So...whats for dinner?
Comments
-
Lago- would have loved to have the pops for dinner!
-
oh yumm on the fruit pops laga
Michelle- Thats good to know I had no Idea, same here on the weight loss since my last chemo I gained weight on chemo instead of lost since then i have lost almost 37 pounds and im down to about 120 naked and 125 with clothes i think my foobie weighs the most! lol Im 5 "3" not sure which one I will do yet I diff want to stay small as well.
Seaside- Sorry to hear about your family problems I hope everything is ok now! sounds like your having a heat wave there, I used to love the hot weather but not anymore we barely get to 75 here on the ocean I love it- I know you and I share the same birthdays june 12th too bad we cant celebrate together, hubby and I are driving down to see family and friends on friday and coming back monday I better get lots of good stuff LOL!
Laurie- You are so lucky to have a husband that knows and likes to cook your dinners always sound so good too, my hubby dosnt even know how to boil water so I prefer he stay out of the kitchen ha!
-
Debbie so glad you are getting away and going to have some fun for your birthday! I am lucky to have a great husband who is also a great cook. He usually only cooks when it's something I'de rather not make. He has been asking me to make fish and chips for weeks, in my opinion I buy fish to eat healthier not fry it so I haven't done it. So when he was faced with salad for dinner he took matters into his own hands, lol!
Today was another hot day and we just had some wicked thunderstorms pass through and the temps dropped a bit, thank God! I am going to make chicken fajiata's for dinner tonight with some spanish rice. I have never made fajitas at home before, don't know why, but I am trying to mix things up. So chicken with onion, red and green peppers, mushrooms a little cheese and sour cream. I think the kids will like it.
-
Another hot one here today. Got up to 98, a lot of schools closed early again. My daughter doesn't know it because her school is air conditioned, so she hasn't been let out early. Hopefully she won't find out. Tomorrow is only getting up to 90, and then Saturday it's only supposed to get up to 80. I wish we'd have the hotter weather on the weekends and the cooler on the weekdays.
Had a spinach salad with walnuts and cheddar cheese , some baby carrots and dip and whole wheat tortellini with Alfredo sauce for dinner. Probably not the best nutritionally, but not bad either I'm guessing.
Tomorrow my DD is going with my MIL to visit her cousins for the weekend in Washington DC, so it will just be DH and me. Will have to have something grown up for dinner. Maybe that shrimp scampi some of you had a while ago. That sounds good. I've been wanting to make it since you were talking about it.
-
Tonight I had some pretty good corn on the cob. I am waiting for fresh sweet corn from local farmers market. So delicious with salt and butter.
-
Thanks Laurie, Im hopeing to have a good time. I like my fish unbreaded most of the time but once in awhile i crave the breaded fish and chips with malt vinegar yummm!
Kay- Your spinach salad sounds good it reminded me i have a bag of it in the fridge drawer i forgot about
Teka- I just bought some corn on the cob today, going to make it when we get back, we are bringing our grandaughter back with us its her favorite food its really sweet right now
Seaside- Just wanted to wish you an early happy birthday Im leaving tomorrow out of town for mine and wont be back untill monday "Happy Birthday"
-
Debbie,
Thanks for the birthday wishes!!
We have kind of a tradition in our family where, for each person's birthday, we go out to eat at the place of their choosing. My parents just returned to NY from Florida for the summer so they will most likely go with us. Now I just have to decide where I want to go!
Hope you have a GREAT birthday on Sunday!!
-
Michelle,
Has your husband arrived yet? I'm sure it will be so great to be both in the same place!!!
I share your pain on the blood work. Between just all my follow-ups, regular physical and the pre-op for the D&C, I've had more done than I care to think about!!
I am hoping that, since I just had a ton of bloodwork done less than a month ago, that when I see my Onc, that he will just accept a copy of the report. If I was the insurance company I would be starting to get ticked that I have to keep paying for the same tests over and over!
Will be thinking of you on Monday! Hope the port placement goes smoothly. When do you start chemo?
-
Thanks Laurie,
The teen years can be pretty rough at times! Like my Mom used to say, "Little kids, Little problems... Big kids, BIG problems"!! Somehow you just get through it and you come out the other side stronger and with a child who is a decent human being!
