No manicotti tubes for stuffing at the stores, so I had to go with large shells instead.
It turned out well...just followed the instructions on the box with a few tweaks of my own.
Filling tubes and shells seems like a lot of work, but if you fill a ziplock bag and cut a hole in the corner, you can "pipe" the filling in. Got that tip from a cooking show, and thought I'd try it. Works great.

Your Manicotti looks delicious!
I make crepes and roll the filling up in those...(just flour eggs, salt and water). That way the pasta can be gluten free, too.

Happy Memorial Day...for those of you who didn't see the Shittin' Pants when I first posted it months ago...
My buddy diarrhea is back - and this is supposed to be my "off" week, too.
I guess I hit the "nadir" in the chemo cycle cuz stomach has been irritable off 'n on too.
Well, I'm going to eat marinated short ribs and dill/dijon mustard potato salad tonight anyway. To heck with it.
I know I'll continue to pay the price, so I'm wearing depends and will sleep on one of those absorbent pads tonight just in case.
Fun times ahead...L

Lita57 - hang in there!! I have a bacterial infection, so off Ibrance till antiobiotics are done, and the diarrhea is 'rearing' its ugly head!

My first apple pan dowdy. Used the Cook's Kitchen recipe and it turned out great. I used a variety of apples so it wouldn't have the same texture thru out, so it had a good balance of slightly al dente apples and softer ones. Labor intensive tho bcuz of peeling, coring and cutting up apples. I did the homemade butter crust too for the shingles on top. Otherwise, very easy recipe, and Lou and Olaf give it a thumbs up.

And Fraidy, yes the diapers do work, altho I normally use depends.

The new neighbors have marked this beautiful silver maple for death. I am so bummed. We've lived in this neighborhood for 30 yrs, and this tree provides shade for our backyard and is home to perching robins and other birds. DD and i went out and took pics this a.m.
And to make matters worse, Anthony Bourdain is dead. We loved his shows and books.

Look at that trunk... the sidewalk is still perfectly fine - no lifting or cracking, and roots were no where near the water mains. Tree was planted by the city more than 50 yrs ago.
The new neighbors got a permit to take it down, but we're still pissed as heck. Had hoped the tree would outlive me, but that's not the case now. I will miss all the birds. I used to sit in my backyard and watch them when they'd fly in at dusk to perch.

Oh Lita it really is a beautiful tree. Hard to believe. if it's really not infringing on their home...it's just sad. My daughters cried also when our neighbor to the back of the house had 2 gigantic trees, (but not as sturdy as this oe) cut. They said it was because raccoons (in the NYC!) were going and coming from there, it was true, but we adopted. DD's took pictures, and it has never been the same. You need one of your delish pies to make you feel a little better. Hugs

Today is our 28th Anniversary. Actually been together almost 30 yrs.
I'm owning my baldness....little bit of hair growing out by my ears, but the top will probably stay bald b'cuz of the wbr.
