    LuvRVing, I think these would freeze well.  I made the version without meat, but I think
    both would be good.   Debbie, this is not from Giada but I agree, it does sound like something she would make.  I love her show.

    Laurie - the weather has been just picture perfect.  Today was another lovely day, but much quieter than  yesterday Wink

    We had steaks on the grill, salad, and grilled potatoes left over from yesterday.  And I discovered McKinnon Market - a grocery store with a huge butcher shop.  I may never shop in a big box grocery store again.  This place had everything, the prices were reasonable, and it was nice to shop for groceries without having to maneuver past aisles of "all the other stuff."  At first glance, they seem to have a lot of organic and local produce.  And the meats looked lovely.  They also have a huge assortment of prepared foods, which will come in handy when neither of us want to cook and I don't feel like going to a restaurant.  And best of all, it's very close.

    I watch the public television series "Lidia's Italian-American Kitchen", and would love to sample her cooking.   She always makes the food sound so delicious.

    Michelle- Glad you are tolerating your tx's well. Your dinners always sound so good. Arn't grand kids wonderful, as i mentioned mine was here for a week, tomorrow we put her on a plane to georgia, im so sad, she is such a cute and i love her so much, but always nice to get time to yourself, as you said a happy tired problably wont see her again untill next january we promised her a trip to hawaii when we go next year. (sad)

    I drove an hour and a half to see my PS for the first time he told me that my skin was too thin because she took so much of it and because i had lung cancer in 2003 they went through my back to take out part of my lung and took that muscle that ps would of used and for the fact that i had such a bad wound from mx and told me that he didnt have the expertise i needed nor did he do diep recon, so he told me i needed to go to the OSHU (portland, oregon) hospital to have it done which is 2 hours away so now i have to go to another one, but i was glad he was honest with me and now i know my choices so i feel somewhat better ( I think)!

    Lynn- Yes, the link worked, those lasagna cupcakes looked so divine, cant wait to try them!! YUMM!

    Teka- I watch that channel alot too, lidia makes some great looking itialian dishes, love the cooks country show on there too!

    Laurie- Fajitas are always great and easy to make too!

    Debbie - it's good that your PS was honest with you about reconstruction.  I know that many women travel very far to have DIEP performed by experts, so a couple of hours doesn't sound so bad.   As for my dinners, well they are really pretty "straight-forward" most of the time.  I'm a firm believer in 30 minute meals whenever possible.  Last night hubby started the new grill and threw the steaks on, and they cooked in about 7 minutes.  It's a good thing we had some leftover salad veggies ready to go along with the potatoes!  I think it was a 10 minute meal...lol. 

    Tonight we will have the sausages that I bought at the butcher market yesterday, along with grilled peppers, onions, mushrooms and whatever else ends up in the mix.  I have one of those grill-top woks that makes it easy to do a sort of "stir fry" on the grill.

    Laurie - I like fajitas, too!

    I am going to make the lasagna cupcakes.I really like the idea and its easier to control portion size and vary the ingredients for individuals.Thanks for the recipie.

    I love the idea of the lasagna cupcakes.  All the flavor without the carbs from the noodles.  I posted the link on our diabetic blog - it will be a hit, for sure!

    I am glad you all like the recipe.  I used the square wonton wrappers; could not find the round ones, but the square ones worked well.  Michelle:  I just looked at the wonton package labeling and 4 wontons are 16 grams of carbs.  One cupcake contains two wrappers, so that is 8 grams of carbs per cupcake.  Not bad.

    The Lasagna Cupcake recipe is postively brilliant!  Especially for those of us who have kids and, despite our best intentions, still make different versions of the same food based on our kids likes and dislikes!!!

    MMMM Eggplant Parm... A huge favorite of mine... In my grocery store the wonton wrappers are in the produce section.. Not really sure why but know that's where they are! 

    Today and yesterday were both glorious days weather-wise here too!!! Tomorrow is supposed to be massive amounts of rain! Frown

    SO HAPPY to hear that your first chemo has, thus far, been fairly uneventful!  Couldn't hope for better!  Entertaining family, even under the best of circumstances, is always tiring!  But, you are right... It's the GOOD kind of tired.... Just be sure not to overdo!!

    Try the produce dept - they are perishable, apparently.  I've never bought them, but I intend to try the cupcake lasagna.

    And yes, it was a beautiful day!  I floated in the lake this afternoon, it was so nice!

     Yes.. The fact that your PS was up front and said your surgery was beyond his expertise is really quite good!  Sometimes it is a bit tough to get these doc's to say! 

    2 hours away really isn't so bad!  When I was considering a MX I had my consult at John's Hopkins in Baltimore which is 5 hours from where I live.  Decided on a Lumpectomy instead and went with my local Breast Center, who have been fabulous.   Just didn't have the experience to do DIEP.  If I would have decided on the DIEP, I would have definitely not stayed local for my surgery.  DIEP has to be done exactly right (read that LOTS of experience) to have a good outcome!  

    Didn't know about your battle with lung cancer!  Hope all is well on that front!

    Have seen Lydia's show on PBS... Such a great show!  She has a restaurant called Felidia in NYC that I hope I will make it to some day!  Now that I have quit smoking that may just be a possibility!! Another great Italian PBS show is Mary Ann Esposito's Ciao Italia!! Definitely worth a watch!