No dessert and no outside time is replaced by, the killer, NO CAR!!! LOL
We had those whopper storms through here yesterday, too! But at least it dropped the temps and humidity a bit!
kay1963,
Actually, scampi DOES sound really good!! I may try to see if I can find a version that my husband can do on the grill!!
Teka,
Corn on the cob when it is good.... MMMMMM! We have had nights where that was ALL we ate for dinner because it was so darn good! I have a recipe for a corn chowder that I usually make if we have any leftover. Also works for corn that you thought was going to be good but, wasn't all that hot!
-
I so love fresh sweet corn. I've found frozen corn on the cob to be soggy. Recipe for corn chowder sounds good.
-
Teka,
Corn-on-the-cob, watermelon and a good summer tomato is what makes it summer for me! Well, that and ice cream or a s'more cooked over a campfire!! lol!
The recipe for corn chowder that I use is this one http://www.foodnetwork.com/recipes/rachael-ray/harvest-creamy-corn-choup-with-parsley-recipe/index.html
I mostly follow the recipe except I use 3 or 4 russet baking potatoes, peeled and diced into roughly 1/2 - 3/4 inch pieces. I also boil them in a separate pot until just fork tender before I add them to the soup because I have had problems with them not softening. Most times I sub 1/2 and 1/2 for the heavy cream. I don't think I would drop it down to milk because you need some fat content to keep the creamy part of the soup from breaking and becoming oily when reheated. I also, usually add an extra zucchini especially during the summer months when my garden has out done itself and I am swamped with it and the neighbors have started to run away when they see me because they don't want anymore!! lol I also, do not use the garnish or popcorn or oyster crackers!
Enjoy!
-
SeasideMemories,
I can hardly wait for fresh sweet corn so my husband can make the corn chowder. I love Rachael Ray and at X-mas was given a subscription to the magazine "Every Day with Rachael Ray". Thank you!
-
Debbie and Jennifer - Happy Birthday to both of you!!!
Hubby is here, the truck is unloaded and there is a sea of boxes. This will take weeks to sort out! My son is now on his way back from our house with the rest of the stuff that didn't fit in the first truck. I have been unpacking all day, then we went out to dinner - lobster and steamers at the Clam Haven, a stand that's been in the same spot for 58 years. It was delish! Then we hit the grocery store because we will have to feed the help tomorrow (kids are coming to help unpack). It's going to be burgers and dogs, because that's all the energy we will have. I think someone is bringing a charcoal grill - ours was a natural gas grill and we left it behind. The weather is going to be cool, so hopefully no one will mind being indoors on a Saturday.
I took my son to the airport at 4 a.m. for his flight to Kansas City, so I am dead tired and just about ready to call it a night. Hubby is upstairs trying to figure out where to put the small LCD tv so we can watch in bed. Our king-size bed doesn't fit very well in this narrow bedroom, and the tv cable mount is on the wallright in front of the bed...I don't think our 47" screen is going to fit...lol.

Debbie and Jennifer Happy Birthday for the 12th is it? Put your party dresses on and live it up!
Michelle- I am so glad your husband made it safe and sound and had to laugh at him trying to set up the tv, mine would do the same:D It makes me think about when my parents moved back to NH. They rented a huge truck, hired college kids from a local campus for 20 bucks an hour to load it and then my husband, my brother and one of our friends (plus my parents and me) unloaded it. My Mom stood in the doorway and said what room to bring it to etc. No one minded helping. We were happy to have them back. I hope tomorrow goes well for you and you make a dent in it and feel a bit more settled, but remember, it will take time.I'm sure your kids feel the same way we did and are happy to help you move in and have you back. Everyone loves burgers and dogs!
-
Today was a busy day! We unpacked a gazillion boxes, my daughter played Tetris in my cabinets and made things fit like magic. I still have more stuff than room - my new kitchen is less than a quarter the size of the one I left behind. But, once we really figure out what we need and what we can live without, it will be OK.
We grilled burgers and hot dogs during the day to keep everyone fed. Then I made popcorn. Tomorrow I am going with my girls to a salon where I will get my hair cut to about an inch, and my daughter will have about 12" cut off her hair for locks of love. And we will drink a little wine. I'm trying not to think about it too much, but I should I'll be Ok with it. I guess I'll find out just how grey my hair has gotten over the past 20 years!
Our best friends from Milton, MA will be coming to visit us and she will go with me. I have my port surgery on Monday, so I won't be able to drink too much wine.
