions, mushroom, celery, carrots, potatos, brocolli, a can of diced tomatoes, 1/2 cup brown rice, paprika, salt & pepper........ and a few secret spices..... served with hot cheese biscuits!!!!

    First, I through in my onions and garlic, when they started to sizzle, I added my chicken and seared both sides. Then I turned the temp. down a bit and started adding the rest of my ingredients. It's basically like a large bite stew.

    I put the broccolli in the last 10 minutes of cooking time. I found cutting up the pieces into large bite size pieces added more to the look of the dish as well as the taste and things didn't break down tooo quickly while the chicken cooked.

    JoyceK and LuvRVing... how nice to read of your newfound friendship.  

     I've been browsing this thread.  I used to love to cook and actually cheffed at a very flexible progresive continental restuarant.. (the owner was lebanese and the original chef cooked for Jackie Onassis and Ari.. he was Spanich but trained in France.  I have 5 big eaters at my house and I really need to cook daily so I am always looking for ideas.  I am so much 'weaker' and don't really like to eat so I don't find the same joy in cooking that I used to. Fortunately my two bigeater boys (and girl) like to cook.  They'll grill, sautee or cook bacon.. the chore-y parts.

    anyway, I've been loving the recipes.. So many good ones.

    debbie  Hump night is  the middle of the week, when we are working and trying to get "over the hump" till the end of the week.  Not what you are thinking...LOL.. that would be some party. our local wineries are on to the fact that people like to get together in the middle of the week and have started booking entertainment for wed nights, always a good crowd.  With our group of friends we dont really need a reason to party we just make things up...we have even had "kick cancers ass" parties.

    The zucchini squares are just like a quiche recipe, sauteed up zucchini, onion, garlic and muchrooms. Mix five eggs with 1cup of milk, salt pepper (whatever spices you like) and add to store bought pie shell and bake.  I spread the pie shell ina 9x13 pan so I could cut in squares but can put in pie plate and serve in triangles.

    Rushell   looks good.  Anything in one pot is ok with me!

    Apple - so glad to see you post on this thread!  I lived in Blue Springs for 17 years and when I first joined here, I saw you and have quietly followed lots of your threads.  I wish we had gotten together before I moved to NH. I know you are on a rough road and I hope your current chemo kicks some a$$.

    Speaking of bacon, if you haven't tried it, be sure to get some Burger Smokehouse Pepper Bacon.  It is absolutely the best, a local Missouri product, and available in your local Price Choppers.

    LOL.... carberry and Debbie.... I wonder if maybe the term is a regional one.... We've always referred to Wednesday as 'hump' day and never thought a thing of it... But, now I see where that term could raise a brow or two!! Toooooo funny!

    Another favorite of mine that we do quite a bit is grilled pizza using pesto for the sauce then top with chopped artichoke hearts (not marinated), sliced black olives and mozzarella..... Soooooo good!

    Sounds like my idea of a perfect day.... Lobster, clams and a sunny day at the beach!! I can't imagine life being more perfect than that!

    Lisa- Your link with recipes looked good, my dad is a vegetarian so im always looking for new ideas when he comes to visit, the papaya enchiladas sound really interresting, i have seen the almond cheese here in the health food stores but was not sure if it was good or not, i'm going to try it.

    Teka- See i want the only one thinking that LOL!

    Michelle- When i got a little tiny paper cut on my finger while going through chemo it didnt heal for days, i was worried about an infection but it turned out ok. Your day with your mom is so sweet, i can just see you sitting there eating icecream with her on the beach,,,,what a great day!

    Rushell- OMG< your stew looks amazing, so, i guess asking what the secret ingredients are is out of the question? LOL! 

    Apple- Like Michelle said i followed your threads as well since i have been here, you have always gave such great advice and info, and i loved watching you play the piano, you are so amazing and talented. Have you tryed Lauries, Salsa chicken it is so easy to make and really great i think your kids might enjoy it takes no time to make too.

    Carberry- Thanks for clarifying.. LOL!.. Your get togethers sound like fun! Thank-you for the recipe on your zuccini squares.

    Seaside- Do you live on the west coast? I do, so i guess im just out of the loop, i never heard of hump night,,, Well, at least not the one you are all refering to,,LOL!

    We went out tonght and i had the best steamer clams, the juice was great, also had raw oysters, which i dont like typically but these were tiny and i fell in love with the taste, Those were appetizers, then i had blackened Ahi with a mango Aioli, my gosh they were so good.

    debbie - I just up the coast a couple of hundred miles from you.  Spent most of my adult life before early retirement in Olympia.  We always celebrated hump day---Wednesday lunch marked the halfway point.

    Until we retired to the beach Lincoln City was one of our favorite places to get away a few days.  We both had jobs where we had good benefits and could usually take leave whenever we wanted so often times in the winter we would see storm predictions for the Oregon coast and just put in for a couple of days and take off.  Ocean front room with a fireplace---curl up and enjoy the storm.  Heaven!