    Eggplant parm sounds good.  I haven't had that for quite a long time.  I like that cupcake lasagna idea too.  I will have to find the wonton wrappers as well, I have no idea where they are in my local grocery store either.

    My son is home from college for 2 weeks and cooked tonight!  He made chicken paprikash.  It was very good!  How did he get to be a better cook than me?

    Edited to say my son cooked it much longer than the recipe calls for.  He cooked it about an hour.  He said he likes it to almost be falling off the bone.  It was good.

    Simplyrecipes.com is a really GREAT place to get recipes from!!  The woman who owns the site (Elise) knows her stuff!  I have made many recipes from there and have not hit a bad one yet!  For those that like a good pot roast, check out her recipe!  I think it was so easy and possibly the best pot roast I have ever had!

    Michelle and Seaside- Thanks for the vote of confidence, your absolutely right, the 2 hour trip is not that bad especially if its worth it, dont think i could do 5 hours but 2 will be ok. Seaside- Yes im doing good now with the lung cancer issue, i had a lung resecction on my left side, never even had to do chemo back then i was only 43 then and it was a hard surgery to get through but we are all tough here, the things we thought we could never go through we do, and find out just how brave we all are here. My lung cancer was left side, BC left side, left eye surgery when i was younger, had a lump in neck, left side- Every one calls me Lefty! LOL!

    Seaside- I love simplyrecipes but never tryed there pot roast when i went to there link just now i typed in pot roast and it showed quite a few, do you remember which one it was?

    Kay- Your sons paprikish sounds and looks good!  Thanks!!

    The key is the super low oven temp and lengthy cooking time! A good HEAVY dutch oven is also important. Even though you start with only 1/2 cup of wine, you wind up with quite a bit of liquid in the end! Your whole house will smell so good while it's cooking!



    I would be a good match for you "Lefty""..... All of my ailments seem to be on my Right side..... Guess that makes me "Righty"... LOL

    Debbie- Wow you have been through a lot!  I hope you don't have any left- or right experiences!  I'll keep you in my prayers for your recon surgery and preparations for it.

    Has anyone ever made pizza on the grill?  I have heard of it, never done it myself.  We are going camping again this weekend and I was trying to come up with easy ideas for dinner. Just curious before  I hit google!

    Tonight is baked scallops again, it came out good last week and I did not feel like being too creative tonight.  So baked scallops and scalloped potatoes, just because it sounds funny together:)

    Laurie - thanks, it's about as good as I could ask for!    And I just watched a Paula Deen show where she made pizza on a gas grill.  Just spread out the dough, make sure it's really well oiled, then slide it out of the pan onto the grill.  After a few minutes, flip it, and cook  for a few more minutes.  Then add your favorite toppings and grill until it's nice and melty (love that culinary term!).    I hope the weather is good for you this weekend!

    Yes on the grilled pizza... We do it pretty much how Michelle described but, have had issues with it sticking to the pan and not being able to get it on the grill without a big mess.



    What we do now is roll out the well oiled dough onto parchment paper then carry it to the grill and with a person holding each end, flip it onto the grill and peel off the parchment paper. I have also heard of people having good luck using a bit of cornmeal sprinkled on a pan before putting the dough on to prevent sticking.



    You do want a fairly low temp and will need to have all of your toppings ready to go so that you can get them on and melty before the bottom burns!!!!



    So crispy and SO GOOD!!!!

    polenta pizza.  trying it for the first time in an effort to get away from white flour.  although I don't know if corn (=sugar) is a better alternative.  smells great in the oven right now.  curious if my kids will eat it.  I'll let you know!

    I don't make my own dough! One of our local pizza places sells their dough in the grocery store. I just buy a ball of dough and roll it out!

    RAVE reviews from my six-year-old son, who doesn't eat anything.  Said it's the best pizza he ever had.   He didn't eat all of his piece, but it was pretty hearty and such a relief to sit down to dinner and not hear him complain.  He loves cornbread, and this was like pizza on crusty cornbread.  Did it in the large cast iron skillet in the breville counter-top oven.  (what have you got in the camper?) Put leftover roasted veggies on the adults' side.  mmmmm..  Hopefully the above link will take you to the recipe I followed.

    Laurie - Pillsbury has a refrigerated pizza dough (like those biscuits in the tube).  That would be a convenient way to do it.

    Dinner tonight was the leftover pork tenderloin from Sunday along with the leftover waldorf salad, corn on the cob, and buttercup squash cooked (microwaved) in apple cider and cinnamon.  I love buttercup squash and it's much easier to find here in NH.

    Seaside- (Righty) Oh that's funny, we could be aka, lefty and righty LOL!  Thanks for the recipe link for the pot roast, i had a roast waiting to be cooked in the freezer, Im going to make it this friday.

    Lauire- Thanks for the prayers, i appreciate it! Our best friends have a place in kentucky called "Pizza by the Pound" I think they have the best pizza i have ever tasted, but he cooked it the tradiiional way, one night he made one on the grill, with articokes, garlic, bluecheese crumbles, different cheeses i think was mozz and parm? Not sure what else he had on it,it was a white pizza,(no marinara) but it was the best ever and so tender, so i made one on our grill and it was so good and tender- just like michelle said use lots of evoo on the grill so it wont stick.

    Kskier- MMMM will have to try your polenta pizza.

    Had taco's for dinner tonight easy and good and leftover coconut cream pie.

    Michelle- I love butternut squash I go through a jar of cinnamon in 2 months i put it on everything even my bannanas.