Michelle
-
Michelle- How did the haircut go? I'll be thinking of you tomorrow for your surgery ((hugs))
-
Debbie and Jennifer, Happy Birthday! Hope you enjoy your cake.
Unpacking is the worst. We still have some boxes (we also moved from a bigger house to a smaller house) that we still haven't unpacked and we've been here almost 3 years. Good luck with the port tomorrow Michelle. I am so glad I got a port, I'm sure you will be too.
Had tacos and rice tonight with the hamburger that my co-worker's neighbor butchered. Such a difference in the meat, so much softer. I think there really is something to this no hormone, grass fed thing. Good thing about tacos is that everyone likes them. I do have to try brown rice, maybe it's not as bad as I think? I do want to try that corn chowder recipe, sounds good!
-
I almost forgot!! Happy Birthday Debbie and Seadide (aka Jennifer.) !!!!!! I hope you had a wonderful day
-
Hi everyone. The haircut is done, I don't think I'll be showing it off as I think it makes me look a whole lot older. If you want to see the clipped me, you can go to my blog at
www.mch-breastcancer.blogspot.com
From Haircut The picture above is my daughter Christine on the left, then me with my wig, then my daughter Allison on the right.
Port surgery tomorrow at 9:45, have to show up at 8:15. This is going to be a long week.
Bizarre that the linking code is showing up...oh well, too tired to try and fix it. You can see the picture much better on my blog.
Michelle

OK, I don't know why the link code is showing up...you can see this picture much better at my blog.
I'm too tired to try and figure it out.

Your hair cut looks so cute you are beautiful and so are your darling girls so sweet of them to do that for you iwill post more after i get home my new computer will be waiting... take care and hugs -
Michelle- I agree with Debbie, your haircut does look really good! I hope things went well today and that someone is going to make you exactly what you feel like having for dinner.
Last night we had baked chicken Parmesan with whole wheat pasta. Tonight my husband has requested the pork chops with white mushroom gravy. It has been cool and dreary around here for a few days and so we've been having some feel good food. Just as I had lost a couple of pounds they will be coming right back! Ohwell.
-
Michelle,
Been thinking of you all day and hoping all went well for you this morning!!!
Read your blog.... You have a real way with words!
Laughed out loud at this comment: "I took my place in the chair and Amanda took the clippers to my hair, revealing a hair color I've never seen - my own at this stage of my life" I think most of us can sure identify with that!
I think the person who did your wig did a MARVELOUS job at styling it! It matches your old style so well, that at first, I couldn't tell which picture was the before cut and which was with the wig!
Both of your girls are real cuties... Just like their mama!
-
Yesterday was my birthday and normally we go out to dinner but, my daughter had to work and I didn't want to go without her! My husband grilled some steaks and shrimp and we put some leftover macaroni salad with it! Was kind of nice to just hang out and grill!
Tonight we are heading out to a local Italian place and then home for cake!!
Debbie,
Computers must have been "the" birthday gift this year! That's what my gift was as well! My husband apparently has heard me complain one to many times about my ancient, slow laptop... Hmmmm, maybe there really is some truth to his claim, that I'm always on the computer! By getting me a faster computer, maybe he's hoping to kind of "move things along"....LOL
Laurie,
Always looking for recipes for pork chops.... Would you mind sharing?
-
Seaside, yay for a new computer! Fun!! I never mind sharing a recipe:)
This is a combination of 2 recipes I found online. I always use center cut thin pork chops but I think any kind would be just fine.
Flour/egg/bread the chops. Put enough oil in the bottom of a good pan to coat it well, but not so that they are deep frying and pan fry until golden brown. Pop them into the oven to finish cooking, 15 minutes or so. In the pan you fried them in add a can of cream of mushroom soup, 1/2 can of milk, a splash of white wine and a few dashes of Worcestershire sauce and bring to a mild boil and reduce.to low heat.
I serve it with mashed potatoes and put the "gravy" on the pork shops and the potatoes. All of us love it, the kids, hubby and me! (Im not a big pork chop fan.) I always make extra because it gets gobbled up so fast by everyone!
-
Ladies - thank you so much for the compliments, I think my daughters are beautiful, too. And even better, they are beautiful inside! I wore my wig all night (slept in it), wore it in the shower and all day today, even to the hospital for my port surgery. I think I'm going to like it. I agree, Patty at Brian Joseph's did a beautiful job of styling it into "my" look.