    Chabba- Wow really, if you ever get this way, we should hook up for lunch/dinner sometime, When you mentioned Ocean front room with fireplace made me wonder if you stayed at Chinook Winds Casino? When we first moved here a year ago, we stayed there for a month and i loved it, this place is second best to hawaii. I do hear the weather here gets really scary at times like 80-90 miles an hour winds, not looking forward to that! but so far it has been just wonderful here. Hmm i guess im the only one with out a clue here on the "Hump Day" haha!

    Debbie - your dinner last night sounds amazing!  I love Ahi!   We found a good Chinese/Japanese restaurant last night that has a jazz duo playing between 6:30 and 9:30.  LOL...jazz in a Chinese restaurant.  But then, what else would they play???  We had this crabmeat "tower" (not really that tall but that's what they called it) with an avocade and mango sauce that had been drizzled onto the platter in a plaid pattern.  It was incredible, one of the best things I've ever eaten in a Chinese restaurant.  They also have sushi that gets very high ratings.  I'm going to have to give it a try.  I usually like my fish at least dragged across the flame.  I do like seared Ahi - it's almost raw in the middle, so I need to just take the plunge and order a couple of things. 

     Very familiar with Hump Day, although I never heard it much in the midwest.  

    Chinook Winds Casino?  I am going to have to put that on my "list" as I love slot machines and I love oceanfront rooms and I love Hawaii!!!

     LOL.....of course I will tell you.

    The secret ingredients are as follows: garlic (which i already let out of the bag...lol), a few tablespoons of brown sugar (2 ussually), thyme, and summer savory (some people use sage instead but summer savory is not woody like sage is and a much better spice IMO)..these are all to taste so be your own judge.

    Rushell - your mention of summer savory reminds me that I want to make French Canadian "salted herbs" this year.  When I was a kid, my grandmother would make them and seal the jar with waxed paper.  She would send them to us in Texas, and my mom would use them to flavor soups and stews.

    I don't remember carrots being in my grandmother's concoction, but I'm sure it doesn't hurt it a bit.

    I think these would be great added to omelets.

    Just got done making my Cucuzza...............oh my it is so good.................I love making that stuff....................and it is so good for you, and little fat, and no calories.......................probably the only thing I eat that isn't....................

    Rushnell- LOL! Thank-you for the ingredients, I'm going to make that next week, I have never heard of  summer savory, I have heard of savory but not summer are they 2 different spices? Also dont think i even have savory in my cupboard and never tried, will have to buy it so i can experiment.

    Michelle- Funny we went to a American cuisine restaurant but had a hawaii singer LOL! He's great though we love him, he is blind and plays the piano bar and everyone sings around the piano bar, its so cool, i even get up and sing "Sweet lady of Waihole" Every laughs every time i get up there to sing it. We have such a great time. And we both had a mango sauce last night!

    Chinook Winds, is where my hubby is F&B director, the bad thing is its only about a 3 minute drive so once in awhile when i cant sleep i go there, he knows and dosnt mind, i only have icetea and play the penny machines, but it is nice to sit there and have some time to myself. You ever get out this way, we can go win BIG together LOL!

    Ducky- Cacuzza? Wow another new word for me this week! ? No calories and low fat, What is it?

    Debbie - if I get out that way, I'll definitely look you up.  My husband finds the golf courses and I find the casinos.  Often we get lucky and they are together!!!  That's funny about the mango sauce!!!

    I think cucuzza is a kind of squash.  Ducky - how do you prepare it?

    We went to see the move Crazy Stupid Love and it was crazy stupid fun!  Definitely a nice, light movie with lots of laughs.

    It is squash.............zucchini............here it is..(use about 4/5 squash)

    large frying pan

    1/4 cup good oil

    6 cloves garlic

    1 medium onion

    fresh basil.......dry if no fresh

    salt pepper

    1 large can of whole tomatoes............squeeze them between your fingers before adding.

    2 fresh tomatoes (plum, or Jersey if they are available cut in small pieces.

    heat oil, add garlic/onion.......let simmer (don't burn).................

    add all tomatoes, fresh and canned.

    add basil

    slice squash thin slices (like a cucumber)

    add squash to the pan, stir around, cover, let soften........................removed lid, and reduce the liquid but don't dry out,...............................enjoy.

    Ladies................................you can use more garlic or less depending on how much you like it......................also you can use more onion....................just gave you an about amount...............also........if you need more for larger families, just do more squash, and another can of tomatoes, and fresh...................

    Michelle- Perfect! The DH can play golf and we can Gamble yay!!  LOL!  My sister saw that movie and loved it, now all i have to do is pry hubbies fingers from the golf club and make him take me LOL!

    I made a crab/asperagus omlet this moring, along with some beautiful fresh fruit- Strawberries, blackberries, raspberries and topped with a little cinnamon whipped cream it was delicious!

    Whether or not you meant to sound excited about your breakfast, it sure sounds like breakfast I would be excited about!!



    Nope.... not on the west coast (although I hope to visit some day)! Was born in PA and my family moved to upstate NY when I was a toddler... Other than 5 years that my husband and I lived in MN (moved there with our jobs), I have lived in the same town for my whole life!! It has it's ups and downs but, overall is a nice place to call home!

    Seaside-  There is a seaside in california, so i thought maybe you might be there, i have been to MN its humid, but very pretty in the parts i was at. Im with you on the Cucuzza, that was new to me too lol!