My son arrived with the uHaul containing the rest of the "Hall" household, and it will get unloaded tonight. My daughter and her roommate are coming to help, and they are picking up dinner from Shaws - fried chicken, tossed salad and potato salad, plus whatever else she sees at the deli. I still haven't done a real "food" shopping trip, and it has to happen tomorrow or Wednesday on our way home from chemo. That timing sounds scary to me...lol. And I need to visit my mom tomorrow so she doesn't think I've abandoned her. I don't know how long it will be after chemo treatment before I will feel able to visit her...maybe later next week.
So my port surgery went just fine and I got a nice nap out of it. I guess the Versed is good stuff! I have a script for Vicodin, but so far I am managing with some 8 hour Tylenol and my usual anti-inflammatory. I'm starting to be annoyed by it, but this too will pass
Michelle
-
Joyce - yes, this has been quite a year, for sure. I was diagnosed in June of last year and yes, a local recurrence can happen...or maybe they didn't get it all in the first place. There are some thoughts about cancer cells being trapped in a couple of very large hematomas that I had from the original biopsy. When those dissolved, the cancer cells may have been released. And they survived because I had internal radiation rather than wide-beam external radiation. And I was originally weakly positive but subsequent pathologies have come back as TN. Lots of theories, no real answers and at this point, all I can do is look ahead.
Thank you for your generous offer! I will PM you my phone number so if I call, you will know it is me. And maybe you could give me yours.
Do you work at St. Joseph? In 1980 I lived in a duplex right behind the hospital on Earley St.
And sometime this summer, when I am settled, we will have a "meet and greet" at our house, which is on Arlington Pond in Salem (near Canobie Lake too) for all the NH and other closeby New England sisters who can make it. It is always nice to meet your cyberfriends in person!
Michelle
-
Glad your port surgery went fine Michelle! Cross one thing off the list.
Glad you had a nice birthday Seaside and Debbie. I am jealous of the new computers!
Had flounder, spinach salad and brussel sprouts for dinner. My DH is a fan of brussel sprouts. I don't get it. Not a fan myself. I love broccoli, and he doesn't. I guess to each his own.
Did anyone see Bridesmaids? I saw it with some old friends from high school last week. It had its moments, but overall, I thought kind of silly. I am surprised at all the rave reviews I had heard on it.
Have a great day everyone!
-
Laurie-Your pork chops sounds good especially with gravy on them
Seaside- Glad you had a great birthday too, we got back late tonight and wasnt able to get to the post office to pick up my computer as it was delivered while we were gone so cant wait to get it and have a nice fast computer, had to laugh at your comment on getting a faster computer so you can have more time with your hubby lol! Also I make my pork chops similar to lauries but how i do mine is season with salt and pepper, garlic powder, and paprika then dust in a little flour then dip in egg wash, then in itilian bread crumbs that are mixed with parmesan cheese and more of the garlic powder and paprika fry for 3 to 5 minutes each side and put in a 325 degree oven for 30 minutes these come out so tender.
Michelle-I hope that you dont have any problems with your new port, other than being a little sore mine was ok. and when i drove i used a little minature pillow over the port so the seat belt didnt rub against it. Glad you finally got the last of your stuff so you can get some much needed rest
Kay-Thank you I had a great time other than my dads wife was a total b....as always but kiss her butt just for the sake of my dad other than that it was fun LOL!
-
Hi all!
Happy Belated Birthday, Seaside and Debbie! I've been busy and haven't had time to really post, even though I try to read this thread regularly
Michelle, the port can be annoying but you get used to it. It really does make things easier for infusions, so the occasional annoyance was worth it to me. Debbie, I also noticed it in the car with the seat belt, as well as when carrying my purse on that side. You just have to make little adjustments.
My daughter is home sick today (wretched stomach virus). The poor thing threw up every 40 minutes or so last night from 10 pm until about 3am. I think I fell asleep around 4:30, only to have my alarm go off at 6:30 to get my son up for school
It was a rough night. She is sleeping now and is better but I'll have to see if she can go to school tomorrow. They only have 3 more half days then they are finished, so I may just keep her home tomorrow too.
I have no idea what I'll be making for dinner tonight. Caring for a sick child really wipes out the appetite!
